We had ourselves a very full past week. Dinners with the misters family, dinners with mine. Lots of running around for last minutes projects, papers and bills. Mailed in the taxes in (barf) and washed the Washer dog (now he smells like a wet dog with a faint lavender scent… not much better) Then it happened, the most amazing spring day. I spent half the day on Friday trying to remember what it’s like to function in warm weather. I was getting hot and forgot that I could take of my sweater. But it was back to the sweater, hat, and mittens the next day which made me kind of cranky. It actually worked out ok because I didn’t feel bad about hanging inside listening to music , drawing and painting. Oh, and can’t forget to mention the cleaning… lots and lots of cleaning.. and there is still more to be done. All in all, not a bad week.

I have never seen it before, but all these leaves were melting into the ice. Very weird and very beautiful.Speaking of weird and beautiful… And yes.. I pulled out my sandals for the one day of spring we had this week. It was glorious and amazing. I had forgotten what warm weather felt like.

All I want to do is make everything into hearts and turn everything pink…Is that a problem?
I’m going to admit it, I am one of those girls that love Valentines day! And no, I don’t love it for the flowers (although I do love flowers..but never roses..yuk) No, I don’t want a box of candy or the silly store-bought cards. I don’t want to get all gused up and go out to dinner, and I definitely would be pissed if the mister bought me any jewelry. What I love is a day of spending time with my lover. We always take the day to do something special together, and for each other, and to be happy……and there is always hearts involved. I love hearts.
I want to spread that loving love love feeling because no matter what your love situation is during this holiday..we should all be happy and spread love to each other and to ourselves… And what better way to spread happy and love then with a pretty heart shaped baked good? Chocolate because almost everyone is into chocolate. Coconut because I can’t stop eating whipped coconut cream and pink coconut sprinkle because that’s what make me happy. (I am a little obsessed with sprinkling things) These little hand-held pies of love are really easy to make and always a big hit, especially with the little ones.(I am thinking they are perfect for a Valentines Day school party) And yes, they are vegan so you can share with all your vegan friends!
So in the spirit of the coming Valentines Day holiday….Lets make WHOOPIE!!!! (pies)
Flour, baking soda and powder, salt and cocoa powder. Soy milk with vinegar. Vanilla, coconut oil, and chia seeds jelling. Brown and white sugar…. you know whoopie stuff.
The dry in one bowl… sugar and all the wet in another.
All the whoopie stuff mixed together and scooped into a large zip top bag. So fancy with my bag…a real pro here!
Snip the tip of the bag, do a little squeeze test, and have at it. squeeze hearts onto a lightly oiled baking sheet or use a piece of parchment paper.
You might get a little frustrated if you are trying for perfect. I was for the first two batches, but once I stopped trying to hard, I really got into how cool some of the hearts came out. Embrace the funky lop -sided hearts, because any heart is a good heart.So lovely. Shadow hearts while the whoopie hearts cool.

Stuffed with a generous dollop of whipped coconut cream ( a cold can of coconut cream whipped with a splash of vanilla and a tad bit of sweetener) and sprinkled with my home-made beet dyed coconut sprinkles…..
Are you happy now? Because I know that I couldn’t stop smiling when I was making these… they are just to cute!
A couple bits of advice… Try to assemble before serving.. I was trying to put them together while a punch of kids were trying to eat them. Things got a little messy and sprinkles ended up everywhere. Also, The coconut cream should stay fairly cold, so my suggestion is to make the hearts and fill only when you are going to serve them. Or if you want to make far in advanced, cover and refrigerate to keep from coconut cream from melting….But other than that…
To start, make chia eggs( chia seeds in water) and add the vinegar to the milk. Let both sit for 5 minutes.
In a bowl, whisk together flour, cocoa powder, baking soda,baking powder, and salt.
In a large bowl, mix together chia eggs, sugars, and coconut oil. Add in dry ingredients and mix while slowly adding in the milk and vinegar mixture until fully combined.
Scoop Mixture into a large ziplock bag or piping bag. Clip tip and gently squeeze out heart shapes onto a lightly oiled or parchment lined cookie sheet. Bake each batch for 8-11 minutes, or until a toothpick come out clean.
Let hearts cool completely on a wire rack. Pair up like sized hearts and fill with desired amount of *coconut cream. If your feeling festive, dust sides and or tops of cake with sprinkles
* To make coconut cream, refrigerate a can or coconut milk or coconut cream for at least 4 hours. Open can, drain liquid and place the remaining coconut cream in a large cold bowl. Beat with a splash of vanilla and 2 tablespoons of the sweetener of your choice. …. (careful because this stuff is super addictive)
Now share.. and watch how happy everyone is when they receive a heart shaped whoopie pie!! That’s love!
A couple of days ago, during a grocery store porous, I stumbles upon a produce item that I have not seen sold in stores before, Broccoli leaf. And I was kind of surprised to see that they were selling bunches of the leaf, organic, at 2 bucks a bunch. I was very excited ! But wait.. You can eat broccoli leaves? Heck yes you can! Broccoli leaves are fantastic. They taste kind of like broccoli, have a hearty texture like a collard, and can be used raw or cooked just like any other green. Its just one more super yummy green to add to your repertoire. So when I bring home something that I find to be a good score, like a bunch of broccoli leaves, I feel like I have to share it with the mister. (I am so nice) And this dish was how I shared them…. Tossed into a bowl of garlic raging pasta. The stuff…. A bunch of broccoli leaves, lots of garlic, pasta, olive oil, salt and a lemon. Pretty simple right? Fist off, get your water boiling for the pasta. Once its ready, drop a pinch of salt into the water and stick pasta in for the amount of time recommend by pasta box people. While the pasta is boiling, mince up the garlic (I used my garlic press) into a skillet and add in the oil. Stick on a burner on medium for a few minutes, stirring around to make sure the garlic doesn’t stick and burn. Once you start to smell the garlic, turn heat onto low, chop up the broccoli leaves (stems and all) and stir around until wilted and add in the juice of half a the lemon.When the pasta is cooked, remove a few tablespoons of starchy water and strain the noodles. Add water and pasta right into the skillet with the other stuff. Toss around, taste, season with salt and pepper. Go ahead and add some chopped tomato and or parmesan cheese if you want. And serve your amazingly amazing pasta. And make sure that you are ok with really smelly garlic breath…Casue it’s going to happen. Keep it good! -C
2 servings of your favorite pasta (spaghetti, penne, vegan, gluten free…..)
8 or so fresh garlic cloves
1/4 cup olive oil
salt and pepper
lemon (optional)
parmesan cheese (optional)
Start by bringing a pot of water to a boil with a pinch of salt. Add in pasta and cook per instructions on box. While pasta is cooking, mined garlic and add to a skillet with the oil. Place on a burner on medium heat and cook and stir until the garlic becomes fragrant. Chop the broccoli leaves (stems and all) into bit sized pieces and add to the garlic oil and toss around to wilt the leaves. Squeeze in some lemon juice. Once the pasta is done cooking, remove a few tablespoons of the starchy water and strain the pasta. Add the water and the noodles to the skillet, toss to evenly coat the pasta and call it down. Serve in a bowl or on a plate, topped with freshly chopped tomatoes and parmesan cheese if you so shall please and another little squeeze of lemon juice if you like. Watch your mouth.. it will be breathing out garlic like whoa.
I probabaly have already told you, but August is for sure my favorite month of the year (well,one of my favorites)
There is bounties of bounties of fresh, sweet and colorful, oh so juicy, crispy crisp, just so f ing amazing, produce exploding all over the place. I have probably gained like 75 thousand pounds in the past month due to all of the fruits and veggies that I have been consuming. I am starting to consider it a full time job just to keep up with the eating.
Another reason why I love August so much is becauuse the days are still nice and warm, but the nights are starting to cool which means I get to make so much soup!!!!!.
This soup is the freshest freshy soup yet. Everything is from the farm and or the garden (except the salt pepper, vinegar and oil), some picked within hours of me making this.
. I am a lucky/spolied veggie brat.
Anyways. This soup. The fresh tomato base gives it a sweet, slightly acidic kick. So super creamy due to the lovely earthy stocks of the chard. Slightly spicy and earthy from the arugula* and chard green green. This soup… it just tastes so fresh and clean, yet hearty and satisfying. A perfect soup for a mid August night, eating outside, watching the sun slide behind the mountains and the temperature dropping just enough that you might want a light sweater. Or you can just eat it from the pot in the kitchen while watching TV. It’s good eating anyway you want.
*Here in America, it’s called arugula. Else where , it’s called rocket. I wish we all called it rocket, although I do like the name arugula, but for like my first born child or maybe a pet goldfish. Anyway, rocket is arugula, or vice versa.
Soup time!.
The stuff. Some big fresh tomatoes, a few stalks of chard, and a few handfuls of arugaula (aka rocket). A couple carrots, an onion, some garlic, salt and pepper and a bit of olive oil.. Oh, and I added some balsamic vinegar, which for some reason didn’t make it into the picture (sorry vinegar)
Start by removing the chard leaves from the stalks. Set aside leave with the arugula. Chop up the carrot, chard stems, onion and garlic and toss into a big pot with a drizzle of olive oil, a splash of water, and a sprinkle of salt and pepper. Stir around and stick o nthe stove on medium heat for about 10 minutes until the veggies start to soften up.
Now chop up the tomatoes into chunks and toss those right into the pot with the other stuff. Add in a few cups water and a few glugs of balazmic vinegar. Bring everything to a boil and then turn heat to medium low and place a lid on pot and let cook at medium heat for another 20 ish minutes, or until the tomatoes are falling apart.
Now that everything is all cooked up, blend it up.
And now take the chard leaves and the aruglula and chop into little pieces….into the pot they go.
Mix it all up.. and take the blender to the soup again….if you want a smaller sized bite.
Soup Into bowls..Then into mouth.

4-5 large fresh tomatoes
4 large stalks of rainbow chard
2-3 big handfuls of arugula
1 medium onion
1 large or 2 small carrots
4-5 garlic cloves
2-3glugs (about 2 tablespoons) balsamic vinegar
3 cups water
olive oil
salt and pepper
To start, remove stalks of chard from leaves and chop stalks, onion, carrot and garlic into chunks and place int a big pot with a drizzle of olive oil, a splash or water, and spinkle of salt and pepper. Place on stove on medium low heat sand cooke the veggies down until starting to soften and garlic is becoming fragrant. While that cooking, remove core from tomatoes and dice them up. Toss into pot with the cooked down veggies with the vinegar and water. Place a lid on the pot and let cook for about 20-25 minutes or until the tomatoes are falling apart.
When cooked, using with a hand blender or a normal blender, blend the soup until smooth. (if using blender, pour back into pot)
Now take the arugula and chard leaves and chop them into wee little picese and mix into soup. If you want to, blend the greens into the soup.. but not until smooth, unless thats what you want. Cook for another 5 minutes. Taste and season with more salt and pepper to taste.
Ladle into bowl and serve with lots of fresh cracked pepper, maybe a little balsamic drizzle or even some mustard (I at left overs with mustard and it rocked my world)
It is cold. I am cold. Vermont is cold. But that’s ok, I like it.(until around mid march, then not so much) Ok, so I am not always cold, I actually wake up warm., but as the day progresses, I lose body heat and by lunchtime, I am freezing. In comes a bowl of hot spicy, hearty soup. It’s like a soft, fluffy, footed adult sized onesie, wrapping me from head to toe……..Soup is where it’s at. This particular soup is one of my go to flavors. I don’t always add the exact same veggies(I use what I got) but the spices are some of my favorites. Feel free to mix it up a bit, add little bit of that, more or less of this, and maybe a dash of whatever you want. Soup is so versatile, isn’t nearly impossible to screw it up.(I have screwed up a few batches in my time so don’t feel bad if you have too)
What I had in the old crisper. Carrots, a parsnip, celery, garlic and onion. A fantastic bunch. I don’t think I ever make a soup without carrots or onion. They are considered major staples in my kitchen.
A beautiful array of spices:.Curry, cumin, red pepper, chili, paprika, and coriander. All toasty and warm spices. Perfect for those 10 below 0 days. Now doesn’t this little plate look nice? You must arrange your spices like this in order for the soup to work(no not really, but it is really pretty!) Chopped up veggies sweating in a big pot. I always sweat the veggies for soup, it helps cook time, enhances the flavor of the veggies and toasts up the spices.(Throw in the spices while doing this, it helps to bring out the flavors) When I chop my veggies, I usually do not do a uniform chop, i like a few different sizes. Smaller pieces cook faster and melt a bit and bigger chunks retain more crunch and texture when cooking….But by all means chop them all the same. Just telling you what I do. Once the veggies are tender and the bottom of the pot is starting to brown a bit, add a splash of vinegar. Mix for a minute to dislodge stuck on veggies than in goes the tomato base. I buy big cans of San Marzano tomatoes, use what I need and refrigerate the rest in a big ball jar. I use the whole can within a few days.(Seriously, I soup every day). If you don’t use a lot of tomatoes, just use a 28 oz can. Crushed or whole is the way I go, but whatever floats you boat works too. Anyways, you got the tomatoes in so now dump in the lentils and a bit of water.. I’ll give you measurements, but honestly, I just usually throw in half a jar or lentil and whatever water is left in the teapot. You can never have to many lentils and if you go to heavy on the water, you can just cook it down. No biggy.
A handful of a hearty green helps to add depth, texture, color and flavor. I love kale in soup. Chop it up into small pieces and throw in a the last-minute. It’s fine to add it in at the beginning with the tomato and stuff, but I find I like the texture and flavor better when I add it towards the end. Topped with a few roasted chick peas that I just happen to be snaking on when I was serving up the soup.. Crunchy chick peas are good on anything. Try it, but don’t worry about it if you don’t happen to have any on hand. You can add anything you like if you want a little crunch. Maybe some toasted squash seeds or some cracker crumbs. Or nothing. You don’t need anything here, this soup is good enough without it.
And that the soup. Hearty and warming, keeping my bones from the death grip of the cold.
P.s. Make a double batch of this soup…Left overs are the best and take a few minutes to reheat.

Curried Lentil Veggie Soup
28 oz can crushed tomatoes
28 oz water
1/2 cup dried lentils
1 large carrot
2 stocks celery
1 small onion
Few kale leaves
2-3 cloves garlic
1-2 oz of apple cider vinegar
1 teaspoon Curry Powder
1 teaspoon Cumin
1/2 Teaspoon Red Pepper flakes
1 teaspoon coriander
1 teaspoon Paprika
Salt to taste
Pepper to taste
Roasted Chick peas to garnish(Optional)
Rough chop the carrot, celery, onion, and parsnip and place in large pot with a dash of salt and pepper. Place on medium heat with lid and let the veggies sweat for about 5 minutes. Chop garlic and add along with spices and vinegar.Replace lid and let cook for another 5 minutes.
Remove lid and add tomatoes, water, and lentils. Bring to a rolling bowl then reduce heat to low and give a good stir, making sure to scrap the bottom of the pot to dislodge any stuck veggies. Replace lid and simmer for another 20-30 minutes, stirring on occasion. Soup is done when the veggies and lentils are cooked to your liking. This is when I add kale. Small chop the leaves and throw into pot and stir. Let sit in hot soup for a few minutes.
Wowzers…Is it for real Memorial day weekend? Where has all the time gone? Let’s talk about a week gone by fast. My brain is on complete overdrive and I am having a hard time keeping it from exploding…SO MUCH TO DO! (Not bad stuff, just a lot of stuff) But lo, that’s life right? There is always a lots of “stuff” to do, but today I am going to try and let that stuff chill and maybe give myself a few hours of coffee, (so much coffee) reading a book in the sunshine, gardening, and just some overall chillin.

We didn’t find the geo, but we found this gigantic mushroom. Just as cool, maybe even cooler.
I love brick and there is one street in all of burlington (that I know of) that has brick sidewalks. I like to walk down it a lot.
Nurse lady making food… I compare this to a big foot sighting. I have heard stories that she cooks,but have never actually witnessed it myself. (Just kidding….kinda)

You ever make dish, completely on the fly, just to use something up (I have a lot of ripe tomatoes) with no real expectation, just because… Then have it be one of the best freaking things that you have ever made? This salad is one of those things.. maybe not the best thing I have ever made, but definitely the best salad I have ever made…. this week.
A salad compiled of all things amazing, taking just a few minutes to make and is the perfect balance of uber fresh with baby spinach, raw kale, and crunchy quick pickled onions. Then adding a touch of warmth with the sweet and juicy seared tomatoes and big chunks of creamy avocado.
I mean, for reals. ……Best Salad Ever !!!! (this week)
Now let’s do this.
The Stuff. A big bowl of baby spinach and chopped up kale, a few sliced up roma tomatoes, some super thinly sliced red onion, half an avocado, red wine vinegar and salt and pepper. Before you do anything, place the sliced onions into bowl, sprinkle with a pinch of salt and add a few glugs of the red wine vinegar. You want the onions to sit in the vinegar for at least 5 minutes on the counter cause the longer they sit the more crispy pickly they get. (after eating onions like this, you will never want to eat them any other way) Lightly oil a skillet and preheat to a medium heat. Once the skillet is hot, sprinkle the tomato slices with salt and pepper and place tomatoes right on in, snugly, but not overlapping. Let cook for about 3-4 minutes, or until the bottoms start to brown. Flip and cook other side for another few minutes.Once the tomatoes are seared on both sides, remove them gently from skillet and toss them on top of the bowl of greens.
Take the pickled onions and toss those right on top, with any of the residual vinegar, add dice and scoop the half of avocado and toss that on in as well.And now eat the best salad ever (this week).

Skillet Seared Tomato and Quick Pickled Onion Salad
Serves 2 as a side, 1 for a hungry eater
2 large or 3 smaller roma tomatoes
1/2 of a red onion
2-3 tablespoons red wine vinegar
1 1/2 cups baby spinach
1 1/2 cups chopped kale
salt pepper
1/2 a ripe avocado
olive oil (to grease pan)
Thinly slice red onion and place in a bowl. Add vinegar into a and sprinkle with salt. Let sit on counter for at least 5 minutes, if not longer,
Slice tomatoes into 1/2 inch thick rounds and sprinkle with a pitch or salt and pepper. Lightly oil a skillet and preheat it on medium heat. Once the skillet is preheated, stick the tomatoes on it (watch out for splattering tomato juice) Cook first side for about 3 minutes or until the bottom has browned, then flip and do the same for other side.
One tomatoes are seared, place directly onto the greens. Now dump the pickled onions and residual vinegar on top. And dice up avocado and add that on top too.
Now eat your salad, fork or fingers…
And I know, ba-daaaamn. So good.
What a week. Was it summer where you are this week as well? I mean jeez, talk about one extreme to another. Oh well, at least the world has turned green, the winter stuff is completely out of sight and I found the box that contained all of my shorts and summery clothes (pants and long sleeves in 90 degrees is just gross) And honestly, it’s been great. In between work, chores and just plan old being busy, we have manage to get a few bike rides and long walks in. Plus all the veggie starts are doing great, the flowers are coming up everywhere and life just has a little bit more of a relaxed feeling. So what if my allergies are turning my face into big red puff or that the past few night have been so hot that the act of sitting has caused me to break a sweat. I’ll take it.

It’s been a long, packed, but very fantastic week. Everyday has been full of work, chores, family, and trying to get in a least one good bike ride or walk in. I made a list of a few important points to mention from the past week.
Spring is real, not an imagined season in my head. (HOORAY!!!!).

Riding a bike with kinda flat tires really sucks
The little people in my family are the best most fantastic humans

Anyways, I am hoping to take it easy today, catch up on my coffee consumption, do a bit of gardening, reading, bike riding, all without pressure or expectations. Everyone should have a day for no expectations.

Ah Sunday…Monday-Saturday would suck without you. The past week has been glorious with all the warm sunny days. I have even managed to give myself a slight sunburn on my face (time to whip out the real sunscreen!!) I am really looking forward to today because honesty, I need a down day. Not complaining, but when the weather is nice, I try to do my life and spend as much time as possible being and playing outside, so I have burned myself out a bit. So today I have very little planned except a bike ride to the library to return and retrieve a few books that will keep me occupied for the rest of the day and maybe I’ll get to the baskets of dirty laundry and mop the floors… maybe. All I know for sure is that I have a least one pot of coffee coming my way. Much excitement!!!!!

The sky has had the most amazing clouds all week.A walk leading to a free rain barrel. Love free stuff! (and everyone pictured)We took the car through a car wash… My first time, it was thrilling. Only and his yearly bath. Wet cats look so pathetic, but he was a champ. Neither nick or I suffered any wounds.So much asparagus… I can’t get enough! (and my pee doesn’t smell)

I don’t know if I have bitched enough about it, but I only have one window in my living space. And as much as I love love love our little tiny loft, I am a person who needs the sun. So when I am home I spend a lot of time siting in front of the window. Over the past few weeks I have been doing a lot of watercolor painting in front of that window and somehow between drawings of carrots and vintage fans, I ended up making these marbled window stained glass hoops. And I am glade I did because these little watercolor gems really do make a big impact on my one source of sunlight. Even when the day is kind of gray and gloomy, having these in the window make the light seem brighter and happy.
We can all use a bright happy window.
So this project is really easy and fast. I recommend that if you are going to go to the trouble (it’s really no trouble) of making one, you might as well make 2 or 5. I actually made a bunch (think Mothers day or Easter presents) and ended up only keeping a s couple. I am going to have to make a few more soon.
You will need-
Watercolors
water
paintbrush
Sketch paper*
A pan or tray with a bit of water
Embroidery Circles * (As many as you want to make)
*Notes
-I tried to use a few different types of paper and found that the sketch works the best. Watercolor paper was a bit to thick and printer paper just kept ripping.
-You can buy embroidery circles at any craft store and they usually have a good variety of sizes. Use the sizes that you like.
Take a piece(s) of paper a little bit bigger then the hoop you are working with and stick it into a pan or tray of water. Let it sit there for a few minutes until the paper is completely soaked.Take the wet paper and, oh so gently, crumple into a ball. This part can be a little tricky. You want to make as many creases as possible without ripping that paper. (I ripped a few pieces) I found that if I folded that paper a few time, then crumpled that it was less likely to rip.
Uncrumple the paper and lay it gently onto the inner part of the hoop. Now the fun part. Go to town with the watercolors. I used 2 colors per piece, but you could do 1 or 3, or more. When applying the color, use big gentle strokes and let the colors kind of meld together. Watch as all the crumple veins soak up the paint. Try using different dilutions of color. I applied some color on thinly and some on the thicker side. But really, you can’t go wrong, just keep applying paint until you are happy. I stopped a few times and held it up to the window just to see what it looked like. When it looked good, I was done.
When you are happy with the colors, let the paper dry for a while on the hoop until it is not longer super wet. I would say about an hour or so, but if you stick it near the heater, it might dry faster. (Just don’t stick it in the oven while you are making bread like I did with one.. It just ended up setting on fire. Oops)
Once its pretty much dry, take the outer ring of the hoop and gently place around the inner hoop and tighten. Being super careful, trim the extra paper from the back of the hoop.
Place your pieces in a window and watch them glow. Yow now have a happy window.

It hasn’t stopped snowing, the temperature is dropping fast (it’s getting to the point the dog doesn’t even want to be outside) and the mister is busy hand shoveling three long driveways. So I figured that in between all the laundry folding, plant watering , and all around sitting on my butt that I am doing INSIDE, that I would be so super nice and crank the stove up and make my love some cookies. I love making cookies, especially when I have chores to do. I think part of it is that cookies are baked in batches which breaks up the chores and gives a sort of rhythm to things. Plus everything is nice when the house smells like cookies. I was going to make chocolate chocolate chocolate cookies, but realized that I didn’t have cocoa powder, so I went with fresh cranberries (I just scored a pound of organic cranberries for 89 cents!) coconut flakes and chocolate chips. Plus I wanted to make them oatmeal because the mister likes oatmeal and oatmeal makes the cookies a little more hardy. (We need hardy when the temperature dips below zero) The verdict….. chewy, soft, slightly sweet oatmeal, bittersweet chocolate, nutty floral coconut, and the zing and pop of the fresh cranberries. He told me to hide them… hide so he will stop eating them….. because they be amazing!
The base of this cookie….We are using regular old fashion oats and flour. Salt, baking soda and baking powder. Vanilla, chia seeds in hot water, coconut oil white and brown sugar…. You know, all the cookie stuff. Then all the goodness.. Chocolate chips, coconut flakes, and fresh cranberries. Goodness. Oh yeah, and they are vegan…if that matters to you. Warm the coconut oil and mix with the white and brown sugars. Then add the chia seeds soaked in hot water. Stir until nice and silky smooth. In goes some more stuff. I just dumped all the dry right on in that bowl and mixed it up nice and nice. Chopped the fresh cranberries into chunks… One at a time…… Just kidding, I actually laid a cutting board on top of the cranberries, applied a little pressure and sliced through the cranberries.. Does that make sense? I hope so, because its is much easier and faster and the cranberries don’t all roll away. The chopped cranberries, coconut flakes and the chocolate chips go in to be mix all up. I used my hands to form the balls and gave each mound a little smoosh, but not completely flat. Then into a preheated 375 degree oven for about 13-15 minutes or until a nice golden brown. A cup of hot coffee and a plate of warm cookies… I am the nicest, right! (After his nice cookie rest I proceeded to do a little nagging, so the day evened out) So today is probably a great day for everyone to make cookies. It’s freezing out, its saturday and well, just cause. You might even be looking for a great recipe to make for that big party your going to. You should make these cookies. Preheat oven to 375 To start, take the chia seed and soak them in the 4 tablespoon hot water for a few minutes. Then in a large bowl, mix together the white and brown sugar with warmed coconut oil. Add in the gelled chia seeds and vanilla and stir until silky and combined. (the warm chia seeds will help everything mix together nicely) Now mix in all the dry. I start with the oats, dump on flour, toss in the baking powder and soda and salt. Mix until fully combines. If the dough seems to dry, add in another tablespoon or two of hot water. Chop the fresh cranberries into halves or smaller and dump them, the coconut and chocolate chips into the bowl of dough and mix. Using a scoop, spoons, or your hands, make little balls and place on a cookie sheet, giving each ball a little smoosh. Into the oven for 13-15 minutes or until golden brown. Remove and cool on rack. Eat a few and hide the rest for later.
I have managed to wear my overalls all week, cause it has been that kind of week. Rainstorms, the loudest and longest clap of thunder I have ever heard, yard and garden work, and many many mosquito bites. Me and the mr. took the afternoon on Friday to go pick strawberries and snap peas down at our farm share and now my hands are stained red and think I have eaten my weight in strawberries over the past two days. And one might think that I would get a little berried out, but every time I walk by the big bowl of berries I left on the table, I grab a few. (pretty much every time I get up in my house, you walk by the table) We also got to spend a little time hanging out with the family and seeing some little littles. Grilled cheese sandwiches (with american cheese of course) drawing on the deck with chalk, and talking about upcoming birthday cake ideas (pink or purple and must have lots and lots of sprinkles!)
And begin that its the 4th of July weekend, the mr. finally busted out our sweet little cast iron hibachi grill and set it up pretty much right in front of the front (and only) door. Once that beast is hot, it really can’t be moved easily, so there was a fire hot grill to navigate around to get out of the house. But it was ok because we grilled up a bunch of veggies (and a few little strawberries…so good!), I made the bestest potato salad that has ever been made (I’ll share the recipe this week) and we had ourselves a most fantastic time.
And fireworks…. well, I am not the biggest fan. (more of a sparkler fan) I mean, I won’t turn away if I happen to be in the area of things blowing up in the sky but I don’t actively go out of my way to see that, especially at 9:30 at night, cause geeze, I am in my pjs, on my way to bed. So no, I didn’t see any fireworks and yes,, I am an old lady.

Being that it was St. Patricks day this week and lots of folks buy up a good amount of cabbage, I figured that this is a good time to get people to try one of my most favorite of favorite meals…..Beet bean and cabbage steaks. I love to play around with food, how to pair textures and colors plus tastes while trying to make whatever I am making healthy and balanced. This is one of my fav creations. And sure, this may seem like a somewhat weird combo, maybe a little like a extremely hippy dippy vegan fake meat thing, and you might be kind of right, but screw if it doesn’t taste like A-mazing. First off, notice how freaking dang pretty this thing is. The roasted beets bring a earthy hearty flavor but also pack a huge punch of color, especially when blended together with the ever so sweet white bean, which brings a nice mellow taste and a great serving of protein. (Beets and beans are meant for each other). Spread that brightly colored, tasty mixture onto of a huge slab of one of my favorites, roasted cabbage with all its crunch and cabbagy flavor and you got yourself a hearty healthy meal of deliciousness.
So maybe this might seem a little out of your normal food routine, but why not try it? Trust me….you will love it and everyone you make it for will think you are a number 1 badass too.
Cabbage, white beans, and beets. There is a lemon involved, but it didn’t make it into the picture.
Notes…. I used white beans, but I have also done this with chick peas and lentils. All are fantastic. Also, I did not peel my beets because I never do.(I do not peel anything the skin is full of goodness and I love the taste) If you don’t want to eat the skin, then peel them. Cabbage is cut into inch thick slabs… I like to us the inter most part of a cabbage head cause I like the core. But use any cut that you want. 2 beets are chopped into chunkers and both the cabbage and the beets are placed on a lightly oiled baking sheets, seasoned with salt and pepper, and stuck into the oven for 20-25 minutes at 400 degrees.
Once the beets are tender and the cabbage is cooked to a nice withered golden pretty, take out of the oven, but leave the oven on. Leave the cabbage on the pan but throw the beets into a blender or a big bowl if using a hand blender with the white beans
Beans and beets get pureed together. Add the juice of 1/2 a lemon (or the whole lemon, depending on your taste) and a pinch of salt and pepper. With a big spoon or spatula, scoop equal amounts of the bean/beet mixture on top of the cabbage steaks and spread around. Sprinkle with cracked pepper and place back into oven for another 5-10 minutes. (You could totally skip the second bake, but I like my cabbage well done and crispy)
Oh ho boy… And with a good squirt of mustard to finish off… I could eat this all day, everyday

Makes 2 Thick Cut Steaks
1/2 head of cabbage (green or red)
2 cups or 1 can of cooked white beans
2 medium beets
1 lemon
salt and pepper
Mustard (Optional)
Preheat Oven to 4oo degrees
Cut two 1 ish inch thick rounds of cabbage from the widest part of the head. Place on a lightly oiled baking sheet. Chop beets into chunks and toss on same baking sheet.(Peel if you want) Sprinkle everything with salt and pepper. Stick into oven for 20-25 minutes or until the beets and cabbage are tender. Remove veggies from oven and place roasted beets into a blender (or bowl if using a hand blender) but leave the cabbage on the baking sheet. Add the white beans, the juice of half a lemon, and salt and pepper to the beets and puree until smooth. Scoop equal amounts of the mixture to each cabbage steak, sprinkle with pepper and place back into oven for another 5-10 minutes to give the beans and beets a nice crunchy crust (You can skip this step if you don’t want to be crusty)
Remove from oven, stick on a plate and drizzle with mustard….Fork and knife are good ways to eat it, but eating it with you fingers makes less dirty dishes.
So its birthday season in my family.. Between September and April there is at least 3 birthdays a month to celebrate, and I usually make the cakes. What better way to share my beet booty then with a chocolatey beet cake. It helps that I went a little crazy at my last CSA pick up and brought home 8 lbs of beets. Yup, that is what I did and I don’t regret one single beet. So birthday+beets makes a happy birthday cake!
p.s. This cake is an ace for the holidays!
Suggestion for serving this super awesome cake, Do not tell anyone that they are eating a cake with beets in it until they are raving about how delicious it is. Over the years, I have learned that people tend to be wiry of veggies in there desert. You are not lying, just omitting unnecessary information for their own enjoyment. Let them eat cake!
I love a good fine grater. Just watch you fingers, blood and beet juice are hard to distinguish between. You might be tempted to eat all of the fine beet, but don’t. Just eat the left overs.
All the ingredients ready to go. I start with the wet the largest bowl cause that were I add my dry. I also whisk or sift together all my dry ingredients. Preheat the oven. I also grab the frosting ingredients.. Let the butter and cream cheese come to room temp.
Mixi the oil and sugar and vanilla. Then the best part, add those beets! Check out how bright that color is !
Add half of the dry. mix just until incorporated then add milk mixture. Mix that in and finish with the other half of dry. Dont over mix that batter
Pour that lovely batter into well greased and dusted cake pans. Taste or don’t taste your cake batter, thats completely up you but it is full of beets and there are no eggs so. Just lick the bowl clean, and the spoon.
Remove cakes from oven when an insert in the middle comes out clean, about 25 minutes. Dont let it over bake… it will dry out. Let cool in pans until you can handle then invert cakes onto wire rack and let cool completely
While the cake is cooling off, time to whip up that frosting.
Cream cheese and butter in the bowl at room temp. Beat it up on medium speed making sure it is fully mixed together.Sift in half the powdered sugar and mix slowly No Matter how hard I try, I always end up with sugar all over me. Add a bit of milk, then slowly sift in more sugar. Beat together and check you consistency. Add a splash more milk if you want a thinner frosting.
Once you get to the desired consistency, add the fun. Orange zest for flavor and color. Beets to really make this beauty pop. Isn’t it amazing? Now frost you cake! Just make sure it cool enough
Look at all those flavor specks! The orange really pops through the pink.

Chocolate Beet Cake with Orange Cream Cheese Frosting
Makes one 9-inch layer cake
Cake Ingredients
2 medium beets measuring about 1 cup shredded + 2 tablespoons shredded
1 cup minus 1 tsp milk or milk subsutie if you want to keep it vegan
1 tsp white or apple cider vinegar
1 cup granulated sugar
1/2 brown sugar
1/2 cup canola or coconut oil
1 tsp pure vanilla extract
2 cups unbleached all-purpose flour
2/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
pinch salt
Frosting Ingredients
1 stick unsalted butter, softened
4 ounces (1/2 brick) cream cheese, softened
3 to 4 cups powdered sugar, sifted
2 tablespoons finely grated beets
1 teaspoon pure vanilla extract
1-2 teaspoons milk
Tablespoon orange zest. More or less to taste
pinch of salt
To roast beets
Preheat oven 400 degrees
Wrap beets in a piece of foil and put on a baking sheet or in a casserole dish. The beets may drip a bit of juice. Roast until beets are easily pierced, about 1 hour. If you think of it, roast the beets ahead of time. The roasted beets will last a couple days in the fridge. Allow beets to cool enough to handle. Finely grate the roasted beets. Peeled or unpeeled is up to you. I never peel. Measure out 1 cup for cake and a tablespoon or two for frosting
To make Cake
Preheat oven 350
Mix milk and vinegar and set aside
MIx oil and sugars until fully incorporated, then mix in vanilla and beets
In a medium bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
Slowly mix in half the dry ingencient them add the milk and vinegar mixture. Mix in the rest of the dry until the batter evenly mixed. The batter should be a bit thick you can mix in another splash of milk to thin it out a little.
Divide the batter between the two well greased and flour or cocoa dusted cake pans. Bake 25- 30 minutes or until toothpick stuck in middle comes out clean.. Cake is done when a skewer inserted in the center comes out clean. Remove cakes and let cool completely.
To make frosting
In a large bowl, beat cream cheese until smooth then beat in butter until combined making sure to scrap the sides of the bowl to get it all. Add the half the powdered sugar, vanilla extract, and a teaspoon of milk and salt. Beat on medium speed until mixed, add rest of sugar and mix until smooth. Add a splash more milk if you want to a thinner frosting. And last but not least, mix in the orange zest and beet. Beat until combined. Refrigerate the frosting for 30 minutes before using.
To frost cake place one layer on a cake stand or platter. Spread a good amount of frosting on first layer then place other layer on top. Scoop rest of frosting on top and evenly spread from top down the side.
I made a pie dough a little while ago with the intention of making a cherry pie…but I ate all the cherries . (I do that a lot… eat all of something that I was intending to use for something else)
And then I think about that saying.. The road to hell is paved in good intentions.
.Well I guess I am going to hell.
So no cherries, but I have a crap load of summer squash (and it’s only the beginning) and a few peaches that are in need of some eating. And what’s that, a container of ricotta in the fridge from lasagna a couple weeks back…. Meant to be and not in hell yet!
Sure, I could have made one single crust galette, sweet or savory, and thrown it to the masses for consumption, but I figured that I might as well just hit two birds with one stone. A dinner and a dessert, all at once, and call it a victory in time management and putting a dent in the pile of squash on the table. (don’t be fooled, I love excess amounts of squash.. It’s like the printer paper of the veggie world.. can be used for everything!) And bonus, only one set of dishes! I mean come on, this is so good, easy and just really pretty. I know, I know….. so smart.
Anyway, here, take a look, get inspired and make some pretty dinsert (dinner and dessert) galettes.
The stuff. For the base, we need one single crust pie dough (that’s going to be for two smaller galettes) and some ricotta cheese. The savory galette has summer squash, salt, pepper, lemon ( the zest) and a couple tomatoes. The sweet needs honey, a peach, and a few strawberries.
And if you want, change up your toppings. Pretty much any fruit or veggie combo would work. And spice up the ricotta if you wan. Garlic, fresh thyme, cinnamon… whatever will make you happy.
First things first. Roll ourt dough. You could cut the dough in half and roll two separate disks, but I just rolled out one big rectangle shape.
And onto the baking sheet and into the fridge to rest.
While the dough is chillin, take half of the ricotta and whip it up with some honey and thinly slice up your fruit.
Take the other half of the ricotta and add a bit os lemon zest, a sprinkle of salt and pepper, and mix that up. And thinly slice up the squashes and dice up the tomatoes.
Two crusts(or one cut in half. Smear the honey ricotta on one side, savory on the other, leaving a boarder so you can fold the dough over.
Now pile the fruits on the honey ricotta, veggies on the savory, and fold the uncheesed part of the crust over. just enough to keep everything from falling out. Sprinkle salt and pepper on the veggies.
Stick into a preheated oven and bake until the crust is cooked all nice and golden brown and crispy.
While the galettes are baking, toss the chunks of tomatoes into a skillet with a splash of oil, salt and pepper and stick it into the oven too. Just bake until the tomatoes are nice and soft. You can stick in the oven right away and let the tomatoes cool, or towards the end of the bake time so that you can eat them warm… these tomatoes are good hot or cold.

Pile the roasted tomatoes onto the savory tart. And if you got it, a bit of chopped freshy fresh basil
And drizzle a little bit more honey on the sweet.
And serve… Is it savory first or do you go sweet?
How about a pice of both. Dnner and dessert.. all on one plate!

-Makes 2 small or one large galettes
a single pie crust (recipe here.. or use whatever dough you like)
1 cup of ricotta cheese
For the savory
2 cups thinly sliced green and yellow summer squash*
2 roma tomatoes
salt and pepper
teaspoon lemon zest
a few fresh basil leaves
olive oil
For the Sweet
2-3 tablesppons honey
1 peach thinly sliced*
3-4 strawberries thibky sliced*
*Note. Feeling like blueberry apricot or maybe potatoes and peas? Swap out any fruit and veggie (and spice) combination you want. The possibilities are endless! And if you want to do just one big galette, go for it.
Roll out pie dough in either 2 separate disks or one large rectange cut in half and.place on baking sheet and stick in fridge. While dough is resting, divide the ricotta into separate bowls. Add the salt, pepper and lemon zest to one, and the honey to the other. Using a fork, whip them up.
Preheat oven to 400 degrees
When the oven is preheated, grab the crust from fridge and smear the ricotta fillings evenly on the middle of each crust, leaving about an inch and a half boarder. Layer on the toppings, (sweet on honey, savory on lemon pepper.. or whatever floats your boat) and fold border over the edges of the filling. Place in oven and bake for about 35-40 minutes or until the crusts are nice and crispy and golden brown.
While those are baking, dice up the tomatoes and toss into a oven safe skillet with a little drizzle of oil and sprinkle of salt. Stick that into the oven for about 10 minutes or until the tomatoes are nice and soft. You can do this right away, or towards the end of the bake time of the galettes… roasted tomatoes are great warm or cold.
When the galettes are done baking, remove from oven and let sit for at least 5 minutes before serving. Top the savory galette with the roasted tomatoes and chopped fresh basil. Drizzle a little more honey on the one with the fruit .
Serve one, then the other, or both at the same time!
Eats good hot, warm, or cold. Utensils not required
