Sunday Happy — The Lovely Crazy

I have two questions. Is it crazy that we still have or Christmas tree up? It is just so nice and still looking as fresh as the day we cut it so I am having hard time saying goodbye to it. I did take all the ornaments off, just left on the lights, so it is kind of like a big house plant right? That is what I am telling myself because that it what it is. Once it start dropping needles or most likely, just after this week, to the goat farm. But as of now, it stays.

Anyway, my other question is, where the hell is winter? For real. When I went to bed Friday night there was a few inches of snow on the ground and when I woke up Saturday morning, it felt like freaking late spring and I barely needed to wear clothes, much less a jacket. And everyone I talked to was all, “Oooh, so nice. Love it love it , blah blah blah”. Me, I hate it. This overly warm winter shit has got to stop. It is making me sad. I need winter, real winter. And that is global warming for ya. Fuck!

Yup, that and everything else this week. I stole (but not really) a new batch of balloons from the gym (the heart finally went down). Went for a nice pre snow melt, snow hike with the mr. Made lunch for Anthony and fixed his fancy pants. But a big part of the week has been spent over at the loft, packing, cleaning, and fixing things because as of this past Friday, little miss Barb is staying there. And now my back porch is full of all the stuff I brought home that I have been meaning to bring over here for the past 3 years. Mostly books, which we have no good shelves for yet (build shelves are on my list of things to do), and a good amount if shit I have to go through again and get rid of. Agh, I hate stuff. I might just stick it all on the curb with a free sign and walk away.

I also have been trying to get into my studio as much as possible. I threw some more mugs, glazed hearts, cleaned tools. Spent time with myself and my goals for selling more pots more seriously which then kind of turned into spending time with all the paperwork that seems to be flowing in from all the other thing in the rest of our life. Because who could forget, new year means new taxes. Oh taxes. I am going to stop there and not think to much more about them for at least another couple weeks, then I will start stressing. The usual way I do it. Ha.

And now its Sunday. Currently raining and still to freaking warm but is getting colder as the day goes on which means a nice layer of ice on everything making for a crap shoot of any outdoor activities today. I really wanted to try and go or a hike but it’s not gonna happen so I will probably just go to the gym, maybe stop in and see the littles ( I haven’t anyone really this week because everyone is back at school and I have been so busy) and then veg out on the couch with my books (recurrently ready 3), coffee, and a sketch pad. Need to get these book shelves designed and built before the momnuent for the need dies and the books stay in boxes an the porch forever.

Holy shit. I am so hot. Like heated to the very depths of my soul and can’t even think straight, hot. And It sucks, but what can we do about it? (Apparently I can bitch about it. Ha!)

We started the week off in the woods doing the camp thing. The park, Allis State Park, was just gorgeous. Nice and quite, lush and green, with a really cool fire tower with views for days. (I climbed it, the mr stayed on solid ground) The weather was amazing and it really was just what we needed. We went for a good hike, made lentils and zucchini for dinner, then just hung around and chilled by the fire. The perfect start to camping season even though I forgot my camp clothes. We were coming from a visit that required me to look decent and I forgot to pack a change of clothes and only grabbed my thin thermal underwear that I sleep in. But lucky me, the mr let me wear his extra shirt so I managed alright. That mr. Always looking out for me.

Back in town we did life as usual although with the heat and all we, especially me, have functioned at a much slower pace. We did manage to go for a bike ride lunch, another couple small hikes, and pick lots of flowers on top of feeding Megans cat everyday. And my garden is growing at a rapid pace and is now on the verge of being overcome by the onslaught of weeds. I just haven’t wanted to spend to much time weeding this week because again, heat and all. Other then that, same old, same old.

Friday I was really excited to spend the afternoon working at the studio. But when I got there, all the kilns were on and reaching maximum temperature so the studio was a bit toasted warm and not the pleasant cool I was looking forward to. After work, the mr and littles picked me up, (they just went to the movies and were complaining how cold it was… brat faces) we went home and I made them pasta because I couldn’t do much more. They played in the sprinkler then we tried to walk around the block but they just couldn’t make it around because of the heat, then Miley felt sick and had to go home. So the mr and Judah brought her home and went to get supplies. Ice cream and chips. We ended up watching Kindergarten Cop which I haven’t seen in like 20 years (it was terrible and Judah loved it) then made Judah a bed in our room so we could all crank the ac for the night and not melt.

Woke up, did the pancakes, went on a few errands, and dropped the boy off to his air conditioned family. Then the heat really just plowed me over. My brain tuned to mush, I cleaned a bit, picked blackberries from the yard, and basically just laid around on the floor and sweated. It was nasty and I was miserable. Meanwhile the mr was outside mowing the lawn because he is a glutton for punishment. And crazy. And that was the day. I was showered and locked away in the bedroom with the ac on by 7. And it was nice.

Currently sitting in the living room, with no ac, at 4am and the tempature is 87. It’s just not right.

Going onwards with the day we are headed back into the woods again and I am optimistic. Camping by a lake in a forest so we should be semi cool?? Or less hot then right now I hope. At the very least we can jump into water. But I am pretty sure the heat, or at least the humidity is going to break today. It has to or else I am a goner.

Hope you al are holding up better then I am. HAHA!

Welp, we had a few days of winter. But all that nice pretty snow, well it%u2019s basically all gone again due to all the freaking RAIN. Honestly, what the real fuck. I am starting to think that we won%u2019t have any real winter this year and I am made as hell about it. And no I don%u2019t want to hear it, that you like the warmer days and all that. It is winter, in Vermont, so it it suppose to be snowy and cold. GRRRRRRRRR. (Rant over)

The week came and went with the usual and such. The mr and I went snow shoeing one afternoon, built new shelves on the wall in the living room, and started talking about a time we need to talk about tax stuff. Blah. I also turned a year older, spent a good amount of time working on my pottery that will be up for sale soon (heart mugs are looking good!), picked up farm share, worked at the studio, and did this and that and what have you.

Then the past few days have been kind of crap with me having some sort of head thing. My head feels like an overinflated ballon that is full of jelly and is wrapped in rubber bands. Not exactly sick but not exactly not sick either. And me being me, and as the mr pointed out, when I feel under the weather I tend to feel guilty and push myself to do stuff which is the exact opposite of what I tell everyone else to do when they feel like crap. Not really the best approach to getting better. So I think I really need to work on being ok with feeling like shit and doing nothing and not trying to clean out the basement. HA

Today the mr and I have a good amount of chores to do so that is the plan for the day. I still, as of now, am feeling like real shit so I am going take it easy while running around. And at least with chores comes coffee and no matter how crappy I feel, I won%u2019t complain about coffee.

I recently found my old cast iron muffin pan hiding in the basement over at the loft. I totally forgot I had it and was very much happy to find it not covered in rust and still looking all nice and basically ready for use. Not even the seasoning and non stickness that I worked hard to produce on it was messed up, which is amazing because I also found another cast iron pan that I left down there and it did not fair as well. It had a little rust and was grimy. Fine by me, I didn%u2019t even want that pan anyway.

And that is basically why I made muffins. Because I wanted to use my muffin pan again.

These muffins. First off, muffins are muffins and are not meant to be a pain in the ass to make. This muffins are not, unless you think pitting cherries is a pain. For that I am sorry, but that is a small price to pay for a tasty ass muffin situation. Secondly, these muffins are well worth the tiny effort it takes to pit cherries because you end up with cherry muffins, and that alone should be enough of a reason. And the fact that they are damn tasty. The mr, who eats everything but never says too much about whatever is going into his mouth, texted me at 630 in the morning while I was at the gym just to tell me how amazing he thought they were%u2026.

Amazing at 630 am. That%u2019a validation.

Now go get yourself some cherries and make some muffins. And it is ok if you don%u2019t have a super sweet cast iron muffin pan. Most don%u2019t. But you are still cool, don%u2019t worry.

To the muffins!

The stuff. In the bowl is flour, rolled oats, baking soda and powder, salt and cinnamon. Also have cherries, brown sugar, almond milk, canola oil, apple cider vinegar, vanilla extract, and a lemon.

Hardest part of the whole shebang%u2026 pitting the cherries. Not my favorite thing to do, but definitely not the worst.

Do it any way you see fit, but I just cut them in half and kind of wedge the pit out with my thumb.

Once all the pits are removed, chop those sherries up into small pieces.

Then make the batter. Mix the dry together with the sugar and the zest of the lemon. Just make sure there are not huge clumps of the sugar in the mixture. Then add in all the wet and gently mix until combined. And then fold in the cherries.

Fill up well grease muffin pans with the batter then sprinkle a little brown sugar and a few oats on top.

Pop those soon to be muffins into a hot oven.

Remove the muffins from pan and let cool on a wire rack.

Cherry oat muffins. You are good.

makes 11-12 muffins

  • 1 1/2 cup all purpose flour

  • 2/3 cup of old fashion rolled oats (plus 2 tablespoons to sprinkle tops with)

  • 1/2 teaspoon baking soda

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup brown sugar (plus 2 tablespoons to sprinkle tops with)

  • 1/2 teaspoon cinnamon

  • A lemon (juice and zest)

  • 1 teaspoon vanilla

  • 1 tablespoon apple cider vinegar

  • 1 cup plant based milk

  • 1/3 cup canola oil

Preheat oven to 350

First thing first, remove steams and pits from cherries. Do it any way that you want, but I find just cutting them in half and kind of popping the pit out with my thumb works best for me. Anyway, once the pits are remove, chop cherries up into small pieces.

Place flour, oats, baking powder and soda, salt, cinnamon, brown sugar, and zest of lemon into a big bowl. Mix together until completely incorporated. Make sure there are not huge clumps of brown sugar, if there are, break them up with your fingers. Add in the milk, oil, vanilla, vinegar, and juice of half a lemon. Gently mix until just incorporated. Now fold in chopped cherries.

Evenly scoop the batter into a well greased muffin tin. (There is enough batter for12 normal sized muffins.) Sprinkle the tops with the extra brown sugar and oats then pop the pan Ito the oven. Bake for 28-32 minutes or until the tops of the muffins are a nice golden brown and a taster poked into one of the muffins comes out clean.

When fully baked, remove muffins from oven and pop them out of the pan. Let cool on a wire rack but feel free to eat one or two warm.

Store any extra in an airtight container on counter for a day or two but in the fridge for about a week. Individual muffins can be wrapped and frozen for a good long will too.

It%u2019s been 14 days since my last farm share pick up with 7 more days to go. (The farmers take a long break at the end of the year, which they all deserve but makes me sad. Or more like hungry.) It is a pretty long stretch for me to have to go without getting me some farm fresh goods. I have been making due, rationing out my roots (the greens were gone within days) and supplementing with lots and lots of frozen zucchini, Swiss chard, and broccoli, so it hasn%u2019t been bad. But now I am worried because with al the supplementing, the chest freezer is looking a little more on the empty side then I would like. And it%u2019s only January. I guess that is what happens when you eat your weight in vegetables everyday. %ud83e%udd37%u200d%u2640%ufe0f

Anyway, I am pretty much out of roots. The turnips were the last of what I had left besides the lone beet that I found stuffed in with the apples. And because they were the last roots and knowing I am not going to have any roots until next week, I wanted to do something a little special with them. That is why I hassledbacked them, which basically means I sliced them up without cutting completely through so they are cut but still stuck together. Does that make since? If not, just look at the pictures.

These turnips, oh these turnips. First off, roasted turnips are amazingly delicious and if you have never roasted one, well you need to get on it and do so. Secondly, the turnips I used are gIlfeather, which if you did not already know, are the Vermont state vegetable. But don%u2019t worry, if you can%u2019t find the gilfeather, regular old purple top turnips work and taste just as fantastic because all roasted turnips are so fantatic. When roasted I might describe them as the cooler, hipper, cousin of the baked potato. Add the avocado cream and seeds, which are the cooler friends of the cooler cousin, and you got yourself a cool dude party! Or basically just a way tastier baked potato situation with fixing.

Now don%u2019t you want a tasty cool hassledback turnip? And yes, I keep wanting to call them David hasselbacks turnips too. Because they are so cool. Am I right? Haha!

To the turnips!

The stuff. Turnip. Either a couple smaller ones or a giant one, up to you. Also need an avocado, a little red wine vinegar and water, salt and pepper, garlic powder, olive oil, and some toasted seeds (if you want).

If using a giant turnip, cut in half. If using small ones, you can cut those in half too or leave them whole. Up to you.

Now to hasselback. Using two guides that are the same thickness (chopsticks or chip clips.. whatever you have lying around that you don%u2019t mind nicking with a knife) slice into the turnip about ever 1/4 inch, right down to the guide, but not all the way through.

Lightly oil a skillet or baking sheet and also rub a little oil all over the turnips and lay them hasselbacked side up. Sprinkle with salt, pepper, and a pinch of garlic powder. Then into a hot ass oven they go.

While the turnips are roasting , make up the avocado cream. Basic, just scoop avocado into bowl (if you have a stick blender) or blender, add in a pinch of salt, the water and vinegar, and blend until smooth.

And back to the turnips. Baked for a little longer then an hour and flipped once, now they are all roasted and crispy and all sorts of ready.

A freshly roasted hasseldbacked turnip smothered in avocado cream and sprinkle with toasted seeds.. Good things here friends. Good things.

serves 2-4

  • 1 large or 2 small turnips

  • salt and pepper

  • olive oil

  • pinch or garlic powder

  • an avocado

  • 1 tablespoon red wine vinegar

  • 1 tablespoon water

  • handful of toasted mixed seeds (I used pumpkin and sunflower seeds)

Preheat oven to 450

Grab turnip(s) and wash thoughtful. If you buy the turnip from the store and it has a wax coating, peel the outer skin, otherwise, you don%u2019t have to. Now to haseslback. Cut the large turnip in half or if using to small ones, you can just leave it whole. Take two, either chopsticks or something that is about 1/4 – 1/2 inch thick, and place on either side of turnip to use as a cutting guid. Slice the turnip about ever 1/4 inch , right down to the guide, but not all the way through. After cutting, place on a lightly oiled skillet or baking sheet and drizzle a little oil in our hand and rub all over. Sprinkle with salt, pepper, and a pinch or garlic powder. Place the turnips in hot oven. Roasts for about an hour, or until the slices of the turnip start to brown and come apart. Also, if you want a little more crispy edge, half way through, drizzle on a little more oil. You can also flip (which I did) the turnip cut side down to finish roasting.

While turnips are roasting, make avocado puree. Scoop avocado into bowl or blender. Add in the water, vinegar, and a pinch or salt. Blend in blender or with stick blender until smooth. If to thick, drizzle in a little more water until desired consistency.

Once cooked and all crispy like, remove turnips from oven, place on a plate and slather on the avocado cream. Sprinkle on toasted seeds and eat to your face hole.

Mid week, I was doing a little pantry cleaning/ inventorying of what I had and needed when I came upon not one, not two, or even three. No, six. SIX, jars of jam. And there are 2 that are already opened in the fridge. I don%u2019t know why, but knowing that there was that much jam in the house made me a little uneasy. Six unopened jars is about 3 jars past my comfort zone. Sure there are so many things you can do with a jar of jam (jelly, preserves, and marmalade included) and now that I am thinking about it, is one of the reasons why I bought a few jars a while back. Then there was Christmas and I think we got at least two jars as gifts so it%u2019s not all my fault, but still, that is just too many jars of jam. Right there I needed to get rid of at least one jar. So muffins. Jam muffins, with poppyseed crust because it%u2019s pretty and nobody ever complains about poppy seeds, or at least they don%u2019t until after they eat them and have poppy seeds stuck in their teeth all day. But that is just our mouths way of saving a little for later, am I right? HA

Anyway, a quick and simple muffin recipe for all of you people out there that might have a jar or two too many of jam in the fridge or pantry%u00a0(I used apricot but any flavor(s) would work) and could use yourself a tasty little muffin situation. I mean who doesn%u2019t want a tasty muffin?

To the muffins.

The stuff. In the bowl is white and white whole wheat flour, baking powder and soda, and salt. Also have apricot jam, oil, almond milk, apple cider vinegar, and orange, and some poppy seeds.

Grab a zester and zest the orange into the bowl with all the dry stuff. Whisk to combine.

Jam, oil, milk, and vinegar. All on top of dry. Whisk that up until just combined. No over mixing. You will get tough (not in a good way) muffins.

Scoop into well greased muffins tins then cover the tops with poppy seeds.

And out of the oven, looking all pretty like.

Pop those muffins out of the tins and cool on a wire rack for a bit. And by all means, don%u2019t wait until they are completely cool.

Now eat you a warm muffin and if they are mini, grab a few. You can%u2019t just eat one mini muffin, that is just crazy.

Make 12 normal size muffins or 24 mini muffins

  • 1 cup all purpose flour

  • 1 1/4 cups white whole wheat flour

  • 2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup plant milk

  • 1/3 cup neutral oil

  • 1 tablespoon apple cider vinegar

  • zest of an orange

  • 1 heaping cup apricot jam or preserves (can sub in any flavor you like)

  • 1/3 cup poppy seeds

Preheat oven to 350

In a large bowl whisk together the flours, salt, baking powder and soda, and the zest of the orange. Add in the oil, milk, jam, and vinegar and whisk until just incorporated. Scoop batter into well grease muffin pans (12 regular or 24 mini) then cover the tops with poppy seeds. Pop into hot oven and bake until risen and a tester comes out clean when one is poked. For mini muffins, check after 13 minutes, for normal muffins, after 16 minutes.

Once baked, remove from oven and pop out of pans when cool enough to handle. Place on a wire rack to cool completely or just start eating them warm.

Store left over muffins in an airtight container for 3-4 days at room temperature. They also freeze well.

In a large bowl whisk together the flours, salt, baking powder and soda, and the zest of the orange. Add in the oil, milk, jam, and vinegar and whisk until just incorporated. Scoop batter into well grease muffin pans (12 regular or 24 mini) then cover the tops with poppy seeds. Pop into hot oven and bake until risen and a tester comes out clean when one is poked. For mini muffins, check after 13 minutes, for normal muffins, after 16 minutes.

Once baked, remove from oven and pop out of pans when cool enough to handle. Place on a wire rack to cool completely or just start eating them warm.

Store left over muffins in an airtight container for 3-4 days at room temperature. They also freeze well.

Happy New Years!

Can you believe it? 2020. Not only a new year but a new decade. I mean, wasn’t it just Y2K like a few years ago? Haha. Y2K. Do you even remember that?

The past week was good. Kicked it off by making a Pokemon ball cake for Judah%u2019s birthday (he is now 10 freaking years old) and going over to participate in birthday party stuff. Then it was New Years Eve and Day, which the mr and I just kind of spent chillin a bit, took an afternoon and ran out of town. Nothing special and no we didn’t stay up all night. I don%u2019t think I could even if I wanted to. HA. After New Years, the fog of the holiday season kind of rolled in. My brain shut down from over stimulation, my body is feeling tired and sore, and I just feel off. I think a big part is the weather. It has been way to warm, damp, no snow, and just not wintery enough. Dang it, I need me some winter!

Anyway, the rest of the week went by. Started packing up the loft so Barb can move in next week before she goes back to school. I have been going to the new gym everyday, trying to get used to that new fancy building (I love it, but still miss the old building). We spent time with Coco and Judah being awesome and eating popsicles. And we have been watching the heart balloon move around he house as it slowly sinks further and further to the floor.

Now we are at Sunday. Not sure exactly what%u2019s in store. I am going to the gym and then there are a few things that we need to get done this afternoon, but we were thinking we might grab a little or two and try to hike up a small mountain. Or maybe even just go for a long walk through some trees. It snowed yesterday and I am so excited and am very much in need of outdoors and trees and quiet.

It SNOWED!!!%u2744%ufe0f%u2744%ufe0f%u2744%ufe0f Finally. And after a good bout of freezing rain. But you know what, I liked that too. But snow. It%u2019s like all of a sudden the natural world makes sense again. No more balmy 50 degree days, just nice and cold. Freezing in fact but I love it. And seriously, my body does too. Those flip days where its damp and cool but not cold makes my hand swell and hurt. Give me teens and I am all good.

Besides the good weather we have had this past week, there hasn%u2019t been to heck of a lot. The mr and I did drive Megans face (and body) down to Boston for a quick hot minute (or literally an hour) to a doctors appointment and then jumped back into the car and drove home. That was a whirlwind of a day. Mostly I have been spending a lot of time down in the basement studio working on mugs and plates and a few other things, trying to stock up on stock for selling purposes and what not. Because after a lot of though and second guessing of myself, I have decided that I am going to try and start selling more of my pottery. Even have a little online store thing (which I am trying to build now and is harder then I care for it to be). I even started a new instagram account for it%u00a0(stemandnode) and am trying to figure out how to sell from that. So yeah, been busy trying to do business things.

Otherwise, same same. The mr has barely been home, working away on a few projects, shoveling snow, and showing apartments. We did get a to have an awesome hang out time and dinner with Judah. We did some drawing, ate some food, and just talked about how awesome we were. (That kid, he is one of my favorite humans.) I also spent time at the studio pugging clay and chatting up members. And finally, with a heavy heart, I moved the Christmas tree out of the house. It now resides on the front porch where it will probably stay for another few weeks. It just looks right out there.

We got even more snow last night (!!!) and snow means snowshoes and that is what we are doing today. I am very much excited. This will be the first time this winter that we are able to go! (due to lack of snow.) After snow shoeing, I think I am gonna hit the library, maybe go restock my spices from the bulk bins at the coop, maybe stop in an see the littles, and then hopefully, just come home and chill a bit. Get ready for a week of things and stuff. Make a big pot of split pea soup and go to bed early. Mellow and quiet. Sounds like an A+ day to me.

I finally got rid of the last of the Christmas tree needles just in time to replace them with glitter for the next few months.. It is my own fault. I didn%u2019t HAVE TO use glitter on a giant ass heart that I made for the mr, but I sure as heck wanted too. (I redact my statement%u2026 I HAD TO) It%u2019s ok though because glitter happens and you just gotta deal with it.

The week was the week. Nothing out of the normal. Nothing overly exciting. Valentines day was nice. The mr covered all the windows with little heart and besides the giant heart I made, I also made the mr a heart cake and heart bread and all his food for the day was basically in the shape of a heart. And we went snow shoeing where we might have almost stole a dog. Maggie was her name and she showed up out of nowhere on the trail which was out in the middle of nowhere. Hiked with us for a while, took off, and showed back up on our way out of the woods. Obviously she lived someplace close by and she did have a collar on (that is how we knew her name) but gosh, she was so sweet. She even walked us to our car and got in like she was ready to go home. Ugh, it hurts my soul a little. I miss having a dog. Who I really miss is Washer. Oh boy, here I am feeling all sad and shit%u2026..But the snow shoeing was amazing! Haha

Anyway, a mellow week. And now it%u2019s the second half of February so it basically going to be spring soon and mellow won%u2019t be staying mellow for long so I am going appreciate it for now, although I am getting little antsy for when I can finally pull out my sandals and open all the windows in the house and dirt. I am getting ahead of myself here. That is still a month or 3 away. But it is on my mind.

The mr and I don%u2019 t have any big plans for the day other then dropping in on the littles and maybe going out for coffee with Barb. We have a few chores that need done so we will probably do those%u2026%u2026 Whoo hoooo!

Did you get a good dumping of snow this week? Sunday was awesome. A good foot and a half and it came down fast. Enough where everyone was pretty much snowed in for a least part of the day. Too bad it was mother freaking cold out so being outside for too long was very uncomfortable, but still. Any snow is good snow to me!

Monday was still crazy with the snow and all the roads so things were not much different then Sunday. We managed to make it up to the hospital for a visit with Coco, and the mr did work some and had to go into town to shavel more, but other then that, we pretty much just hung around the house. I really wanted to go cross country sking or snow shoeing but it was still like -20 out so being outside for more then a half hour wasn%u2019t the smartest. My body couldn%u2019t handle it, but man, after a few walks in that cold, my nose and eyeballs felt like they were going to shatter. Oh and it was my birthday so there was that.

After a semi quiet Monday, it was back to it. Coco was in the hospital up until Friday so we had the older littles all week. So we would work and do our thing during the day but then meet them at home after school, do the homework, eat the snacks, make the dinners, fight about computer time and showers. Just the every day type of stuff. Then we would get them ready for bed, do balloon yoga, look up real estate listing for houses with a private bathroom for everyone that was within their school district (found and it was a million dollars) and then get their butts to bed. Part time parents we are. Good thing we like those littles.

Friday when Coco was finally released from the hospital prison, he and the other two came over for dinner, abc puzzles, and a sled walk. After that Coco went home while the two others slept over. Slightly burnt popcorn while they watched Bio dome and who the heck knows what else they did.. I was so exhausted I passed the F out.

Saturday was pancakes with the normal hoopla and then the littles went home. After that the mr and I did a few things, he worked, I cleaned. Right back to the grind.

I am hoping today will be a good day. We might get a little fresh snow and it%u2019s suppose to be hella warm out (mid 20%u2019s to 30 degrees!) and the roads are not treacherous so that means we can grab our snow shoes and head out into the woods. I need, like really really need some nature action. I didn%u2019t get enough last week. After that, well, I don%u2019t know. Maybe I will just build a snow fort in the woods and hide out for the rest of the week. So if you really need me, you might want to check the trees.

I am kind of sick right now. A chest cold thing and maybe e coli from all the romaine. Plus my arm hurts a shit ton from kind of dropping a 500 pound cast iron sink on it. Oh and I spilt boiling hot water on my leg and burn the shit out of myself, and I grabbed a falling cactus which got a hand full of prickers stuck into it. Plus I am still feeling all sorts of sad about Only. I guess you could say I am not at my finest right now. But this time nest week, I am sure I will be radiant and gleeful. HAHA. (But I sure do hope so.)

The past two weeks have been a blur. Only getting sick and then having to put him down took it all right out of me. Dealing with him being so sick and then the week after him being gone%u2026just so shitty. But there was good stuff too.. There was lots of snow that made me so so happy. Shannon had a pizza birthday party. The family did the annual pre -Thanksgiving Thanksgiving, which the mr and I only spent a short time at because we had to bring Only to the vets. There were dinners with the littles, more snow, cold weather, work stuff, broom shopping, heavy cast iron sink moving. There was stuff.

Then we did a little Thnaksgiving on actual Thanksgiving with Erin and the littles. We played board games (well, they did, I was cooking), made Christmas decorations, listened to Christmas music and danced a little. I made tofu lasagna, mac and cheese, potatoes, and bread. And of course there were veggies and fruit, but yea, starch bomb. But that is what the littles wanted. I am nothing but accommodating. Quite, low key, and everyone was happy. It was a just what I needed.

And then the day after Thanksgiving was Erins birthday so the littles came over again and we made her a cake and they slept over and we watched more Christmas movies and ate pancakes for breakfast all the while I was feeling like garbage. So after we brought them home, I kind of curled in on myself. I can%u2019t deal with being sick.

So today the mr and I are going to keep it a low key day, probably just putz around the house, maybe hang the Christmas lights outside, read a lot, drink lots and lots of hot tea (and coffee). I don%u2019t want to get any sicker then I am so I need to kick it. That%u2019s the goal for the day Get un-sick!

I feel like we are stuck in Narnia with the White Witch. Always winter, always snow. It will be worth it though if I get to meet some talking beavers, but until then, I’ll start looking for the lion. This cold snow shit needs to end.%u00a0

The week has been pretty shity and very very stressful so we are going to leave that alone and I’ll just tell you about good things, like watching all of my house plants that I repotted grow like gangbusters. Or seeing the veggie seedings start to emerge from the dirt.%u00a0Half of them need to be repotted but the other half need to go directly into the ground. Glad I didn’t get to it this week because the snow and the snow and the ice, oh, and the stupid snow. We were with the Miley, Judah, and Emerson every day this week. We helped them clean and organize their bedrooms,which was stressful, but also fun. I almost accidentally %u00a0broke Mileys toes off, Judah showed us magic tricks,%u00a0%u00a0and Emerson taught %u00a0us all the alphabet. (And the mr got to play with so many dolls). There was time for So to stop over so I could fix her dress and eat carrots and make me laugh with all the funny faces. And we even had a few days of some what nice weather where I was able to open the windows in the house (that did not last long). Oh and the fridge, I was able to clean the shit out of the fridge. The week didn’t completely suck.

%u00a0I think that highlight of the week is that we found and %u00a0awesome new couch (and skill saw).%u00a0While we were looking for replacement faucets for the bathroom sink (because it is leaking bad)%u00a0we stumbled upon a very nice, not to big, not to small, vintage, excellent condition, very comfortable, couch. And it was on sale, like super cheap and pretty much exactly what we have been looking for.(there is a picture bellow) %u00a0Our current couch, the little yellow one that we use %u00a0in our spare room, is way to small and very uncomfortable and after today, it’s going bye bye. We pick up the new couch tomorrow. And when we do we will continue or search for a new faucet because we did not find what we were looking for. Until we do we %u00a0will be brushing and washing our hands in the bathtub.%u00a0

Today is going to be the first day in more then a week that the mr and I do not have some crazy crazy happening. So what are we going to do? Well I think we both need to turn off our phone, lock the doors, draw the curtains (we don’t have curtain) and hide from the world. Will that really happen, no, but it’s nice to think about. But I do think we will spend the afternoon relaxing a bit. I’ll paint, or read, the mr will probably work on screens or his fly file (it’s officially fishing season) and then we will go to bed early. Next week is a busy, but hopefully a good busy and not like shitty busy. Wish us luck.

Ah winter.%u00a0Warm and sunny one day, then bam, snow and wind and bitter bitter cold. Why you got to be so fickle winter?%u00a0

I shoveled quite a bit this week. We didn’t get as much snow as some, but.we got enough to keep me busy.. The world is now heavy with fluffy (although it’s pretty heavy now)%u00a0white.%u00a0With all the snow we were able to go for a nice long winter hike AND we went snow showing which was fantastic and beautiful and was a great little end of winter treat. Now my hope is that we were going to finish up winter with this last hurrah this week %u00a0(another storm is a’comin). One more week is fine, I can handle one more week of really cold and snow and ice %u00a0because it will all of a sudden be spring. Then we can finally put the boots away and I can uncover my bike that I prematurely brought out into the world and is now a bike icicle (a bicycle.. haha)%u00a0%u00a0I can make it one more week, I think I kind of have too.

Besides the snow the rest of the week stuff went mostly well. As always there was work, littles, and a grocery cart full of cabbage,%u00a0%u00a0although I did break my freaking camera. I first I thought I just smashed the lense but there is definitely something broken it the body. How it happened? I got the strap caught on a handle while I was taking pictures and it kind of tugged/yanked out of my hand and smashed into the wheel of the kitchen island. So son of a bitch I have to get a new camera. But hey we got new tooth brushes and we all know that new tooth brush day is always a fine day.

Friday night we went out on the town and hit up the opening night of Mileys play Mary Poppins. First off, Miley was awesome and did a fantastic job.%u00a0Secondly, holy crap was that torture. I totally and completely understand that the play was more for the kids, and like the mr said, we were there to watch the kids learn and have fun, but 3 hours of sitting in plastic chairs with grumpy littles and not being able to even hear a word the kids were sayings… It was rough and it kind of kicked my ass. Yes, an elementary school play kicked my ass. But jeez, 3 hours…I guess I am not one for the theater.%u00a0

It’s Sunday and I am feeling fine.%u00a0The house is clean, I washed my hair last night so I don’t have to do it today, and I have a good book to keep me reading throughout the day. I am contepletaing weather or not to play around in the kitchen and maybe start making some bagels?… If not today, this week for sure. It’s officially kinda official. WE MOVED IN!!!! And yeah sure, we might not have a kitchen or a 100% functional shower, but hey, who needs that when you got a real freakin bed to sleep in. (we are showering and preparing food at the loft) Going form sleeping on a futon on wooden slates in a crawl space to our real bed, with a real frame, all in a giant room with windows….. It’s hella crazy.

Other then the move in, the week has been pretty jammed packed. Still spending every minute plugging away at the house all while making sure all of our tenants are keeping warm with working heaters. (we have spent way to much time at the plumbing supply store this week) Barb, the mr and I ditched a day of work and school to travel to the north and hit up the land of Canadian Ikea. The mission was simple. Get a kitchen sink and maybe a cool rug or a shelving unit, and for barb and the mr, to eat as many hot dogs as they could. Success was had. We go the sink, I got a jar and a rug, towels were bought and an obscene amount of hot dogs were eaten (I think they each ate somewhere between3.5 and 5, plus a fro-yo. Me I was happy with my carrots) We we home before dark and spent the remainder of the day hanging up the Christmas lights. It was a grand day indeed.

As for the mr, well he went and turned himself one year older. And what did we do?%u00a0 We went and had a happy birthday party with family and friends at the newly unfinished house. It was all sorts of fantastic. We frantically ran around to pick up all the construction mess, tossed some plywood on the cabinet frames, ran all over to make paper lanterns for the light bulbs hanging from the ceiling and cleaned the toilet. I made huge vats of soup and kept the warm in slow cookers (I am now a new owner of a vintage 70’s crock pot so I guess I need to learn how to use it) and we borrowed an electric griddle, cut up some veggies and fruit and had a soup and grilled cheese party. (shout out to barb for helping me cut all the everything, oh and having the first official dance party with me) A classic homemade vanilla cake with some Duncan Hines frosting and ice cream topped off the night. I must also mention that even with a house full of people, including a bunch of littles, there was barely any food wasted. My brother even asked where he could find my compost bin to toss the orange peels. That might have been the highlight of the night.%u00a0 After the evening my ass was tired so off to bed we went.%u00a0 Then I woke up. Nothing beats waking up at 5am the day after a party to a plywood covered pile of soup crusted dirty dishes.%u00a0 2 hours later, a rag, some peppermint Dr. Bronners and the bathroom sink made things look good again.%u00a0And now the house is full of every chair we have ever owned, every piece of mismatched bowl, plate, cup,jar, and spoon we could find, and a freezer full of wheat bread and lots of carrot sticks.

Yup, things are moving along. Pretty soon I’ll be cooking up a storm in new kitchen and will be bring you all some food posts to boot.%u00a0 The appliances are set to arrive tomorrow and all we have left to do is build the cabinets, run a few water lines, pour a concrete counter………

Today the mr have to remove the 500 plates, cups, bowls and spoons out and the rest of the birthday cake out of the kitchen area and get back to work to makingt he real kitchen thing happen. But the coffee pot and all the coffee has found it’s permanent home. I’ll have coffee all day long. Whoa hoo!

I know it’s early an I know it’s Sunday, but other than that I am having a hard time concentrating on much of anything. All I can think about is paint color, well that and the kitchen stove. (I am getting closer to making that decision. I am secretly hoping Bluestar will just gift me one.) Oh, and how I want to hang some lights on the house because what is the point of having a house without hanging the holiday lights. So I guess I am thinking, just not very clearly.

How was your week? Good I hope. Ours was kind of quite. We spent most of our time at the house working and feeling sick. I might have convinced myself at the beginning of the week that I had listeria due to the fact that I ate a shit ton of some hummus that was recalled due to contamination. But I am alive so I think I am ok. We did get to see lots of family, spend a little time in some woods, and even got to take a afternoon nap .(mostly because I was sick) And it snowed!!!! There is no more snow now, but there was and it was so white and fluffy and great. I am looking forward to having an actual winter this year with some actual snow.

The mr and I are working our butts off, trying to maybe move in soon, like as soon as possible. Yesterday at the house, the mr was downstairs patching up the pantry walls and I was upstairs, painting. The plan was to touch up all the paint and to paint the closet doors. Sounds simple right? Well it wasn’t. Long story short, I spent the entire day painting, hating, remixing, then repainting the closet doors in the bedroom. I didn’t get to anything else. I almost tore my eyes out of my head. I seriously repainted those freaking doors5 times, each time thinking that I likes the color. Then an hour later, after painting front ans back of both doors (they are louved so they take longer) then I would hate the color and start all over again. I was going a little crazy. I blame it on the fumes.

Today I am going to bring over a scented candle (to mask he smell of urethane), put on some Christmas tunes, touch up all the paint in the bedrooms and bathroom upstairs and paint those stupid closet doors one last time, color be damned.%u00a0%u00a0 We are getting there. It’s going to be great

There might even be some time to bust out the Xmas lights!

THE LOVELY CRAZY

It SNOWED!!!%u2744%ufe0f%u2744%ufe0f%u2744%ufe0f Finally. And after a good bout of freezing rain. But you know what, I liked that too. But snow. It%u2019s like all of a sudden the natural world makes sense again. No more balmy 50 degree days, just nice and cold. Freezing in fact but I love it. And seriously, my body does too. Those flip days where its damp and cool but not cold makes my hand swell and hurt. Give me teens and I am all good.

Besides the good weather we have had this past week, there hasn%u2019t been to heck of a lot. The mr and I did drive Megans face (and body) down to Boston for a quick hot minute (or literally an hour) to a doctors appointment and then jumped back into the car and drove home. That was a whirlwind of a day. Mostly I have been spending a lot of time down in the basement studio working on mugs and plates and a few other things, trying to stock up on stock for selling purposes and what not. Because after a lot of though and second guessing of myself, I have decided that I am going to try and start selling more of my pottery. Even have a little online store thing (which I am trying to build now and is harder then I care for it to be). I even started a new instagram account for it%u00a0(stemandnode) and am trying to figure out how to sell from that. So yeah, been busy trying to do business things.

Otherwise, same same. The mr has barely been home, working away on a few projects, shoveling snow, and showing apartments. We did get a to have an awesome hang out time and dinner with Judah. We did some drawing, ate some food, and just talked about how awesome we were. (That kid, he is one of my favorite humans.) I also spent time at the studio pugging clay and chatting up members. And finally, with a heavy heart, I moved the Christmas tree out of the house. It now resides on the front porch where it will probably stay for another few weeks. It just looks right out there.

We got even more snow last night (!!!) and snow means snowshoes and that is what we are doing today. I am very much excited. This will be the first time this winter that we are able to go! (due to lack of snow.) After snow shoeing, I think I am gonna hit the library, maybe go restock my spices from the bulk bins at the coop, maybe stop in an see the littles, and then hopefully, just come home and chill a bit. Get ready for a week of things and stuff. Make a big pot of split pea soup and go to bed early. Mellow and quiet. Sounds like an A+ day to me.

I have two questions. Is it crazy that we still have or Christmas tree up? It is just so nice and still looking as fresh as the day we cut it so I am having hard time saying goodbye to it. I did take all the ornaments off, just left on the lights, so it is kind of like a big house plant right? That is what I am telling myself because that it what it is. Once it start dropping needles or most likely, just after this week, to the goat farm. But as of now, it stays.

Anyway, my other question is, where the hell is winter? For real. When I went to bed Friday night there was a few inches of snow on the ground and when I woke up Saturday morning, it felt like freaking late spring and I barely needed to wear clothes, much less a jacket. And everyone I talked to was all, %u201cOooh, so nice. Love it love it , blah blah blah%u201d. Me, I hate it. This overly warm winter shit has got to stop. It is making me sad. I need winter, real winter. And that is global warming for ya. Fuck!

Yup, that and everything else this week. I stole (but not really) a new batch of balloons from the gym (the heart finally went down). Went for a nice pre snow melt, snow hike with the mr. Made lunch for Anthony and fixed his fancy pants. But a big part of the week has been spent over at the loft, packing, cleaning, and fixing things because as of this past Friday, little miss Barb is staying there. And now my back porch is full of all the stuff I brought home that I have been meaning to bring over here for the past 3 years. Mostly books, which we have no good shelves for yet (build shelves are on my list of things to do), and a good amount if shit I have to go through again and get rid of. Agh, I hate stuff. I might just stick it all on the curb with a free sign and walk away.

I also have been trying to get into my studio as much as possible. I threw some more mugs, glazed hearts, cleaned tools. Spent time with myself and my goals for selling more pots more seriously which then kind of turned into spending time with all the paperwork that seems to be flowing in from all the other thing in the rest of our life. Because who could forget, new year means new taxes. Oh taxes. I am going to stop there and not think to much more about them for at least another couple weeks, then I will start stressing. The usual way I do it. Ha.

And now its Sunday. Currently raining and still to freaking warm but is getting colder as the day goes on which means a nice layer of ice on everything making for a crap shoot of any outdoor activities today. I really wanted to try and go or a hike but it%u2019s not gonna happen so I will probably just go to the gym, maybe stop in and see the littles ( I haven%u2019t anyone really this week because everyone is back at school and I have been so busy) and then veg out on the couch with my books (recurrently ready 3), coffee, and a sketch pad. Need to get these book shelves designed and built before the momnuent for the need dies and the books stay in boxes an the porch forever.

This week has definitely gone by really slow except that it has flown by super fast, you know what I mean? It%u2019s probably because of all the up and down weather and my overall crazy brain that is pulling me all over the place New seasons do that to me, make me crazy.

The week started off with Easter. We went to my moms (half the family didn%u2019t show up (butthole reasons), did some lunch, played outside, and that was that. Then I came home to continue yarding (yarding is a new word I invented that means to spend time in the yard doing yard stuff)

The rest of the week went. We worked, the mr finished putting the floor down in the porch (I forgot to take a picture) He moved the camper and created a new workshop, applied large stickers to doors, made me 6 more raised beds (4 are TRIANGLES!!!). He has been doing all sorts of stuff. Me, I have been spending as much time outside I as I can, in between the piles of papers that I am trying to deal with, working at the studio, throwing pots, thinking about fixing my bike, and all around trying not run through a wall. I am in that head space where everything needs to be done and I am trying to do everything. All at once. Thats my spring brain. All of a sudden and BAM, my brain is awake, the world is awake, and there is a ton of shit to do.

On one of the nicer days (it has been a little chilly and rainy all week) we spent a few hours with Megan her littles and I grabbed the other littles. We took them outside, into the world, away from screen for a little jaunt in the woods, some time on the playground, and a bagel sandwich lunch. Fresh air, stick collecting, and see sawing was the highlight of the afternoon and a highlight of the week. I mean, gown ass people and little littles on the see saw, well you will see. Haha.

Saturday morning, 8 am, grocery store. If you need to grocery shop, this is the time. Yesterday I got to the store and no one else was there except all the stockers who had nicely stocked everything that I was looking for. I got to it before all the other people did and was rewarded with the best cabbages and apples! After that I went home, the mr took off to work with his work guy and I ended up staying home for the morning, cleaning house, doing laundry, and trying to organize the unorganizable. After that the mr came home we went and hung out with the littles for a few and got texted $5 each of store credit to the hardware store which in turn turned into a bunch of new seeds. Yay free seeds!

Today the mr and I were planning on hitting up the Kingdom to watch some jumping trout, but with the weather being as it is (raining and cloudy) we are going to hold off on that and just find a nice little, not too flooded stream for the mr to fish in and for me to sit nearby and spend some time reading. With all the coffee my can cup and bring. It%u2019s gonna be great.

–Our Grocery Stores, Ourselves. Loyalties to the grocery store are deep. I know I have mine, kind of. (I shop around and I am more loyal to the farm then any grocery store.) But I do think there is a definite quality difference to stores, at least around here. You get to know which store sells local. Which stores have the crappy greens, or which store charge and extra $2 for the same exact thing you can get at a different store for that much cheaper. Straight to the farm . Always best.

Another cold and blustery week%u2026 but it’s the middle of January in Vermont so its to be expected.( I just wish I could walk outside for more than 5 minutes without my nose ruining and having the snot freeze to my face) Yup, cold and busy. My Dad has come back to Vermont for a long visit (he moved to Michigan a few years ago%u2026 jerk) %u00a0So while he is here I have been trying to put in as much %u00a0time as possible with him %u00a0all the while trying to do 8 million other things, %u00a0 I figured I owe him a little bit of my time (and lots of food) for helping to raise me%u2026I am such a good daughter. (2 thumbs pointed at me with a big smirk..)%u00a0

%u00a0Let me take you through a few little happy highlights of my week.%u00a0

The father and I went for a little hike with the pup on one of the milder temperature days%u2026 I drove to the trail, locked the car doors and off we went. After getting cold enough where I couldn’t feel my hands-feet-face%u2026 we made our way back to the car. And I reached for the keys%u2026and shuffled around in my pockets%u2026.and felt around in all my pockets again%u2026. and again. Finally, I had to admit it, I dropped the keys. I got a little panicky (I was so cold and the car key is like 300 bucks to replace) but we did the only thing we could do. I stuff everything back in my pockets and off we went in search of the key. We got lucky, my dad found the key only a few minutes into the trail!!! Hooray! A happy hike with a happy ending.

Me and this little made some donuts, but screw the donuts(sweet potato with chocolate frosting).. look at the overalls! I decided a long time ago that when I have kids, they will be wearing nothing but overalls. Osh Gosh FOREVER!%u00a0

I can not say it enough, I am so lucky to live in VT..we have excellent seasons so there is always something to look forward too!

THE LOVELY CRAZY

I have been on a severe citrus kick lately. Oranges, limes, lemons, kumquats. I want it all and have been eating it all. A lot of it all. Espeically the oranges which are just so good right now. We have been going through bags of them faster then ever and I am not mad about it.

Which then brings us to chili. Chili is one of the things that I make on a very regular bases. It%u2019s beans, veggies, tomatoes, and a ton of spices. Easy as can be, most people like it, and I never get sick of it. I mean, how could you get sick of it, it is so good! Anyway. Chili, its great but have you ever added orange to it? Oh man is it amazing. Bright and acidic and sweet. The whole pot of chili just radiates more goodness, more intensity, more, moreness. (I know that doesn%u2019t make sense but you get it.) It%u2019s a whole new level of chili and I don%u2019t if there will ever be a time when I don%u2019t add orange to my chili again. Well at least during citrus season.

But enough about all that, what you really want is to just start making this orange black bean chili so you can eat it. I hear you, so I%u2019ll let you at it.

To the chili!

The stuff. Oranges, black beans, crushed tomatoes, an onion, a couple carrots, a pepper, and jalape%u00f1os. Also lots of cumin, chili powder, ground ginger, garlic powder, and salt and pepper.

Small dice up the pepper, onion, carrots, and jalape%u00f1os. Don%u2019t want it super spicy, don%u2019t add the jalape%u00f1os.

All that stuff gets tossed into a big pot along with all the spices, some salt and pepper, and a little water too. Place on stove to start cooking down the veggies.

Slightly tender and smells amazing.

Now add in the beans, the tomatoes, and the zest and juice of an orange. Mix it all up, set it back on stove and keep on cooking,

Now eat your chili, with extra orange slices to squeeze all over it of course. And maybe you want to serve it with some corn bread? That is entirely up to you, but who would be made about it?

Serves 4-6 people

  • 1 pound cooked black beans drained (about 5 cups or 3 cans)

  • 5 cups crushed tomatoes (or 2 28oz cans)

  • 2 oranges (navel or cara cara work)

  • 2 carrots

  • 1 large onion

  • 1 bell pepper

  • 2 jalapenos (optional)

  • 2 heaping tablespoons cumin

  • 2 tablespoon chili powder

  • 2 teaspoons garlic powder

  • 2 teaspoons ground ginger

  • salt and pepper

Start by chopping up the veggies. Small dice the carrot, the onion and the pepper. If using jalape%u00f1o, dice that into small little bits too. And remove seeds for less heat or leave them if you like it. Once that is all cut up, dump it all into a large heavy bottom pot along with the cumin, chili powder, garlic and ginger powder, and about a teaspoon or so each of salt and pepper. Add about 1/2 cup water, mix it all up, and place the pot on stove on medium heat and start to cook the veggies and spices until they begin to smell fragrant and are ever so slightly tender, which should take 5-10 minutes.

Now add in the beans, the tomatoes, and the zest and juice of one orange. Mix together and keep cooking on medium heat, partially lidded, for about 45 minutes to an hour, stirring once in a while, until the chili has thicken and tastes good to you.

Once done, season to taste with more salt and pepper and either stir the juice of the second orange into the whole pot or serve with slices of orange to squeeze on top.

Eat. Store any left overs in fridge. Tastes delicious cold too.

These are definitely my favorite shaped cutout cookies I have ever made. I mean seriously, carrot shaped carrot cookies, what could possibly ever be better? Nothing, and that%u2019s truth for you.

Not only are they carrot shaped, they are also carrot flavored. Yup, Carrot shaped, carrot flavored, awesomeness. A little cinnamon added to the cookie for little extra boost of flavor and an orange glaze because it works and orange is good and fresh and springing. All good stuff.

You might be thinking, huh, carrot puree in a cookie, well that doesn%u2019t sound right. But it is, it is right. And you know how I know that these cookies are awesome? Well I packed them up, (2 dozen of them) and took them over to the littles house for an after school treat. When I got there, the two older ones had friends over. I asked them if they wanted a carrot which earned me that look that said %u201care you serious%u201d but them showed them the cookies. Of course the wanted a carrot so I gave them each one. They ate their cookies then proceeded to beat the shit out of the mr. Then they asked for another cookies and beat the shit out of the mr some more. This when on and on for about a 1/2 hour until all the cookies were gone and the mr was crouched in the corner with a broom trying to defend himself against 4 rulely kids who where slashing at him with light sabers and spraying him in he face with kitchen cleaner. It%u2019s because they wanted more cookies. (and yes, the littles are getting crazy). So yeah, the cookies are good. Ass kicking good.

Anyway, a cookie with some goodness mix into it, shaped into a great shape, that will make everyone smile and happy. You could make them by yourself, make them with your friends, make them with some kids, with some old people. They are the perfect cookie to leave out for the easter bunny(do you leave carrots out for the easter bunny?) or to serve up at any easter party, spring party, or any garden party you might be attending. This cookie is pretty much perfect for any and every occasion that required a cookie. Or a carrot because carrots are always welcome.

To the carrots! I mean, the cookies!

The stuff. Flour, baking soda, salt, sugar, vegan butter, carrot puree, cinnamon, an orange, some powdered sugar, and food coloring.

Into a big bowl the sugar, vegan butter, and carrot puree go.

Beat for a minute or two until completely incorporated.

Add in all the rest of the dry stuff and mix by hand until it turns to dough.

This is the dough it turned into.

Gather the dough and wrap it or place in a plastic bag and stick it Into the fridge for a few hours or overnight. The dough NEEDS to chill.

After you let the dough be, remove from fridge, liberally dust counter, and roll out dough about 1/4 inch thick.

And then it%u2019s time to cut the cookies out. I unfortunately do not have a cookie cutter so I improvised and make 2 carrot cutouts from paper and hand cut each cookie. That worked but took forever so I got crafty and used a fat Christmas tree cookie cutter then just did a little trim and pinch to make it into a cookie. (I am a genius for that). Any way works, and you can also do other shapes too, the cookies don%u2019t change taste in different shapes. (but that would be so cool if they did)

Carefully place cut out cookies onto a baking sheet, giving them a little space because they do spread a tiny bit.

And into the oven to bake they go.

Out in 10 minutes looking all carrot like.

The glaze. Pretty straight forward. Just zest orange into powdered sugar and juice the orange into the sugar and mix.

Divide glaze and dye one orange and one green

And glaze away. I recommend doing it over a rack and baking sheet to minimize mess because they do drip a bit.

Now just you look at that, carrot shaped carrot sugar cookies .What a sight!

And of course, carrots come in bunches. HA

makes about 2 and a half dozen (depending on size)

  • 2 1/4 cups all purpose flour plus more for dusting

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1/2 cup vegan butter

  • 3/4 cup granulated sugar

  • 1/2 cup carrot puree ( see note about how to make puree)

    For the glaze

  • 2 to 3 cups powdered sugar

  • on orange

  • orange and green food coloring

Note. To make carrot puree, steam a couple carrots until completely soft them blend until smooth.

Place sugar, vegan butter, and carrot puree into a big bowl. Beat with a beater until light and fluffy. Add in the flour, baking soda, salt, and cinnamon and mix by hand until completely incorporated and mixture tunes into dough. Gather dough into a disk and wrap in plastic or place in a plastic bag and refrigerate for at least 2 hours or up to overnight.

Once dough has chilled enough and you are ready to go, preheat the oven to 350.

Place dough on a flour dusted counter and roll out about 1/4 inch thick. Cut out the cookies with a cutter or by hand and place on a baking sheet. Bake cookies for 10-11 minutes or until just starting to turn slightly brown around the edges. Remove from oven and place on a wire rack to cool.

Once cookies are all baked and cooling, make the glaze. Place powered sugar into a big bowl, zest in the orange then add in the juice od half the orange. Mix completely and check consistency. You want it to be slightly running but not liquid, but also not to stiff. Add more juice or more sugar to get it right. Once it is the right consistency, separate into 2 bowls. Dye one green and one orange. Now glaze you cookies. A knife or small spatula works best and yes, the glaze drips a little so do it over a baking sheet, but after about 10 minutes the glaze hardens.

And then you have carrot cookies and all is good. Now go eat a carrot cookie!

Store uneaten cookies in an airtight container for up to 5 days. They can be frozen too.

There is a big difference between thinking about doing something and being motivated enough to actually do it. I have been thinking a lot about doing some baking (among other things, like being a functional human) but I haven’t been feeling all that motivated to actually do it.%u00a0 To my defence we haven’t really been home and food situations have been taking place at sisters or moms house. So yeah, can’t exactly bake a cake, take pictures, and not pull my hear out with 15 people running around the kitchen.. But yesterday I had the afternoon at home to get some shit done and it was the perfect time to open the door,(it wasalmost warm enough to have the door open!!!) put on some tunes, and bake a little something something before we headed over to dinner at my sisters.

Nothing to fancy or overly pretentious, just something that people will eat (especially my mom, she needs all the cake in the word). And a loaf because loafs travel well and sometimes a cake just calls for 90 degree angles. Chocolate because it’s chocolate (everyone likes chocolate) with and orange glaze for a slight pop of brightness and honestly, cause I bought a shit ton of oranges a few weeks back and they need to be used up asap.

A welcome back to the kitchen, simple chocolate loaf cake. And after it was devoured by the family (mom loved it) I thought aboutchanging the name to a “Freak Yeah, Damn Tasty, Super Fantastic, Simple Chocolate Cake”…..%u00a0 but that’s kind of a long name.

The stuff. Got abowl with flour, cocoa powder, salt, baking soda and baking powder, and sugar. Then a cup of what is 1/2 soy milkand 1/2 coffee, some vanilla extract, a little apple cider vinegar, and some oil. That’s cake stuff. The glaze stuff is the powdered sugar, the orange, and another pinch of salt and splash of vanilla.

Super simple. Whisk all the dry together

Then just dump all the wet stuff into the dry and mix it all up until everything is evenly incorporated.

Batter goes into a greased loaf pan and into the oven…….45 minutes later……%u00a0 it’s all cooked and stuff. Ttake it out and let it cool.

While the cake is cooling, make that glaze. Powdered sugar, orange zest, a pinch of salt and a splash of vanilla go into a bowl. Whisk together with just enough orange juice to make it all come together and is all glaze like.

When the cake is completely cooled, drizzle (dump) glaze all over cake. And really, make sure the cake is cooled or else the cake will just absorb the glaze.

Drip drip drip…. Next time I will remember to do this over a plate or something, there is sugary glaze everywhere.

And now the loaf cake is done, ready for eating.

Makes one loaf cake

  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cups sugar
  • 1/3 cup oil (any oil but if you use coconut, make sure it’s melted)
  • 1/2 soy milk
  • 1/2 cup brewed coffee
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla

the glaze

  • an orange (about a tablespoon of fresh zest and 1/2 the juice of half of the orange)
  • 3/4 cup powdered sugar
  • pinch of salt
  • splash of vanilla

Preheat oven to 350

In a large bowl, mix together the flour, cocoa powder, sugar, salt, baking soda and powder. Dump in the rest of the ingredients and mix until evenly incorporated. Pour batter into a greased a 9x5loaf pan then stick into the oven. Bake for about 45 minutes or until a tester comes out clean

To make the glaze, mix the sugar, a tiny pinch of salt and the zest of the orange together. Add in a splash of vanilla and slowly add in orange juice until the glaze is the consistency that you want.(not to thick or to thin)

Once cake has completely cooled, drizzle the glaze all over the cake.

Now you can grab a knife, cut a slice,and call it a day.

My fingers are almost always stained a bright pink. My cutting board and counter tops, pink. Look closely at at dish towels and you will find pink blotches all over them as with any of my light colored clothes. You would think after years of trying to remove beet stains form everything that I would have gotten a system down or at least had a designated cutting board for them, but no. That would be to easy and really,%u00a0 I think I kinda don’t care.%u00a0 So pink my things will be.

Beets. You either love them or you hate them. I love them (so much), the mr, well I am making him love them. He needs to love them because I end up putting beets in everything. If you are a hater, there is still turn into a lover. But maybe you have never even eaten a beet or haven’t in a long long time.%u00a0 I am actually surprised at how many people I have talked to that have never tried beets before. If you are one of those people, stop being that person and eat one already. OR if you think you hate them, why don’t you give them a second try, I bet you will change your mind. Sweet but earthy and nice and crisp but kind of juicy..they really are super tasty. And not to mention all the great health benefits(you can look those up yourself) Yup, beets be the shit!

%u00a0And I love a good roasted beet, but really, I prefer my beets raw. Which brings us to this salad. A simple salad of grated up beets, orange juice and toasted hazelnuts. Fast, easy, and tummy satisfying.%u00a0 As long as you don’t hate beets (how could you) then you will love it.

Now you get those beets!

The stuff. A big beet, (or two smaller ones) an orange,( I bought navel oranges and sliced into this one to find it was a blood orange… not complaining), hazelnuts (raw or toasted) apple cider vinegar, and salt and pepper. Optional but also very nice, some greens and or some type of grain. (I happen to have a some quinoa in the fridge)

Hazelnuts. If yours are already toasted, then no need to do it again, but if they are raw, toss them into the oven for a few minutes (hazelnuts taste so much better toasted)

And grab the beet and a shallow dish and grate it all up.

Add to the beet the juice of the orange, a small splash of vinegar to cut the sweetness, and salt and pepper to taste. Give it a good toss and let it sit for at least 5 minutes, if not longer.

And if the hazelnuts are in the oven, take them out when they are slight golden brown. If you want to remove the skins, just stick them in a clean towel and rub it off.

Everything all ready to go.. Any extras are added to bowls.

Beets into bowls, topped with toasted nuts and a cute little orange segment.(if you happen to have one lying around)

Isn’t that just something. Beets are so pretty,, but more importantly, so freaking tasty good.

makes enough for 2 people as a side

  • 1 large beet or 2 smaller beets
  • 1 orange (I used blood orange but any orange would be good)
  • handful of hazelnuts (either already roasted or raw that need to be roasted)
  • apple cider vinegar
  • salt and pepper
  • Optional – quinoa (any grain would work) and or greens

If you hazelnuts are raw, toss them onto a baking sheet ans place them into the oven at 300 for about 6-8 minutes until slightly golden brown and smell so nice. When done remove and if you don’t like the skins, place nuts in a clean towel and rub the skins right off.

Wash beet(s) and grate into a swallow bowl. I don’t peel mine, but peel if you must. Add in the juice of the orange, a splash of vinegar and a dash of salt and pepper. Mix around and let sit for at least 5 minutes (the longer the better)

When you are ready for food, grab a bowl (add anything you want to add to the bottom, like quinoa or greens) and fill that bowl up with the beet salad and top with roasted hazelnuts.

Grab a fork and eat.

There is a joke about Vermonters, that all we talk about is the weather. Well, it’s kind of true. But to our defense, we get a lot of weather, and it’s always changing and intense and both lovely and crazy and all over. So yeah, we talk. A lot, about the weather. And on that topic, I am trying so hard not to complain, but%u00a0honestly, I am getting a little sick, both physically and mentally from all of these %u00a0super, to freaking cold temperatures. Yesterday the high was 0 ( which was at like 2 in the morning) %u00a0and factor in the windchill, the temp stayed at like 25 below. It f**king sucks. I can’t %u00a0stay outside for too long or else I will probably die. The dog %u00a0is having a hard time making it around the block before he gets ice paws, and the mister, well he even started wearing gloves (he wears a sweater all winter and never gets cold%u2026..he is officially cold)

%u00a0And not only is the cold keeping us all indoors, but its making us all borderline sick. We both have been fighting something for the past few week. The headaches, stuffy nose, chest congestions. The puppy is getting super dry skin and gave himself a hot spot. BLAh!! Ok, enough! No more complaining

Because %u00a0I do really love the winter and all the pretty snow!!!!

But we are feeling kind of sick so to make us feel oh so much better, a fantastic, super tasty, healing, good for me, good for you, soup. Turmeric ginger carrot%u2026 oh man. Made with lots of ginger, turmeric and garlic and finished with a drizzle of raw honey. This soup is exactly what we need. All ingredients scream.. FEEL GOOD, BE WARM AND COZY! Almost everything in it has antibacterial and anti inflammatory properties. The veggies are hearty and heathy and just eating soup helps to keep hydrated. And the best part..it tastes so freaking amazing.%u00a0

So whether %u00a0you are feeling a little mah, or just a little hungry.%u2026this soup is where it’s at!

Lots of chopped up carrots, a small onion, a little bit of cauliflower I had left over and a small beet. If you don’t have the cauliflower and or a beet, just use %u00a0ares pepper or another 2 carrots.. no biggy.%u00a0

Then we have the fresh ginger ( you can use powdered) turmeric and garlic. %u00a0All the good healthy spicy and yummy stuff.%u00a0

I accidentally spilled the turmeric on the counter..but it kind of looks like I might have done it on purpose%u2026 yeah, let’s go with that. %u00a0Chop the garlic and he ginger into %u00a0 %u00a0chunksAnd toss into the pot to warm and activate. Just a little toasty toast.%u00a0

And the veggies are roasted and tender and smell so good. %u00a0It took a lot of will power to not eat the whole pan right there.

I added the roasted veggies and 3 cups water straight into my pot %u00a0with the spices because I used an emulsion blender. If you are using normal blender, add the veggies, the toasted spices and the water to the blender and blend until smooth. Then transfer to a pot.

Pretty much all blended together%u2026.(I left a few big chunks in there to snack on while I was waiting to eat serve%u2026I was really hungry) and let to simmer for a little longer…

And now ladle into a bowl and get ready for a fantastic finish%u2026 drizzle a spoonful of raw honey into soup%u2026%u2026.so so good. You could add the honey before serving, but heating it kills all the good antibacterial stuff so that’s why we wait.%u00a0Then %u00a0I sprinkle some chopped kale and chives. (do it if you want, but not necessary)

Now enjoy. Let the warmth wash over you and feel all those good spices helping to fight the good fight to keep you well and all the yummy to satisfy your hunger.

And lets hope for some warm (above 0!!) weather!

Turmeric Ginger%u00a0Carrot Soup

Ingredients

  • 5 large carrots
  • 1 small onion
  • 1 small beet*
  • quarter head cabbage ( or a cup of frozen)*
  • 2-3 teaspoons %u00a0turmeric%u00a0
  • 2-3 tablespoons fresh %u00a0ginger (1/2 teaspoon if using powdered)
  • 4-6 cloves garlic
  • salt pepper
  • raw honey (omit if vegan)

* If you don’t have or want to use beet and or the cauliflower, you can use a red pepper, a small sweet potato, or just use a few more carrots.%u00a0

Chop all veggies into similar sized chunks and toss into a lightly oiled pan or on a baking sheet and sprinkle with salt. %u00a0Stick in oven at 425 for about 30 minutes or until all veggies are fork tender.%u00a0

In a large soup pot or dutch oven, toss chopped garlic, ginger and the turmeric and place on medium heat for a few minutes to activate the spices. Add the roasted veggies and 3 cups water to pot (if using emulsion blender) and blend until smooth. If using a blender, add the toasted spices, roasted veggie and 3 cups water and blend until smooth then transfer to a large pot or dutch oven. Add salt and pepper to taste. Turn heat down to%u00a0%u00a0simmer and let cook for an addition 10 minutes.%u00a0

When ready to serve, ladle soup into bowl and drizzle a spoonful of raw honey into soup. Garnish with fresh chopped kale, chives, cabbage or whatever you want. (or nothing is good too)

Mustard and carrots. %u00a0It’s that simple.

Yup, I eat this at least once a day. It’s that good (and easy). %u00a0Now I must admit that I don’t usually have such pretty carrots (The mister gave me this rainbow of carrots for my birthday) and I usually don’t chop the carrots oh so nicely or have a little vessel of mustard, but I figured for the sake of a picture, you would rather see this then a picture of me standing with the fridge open, chomping on a huge unpeeled carrot, squirting mustard directly in my mouth. (that’s how I usually eat most of my snacks)

Today I kept it simple with plain yellow mustard, %u00a0but I sometimes spice it up with horseradish or jalapeno mustard. Or once in a while I’ll do mustard and sprinkle on (or in my mouth) some nutritional yeast, garlic powder or even red pepper flakes for a little kick. The possibilities of mustard on carrots it endless.

You might be saying to yourself that this is crazy, but really, is it any weirder then some of the things that you eat that others find kind of strange? So maybe just try it. %u00a0I promise, you won’t be disappointed.

%u00a0 %u00a0 I have been meaning do a post on seltzer and syrups for a while now and this one is perfect%u2026 Everyone around me has been getting sick and I am trying my hardest to not get anything.%u00a0

Citrus and ginger%u2026. Two of my favorite things, combined into one super refreshing, light and crisp, thirst quenching drink. Tasty and packed full of vitamin C from the citrus and blood warming, tummy healing ginger. Its kind of%u00a0a feel better elixir, a good for you drink, a sparkler pop. %u00a0A drink everyone can get into %u00a0 %u00a0 %u00a0 (the mister even liked it), And it has no added sugars or nasty coloring, it can’t get much better.

Feeling Happy, feeling crappy, or just plain feeling, this drink is a good for it all.

I made the ginger date simple syrup ahead of time.. All I did what chop 2 1/2 tablespoons fresh ginger and %u00a0about 3 tablespoons pitted dates and added to a pot with a cup of water. Simmered the stuff until the dates were mostly dissolved, about 15 minutes, took off the %u00a0heat and pureed it. I let it steep for another 5 minutes and strained%u2026.no biggy. %u00a0 This is a milder sweet simple syrup. If you like sweeter add more dates or even add a bit of honey%u2026 Do what tastes the best to you.

Juice the lime and blood orange%u2026..so much pretty!

I ended up with about 12 tablespoons of juice from a the lime and the orange.. If you need or want to, juice an additional orange and lime.%u00a0

Add 2-3 tablespoons of the fresh juice per 12oz glass and add about 2-3 tablespoons of the ginger date syrup%u2026(adjust amounts to you taste) Top off with cold plain seltzer water and maybe an ice-cube or two. ( I would have if I had thought to make ice)

So lovely%u2026. so nice.%u00a0I really got into these flavors. This drink has the ability to make you feel warm and cozy while being cold and fresh. It makes me happy.

Blood Orange Ginger Lime Sparkler Pop

Ingredients

  • 2 1/2 tablespoons fresh chopped ginger
  • 3 tablespoons chopped dates (more if you want sweeter)
  • 1 cup water
  • 1 lime
  • 1 blood orange
  • Plain Seltzer water
  • Ice (optional)

For the ginger date syrup

In a small pot on low heat, add chopped dates and ginger to a cup of water. Simmer until dates %u00a0have mostly dissolved, about 15 minutes. remove from heat and puree with either %u00a0a blender to a hand emulsifier. Let steep for another 5 minutes and strain, reserving the pulp (add it to soup or salad dressing). Let completely cool.

To assemble drink, juice blood orange, and lime. Add about 3 tablespoons of the ginger syrup and 2-3 tablespoons of the citrus juice per 12 0z cup. Top with plain seltzer water, give it a light swirl with a spoon or straw and add ice cube if you want. Now have at it!

%u00a0 Whenever me and the mister get invited / show up for dinner at someone’s house, I like to bring at least one thing to contribute to the meal. First, because I am nice like that. Secondly, because I get to make food for other people besides Nick and get new feedback on recipes. (Sometimes I think he tells me things taste amazing when they might not) And thirdly, its nice to mess up someone else’s kitchen besides my own. So last night we went to my sisters and %u00a0I made a salad. %u00a0A very easy and virtually mess free salad%u2026%u2026.I still made a mess (I cleaned it up myself!)

%u00a0The salad I made was a light, crisp, and citrusy%u00a0thing of beauty. Not exactly what one would think to eat on a freezing my face off cold day, but hey, you can’t help what the body craves. Plus, if you %u00a0make it for. lets say, a sister that is making french fries and hamburgers for dinner..then a light and citusy salad is just what you need. Feedback from the mouths that ate it%u2026.Fanstastic combo! Best Salad ever! Never going to eat anything else! Ok, not so dramatic, but this was a winner. And for real,%u00a0this salad takes about five seconds to compile and all the ingredients are really accessible right now so really, why not?%u00a0

%u00a0Nice crisp %u00a0kale. Thinly slices red onion for a nice bite. Orange for that sweet citrusy%u00a0and juicy smack and avocado to add a perfect creamy finish. Lime to make it perfect.%u00a0%u00a0Start with the%u00a0%u00a0base layer of kale%u2026 then first goes the sliced onion. (Make sure it’s thinly sliced or else it will be to overpowering)%u00a0%u00a0Add thinly sliced oranges%u2026oh boy, your half way there!!!

Top with thinly sliced avocado, a sprinkle of salt and drizzle with lime juice. I also served with an extra wedge of lime, there is never too much lime.

Now you can stand back, take a picture, send to all your friends and make them jealous of you fantastically pretty and oh so delicious salad. They will ask, “What is that amazing looking dish you are eating?” Your response will be..”Check out the blog..the lovely crazy%u2026and make it yourself! ” (yes, I am shamelessly plugging myself here)%u00a0

Citrus Avocado Salad (Makes 2)

Ingredients

  • A few good handfuls of kale leaves
  • 1 orange
  • 1 avocado
  • 1 lime
  • 1/2 a red onion

Remove tough stems from kale and chop leaves into small month sized pieces. Thinly slice %u00a0onion, peel and thinly slice orange and cut avocado into%u2026yup you got it, thin slices.%u00a0

Kale into bowls, top with %u00a0onion, orange and avocado. Top with the juice of half a lime%u2026Add a sprinkle of salt.%u00a0
