THE LOVELY CRAZY

The week started off a okay because camping and camping is camping and is always good. We went to Branbury State Park which is right in between Lake Dunmore and the Green Mountain National Forest. We didn%u2019t bring kayaks because we wanted to spend most of the time hiking plus I can%u2019t get wet and be outside in these temperatures%u2026. I will freeze to death. After a nice drive of foliage peeping, we got to the park, picked our site, made tea, and as we were setting up, the mr somehow knocked over his cup and covered his socked foot in boiling hot water. Blisters, big nasty ones, formed right away, but he championed on. Even managed to hike around all afternoon which in hindsight was not the smartest because his sandals were digging into the burns. But he survived and we camped on. He fished, I read, we ate dinner, watched the fire, crawled into the tent, and listened as the rain began. Woke up at the usual time in a slight puddle (it rained hard) tossed the wet stuff into the car, and headed on home to tend to wounds and the business of life.

The rest of the week, well, not going to lie, has kind of sucked for reasons that I am not going to get into. But let%u2019s just say that sometime people can really fucking suck. The shit show has been mostly affecting the mr but the stress is palpable. On top of dealing with our usual life stuff, he has been making so many phone calls, dealing with unhelpful people, driving back and forth long distances on a moments notice. I have been trying to make things easier on him by not being a pain in the ass, making him pumpkin bread and wearing strips on prints and all the bright colors. I think the outfit might have been lost on him, but it made me happy. And he liked the pumpkin bread so that was a win.

Anyway, even as things are kind of shitty, there was still some good things, like having dinner with my mom and Paul, farm share a plenty, and harvesting the scarlet runner beans (the prettiest bean ever!). I got into the studio to glaze my ceramic pumpkins and ghosts with Barb (I dropped a pumpkin and smashed it. That was after I cut my hand open an hour before. Good times) and I saved a kiln from being misfired which I patted myself on the back for. We also stopped over and hung with littles for a hot minute just because we missed them and then made the realization that we just need to get the hell out of here for a while. Fresh places, fresh faces, you know?

Back to Sunday. As of right now we are camping tonight. Suppose to go to Coolidge State Park in the heart of the peak of the foliage with lots and lots of hiking to be had. Hopefully there isn%u2019t more shitty shit that will prevent us from taking off. I will probably lose it if we don%u2019t go and end up running away into the woods anyways. Then maybe someone will find me in a week of two. Yeah, at least a week of staying away from the crazy cray cray. But it would be nice to take the mr with me. He needs the break more then I do.

 What is better for a bake sale then Oreo cookies?  Oreo cookies made from scratch!.

So when my sister called and asked me to make something for my nephews bake sale to raise money for his basketball team, I couldn’t say no. (or I  didn’t want to say no cause any good excuse to bake right!) Plus I had just found this awesome recipe on one of my favorite blogs, my name is yeh, for home made Oreos that I have been super excited to try, so it kind of worked out. But before I committed to the Oreo, I wanted to just double check with my nephew and see what he might want me to make because it was his bake sale. 

This is the conversation we had. And yes, it was through text.

Me- “Hey bud, what do you want me to make for your bake sale? Cupcakes, cookies, donuts, or brownies”

Jack- ” Yea!”

Me- “Yea what?”

Jack- “Make that.”

Me- “Make  what?….Hello!! What do you want me to make? Should I make Oreos?”

Jack- I WANT OREOS!”

Ok.. So it took a little while, but we got there. And after the  the basketball game and the super successful bake sale..

ME-“Did you see the Oreos?”

Jack- “What do you mean?”

Me- “The Oreos I made for the bake sale…the ones you wanted me to make”

Jack- “There was a bake sale? I want Oreos”

Yup, that’s the attention span of my 13 year old nephew. Little shit head. But for real, I had so much fun making these cookies and I am definitely going to be making them again. Plus they were a super hit at the sale.

I am the best aunt! (and sister!)

Cookie Time! Whats going on here is brown sugar and butter  have be beaten together until nice and fluffy Then a good big splash of vanilla and another 2 big splashes of coffee are added to that.(I sacrificed my last few sips of my coffee for these cookies)  The dry stuff, flour, salt and cocoa powder, are whisked together, waiting to be added to the wet.  Mix the dry ingredients into the wet and mix. I ended up just using my hand and kind of squish mixing everything together until in tuned into a nice lovely uniformed dough.  Form the dough into 2 balls and give each a few kneads to get any air bubbles out. Place dough back into bowl and stick in the fridge to sit for 10-15 minutes( it makes the dough a little easier to work with)

Once the dough has had a little time to rest and cool, remove from fridge, one ball at a time. Place on a lightly cocoa or powdered sugar dusted surface and roll out the dough. Grab any size circle (or other shape) cookie cutter and get to shaping the cookies. Notice the tin can in the bowl? I could’t find my biscuit cutters anywhere but the can was the perfect size, and it worked really well. Keep a little bowl of either powered sugar of cocoa to dip the cutter in in between making the cookies. It really helps the dough from sticking and breaking. 

When you have cut out your cookies, use a spatial and place them on a baking sheet. You can try to transfer with you hands, but you end up messing up the shape and most of them will break anyway.

Stick the cookies in the oven for about 15 minutes a batch and continute to roll and cut out the cookies until you have no dough left. 

 While the cookies are getting their cool on, make the cream filling. All you need is a stick of butter, about 4 cups of powdered sugar, some vanilla and a few splashes of heavy cream. Beat that all up until nice and creamy thick and spoon it into a pastry bag (I used a big old ziplock bag) to be piped on the cookies. Filling the cookies is for sure the best part. Separate the cookies into pairs and pipe a big blob of filling onto one of the two cookies. Take the names cookie and place on top, giving it a little smooth to the disperse the cream. Keep doing that until the cookies are all filled.

Stacks of cookies… Sold to the highest bidder! I was told that they sold out within the first half hour at $1.50 a pop….Should have charged $5…. for a good cause right?

And yes, even though he was being a space head and didn’t even care that I just  made him like 50 bucks for his team, I still saved the kid one.He just had to give me either a hug or 5 bucks for it.

From Scratch Oreo Cookies 

Adapted by Molly Yeh from My Name is Yeh!

The cookie (makes about 18 3 inch Oreos)

  • 2 cups all purpose flour
  • 1 cup cocoa powder
  • 3/4 cup brown sugar
  • 1 cup or 2 sticks soften butter (use earth balance for vegan)
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed coffee

The filling

  • 1 stick soft butter (us earth balance for vegan)
  • 2 tablespoons heavy or whipping cream (use a nut or soy milk for vegan)
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Cookies- In a large bowl cream together sugar and butter until light and fluffy. Add in vanilla and coffee and mix together. In another bowl, whisk together the flour, salt and cocoa powder. Add dry to wet and mix together unit a uniform dough forms. Dump out onto a lightly cocoa or powdered sugared surface and knead dough a few times. Split ball into two balls, place in bowl, and stick in the fridge for 15 or so minutes.

Preheat oven t0 325 degrees

When dough is chilled, remove one ball at a time, and roll dough out on a cocoa or powdered sugar dusted counter until its about 1/4 inch thick. With a round (any shape would work) cookie cutter, cut out as many cookies as you can. In between sits, dip cutter in a sugar and cocoa to keep the cookie from sticking. Transfer cut out cookies onto a baking sheet with a spatula.  Take scraps, roll into a ball, and roll out again. Keep doing that until you can’t cut out any more. (You can either bake a weird shape cookie or just eat the dough)

Bake cookies for about 15 minutes or until the cookie has risen a bit and the tops have lost their glossiness and look cooked.  Remove from oven and let cookies dry on a wire rack.

Make the filling

Filling- Beat together butter, sugar, vanilla, and cream until completely mixed and is at your optimal consistency. Add a drizzle more cream if you want to thin out or add more sugar for a thicker cream. 

Stick the filling into a piping bag or ziplock bag an snip the end. With cookies in pairs, pipe a big dollop of filling onto one of the two cookies. Place the naked cookie onto the filled cookie and give a smooth to distribute the filling.

lick your fingers and eat a cookie. 

If selling at a bake sale, charge $3 a cookie…. If it’s for a good cause.

As of right now, these are by far the best cookies I have ever made. Look at them. They are SO CUTE!. Worth all the effort, seeing that I do not own a ghost cookie cutter (although I think my version of ghosts are pretty fantastic) and had to hand cut out each cookie with a knife and a ghost cutout I made a few weeks back. They make me happy just looking at them. That right there is saying something. And I don%u2019t know about you and where you are, but it is getting pretty freaking cold out and I refuse to turn the heat on for a few more weeks so I do what I need to do to stay warm. If that means turning on the oven to bake cookies, then so be it. I have a feeling I am going to be making a few more batches of cookies before the months over. HA! (For reals though.)

These cookies are more or less a traditional sugar cookie with a chocolate ganache type filling, both with a hint of coconut flavor from the use of coconut oil. Something about the whole combination; the cookie, the coconutieness, and the chocolate that really had everyone (I gave them out a Barbs birthday party) praise my amazingness. I guess they are pretty freaking delicious.

Cute and delicious. Best kind of cookie!

And quick note. Yes these are ghosts but think of all the fun shaped sandwich cookies you could make. I am thinking moose shaped cookies next or maybe Christmas trees%u2026 Oh the possibilities!

Now, to the cookies!

The stuff. White sugar, coconut oil, flour, baking powder, salt, vanilla, almond milk, cocoa powder, and powdered sugar. For cookies and filling.

To make cookie dough. Beat toghetet the coconut oil with sugar and vanilla until smooth and fluffy. Add in all the dry ingredients and the almond milk and mix until a dough forms.

Wrap dough in plastic and squish tight. Place in fridge for an hour or up to a day.

After dough has had time in the fridge, grab it and roll it out on a lightly floured surface to about 1/4 inch thick.

Cut out cookie shapes. If you want to cut out eyes or a few different shapes, remember each cookie needs a top and bottom so even numbers folks.

Place cut out cookies on a baking sheet then into the oven they go.

Bakes and ghostly! Place them on a wire rack to cool and keep baking the rest of the cookies.

While cookies are cooling, make chocolate filling. Super soft, almost melted coconut oil goes in a bowl with vanilla and gets beaten together. Add in the cocoa powder, powdered sugar and pinch of salt and kept beating slowly anding in a bit of milk until the whole shebang comes together into chocolate filling awesomeness.

Once the cookies are completely cooled, fill them. The filling might have tightened up a bit so if it is not spreadable, pop into microwave for like 8 seconds to get it to move. Scoop or smear equal amounts of filling onto the bottoms of the cookies and top them off with their tops.

Done, and ready to eat.

Ghosts cookies for all your ghost fueled festivities.

makes at least 16 sandwich cookies

For the cookies

  • 2 1/4 cups all purpose flour

  • 3/4 cup white sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extact

  • 2/3 cup soft coconut oil

  • 5 tablespoons plant milk (I used almond)

For the filling

  • 1 1/2- 2 cups powdered sugar

  • 1/3 cup cocoa powder

  • 4 tablespoons melted coconut oil

  • 1/2 teaspoon vanilla extract

  • 2-3 tablespoons plant milk

  • 1/8 teaspoon salt

Preheat oven to 350

In a bowl beat together the white sugar with the coconut oil and vanilla extract. Add in the flour, baking powder, and salt and start to mix with a spoon or fork, adding in the milk as you go. Keep mixing until completely incorporated and turns to a ball of dough. Gather together into a ball and wrap in plastic. Pat flat and place into fridge for an hour or up to a day.

To cut out cookies. Roll fridgerated dough out on a floured surface to about 1/2 inch thick. Cut out shapes, making sure to have a top and bottom for each cookie. Gather left over dough into a ball and repeat until all the dough is used.

Place cookies on a baking sheet and bake for 13-15 minutes or until they are just starting to lightly brown around the edges. Remove from oven and place on a wire rack to cook.

For chocolate filling. Beat together the melted coconut oil with vanilla. Add in the lesser amount of powdered sugar, salt, and cocoa powder. Beat on low, adding in 2 tablespoons plant milk. Beat until mixture comes together into a thick but spreadable consistency. If it seems too thick, add more milk, too thin, a little more powdered sugar.

Cookie assembly. 2 cookies at a time. A top and bottom. Spread about a tablespoon of chocolate filling to bottom cookies and pop the top on.

Eat cookies. Store what is not eaten in a airtight container for up to a week, but these ghosts will definitely not last that long.

Have you ever have lice as an adult? Wait hold on, let%u2019s back up. No I don%u2019t have lice, but I a few years ago I did and whoa that was some shit. (Thats what happens when you hang with littles all the time.) This week my head starting itching like crazy so there was a minute when I thought I might have gotten them again. But I have had it checked, a few times, and it is just dry skin. From all the hats. Because it has been pretty chilly and I have been cold. So no lice, just hats and cold weather making my head itch. Phew!

Anyway, week was up and down. Started off with camping which was amazing. The drive alone down there (Cooliadge State Park) was freaking fantastic. The peak of foliage and oh boy was it peak. And then when we got to the campground, we went on a nice long hike in the most vibrant world of colors. That was a A+ hike fore sure. Then back to the campground to make fire, eat food, cuddle cause it was super duper cold (got to 33) and crawl into the tent for the night. Woke up, very cold, jumped in o the car and hit the road. Back to town we came.

Then another week of stuff. Life stuff. Not fun stuff. Very very stressful stuff. But stuff that needed dealing and is still being dealt with. Mostly the mr, but when the mr is ain%u2019t happy, ain%u2019t nobody happy (HAHA!) so it was kind of another pretty stressful week. And so that is life.

But the good is still good. I don%u2019t have lice, the world is gorgeous, we had a chilly rainy day which are some of my favorite days. I picked up second to last farm share and heavy stocked up on squash and starting knitting a new hat. I made the cutest cookie ever and went to the dentist which actually sucked but is always good to go and be responsible about dental health. Made an ice cream cake and dinner for Barb for her birthday at my moms for her family party (HAPPY BIRTHDAY!) The lady turned 20 and I can’t even. Then I made her birthday pancakes on her actual birthday and we went grocery shopping so she could run up and down the isles with the mr collecting all the packages of batteries. Because she is now 20 and needs batteries? Yeah, we will just say that was it. And napped. I took a nap this week and it was amazing. I don%u2019t think I nap enough.

Other then that, the week just flew by. Dealing with the stuff, hanging with the people, doing the work thing.

Now its Sunday and yes, we are doing it, camping. Second to last, if not the last time. Depends on if we get that rain next weekend that the weather people say we are suppose to get. So we are making tonight really count. Going to some land on a mountain out in the middle of no where. We are so in need of this, to get the heck away for the night. And it is going to be beautiful and amazing and we have a great hike planned out and there is not cell service. Winter jacket, hats and mittens, and all the blankets we can fit into the are. I am excited.

Guess what guys %u2026.I got myself a sick vintage waffle/ griddle iron. I couldn’t be more thrilled!!!%u00a0I found this thing at the local recycled goods store the other day, along with a very beautiful old white pyrex mixing bowl. It was one of my best thrift store scores! (Checking out the inventory and the condition of all the old things that day, I would say an old lady had just died and all her perfectly keep, mint condition kitchen stuff had just been donated. %u00a0But it’s cool, cause I get the feeling that she was at least 90, with a big loving family, and was happy until the day she died. And I am sure she would be pleased that I have taken over the waffle maker. Thanks old lady!)

%u00a0And now I am pretty sure that %u00a0everything I make for the next week will be cooked on said waffle/griddle. I am serious, I already have a list of things to try and cook on it; cookies, biscuits, granola bars, potatoes, fruit, some type of pasta situations%u2026. the list of possibilities is endless and I bet that at least 1/2 of these things will be totally awesome and amazing.

But first thing first. I need to make dinner.

So waffles for dinner!!%u00a0

Note. These waffles are completely 100% fantastic for any meal you want to make them for. They consist of nothing more then beans, a shit ton of veggies, and just a bit of cornmeal. But don’t let that fool you because they are super packed full of so much flavor, have a really soft tender inside, with a nice crispy outside and are so super pretty. They are wonderful!%u00a0The stuff. First, we got a big old pile of shredded up veggies which include; carrot, beet, sweet potato, onion, parsnip, celeriac, and a little bit of kale. %u00a0A we got a bowl of rinsed and strained white beans, a little bit of cornmeal and salt, pepper, and garlic powder.%u00a0

The makings of something amazing!Before you do anything. get your waffle iron out and preheat it.%u00a0

While thats going on, take you beans, %u00a0add 3/4 cup water and puree until smooth with whatever blending device want to like to use. (I used my hand blender%u2026less to clean)Now collect all the shredded veggies and dump into a big bowl with the bean puree, the spices and the cornmeal. Mix until combined. The batter should be thick, but not dry. If its seems to wet, add more corn meal, or too dry, add a little more water.

Note how my batter turned a magical pink%u2026 I love beets, they make everything pretty! And check out that bowl!When your waffle iron is preheated, oil it if needed (if your not sure, add a little oil just to really make sure your waffles don’t stick) and take appropriate size spoonfuls of the batter and stick on iron. Close it and wait%u2026..My iron has a little light that turns on when the waffles are done cooking, so I waited patiently (ok iI did open it a few time) until light tuned on and removed the perfectly cooked waffles.

Did I mention how awesome my new/old vintage iron is?

SO AWESOME!!

I made a little gaucamole and gave the mister and little bowl of plain Greek yogurt with lemon juice, but feel free to top, drizzle, or dump whatever you want onto these beauties%u2026%u00a0

Veggie Bean Wonder Waffles

Makes 8-10 waffles (in my iron) feeds 2-3 peeps

  • 1 small carrot shredded
  • 1 small parsnip shredded
  • 1/2 a small celeriac root
  • 1 small beet shredded
  • 2 kale leaves chopped into tiny bits
  • 1/2 an onion, shredded
  • 1/2 a small sweet potato shredded
  • 1/2 cup cornmeal
  • 2 cups(or 1 can) cooked, rinsed and strained white beans
  • 2 teaspoons garlic powder
  • teaspoon each salt and pepper
  • oil for iron(if needed)

Note on veggies%u2026 I used what I had in the fridge and shredded, it came to about 3 cups. If you don’t have these specific veggies or only want to use a few.. go for it. Just make sure to have 3 cups of whatever veggies you use.

Take you beans and blend them up with whatever device you would like to use. Once creamy, add to a bowl with the rest of the ingredients. Stir until combined.

Once the waffle iron is preheated, oil it( if needed) and place the recommended amount of batter right on it there. Close and cook until golden brown and waffly.

Serve on a plate with topping of your choice, A few suggestions.. Guacamole, salsa, hummus, mustard, greek yogurt%u2026 anything that tastes good to you.

Eat as breakfast, lunch or dinner…

Fork into face

Yesterday I spent the entire day (ok maybe not the entire day), but a the better part of the afternoon defrosting my freezer. Sure, I do the occasional chip chop here and there, just enough from around the freezer door so it will close, but ever few months I notice that everything in the fridge is not staying cold and that the freezer is not freezing stuff. Thats when I know its for real time to defrost. So a few days ago when I noticed my bananas were turing to liquid in the freezer, I knew it what I had to do%u2026.Completely empty the fridge %u00a0and melt/hack away the 2-4 inches of ice build up that accumulated. It is such a freaking pain in the ass.So on this defrosting day, I took all the stuff from the freezer, stuck it in a cooler, and the rest of the stuff, which is basically all veggies, I just tossed on the table.%u00a0As I am hacking away with a metal spatual, a wooden spoon, and a constant rotation of pots of boiling water, I was thinking about dinner. I figured I might as well just eat up as much of the veggies as I could, you know, so I didn’t have to put them back in the fridge. And also, I was getting pretty annoyed because this particular defrosting session was taking way longer the anticipated, which made making dinner seem like another pain in the ass. %u00a0I figured I might as well just eat everything that is already out on the table, which pretty much narrowed down the “whats for dinner” conversations because it was already all over the place. And so dinner was a humongo salad for me, and for the mister, I made him a monster of a veggie sandwich. (my salad was exactly the same stuff as the sandwich, minus the bagel) Easy, fast, super duper yummy, pretty and piled so high with tons of veggies that the fridge is pretty much empty now.%u00a0

Look at the is beast. I don’t call it a monster sandwich for nothing.

The stuff included in this monster veggie sandwich..

Romaine lettuce, tomato, avocado for there is not real sandwich without them. Thinly sliced radishes, cucumber,a and onion for nice crispy crunch. Shredded beets, carrots, and purple cabbage to give %u00a0more crunch and a bit of sweetness. Then of course there needs to be something pickled, so I used banana peppers cause they are the SHIT!! And lastly some hummus for a nice creamy finish (plus a bit of protein) and yellow mustard because mustard on everything is just right. %u00a0Heres to a mountain if goodness that is no longer in the fridge! Served with a another mountain of roasted parsnips and carrots (more stuff from the fridge) and a tall glass of iced tea.

Lucky that today is farm share pick up cause the fridge is pretty much on empty.%u00a0

A Monster Veggie Sandwich

Note. This is just a guide.. Feel free to use whatever veggies you fancy.%u00a0

  • Either a bagel, 2 slices of bread, or a big chunk of baguette (use a gluten free bread if you want or need too)
  • Hummus- Homemade or store bought
  • Mustard
  • Something pickled like pickles, banana peppers , jalape%u00f1os or all three%u00a0
  • Lettuce, spinach or some kind of leafy green
  • Tomato
  • Avocado
  • Onion
  • Radishes
  • Cucumber
  • Shredded Carrots
  • Shredded Beets
  • Shredded Cabbage

To assemble. Ready your bread.. Toast if you want, and stick it on a plate

On either side, smear the hummus and the mustard. %u00a0

Pick a side, start to stack by evenly disrupting veggies on top of veggies. Place the second piece of bread on top and %u00a0giving a little smooth to keep it together.

And go at it. Cut in half or don’t. Have a napkin or a long sleeve ready to wipe your face.

I don’t know if I have bitched enough about it, but I only have one window in my living space. And as much as I love love love our little tiny loft, I am a person who needs the sun. So when I am home I spend a lot of time siting in front of the window.%u00a0 Over the past few weeks I have been doing a lot of watercolor painting in front of that window and somehow %u00a0between drawings of carrots and %u00a0vintage fans, I ended up making these marbled window stained glass hoops. And I am glade I did because these little watercolor gems really do make a big impact on my one source of sunlight. Even when the day is kind of gray and gloomy, having these in the window make the light seem brighter and happy.%u00a0

We can all use a bright happy window.

So this project is really easy and fast. I recommend that if you are going to go to the trouble (it’s really no trouble) of making one, you might as well make 2 or 5. I actually made a bunch (think Mothers day or Easter presents) and ended up only keeping a s couple. I am going to have to make a few more soon.

You will need-

  • Watercolors%u00a0
  • water
  • paintbrush
  • Sketch paper*
  • A pan or tray with a bit of water%u00a0
  • Embroidery Circles * (As many as you want to make)

*Notes

  • -I tried to use a few different types of paper and found that the sketch works the best. Watercolor paper was a bit to thick and printer paper just kept ripping.
  • -You can buy embroidery circles at any craft store and they usually have a good variety of sizes. Use the sizes that you like.

Take a piece(s) of paper a little bit bigger then the hoop you are working with and stick it into a pan or tray of water. Let it sit there for a few minutes until the paper is completely soaked.Take the wet paper and, oh so gently, crumple into a ball. This part can be a little tricky. You want to make as many creases as possible without ripping that paper. (I ripped a few pieces) I found that if I folded that paper a few time, then crumpled that it was less likely to rip.

Uncrumple the paper and lay it gently onto the inner part of the hoop. Now the fun part. Go to town with the watercolors. I used 2 colors per piece, but you could do 1 or 3, or more. When applying the color, use big gentle strokes and let the colors kind of meld together. Watch as all the crumple veins soak up the paint. Try using different dilutions of color. I applied some color on thinly and some on the thicker side. But really, you can’t go wrong, just keep applying paint until you are happy. I stopped a few times and held it up to%u00a0the window just to see what it looked like. When it looked good, I was done.

When you are happy with the colors, let the paper dry for a while on the hoop %u00a0until it is not longer super wet. I would say about an hour or so, but if you stick it near the heater, it might dry faster. (Just don’t stick it in the oven while you are making bread like I did with one.. It just ended up setting on fire. Oops)

Once its pretty much dry, take the outer ring of the hoop and gently place around the inner hoop and tighten. Being super careful, trim the extra paper from the back of the hoop.

Place your pieces in a window and watch them glow. %u00a0Yow now have a happy window.

No matter what is going on in my day, seeing a blue sky like this puts a smile on my face%u2026.To bad that smile turned to ice and my face froze in place. Because for some reason, winter around here now means below zero all the time. I mean, I love winter, but I am not going to lie%u2026 I wouldn’t mind if the wind would stop blowing and we had a couple of days of above zero weather.. and maybe a good foot of snow. I guess I’ll just have to be patient, cause its bound to happen. I mean, we live in Vermont, and if nothing else, we get weather.%u00a0

Anyways.. another week full of stuff that fills. I am a little taken aback that its already February%u2026 when was it January? Time just keeps going by fast and faster, (especially when I get cabin fever) and I think, “What have I done in the past year?” Well, I have done a lot. I was just looking through pictures from a year ago and found some of our tiny home in working progress. Not to many people can remodel a five unit house and a meat locker to live in, within a year.. by ourselves. (ourselves being Nick and I)..So yeah, that made me feel pretty freaking awesome and accomplished. (I needed to remember that because I haven’t been feeling it) But now I am feeling inspired and am looking forward to some new projects and fun things to come! (hopefully getting my pottery studio up and running, maybe another house remodel and lots of traveling!!%u2026. take that winter blues!)%u00a0

Anyway.. here are a few little bits from my week that made me happy.

The only warm day this week. (20..woo whoo!) Took the little out for a sled ride. She spent the entire time dragging her hands in the fresh snow.%u00a0

And oh how I cannot %u00a0handle how freaking cute she is!! Plus, a shout out to my brother in law%u2026.MADLOVE!

89 cents a pound for fresh organic cranberries. Score!! Made these Oatmeal fresh cranberry coconut chocolate chip cookies%u00a0with them. Big hit.

This picture was taken exactly a year ago%u2026..The mister and I were finally putting in the bathroom of our tiny little home%u2026. And look at that awesome sink! (another amazing salvage yard find) If you ever need or want to remodel a bathroom, I suggest using a old cast iron utility sink. So practical, so functional, so pretty.%u2026.it makes me happy everyday!

I eat vegetables like I breath air%u2026 constantly and almost mindlessly. %u00a0Some people are addicted to sugar or coffee, but me, I am addicted to veggies. ( I am also extremely addicted to coffee) This is my truth, but I am ok with it. %u00a0

All week long I have been hearing about this big game going on this weekend, something to do with a ball and running up and down a field%u2026.not quite sure, but I think it might be a big deal to some people.(I know it’s the Super Bowl, and I have heard about some deflated balls, but that’s the extent of my knowledge) %u00a0I have also have been hearing a lot of party planning around this game, food planning, which is something that I do understand. So I wanted to bring a party snack to the mix, and because of my addiction, my mind goes straight to vegetable. I know that there is traditionally a lot of meat, cheese and hot sauce at these said parties, and that’s totally cool, but I think everyone wants to have a least one awesome meatless cheese-less piece of food to snack on during half time. %u00a0So I give the people what they want.%u00a0

So simple, fast and easy to make. Tasty and healthy as can be. Grab and eat with you hands%u2026. and nice to look at. We got the whole package here. %u00a0%u00a0

Pretty much a little bit of everything that I have in my fridge%u2026.Shredded red cabbage, carrots, beets. Some sliced of red onion, tomato and red pepper. Hummus and a little mashed avocado

Yes, it may look like a mess, but that’s just me trying to make five different things at once. But really, making %u00a0these wraps are simple simple. Just take rinsed and dried green or red leaf lettuce, smear on hummus and mashed avocado and pile on the veggies. Roll and stick with a toothpick to keep from unrolling. See%u2026. simple.So many colors%u2026%u2026 so much pretty.%u00a0Wrapped and rolled…Sliced down the middle, just to see all the pretty inside.

These might be veggie wraps, but man, look at those sausage fingers%u2026(hehehe)

Make for lunch, dinner, party, or snack. Eat them for breakfast, dessert or midnight nosh. Whenever, wherever%u2026..YUMMY YUMMY YUM!%u00a0

Lettuce Wraps%u00a0

Ingredients

Use whatever you want%u2026 but this is what I included in mine

  • Green leaf lettuce
  • Shredded red cabbage
  • shredded %u00a0beets
  • shredded carrots
  • %u00a0thinly sliced tomato
  • thinly sliced red pepper
  • thinly sliced red onion
  • hummus
  • avocado

With each wrap, take a large lettuce leaf and cut out the crunchy rib.(you can slice it up thinly and add to wrap. Smear %u00a0leaf with hummus and smashed avocado, then layer on a bit of each of the veggies. Wrap or roll leaf in on the veggies and stick a toothpick in center to keep from unrolling.%u00a0

Place on a plate and eat or share%u2026 Extras are fantastic to have in the fridge!

Soft huggable mountains%u2026..happy all over!

It started last month when I decided to make cool shaped pillows for all the little littles in family. (they all got fruit or veggies shapes%u2026so cool. I wish I took some pictures) %u00a0I needed to make a bunch so I went a bought this humongo box of stuffing %u00a0thinking that I would end up using most of it and maybe have a little left over to make myself a pill or two. Oh man was I wrong. Those hug boxes could stuff a hundred pillows%u2026the stuffers of stuffing really stuff those boxes stuffed! %u00a0Now I had this giant box of stuffing and a bunch of extra fabric so I just figured that I’d make everyone in my family a pillow. %u00a0I didn’t want to make the any more food shapes but still wanted to do something fun and pretty and huggable. %u2026and then it came to me, %u00a0A mountain! I mean, who wouldn’t want to hug %u00a0a mountain?%u00a0

So I made all the adults in my family a mountain for Christmas. (I am so nice). %u00a0A couple of weeks went by, I had a little extra time and thought, “I should make a mountain pillow for me!”And if you are anything like me (super awesome), one mountain is just not enough and %u00a0you will make an entire mountain range of pillows%u2026%u2026 Mountains all over! %u00a0

This pillow is so easy, no fuss, and can be made any size you like. I made mine on the smaller side, but if you have the fabric and the stuffing, why not go big? Do what feels right to you.%u00a0

And I have to add, these pillows are really great gifts%u2026 I am thinking maybe a lovely Valentines day mountain? Doesn’t that sound fantastic?

What you will need:

  • Sewing machine.(you can hand sew but machine is much much faster)
  • Two pieces(or one piece folded in half) of fleece* for the mountain
  • One small piece of fleece in another color for the mountain top
  • Needle
  • Thread
  • Stuffing

Note: You can use other fabrics, but fleece is more forgiving because it had a little stretch, plus it soft and cuddly.

To start, take you main color of fleece and cut into a mountainy triangle shape. You can go tall and skinny or short and fat%u2026.. any shape you want. %u00a0If you feel like you need to make a paper template and use that to cut, go for it, but I don’t think you really need to.

%u00a0Next, take the contrasting color fleece (the peak) and cut a large square. %u00a0Line up with the top of the mountain peak underneath.

Cut the piece for the peak%u00a0in a jagged %u00a0up and down pattern. Place right side up onto the base %u00a0of the mountain and trim away excess fabric.

Using the zig zag stitch on your machine, sew the jagged edges of the mountain peak right side up onto the right side of the mountain. Go slowly, but don’t worry about making %u00a0it perfect, just make sure to sew over all the jagged edges.%u00a0

Now turn the two pieces right sides facing in on each other. Change the stitch on you machine to a straight stitch and sew around the perimeter of the mountain, leaving a small hole in the bottom.

And make sure to check your seams!

Fold it right side out and stuff it. I started with little bits of the stuffing in each of the corners, then filled in the middle, it makes it easier to fill.

Once you are happy with your stuff job, thread a needle and hand sews the hole shut.

I know, so fantastic%u2026one is just not enough. And if you have gone to the trouble of pulling out the sewing machine, you might as well make a bunch. Just do it!

THE LOVELY CRAZY

Have you ever have lice as an adult? Wait hold on, let%u2019s back up. No I don%u2019t have lice, but I a few years ago I did and whoa that was some shit. (Thats what happens when you hang with littles all the time.) This week my head starting itching like crazy so there was a minute when I thought I might have gotten them again. But I have had it checked, a few times, and it is just dry skin. From all the hats. Because it has been pretty chilly and I have been cold. So no lice, just hats and cold weather making my head itch. Phew!

Anyway, week was up and down. Started off with camping which was amazing. The drive alone down there (Cooliadge State Park) was freaking fantastic. The peak of foliage and oh boy was it peak. And then when we got to the campground, we went on a nice long hike in the most vibrant world of colors. That was a A+ hike fore sure. Then back to the campground to make fire, eat food, cuddle cause it was super duper cold (got to 33) and crawl into the tent for the night. Woke up, very cold, jumped in o the car and hit the road. Back to town we came.

Then another week of stuff. Life stuff. Not fun stuff. Very very stressful stuff. But stuff that needed dealing and is still being dealt with. Mostly the mr, but when the mr is ain%u2019t happy, ain%u2019t nobody happy (HAHA!) so it was kind of another pretty stressful week. And so that is life.

But the good is still good. I don%u2019t have lice, the world is gorgeous, we had a chilly rainy day which are some of my favorite days. I picked up second to last farm share and heavy stocked up on squash and starting knitting a new hat. I made the cutest cookie ever and went to the dentist which actually sucked but is always good to go and be responsible about dental health. Made an ice cream cake and dinner for Barb for her birthday at my moms for her family party (HAPPY BIRTHDAY!) The lady turned 20 and I can’t even. Then I made her birthday pancakes on her actual birthday and we went grocery shopping so she could run up and down the isles with the mr collecting all the packages of batteries. Because she is now 20 and needs batteries? Yeah, we will just say that was it. And napped. I took a nap this week and it was amazing. I don%u2019t think I nap enough.

Other then that, the week just flew by. Dealing with the stuff, hanging with the people, doing the work thing.

Now its Sunday and yes, we are doing it, camping. Second to last, if not the last time. Depends on if we get that rain next weekend that the weather people say we are suppose to get. So we are making tonight really count. Going to some land on a mountain out in the middle of no where. We are so in need of this, to get the heck away for the night. And it is going to be beautiful and amazing and we have a great hike planned out and there is not cell service. Winter jacket, hats and mittens, and all the blankets we can fit into the are. I am excited.

I am feeling pretty sleepy at the moment. Actually, all week I have been tired due to the fact that the mr has been snoring so loud that it wakes me up in my sleep. We both have some allergy stuff going on, but he has got it really bad and so he snores really loud. All. Night Long. And I don%u2019t sleep. It is really annoying.

Other then that, well things are just fine and dandy. HA.

The week started off with camping at Half Moon Pond State Park and oh was that place fantastic. A sweetie little pond in the middle of the woods. We got a camp site pretty much right up against the water and there were not a lot of people so it was super quite. This time of year most camping is pretty sparse as far other campers go which is just the way I like it. After setting up camp we took a great hike to another cute pond high up, went back down and did some kayaking. The mr fished, I paddled around in circles. After that we hung out for a bit and then it started to rain just pinch so we walked around until it stopped. Even the rain was lovely, especially watching it hit the water. It was just one of those times when all was feeling right and good.

And then after we ate, sang kumbaya by the fire, slept, and woke up, we made the coffee and headed back as usual.

Then life. Work, people, dinners with the littles. Picked up farm share where we are getting less and less of the sweet summer produce. I trained a person on how to load glaze kilns. Made banana bread. I also managed to spent way to much time on hold on the phone. The mr kept nice and busy spending half his time painting at one of the houses and half his time digging the hole on the back of the house which made for a slight anxious me due to all the dirt he has been trailing into the house. And best yet, I got my first PUMPKIN. Sure, it is just a little bitty pumpkin, but I got it and I will not eat it until I get a few more to strategically place around the house as edible decor. (Why not buy pumpkins that you can look at AND eat?) Plus the weather. All week, all super great. So yeah, a good hardy week.

Yesterday was Jackson%u2019s 18th birthday! (Happy Birthday buttface!) which just sounds freaking crazy. Sure he is not my kid, but I have a nephew that is now a legal adult. That just seems wrong but it is what it is and I am just tuning into a old lady. Ha. And so we partied family style with food and cake and absence birthday cards (thanks to the mr). We jokes (many to dirty to mentioned) we laughed, we ate, then we left. Early because being a Saturday night the boy (man) had his own parting to do. And I am old so I needed to go to bed.

Back to Sunday. Today we head to Gifford Woods State Park. Really excited about this one. Just last week the mr and I heard a story on VPR on how there are very few parts of the forest in VT that have any old growth (over a hundred years) left and there is old growth forest at this park. I am hoping we get to see lots and lots of big ass trees!!!! What more can you ask for? Maybe a long ass nap on the drive down there. Jeez I am tired.

For the past few days the mr has been telling everyone that yesterday was the official last day of Summer. For some reason he truly thinks September first is the first day of fall. It%u2019s not true as you probably know (the last day of summer is September 22nd) but around here is sure is starting to feel a lot like fall so I%u2019ll take it.

Last weekend camping was a blast. First we headed to Maidstone, the most remote state park in Vt. Left early in the morning, stopped at a yard sale or two then drove down a very long and bumpy dirt road until we got there.. Maidstone was amazing, a big lake in the middle of nowhere off the edge of nowhere in the nowheres of the NEK. The weather was amazing, our campsite was cool with wooden stairs, the hiking was fantastic, and the loons were all loud and vociferous. And the weather, it was just perfect. Cool and partly cloudy. I got to wear a sweater while hiking and pull on my wool socks in the evening. There are few things that can top a cool night under the stars with the sound of water lapping the shore and loons making sweet loon noises all night and right now I can%u2019t think of them.

After waking up maybe a weee bit to early (I can%u2019t help it), we packed up and headed to the next park, Brighton. A pond in little town still in the middle of nowhere, although it felt more somewhere then Maidstone due to the fact that there was a store and a gas station in town. And there was an actual town. We stopped and walked around the little neighborhood and along the train tracks then we found a few little hiking trails in random places, and hiked them. The mr did some fishing, I did a lot of reading, all before we even got the the park at lunch time. Once we got there, the usual occurred with a good hike, chillin by the fire, eating food, and after being out and about all over for the past few days, we were dead beat. So we crawled into the tent as soon as the sun set and passed the F out. Woke up freezing and happy but then kind of sad. Had to get on getting on home.

Then we were home. The mr went straight away to work, I might have passed out a little bit, but then stuff needed doing so I got on that.

As far as the rest of the week, there was the last day of summer vacation surprise dinner and park play we had with the littles which was followed by first day of school. I spent a good chunk of time finishing up a bunch of rainbows (and clouds) and installed them for Art Hop next week. The floors at the apartment were sanded (the mr all the way) and are now in the process of being urethaned. I picked up farm share (I missed it last week so I was running scarily low on veggies), maintained a casual relationship with my own garden, and watched the 15 foot tall sunflower in the front yard bloom. Did this and that and ran all over. Typical stuff.

Now we are back to Sunday again and we are raring and ready. Gonna grab the camping stuff, toss the kayaks on the car, and head out. Going south this weekend to lake Bomoseem. I am very much excited. The weather looks terrific for the day, (it is suppose to rain in the middle of the night but that is totally fine) and we are just ready to be out of town for the day again. Basically we just got back from a long camping weekend and I am dead tired. In between all the hiking, meandering, and not sleeping due to my pointy bones and a mr that snores but is snoring especially loud these days (allergies), I am ready to bed myself. But it was a blast. Now all I need is a shower, a good night sleep, and to check on the garden, then I will be ready to get back out there. I love me the great outdoors!

Being shit ass tired, I am giving myself a pass on accounting caompetley for last week. Basically is was crazy, the mr was crazy, I was crazy. We didn%u2019t go camping. The bar top is in an looking oh so fine. We had food with people. I loaded kilns, the mr worked all over town, we watched my skyscraper sunflower grow even bigger, and baked cupcakes with the littles. That was the gist of it, I think. Basically, just look at the pictures because that is how I remember what I did. HA. (for real) As for this past weekend camping pictures, I get to those later.

And since it%u2019s already Monday, we are already back at it. I got bills bills bill and lots of paperwork to get through today. There is food to process, dentist appointments to go to, art work that needs to be hung for art hop, on top of an apartment floor we need to remove carpet from, sand, and urethane by the end of the week. So yeah, gonna get on that. But first I nap!

Feels like we are nearing the end of summer, no? I am all on board, feeling that feeling one gets when the season starts to change over. It%u2019s that deep down in my bones feeling, the feeling my body gets because it knows whats coming and is getting ready. The shift is coming on fast. Grasp those last summer days as much as you can.

Another intense week. After a super duper good camp at Ricker State Park, it was full steam ahead. The mr has been super crazed, all out, sanding and assembling bowling alleys into gigantic countertops for a local restaurant. Most days he is gone as I get home, home when I am in bed. But not quite as bad as last week. We have managed a few meals together and an adventure or two, like when we went to a church in the islands,, had ourselves a picnic and picked their apples. The apples were not good yet. But the church was lovely.

Other then being busy busy, there was other stuff. Barb and her man child came over for dinner and brought along Coco. We ate, he cried. I gave him a cookie, he laughed and ran around like a lunatic. (Coco, not barbs boyfriend) The older littles have been away at summer camp all week so we saw none of them.(We miss them!) We had dinner at my moms with the boys and Barb and I was lucky enough to see the world greatest tan lines ever. I also worked the last day of art camp (YAY!), picked blackberries, gave the mr a haircut, and scrubbed the shit out of the bathtub. All the fun stuff. Not fun stuff was when the car battery died when I Was trying to leave the house, the underglaze I was bringing home to use dumped all over me and the inside of the car (I was so pissed!) or when I was at the grocery store, lost my credit card, freaked out and ran around the store, then drove home, and back to the store looking for it, only to find it underneath one of my canvas bags in the shopping cart. The whole freaking time. At least I found it though cause I was about to cancel it. Look at me seeing the bright side.

Then I picked up farm share and all the tomatoes. Coming off of last weeks tomato hall, and all the tomatoes that are starting to come in in my garden, I am up to my ears in so many tomatoes. I have been cooking down pots and pots, freezing and jarring and of course eating. Eating so many tomatoes that my belly is on fire. And of course I have no help from the mr. He says he is officially tomatoed out. I wonder how is that possible? I think he is just being a butt is all. But whatever, no more tomatoes for him. (that he will know of. HAHA) And I%u2019l just have to keep on keeping on and eat them. The season only lasts so long.

Yesterday the mr and I took a few hours to get away. We packed lunch and went in search of land. Picked a few properties to look at (but only made it to one) and hiked around the property. It was really nice, had a lot of what we are after but probably not THE property. But close so we are getting there and hopefully we will get there sooner then later. Ready to build our cabin life. And then we went home, I started cleaning and the mr went back to work and didn%u2019t get home until like 3 am this morning.

Not gonna lie, I am bumming. We are not going camping today because well, the mr is still working like a madman and installing those bowling alleys today and tomorrow and we just can%u2019t make it happen. So today, well I am going to make good use of it. Probably going to weed out some dead shit from the garden, maybe do a little replanting. Grocery shopping, clean the car, do a few loads of laundry, return books to the library, process food like a boss. (More tomatoes, hot sauce, freeze chard and pickles!) That and probably do some porch reading. And coffee all day. All. Day. It%u2019s no camping but it will do. Next weekend we are back at it.

It%u2019s been a week of weeks if you know what I mean. The world. There is a lot to process, good and bad. And now I think I need to catch up with my mind. I feel like I have let it run to far ahead of the rest of me. Or maybe I am running away from it? Either way. I need to reign it it and focus. That is the goal anyway.

As our routine, we went camping on Sunday and it was just the best, an unexpected greatness. We started with a great hike through pastures and woods and to a gorge and then headed to the park to pitch the tent. D.A.R State park. Neither of us had ever been there before and hadn%u2019t heard anything about it, so we were not sure what to expect. And it turned out to be just fantastic. Big and spacious, pretty, relaxing, and right on the lake. Very few campers, all of which were old people. So quite. Our site was perfect and there was a sink near the bathrooms to wash dishes in. What more can you ask for? We played on the rock beach, made dinner, hug out by the fire, walked around the camp, went back down to the beach and skipped rocks while watching the sun set, and then crawled in to the tent for the night. The stars were crazy bright, the fireflies were everywhere, the sounds of the waves were faint but there. I was just as happy as as clam. Even when I woke up chilly. And then we woke up, made coffee, the mr fished for a few while I read and watched the sun come up then off and back to life we went.

After we got home Monday things got really busy and completely out of the norm. First off, the mr has been working a time sensitive job that has had him leaving as soon as I walk in the door in the morning and not getting home until I am in bed. And that in itself is not usual, but if that does happen, we will see each other during the day, at least for meals. It might not seem like such a biggy to most people, but for the past 17+ years, we have eaten almost every single meal together, and this week, no meals. I have been eating alone all week. At first I loved it because I love reading while I am eating and only ever do it on the very rare occasion that the mr is not home for a meal. But all week for lunch and dinner, alone. I have read 2 books, but I was starting to get lonely. I missed my mr. So sad. HAHA.

Anyway, while he was gone all week, I did some work, had coffee with my mom, made cookies with the littles, met Barb%u2019s boyfriend, and ate ten thousand tomatoes. I also spent a good chunk of time cleaning out the loft (again) for my dad, and oh, I don%u2019t even know, a bunch of other stuff. Then Jeff Dad came to VT. We went for a hike with couple littles at a state park, sat in traffic on the interstate for far too long, and then went to Megans house where I made dinner for everyone. I got to meet Anthony%u2019s girl friend ( a week of meeting the significant others), got a glimpse of the butterfly chrysalis, and made Sophia cry because we picked all her basil for pesto and she really really didn%u2019t want to share it. So I owe the girl a new basil plant.

Yesterday was family reunion up in Belvidere. The whole crew. Great as always. Seeing family is always the best. I love them all, even if they exhaust me and maybe make me want to run away screaming. But isn%u2019t that the way it suppose to be?

And then we came home, the mr left again to finish this job last night and came home while I was in bed. Again. But now he is done. And I am so excited to have him around, although this week is a new job that will be taking him away again. At least we have today. Camping. Ricker Pond State Park. I am excited. No work for the mr. Just him and me heading out into the wilderness with our tent and sleeping bags and a socks! Socks cause it had been getting chilly at night%u2026.YAY for cool late summer nights! I am so ready for some cool weather and to bust out all my sweaters!!!!

Summer at it%u2019s fullest and greatest. And not so great, at it%u2019s hottest. At least this past week was freaking amazing, especially compared to last weekend. That humid heat damn near killed me!

The week started off with a soggy hike and a heat soaked day of camping and fun times. Groton State forest, at the Stillwater campground. The mr and I were both a little drained and tired from being so so hot but we managed alright, went and did some hiking, the mr did a little fishing, I sat around and read. The normal, just a little slower then usually. But it all changed that night. We woke up and walked down to the water to watch the sunrise and take in the fresh, glorious, air. It was not hot and humid and we was alive again. HA

Then after camp, home we went, back to the week. Stuff happened, like stuff that needed to happen, like those taxes that I have not wanted to talk about%u2026 They are pretty much done. HOORAY!!! All the ups and downs. The few tears, the rage, the anxiety. Over. And now I can stop worring about them for a least a few more months, until next year that is. Because every year. Blah. Stupid taxes.

Besides taxes, there was a dentist appointment that I sat around and waited for but never got to be seen. (SO PISSED) Paul came over for resume help and food. The mr, Barb, Coco, and I spent an afternoon at the park. I weeded for hours in the garden. And lets talk about the garden. Whoa it is going and going. Right now it%u2019s all about the squash, chard, and greens and the tomatoes will be booming soon!!!!!!!!!! That on top of farm share, well I am just one happy, full to the brim, lady.

The rest of the week was and went.

Friday I worked the studio all day then the mr and the littles picked me up. We ran to the store to get supplies, then went home for our first backyard campout. The rule was, besides me, no one was allowed inside at all until just before bed time to use the bathroom and brush our teeth. (Or to go number two. They needed to use the toilet for that. Ha). And so I got dinner stuff ready (In the house but I needed to use the fridge and because I could), we ate dinner at the picnic table, set up the tents, made a fire, did so-mores, played with fire, and the kids ran around hopped up on sugar. We went to the park, walked around the neighborhood, and when it got dark, lit up some sparklers. It was the best! The kids were so happy, the mr and I were happy to be camping again, even if it was just the backyard, and really, it just was so great. Even when we were in our tent trying to fall asleep and all I could hear was Miley and Judah whispering and giggling and playing cards in their tent. Because that is what you do when you camp and it had me falling asleep smiling.

When we woke up (I woke up 3 hours earlier then everyone, made a pot of coffee and read on the porch) the breakfast stuff was ready outside. Eggs and toast on the camp stove. Hot chocolate, and freshly picked raspberries from the bushes in the yard. Then back to the park, and home they went. Probably some of the best camping yet. And now that we know they are awesome in a tent, we are taking them to a state park in the next few weeks. That%u2019s gonna be fun.

Today we are heading south to camp. Lake St. Katherine or maybe Half Moon. Not sure yet. The plan is to get close and see which one feels right. We were going to bring the kayaks but It might rain and thunderstorm during the afternoon and tonight so I figured we can just go hiking instead. I would rather be in the woods and not in the middle of the lake during a lightning storm. That would kind of suck. But watch, it probably won%u2019t rain, and even if it does, I am ok with that. We won%u2019t melt.

Already? That week just blew on by. Probably because of the midweek holiday and that always makes time move in weird ways.

This week felt like a lot went on. Some of the same old, same old, but there was a lot of activities thrown in. We went on a bike ride picnic one day, another day we had lunch at the co-oop with my mom. Then on the third of July a lot of places do fireworks and so, after the mr saying we had to do something this year, we decided to go to the fireworks in Montpelier. Whoa did that kick my butt. Staying out and awake past dark was no way an easy feat. But well worth it. Sure the fireworks were ,well, they were what they were (I don%u2019t really care for fireworks) but the lead up was amazing. On our way to the town we stopped on the side of the road at a giant old graveyard. We were so early that we decided it would be something cool to do while it got dark out. Well this graveyard was on a massive hill and when we got to the top, we had the most amazing view of the valley and where the fireworks were going to go off so, duh, we stayed and walked around. And then it happened. Dusk came, it started to get dark, and all of a sudden. Fireflies. Everywhere. It was magical. And then the fireworks went off and we couldn%u2019t get home fast enough. I was dead ass tired.

The next day, I was exhausted, but oh well. The littles came over for the afternoon and we played the day away in the sprinkler and ran around with water guns. Barb and Paul came over too, ate grilled veggies dogs, mac and cheese, chopped cabbage, and popsicles. We lit the sparklers, walked the block, and then off they all went to do more fire stuff and I went to bed super early. I was still trying to recover from being out so late the night before.

The rest of the week was doing little things around the house, going to the studio, running errands. Being hot.

Then yesterday. A very productive day even with the nasty humid. Grocery shopping, the dump, rainbows, cleaning. I even did a good hour of weeding in the garden even though I was sweating through my soul. Gosh it really was gross. And then I went for a little walk and got caught in a crazy downpour of rain. And I wasn%u2019t made about it. Not one bit.

And it is Sunday again. Today is unplanned for the most part. I%u2019ll bike to gym and thats all I got so far. After yesterday, doing anything outside will be fantastic so I am hoping that the mr wants to go for a hike or something. I know he said there was work he needed to do but come on, mid 70%u2019s and no humidity%u2026. I%u2019ll be dragging his ass somewhere.

THE LOVELY CRAZY

As of right now, these are by far the best cookies I have ever made. Look at them. They are SO CUTE!. Worth all the effort, seeing that I do not own a ghost cookie cutter (although I think my version of ghosts are pretty fantastic) and had to hand cut out each cookie with a knife and a ghost cutout I made a few weeks back. They make me happy just looking at them. That right there is saying something. And I don%u2019t know about you and where you are, but it is getting pretty freaking cold out and I refuse to turn the heat on for a few more weeks so I do what I need to do to stay warm. If that means turning on the oven to bake cookies, then so be it. I have a feeling I am going to be making a few more batches of cookies before the months over. HA! (For reals though.)

These cookies are more or less a traditional sugar cookie with a chocolate ganache type filling, both with a hint of coconut flavor from the use of coconut oil. Something about the whole combination; the cookie, the coconutieness, and the chocolate that really had everyone (I gave them out a Barbs birthday party) praise my amazingness. I guess they are pretty freaking delicious.

Cute and delicious. Best kind of cookie!

And quick note. Yes these are ghosts but think of all the fun shaped sandwich cookies you could make. I am thinking moose shaped cookies next or maybe Christmas trees%u2026 Oh the possibilities!

Now, to the cookies!

The stuff. White sugar, coconut oil, flour, baking powder, salt, vanilla, almond milk, cocoa powder, and powdered sugar. For cookies and filling.

To make cookie dough. Beat toghetet the coconut oil with sugar and vanilla until smooth and fluffy. Add in all the dry ingredients and the almond milk and mix until a dough forms.

Wrap dough in plastic and squish tight. Place in fridge for an hour or up to a day.

After dough has had time in the fridge, grab it and roll it out on a lightly floured surface to about 1/4 inch thick.

Cut out cookie shapes. If you want to cut out eyes or a few different shapes, remember each cookie needs a top and bottom so even numbers folks.

Place cut out cookies on a baking sheet then into the oven they go.

Bakes and ghostly! Place them on a wire rack to cool and keep baking the rest of the cookies.

While cookies are cooling, make chocolate filling. Super soft, almost melted coconut oil goes in a bowl with vanilla and gets beaten together. Add in the cocoa powder, powdered sugar and pinch of salt and kept beating slowly anding in a bit of milk until the whole shebang comes together into chocolate filling awesomeness.

Once the cookies are completely cooled, fill them. The filling might have tightened up a bit so if it is not spreadable, pop into microwave for like 8 seconds to get it to move. Scoop or smear equal amounts of filling onto the bottoms of the cookies and top them off with their tops.

Done, and ready to eat.

makes at least 16 sandwich cookies

For the cookies

  • 2 1/4 cups all purpose flour

  • 3/4 cup white sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extact

  • 2/3 cup soft coconut oil

  • 5 tablespoons plant milk (I used almond)

For the filling

  • 1 1/2- 2 cups powdered sugar

  • 1/3 cup cocoa powder

  • 4 tablespoons melted coconut oil

  • 1/2 teaspoon vanilla extract

  • 2-3 tablespoons plant milk

  • 1/8 teaspoon salt

Preheat oven to 350

In a bowl beat together the white sugar with the coconut oil and vanilla extract. Add in the flour, baking powder, and salt and start to mix with a spoon or fork, adding in the milk as you go. Keep mixing until completely incorporated and turns to a ball of dough. Gather together into a ball and wrap in plastic. Pat flat and place into fridge for an hour or up to a day.

To cut out cookies. Roll fridgerated dough out on a floured surface to about 1/2 inch thick. Cut out shapes, making sure to have a top and bottom for each cookie. Gather left over dough into a ball and repeat until all the dough is used.

Place cookies on a baking sheet and bake for 13-15 minutes or until they are just starting to lightly brown around the edges. Remove from oven and place on a wire rack to cook.

For chocolate filling. Beat together the melted coconut oil with vanilla. Add in the lesser amount of powdered sugar, salt, and cocoa powder. Beat on low, adding in 2 tablespoons plant milk. Beat until mixture comes together into a thick but spreadable consistency. If it seems too thick, add more milk, too thin, a little more powdered sugar.

Cookie assembly. 2 cookies at a time. A top and bottom. Spread about a tablespoon of chocolate filling to bottom cookies and pop the top on.

Eat cookies. Store what is not eaten in a airtight container for up to a week, but these ghosts will definitely not last that long.

And quick note. Yes these are ghosts but think of all the fun shaped sandwich cookies you could make. I am thinking moose shaped cookies next or maybe Christmas trees%u2026 Oh the possibilities!

Now, to the cookies!

The stuff. White sugar, coconut oil, flour, baking powder, salt, vanilla, almond milk, cocoa powder, and powdered sugar. For cookies and filling.

To make cookie dough. Beat toghetet the coconut oil with sugar and vanilla until smooth and fluffy. Add in all the dry ingredients and the almond milk and mix until a dough forms.

Wrap dough in plastic and squish tight. Place in fridge for an hour or up to a day.

After dough has had time in the fridge, grab it and roll it out on a lightly floured surface to about 1/4 inch thick.

Cut out cookie shapes. If you want to cut out eyes or a few different shapes, remember each cookie needs a top and bottom so even numbers folks.

Place cut out cookies on a baking sheet then into the oven they go.

Bakes and ghostly! Place them on a wire rack to cool and keep baking the rest of the cookies.

While cookies are cooling, make chocolate filling. Super soft, almost melted coconut oil goes in a bowl with vanilla and gets beaten together. Add in the cocoa powder, powdered sugar and pinch of salt and kept beating slowly anding in a bit of milk until the whole shebang comes together into chocolate filling awesomeness.

Once the cookies are completely cooled, fill them. The filling might have tightened up a bit so if it is not spreadable, pop into microwave for like 8 seconds to get it to move. Scoop or smear equal amounts of filling onto the bottoms of the cookies and top them off with their tops.

Done, and ready to eat.

For the cookies

  • 2 1/4 cups all purpose flour

  • 3/4 cup white sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extact

  • 2/3 cup soft coconut oil

  • 5 tablespoons plant milk (I used almond)

For the filling

  • 1 1/2- 2 cups powdered sugar

  • 1/3 cup cocoa powder

  • 4 tablespoons melted coconut oil

  • 1/2 teaspoon vanilla extract

  • 2-3 tablespoons plant milk

  • 1/8 teaspoon salt

Preheat oven to 350

In a bowl beat together the white sugar with the coconut oil and vanilla extract. Add in the flour, baking powder, and salt and start to mix with a spoon or fork, adding in the milk as you go. Keep mixing until completely incorporated and turns to a ball of dough. Gather together into a ball and wrap in plastic. Pat flat and place into fridge for an hour or up to a day.

To cut out cookies. Roll fridgerated dough out on a floured surface to about 1/2 inch thick. Cut out shapes, making sure to have a top and bottom for each cookie. Gather left over dough into a ball and repeat until all the dough is used.

Place cookies on a baking sheet and bake for 13-15 minutes or until they are just starting to lightly brown around the edges. Remove from oven and place on a wire rack to cook.

For chocolate filling. Beat together the melted coconut oil with vanilla. Add in the lesser amount of powdered sugar, salt, and cocoa powder. Beat on low, adding in 2 tablespoons plant milk. Beat until mixture comes together into a thick but spreadable consistency. If it seems too thick, add more milk, too thin, a little more powdered sugar.

Cookie assembly. 2 cookies at a time. A top and bottom. Spread about a tablespoon of chocolate filling to bottom cookies and pop the top on.

Eat cookies. Store what is not eaten in a airtight container for up to a week, but these ghosts will definitely not last that long.

When I was a kid, every once in a while my mom would buy those Entenmann%u2019s marbled loaf cakes, (she still might) and I loved them. Chocolate and vanilla swirled into every slice. Super moist and rich with the soft, fluffy top. I would cut a big slice, toast it, then smother it in peanut butter.

Now when I see these cakes, well honesty, I think they kind of look sad. A cake such as a marbled cake, should not be squashed into a box, stacked away on some display case. No cake should have to deal with that. Cakes should be made then oohed and awed at from the comforts of home, only boxed if 100% necessary like in the case of bringing to a friend or giving as a present. Basically, what I am saying is don%u2019t buy pre-made cakes friends, make the cake at home yourself. The cake will like you better for it.

Anyway, I just was thinking about those cakes and my childhood in general and it made me want to make a quick cake all marbled because of the nostalgia and also, I mean, marbled cakes are pretty pretty and why the heck not. And because it is pumpkin season I had to go with pumpkin and chocolate instead of vanilla and chocolate because we all know it was the right thing to do.

Pumpkin spices, rich chocolate. Two flavors in one bite. Who could complain? I don%u2019t think my 10 year old self would have. I think she would have eaten the whole damn loaf (toasted with peanut butter of course).

Nw to the chocolate and pumpkin loaf cake..

The stuff. Flour, baking soda, baking powder, salt, pumpkin puree, brown sugar, white sugar, oil, almond milk, cocoa powder, pumpkin pie spices, coffee, and apple cider vinegar.

Quick and easy. Oil and sugars get a good mix in a big bowl then in goes the pumpkin puree. Mix that in with the milk and apple cider vinegar. Ina separate bowl, mix the flour baking soda and powder and salt. Mix the dry into the wet.

Split the mix in half (eye ball it) and add the spice mix to one bowl and the cocoa and coffee to the other. Mix them until the new ingredients are incorporated. You will then have a chocolate batter and pumpkin spice batter.

Grease a loaf pan then layer dollops of each of the batters into the pan until both batters are gone.

Before the oven and after of the oven.

Place cooked loaf on a wire rack to cool. Really. It needs it. Just wait a least 15 minutes, you can do it.

And then you cut into the load, marvel at the marble, and then eat it.

Two flavors, one mouth.

makes 1 loaf

  • 2 cups all purpose flour

  • 1/3 cup cocoa powder

  • 1 1/2 cups pumpkin puree

  • 1/2 cup white sugar

  • 1/3 cup brown sugar

  • 1/3 cup neutral flavored oil

  • 1 tablespoon apple cider vinegar

  • 1/4 cup plant milk

  • 2 tablespoon coffee (or water if you don%u2019t have coffee)

  • 1 teaspoon baking soda

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 heaping tablespoon pumpkin pie spice or 2 teaspoon cinnamon 1/4 teaspoon each ginger, nutmeg, allspice, and clove

Preheat oven to 350

In a large bowl, mix together the white and brown sugar with the oil until combined and there are no chunks of sugar. Add in the pumpkin puree and the milk and vinegar and mix until incorporated. In a separate bowl, mix together the flour, baking powder, baking soda, and salt. Add the dry mixture to the wet and gently mix until just combined. Scoop half of the batter (eye ball it) into other bowl. Add the pumpkin pie spices to one bowl and fold it into batter until incorporated. Add the cocoa and coffee to the other batter and fold it in until incorporated.

Interchange scooping the batters into greased loaf pan. One, then the other, to create the marbled effect, until both batters are gone. Place pan into oven and bake for 55-60 minutes or until a tester comes out clean.

Remove pan from oven and pop bread out and place on a wire rack to cool.

Cut a slices, eat, be happy.

Store bread in airtight container for 3-4 days at room temperature or just slice it up and freeze pieces.

As of right now, these are by far the best cookies I have ever made. Look at them. They are SO CUTE!. Worth all the effort, seeing that I do not own a ghost cookie cutter (although I think my version of ghosts are pretty fantastic) and had to hand cut out each cookie with a knife and a ghost cutout I made a few weeks back. They make me happy just looking at them. That right there is saying something. And I don%u2019t know about you and where you are, but it is getting pretty freaking cold out and I refuse to turn the heat on for a few more weeks so I do what I need to do to stay warm. If that means turning on the oven to bake cookies, then so be it. I have a feeling I am going to be making a few more batches of cookies before the months over. HA! (For reals though.)

These cookies are more or less a traditional sugar cookie with a chocolate ganache type filling, both with a hint of coconut flavor from the use of coconut oil. Something about the whole combination; the cookie, the coconutieness, and the chocolate that really had everyone (I gave them out a Barbs birthday party) praise my amazingness. I guess they are pretty freaking delicious.
