Pumpkin Chili — The Lovely Crazy

CHILI MONDAY!Well it is, but I am talking about making some super duper, yes I’ll have seconds, tummy filling, bone warming, pumpkin chili.. And heathy oh so healthy to boot. Reals, it’s the best.
This pumpkin chili recipe had evolved over the years. The first time I made pumpkin chili was for my very first dinner party that I threw back in college. Instead of cutting the pumpkin and adding it into the chili, I chopped the little pumpkins in half, roasted them, and used the halves as bowls..A good idea except no one at the pumpkin and I was left with a bunch of slobbered on roasted pumpkin halves. ( I probably should have said something, but being a few drinks in, I didn’t think to say anything about the edible bowls and I don’t think I noticed the abandoned pumpkins until the next morning). After that somewhat failed attempt, I started adding the pumpkin to the chili and left the drinking tip after the food is served. ( I learned so much in college)
But yeah, this recipe has traveled a few years with me and every time I make it, I always think, jeez, why don’t I make this every weekend. Well maybe now I will.

Don’t let this spread scare you.. it’s just veggies from the fridge, a chopped up pie pumpkin and pre soaked beans. Oh and some canned tomato and spices. It took about 10 minutes of hands on time and one big pot. No big mess to clean up and you can get rid of those veggies in the fridge that are on the way out. WIN WIN WIN!

All the chopped veggies, the chopped pumpkin go into the pot with salt. pepper , and spices.( I added a fresh jalapeno and about 5 cloves of garlic to this mixture) Let the mixture sweat for about 5 minutes, giving it a quick stir or two.

Now toss in the beans and the tomatoes… Add a cans worth of water as well. Bring to a boil, then turn to low heat and cover.

A last minute addition.. I added a few chopped up kale leaves. I wanted a little more bright color and adding kale to anything is a good idea.

I added a little sliced avocado to one of the bowls (I only had enough for one) and cut up some lime wedges to squeeze on top. (I did, Nick didn’t)
Best chili I have made in a long time…and yes, there is a bunch of left over which is fantastic because now I have lunch for the next couple days…

- small sugar pie pumpkin
- 2 cups dried beans..I used a 1 1/2 cups black and 1/2 cup kidney or 2 cans of beans
- 28 oz can of crushed or diced tomatoes
- 1 small onion
- 1 small
- 1 carrot
- 1 /4 head of cabbage
- a small broccoli crown
- 1/4 head of cauliflower
- a few kale leaves
- 1 jalapeño
- 5 cloves garlic
- 2 tablespoons chili powder
- 2 tablespoons cumin
- 1 tablespoon coriander
- salt and pepper
Either the night before or morning of, presoak dried beans..(beans in pot with about 4 cups water and a sprinkle of salt)
Take pumpkin and slice in half, de-seed and chop flesh into little chunks. (You can peel it if you want, but really, there is no reason to) Rough chop all the veggies (minus the kale) and stick into a large pot with the pumpkin. Pot on medium heat.. let the veggies sweat for about five minutes. Now add the garlic and the spices and let cook for a few more minutes.
When the mixture starts to become fragrant… drain, rinse and add presoaked (or canned) beans. Then the tomatoes, and 1 1/2 cans worth of water.
Bring chili to a boil then cover and reduce heat to low. Let cook for about an hour, giving it a stir every now and then………
Add in chopped kale a few minutes before serving
Serve in a bowl and top with sliced lime, avocado, a sprinkle of cheese….Whatever you want.


I usually base my meals on what I know I have for food in the house and what I know needs to be eaten. I was a little surprised when muling around in the freezer to find a block of extra firm tofu. (I don’t remember buying). Maybe a tofu fairy left it in there for me, or maybe it has been in there for years and I just am now stumbling upon it. Either way, I found it and it had to be eaten. So I cooked it up, and I cooked it up nice and good. Tofu is a pretty vertical food, being that its basically a flavorless block of protein. It can go sweet or savory, mashed, chopped or blended. Add fresh garlic, any type of sauce or even peanut butter. (the possibilities are quite endless) I was going for a dinner dish so I decided on a simple cubed tofu with lots of ginger and garlic (so good to ward of those winter sicko bugs out there) and baked it up nice and crispy with fresh bright green broccoli and soba noodle. Quick, easy, tasty and healthy.. I did it again. Thanks tofu fairy!
This noodle dish is super easy to make and take only about a half hour. We start with extra firm tofu, a package of buckwheat soba noodle, a nice big broccoli crown, honey, fresh ginger, garlic and soy sauce. oil for pan and lime for a finish. Nothing fancy.
Dice the tofu into small cubes and place onto a clean dish towel and pat dry…It really helps the tofu suck in more flavor and become nice a and crispy.
Tofu get moved into a lightly oiled skillet, ready to go into a hot oven. Why baked instead of sautéed on the stove? I find that the tofu keeps it shape and crisps up better when baked. But do whatever you want….. But just bake it.
While the tofu is baking, make up the sauce. Grate about 2 tablespoons of fresh ginger and4 large cloves of garlic into a bowl. Whisk together with 2 tablespoons honey, 1/3 cup soy ( tamari or brags aminos works too) and 1/3 cup of warm water. Taste it, and if you think it needs more anything, add it. I actually used 6 cloves of garlic, but I really wanted a garlic packed sauce.
After 15 ish minutes, give tofu a flip, then after about 25 minutes, the tofu should be nearly done. Remove from the oven and toss in the chopped broccoli and 1/3 cup of the sauce. Its a little watery but thats what you want, it will cook down in the oven. Now stick the skillet goes back into the oven and boil the soba noodle.
Another 10 minutes in the oven and the sauce starts to caramelize and the broccoli is cooked but still nice and crisp. Remove skillets from oven and toss in the cooked noodles and the rest of the dressing. Toss and toss and place on a plate, or a bowl, or if your into it, just eat out of the pan. (it happens)
The kitchen, living room, dinning room, office…all over great room., covered in piles of clothes. Sometimes listening to music and folding laundry can be so, I don’t know, peaceful. I just felt happy at this moment. (might be the fact that I know have some clean clothes and dish cloths)

A birthday bouquet of veggies. My lover knows me oh so well.
Every year I buy myself some special food for my birthday week. This is the bulk section at the local coop. They got in a bunch of new local dried beans!!!! Local birthday week beans. ( yes, beans make me happy)
This hike was pretty treacherous, the whole trail was covered in this ice…. but look how cool it is.

Split peas with tons of purple cabbage and purple onions plus chunks or bright orange carrots.. So freaking pretty and so freaking tasty!
And last but not least..a throw back that made me smile…Moving day last summer. Our truck full of my house plants. I love my plants.
Pomeamole!! That’s what I want to call it, so that’s what it is. Guacamole with the addition of tiny little pearls of sweet and tangy juice.. I mean, come one, it can’t get much better. This is what happens when avocados are on super sale, I buy a lot…and then eat a lot….and then eat some more. I start to get a little crafty and, wa la.. add pomegranate seeds. I also inflict anyone eating around me with avocado, even if they believe that they don’t like it because that’s not possible. I know this because there was a time where I believed that I didn’t like avocados… and that’s just crazy. I remember the very moment I realized I was wrong. It was the first food Nick ever made for me. I was working at a pottery studio and wasn’t able to leave because of a raku firing and I was starving. My love saved me with a sandwich, and it was the best I had ever eaten. A sandwich that contained hummus, greens, sun-dried tomatoes, and yup, big slices of avocado. That sandwich change my life. I knew from that moment on…. I loved avocados……oh and that I loved Nick too. I know, we are so cute that you want to barf. Well go ahead, just do it before you eat the pomeamole.
It’s all pretty simple…One very tasty ripe avocado, about 1/2 cup of pomegranate seeds, a little chopped onion, a bit of chopped tomato, a lemon, a few cloves of garlic and a pinch of salt. It’s what dreams are made of.
Mash it all together minus the pomegranate seeds… As smooth or as chunky as you like it….
Fold in 1/2 the seeds
And top with the rest! And another squeeze of lemon… just like that. You can eat this magic with anything you want; chippers, rice cakes, tacos, toast, or even top a kale salad with a big scoop. …..we at it with carrots and broccoli. SO GOOD!
New Years Eve hike. Anything outside makes me happy.This giant tree fell over on the trail and it looked so pretty. And yes, Washer looks handsome too.
My Grammy Stems Poppy seed roll recipe…My Dad makes them every year and this is the first time I ever made them. I split the recipe in half( the recipe make 6 huge rolls) and turned one of the rolls into little rolls. Those little rolls might be one of the prettiest things I have ever made. I am going to be making them again soon.
We had to take out Christmas tree down…which is kind of sad, but I stopped watering it and Nick stopped watering it….and it turned into fire tinder. Nick took the popcorn garland from the tree and lined the fence…. that made up for not having the tree anymore.
Best Christmas present ever…The Mister paid off my outrageous library fine so I can start taking books out again.!(what a guy) I am reading both of these at the moment… and both are excellent! I kinda don’t want to do anything but read.
This situation going on here…sometimes the most simplest of ingredients make the best dishes…

A visit to a green house. I am a house plant slut…I have a ton and always want more. But ever since we moved into our little cave(it has almost zero natural light) my plants have been sad and I am trying my hardest to keep them happy. I was on the hunt for some plant food to keep my green babies alive and I found myself happily wondering this greenhouses. I think everyone should have a green house full of plants, it’s impossible to not feel good in a light warm room of color.
Freshy snow walk. Our feet were the first to lay tracks around the neighborhood. Our feet are awesome.
I love my little kitchen wall, but I would love a little more space/storage/light. I am dreaming up a few kitchen projects for the mister and I to tackle, maybe more shelves, some hooks..Maybe a big old hole in the wall? I spend a lot of time fantasizing about little ways to make the kitchen a little more awesome(it’s pretty awesome now) But I mean, a window would make everyone happy. Just an idea…We will see.

I finally finished this sweater! It came out so good! I made it to big so it actually is a sweater dress for now(which is amazing) and she will grow into it to wear as a sweater. I am pretty proud of myself for this one!
A pizza, cookie, and christmas movie party!!!!! We watched the Polar Express and trashed my tiny house. Good times!

This Yule log.…I sent a pic to my Dad and he asked if it was a real piece of wood. That’s a success right? Or does it mean that my Dad needs to get his eyes checked? ‘
We got to keep this one for a couple days this week. Do I need to explain why this make me happy?
I mean…. for real…..she is too much. Sometime I think I don’t want to have my own kids cause I am afraid I might not love them as much as this little.
I like to eat large quantities of green stuff……This stainer is full of lovely greens from my farm share. All for me! With shredded carrots, shredded roasted beets and a big scoop of lentils……Meal of my heart.

Sliced apples sprinkled with cinnamon and stuck in oven at 425 for 5-8 minutes. Easy Peasy. Topped with a squeezey….of lemon. (Yes..I am a dork)
