Happy St Patricks Day!!!! As a kid, St Patricks day always meant green milk, green eggs, and those nasty gold foil covered chocolate coins. (you know, from the pot of gold) Not to mention all the leprechaun hunting and pinching. In my family, if you were unlucky enough to forget to wear green, you ended up as a walking target. It all started out nice an innocent, a pinch here or there, but by the end of the day, someone would end up pinching a little to hard or maybe just one too many times and the game would go from pinches to punches.
Ahh, memories.
Now as an adult (kinda adult) St Patricks is celebrated a little differently. The little ones in the family still get their green milk (which they are told is leprechaun pee) and those nasty gold coins, but I think the pinching has stopped.( a great tradition lost) I myself don’t have any littles at home so no little leprechaun games or gross dyed food for me. Nope, in my house we celebrate with a few beers and a more traditional irish dish, Colcannon. Mashed up potatoes with cabbage and kale… I mean, can it get much better? It can when you use red potatoes and red cabbage. Not only is it so tasty tasty, but it is so pretty pretty. No need for green milk or nasty candy.
But I still make sure to wear green and you might find me doling out a pinch or two.
The stuff…. Super pretty red potatoes, red cabbage, shallots, kale, salt and pepper, and olive oil.
Note. If you do not have or want to use red potatoes, russet or white will work, it just won’t be as pretty.
Dice up the pretty potatoes and stick them into a pot and fill up with water and add in a good tablespoon of salt. Stick on high heat and bring to a boil, then turn the heat down to medium and cook those taters until super fork tender. (bring them to the edge of falling apart)
While the potatoes are boiling, chop up the cabbage, shallots, and the kale and stick into a big skillet with a good drizzle of olive oil. Sauté on medium heat until soft and tender.
Once the potatoes are super tender, drain the water and dump them into the pan with the sautéed veggies. With a potato masher or a fork, mash up the potatoes and mix in the veggies, adding a drizzle or more of olive oil as you go. (Start with a drizzle and work your way up until it tastes good to you) Salt and pepper to taste.
The most pretty pan of smashed up potatoes that I have ever seen. Eat as a side dish or even a light main dish. Fork is a good utensil to use, but I found that my fingers worked just as well.

Red Potato Colcannon
5-10 Red potatoes Red Potatoes depending on the size (about 3 1/2 – 4 chops chopped)
1 Cup Chopped Red or Green Cabbage
1 Cup Chopped Kale
1-2 Shallots
Olive Oil
Salt and Pepper
Rinse and dice potatoes and place into big pot. Cover potatoes with water and add about a tablespoon of salt. Place on high high heat and bring to a boil. Turn heat to medium low and let potatoes cook until super fork tender. While potatoes are boiling, chop up cabbage, shallots and kale and sauté in a large cast iron skillet (or any skillet) with a good drizzle of olive oil. Once the potatoes are done, drain water and add potatoes to the skillet with the sautéed veggies. With a potato masher or fork, mash the potatoes and mix with the veggies, adding a drizzle or two (depending on your taste) of olive oil as you go. Salt and pepper to taste.
Serve from skillet or dump into a fancy dish with a big spoon.
Eat as a main dish or as a side….Good hot, warm and cold.
Wowzers…Is it for real Memorial day weekend? Where has all the time gone? Let’s talk about a week gone by fast. My brain is on complete overdrive and I am having a hard time keeping it from exploding…SO MUCH TO DO! (Not bad stuff, just a lot of stuff) But lo, that’s life right? There is always a lots of “stuff” to do, but today I am going to try and let that stuff chill and maybe give myself a few hours of coffee, (so much coffee) reading a book in the sunshine, gardening, and just some overall chillin.

On our way to a geo catch…. And note clothing options for 2 in the afternoon. I am much fond of that little guy wearing a rain jacket without a shirt in when its sunny and 80 degrees. And a pink poke dot bath robe.. I mean, it’s so the cool thing to do.
We didn’t find the geo, but we found this gigantic mushroom. Just as cool, maybe even cooler.
I love brick and there is one street in all of burlington (that I know of) that has brick sidewalks. I like to walk down it a lot.
Nurse lady making food… I compare this to a big foot sighting. I have heard stories that she cooks,but have never actually witnessed it myself. (Just kidding….kinda)

And that’s how I know that this is a winner. As an awesome aunt, when I have any of my nieces or nephews, I feel the need to make something special for dinner, something that the kiddos might not get very often, but also keep it on he healthy side. I have 2 littles for the night which gives me the perfect opportunity for a trash food recipe. You know trash food, things like boxed mac and cheese, beefaroni in a can, or, in this case, sloppy joes.
Sloppy yes, trashy, not so much. These are made with beans and bulgur. No meat.
And I figured it is nice enough out that I can make the kiddos some messy food and then just bring them out back and hose them off… I mean, why not right?
The stuff… We start with onion and green pepper, chopped into pieces. Black beans, bulgur, can crushed tomatoes. Chili powder, garlic powder, a bit o apple cider vinegar (which I forgot to picture) ,and some salt and pepper. Oh and cheese if you want… Plus a bun of some sort is necessary. Toss the chopped onion and peppers into a deep skillet or pot with a drizzle of oil. Cook on medium heat until tender and toss in the spices. Give a stir. Add in the beans, bulgur, and tomato, a splash of vinegar. Stir it all up, cover, and let simmer for about 15 minutes, or until the bulgur has absorbed the liquid and is nice and tender.
If you are a bun toaster… toast while waiting. If not, just get the buns ready And Then dump a good heaping pile right onto a bun. Add some cheese, or not..and eat with wild abandonment, making sure to get as much on your face as you get in you mouth.

Black Bean and Bulgur Sloppy Joes
2 cups or 1 can cooked black beans
1 16 oz can crushed tomatoes
1/2 cup bulgur
1/2 cup water
1 small onion
1 green pepper
1 teaspoon garlic powder
1 teaspoon chili powder
salt and pepper
a splash of apple cider vinegar
olive oil
4-6 burger or bulky buns
cheese (optional)
Dice the onion and the pepper and toss with a drizzle of olive oil into a large skillet. Sauté on medium heat until veggies become tender. Add in the spices, stir in and let cook for a minutes, then add in the beans, the tomato,water and the bugler. Cover skillet and let simmer until bugler becomes soft.
When the slop is ready, either toasted or not, scoop a generous portions onto buns. If so inclined, add some cheese.
Eat with hands… Sloppy is good.
Is it really for real April? Where has all the time gone and where the hell is the warm weather? It’s not funny anymore. I am officially OVER winter! Ok, so now that I got that off my chest…..
Last night the misters Dad came over for a long awaited dinner accompanied by talk of life goals and what her referred to as “narratives” or the story of our lives. Some deep shit to be talking about at dinner, especially with zero alcohol to be had.
Me, being so super awesome, was all up in taking charge in making the food. Except that last night I didn’t have a bunch of time and honestly, much energy to be doing anything. And sure, I could have just made a pot of spaghetti, but that just felt like cheeping out. So Polenta it was. And because I just made a hug pot of navy bean, those were going into the polenta too.
Beany polenta baked in the oven with a tomato sauce cooked on the stove. About 5 minutes of hands on time and an hour to cook it all. It’s the perfect meal to make when you have guests coming over. Fast prep, into the oven and on the stove, and then you have an hour to clean and make yourself presentable. See, I am a thinker. (I ended up skipping the making myself presentable part… I stayed in my gym clothes.. no need to impress family right?) Then after about and hour you end up with a hearty healthy pretty meal, all from scratch, that seems like you spent the afternoon cooking. When in fact you spent the past hour vacuuming and watching Gilmore Girls.
The Stuff. Cornmeal, water, navy beans and parmesan for the polenta. Crushed tomatoes, garlic, dried basil, onion, carrot, zucchini, and summer squash for the sauce. Salt, pepper, and olive oil all around.
Cornmeal and water go into a cast iron skillet (or any oven safe dish) with a pinch of salt and pepper. Give it a little mix and stick it into the oven at 400 degrees .
Once the polenta is in the oven, make the sauce. Chop up all the veggies and stick into a dutch oven or sauce pot with a pinch of salt, the basil and a good drizzle of olive oil. Stick on medium heat and let veggies cook down a bit. When the veggies are tender, add in minced garlic, crushed tomatoes and another drizzle or oil. Turn burner to lowest setting and simmer (giving it a stir every now and then) for about 45 minutes or until the polenta is done. After about 30 minutes when the water had pretty much all cooked down, take the polenta out of the oven and stir in the beans, the parmesan, a tablespoon or two of olive oil and salt and pepper. Smooth top out and sprinkle with more pepper, parmesan and drizzle with a bit more oil. Stick back into oven for another 1/2 or until polenta has formed a crust and no longer giggles when you wiggle the pan.
Pull polntna from the oven and let sit for at least 1o minutes.
Two big spoons and a pile of plates. Have the people serve themselves!

Baked Navy Bean Polenta with Chunky Tomato Sauce
Serves 4 hungry people
For the Polenta
1 1/2 Cups Course Ground Corn Meal
4 Cups Water
3 Cups Prepared Navy Beans (Or just use to cans)
1/2 Cup Parmesan Cheese or Vegan Parmesan (Optional)
3 Tablespoons Olive Oil
Salt and Pepper
For the Sauce
One 28oz Can of Crushed Tomatoes
1 large Carrot
1 Small Onion
4 (or more ) Cloves Garlic
1 teaspoon Dried Basil
1 Small Zucchini
1 Small Summer Squash
Olive Oil
Salt and Pepper
Preheat oven to 400
In a large skillet, mix together the cornmeal and the water and add a good pinch of salt and pepper. Place into oven for about 30 minutes or until the polenta starts to congeal at the edge of the skillet nd most of the waster has cooked down.
Remove skillet from oven and with a whisk or wooden spoon, mix in the beans, the parmesan (if using) and 2-3 tablespoons of olive oil. Smooth out mixture, sprinkle with salt, pepper, parmesan and drizzle with olive oil. Stick back into oven for another 30 minutes or so. Polenta is done when it no longer wiggles when you giggle the skillet.
For the sauce
Small dice the carrot and the onion and stick into a medium dutch oven oor sauce pan with a drizzle of olive oil. Place on medium heat and cook until the veggies are tender. Add in tomato, minced up garlic and basil. stir and let simmer on stove top for about 45 minutes. When you place the polenta back into the oven for the second bake, dice up zucchini and squash and add to sauce. Stir and keep on simmer until ready to serve.
Once the polenta has completely cooked, remove from oven and let sit for at least 5 minutes…10 is better to solidify.
Spoon big piles of polenta on a plate or in a bowl, top with a big heap of tomato sauce. Sprinkle with a little more parm and maybe another dash of pepper .
Eat…..Spoon or fork is recommeded.

Whenever my little sister comes over for dinner, I always end up making lentils in some form or another because she, like me, is awesome and loves a good lentil. It makes me so happy that she has such great taste in food and wants to eat what I make. It’s validation from a teenage girl which is the best kind of validation.
So last night when she came over after school for dinner and trash talk (she likes to verbally abuse Nick) we decided to make both of our favorites … Lentils AND sweet potatoes. How can you go wrong with that combo? Well I am telling you that you can’t. The rich creamy soft and slightly sweet sweet potato mixed up with the hearty, earthy, oh so fantastically tasty lentil. Add in a bit of kale and cheese if you wish and serve with salsa and guac… Whoa, it’s the best!!!
Such a great evening, I get to the cooking, the sister gets to the verbal abuse and the mister, begin the champ that he is, takes it and dishes it right back.
I am the greatest(coolest) sister.
Baked sweet potatoes, cooked lentils, chopped up kale and monetary jack cheese (Cheese is optional.. and make it vegan cheese if you want) And you don’t need then, but salsa and guacamole are the best toppings.. So you have them.
Cut the cooked potato in half lengthwise and scoop the flesh out into a bowl. With a fork, smooth the potato , sprinkle with salt and pepper and mix in lentils and kale.
Stuff the mixture back into the skins of the potato.
And add some cheese (The mister and the sister wanted lots of cheese, no cheese for me) and stick the potatoes into the oven and let bake for another 5 or so minutes or until the cheese is all melty or the top is nice and crispy.
Remove and plate… Serve with salsa and guacamole and maybe some corn chips.

Makes 2 serving
1 Large Sweet Potato
1 cup Prepared Lentils
1 cup Chopped Kale
1/2 cup Grated Monetary Jack Cheese (Vegan style or not)
Salsa (optional)
Guacamole(optional)
Place potato in oven at 400 degrees for 30-40 minutes or until soft a baked throughout.
While potato is baking, prepare lentils. 2 cups water to 1 cup lentils. Add water and lentil to pot, bring to a boil, add a sprinkle of salt, and reduce to simmer until lentils are tender.
When potato is cooked, remove potato and let cool for a few minutes. Cut in half lengthwise and scoop out most of the flesh out of the skins and place into a big bowl. WIth a fork, mash the potato a bit Add in the lentils and the kale, a sprinkle of salt and pepper, and mix to combine. Stuff the mixture back into the skins of the potatoes and top with cheese. (if using ) Place potatoes back into oven for 5-10 minutes until cheese is melty and bubbly or the top of the potato is a bit crispy. Remove from oven and serve on a plate with salsa and guacamole.
Eat and be happy.

Yesterday The mister and I went for a walk, a long walk. I was wearing a sweater, a light jacket and I left the mittens and hat at home. There was sunshine, huge puddles and mud. Birds were chirping. It was amazing.
After our nice long walk, we got home and I needed to start dinner. It was a little later than I usually so I wanted fast and easy I usually always have pesto in my fridge (I had to make some, but it only takes 5 minutes) because when it’s in there, I can whip up a big awesome meal in the time it takes to boil some pasta or quinoa or smear on toast or toss with potatoes. It really can be used on everything and can be made out of just about anything. Kale and walnuts are just one of so many fantastic combos. And frozen ravioli is always in the freezer too. I used just plain cheese, but use whatever kind you like.
Together, pesto and ravioli, well that’s a quick, easy, and tasty meal, perfect for a spring evening, And yea, there will be left over pesto from this recipe… just stick it in the fridge or freezer….you will be glad you have it.
Pesto stuff. Kale, walnuts, parmesan cheese(nutritional yeast to keep it vegan), garlic, lemon, olive oil, and salt and pepper.
A few little pre steps before the blending.. Toast the walnuts. Just toss onto a dry skillet and stick on medium heat for about 5 minutes or until they start to become née and fragrant. Remove from skillet and add in a bit of water. Add in chopped or ripped kale and cover to let the kale tenderize, but only for about 2 minutes. (you want the kale to still be crispy and fresh tasting) Drain water and add kale, garlic, toasted walnuts, cheese and the juice of the lemon into a food processor. Turn on and slowly add in olive oil until you get to a nice paste, adding more oil to get to your desired consistency. Oh and don’t forget to salt and pepper to taste!
Straight up frozen ravioli goes onto an oiled baking sheet.(make sure that non are overlapping) Place into an oven at 400 degrees for about 15-18 minutes, flipping after 10. If you want to add mushroom and a few more walnuts, just toss them onto the ravioli when you are flipping over the ravioli.
When the ravioli is nice and brown and crispy, remove from oven and dump the ravioli and the mushrooms into a bowl. Add a big old scoop of the freshly made pesto and toss around.
Look at this… fresh, crunchy, light and happy. Kinda like a spring day.
I am the best lady, making the mister a pretty yummy dinner.

Kale Pesto and Baked Ravioli
4-5 cups chopped Kale
1/2 cup Parmesan Cheese ( Nutritional Yeast to make it vegan)
1/2 cup Walnuts
1/4-1/2 cup Olive Oil
4-5 Cloves Garlic
1 Lemon
Salt and Pepper
1 bag of frozen ravioli(use vegan or gluten-free if you want)
3-4 mushrooms
Note..There will be plenty of left over pesto… Just fridge or freeze it
Place walnuts in a skillet and toast on medium heat for about 3-5 minutes or until the nuts become fragrant. In the same skillet, add enough water to cover bottom and add in all the kale. Place a lid on it and let kale wilt on medium heat for about a minutes or 2, Take off heat. Add walnuts. garlic, cheese, salt and pepper, and juice of lemon to a food processor. Blend. Now add in the kale and blend, slowly adding olive oil until a thick paste forms. You can add as much oil as you want to make it as thick or thin as you like.
Preheat oven to 400
Place frozen ravioli on an oiled baking sheet, making sure none are overlapping. Place into oven for about 15-18 minutes, removing after 8 minutes to flip. When you take the ravioli out to flip, slice up the mushrooms and grab a few more walnuts and toss onto baking sheet with the ravioli. When the ravioli’s are nicely browned and toasty, remove (mushrooms and walnuts too) and place into bowl. Add a big scoop of pesto and toss to mix.
Serve and eat.. fork is optional.
Note..Add a thin layer to the top of any left over pesto to keep it fresh and from turning black
It’s Friday!!! And what does that mean? Pizza Pizza!!!! But not just Fridays…pizza happens more times then not in our house…It’s the misters favorite food and for real, he could eat it everyday, all day.…He is kind of made of the stuff. As for me, well I don’t mind making it for him because it’s easy. And because I am making it, it doesn’t have 8 million calories, 9 million grams of fat and have 10 million milligrams of sodium like takeout of frozen. My pizzas are for the most part pretty freaking heathy. It really depends on how its topped. Like take this one.. Homemade pesto, good quaility cheese, (you can use vegan or low fat) chickpeas and tomatoes. Not to shabby. And really, it isn’t any more complicated then calling the take-out place or unwrapping the frozen plastic disk from the box. All you need is some good dough (I guess you could use store bought) and some good quality toppings… and you’re there…Pizza in your face.
For this pizza I used the skillet cooking method. This crust is one of the misters favorites. It is a basic pizza dough but cooked on the stove in a skillet. It’s almost like a pita bread, but not. And I like to make it this way because its really fast (once the dough is made) and I can even make up a few crusts to have on hand for later.
Fast, healthy, and tasty…..Why not eat pizza every day?
Not too many ingredients here. 3 cups of all purpose flour or 2 cups all purpose and 1 cup white whole wheat. A teaspoon salt, a teaspoon honey (use sugar if vegan), yeast and warm water…
Start with the dough. Add honey or sugar to yeast and warm water and let sit to active, which should take about 5 minutes.
Mix together the salt and flour(s) and add the foamy yeast mixture. Mix until it all comes together and dump out onto a floured surface. (if the dough seems to dry add a splash of water..if way to wet, add a little flour) Give the dough a good 2-3 minute knead session, adding flour as needed to keep the dough from sticking. Form a nice ball, place back into bowl and drizzle with oil. Cover bowl with a towel and stick in warm place to rise for about an hour or until it has doubled in size.
When dough has doubled, dump back onto a floured surface and divide into 4 equal sized balls (or as many balls at whatever size you want)
Now you have a few choices here. You can either cook up all the dough now if you need it, or freeze dough balls for future use. If you think you are going to make pizza again within the next few days, it can be refrigerated, or you could also blind bake the dough and freeze or fridragerate that and have pre baked crusts all ready to go. So many options… just do whatever works for you.
To make the dough in a skillet, oil the bottom of a 15 inch skillet, turn burner on to high and let preheat until the oil is sizzling. Roll dough out to roughly the size of the skillet and when it has preheated, place dough on in there and let cook for about 3-5 minutes, or until the dough starts to bubble and the bottom has started to brown. Turn burner down to medium and flip. Cook this side for another 3-5 minutes.
If you want oven crust, just roll out and place on a baking sheet and bake with topping on at 475 degrees for about 20 minutes
Now the crust is ready for the toppings!!
Preheat the oven to 450 degrees.
Smear the pesto (for this pie, I used the last of my homemade pesto from last summer…sad face) Mince garlic and distribute evenly on top of that. Then do the cheese, followed by the tomato slices and chick peas. Sprinkle with a bit of salt, cracked pepper and some parmesan cheese.
Stick into oven for 10 or so minutes or until the chesse is nice and bubbly and the crust os crispy and brown.
And that is pizza. A super duper, yummy, healthy, not too fatty or overly salty… can be eaten breakfast lunch or dinner time, pretty, satisfying, pizza.
Make it for yourself, for you lover, for a friend. Make it in the shape of a heart or an elephant. Give you kid(s) a ball of dough and have them make their own… I know… such a good idea.

Skillet Pizza Dough and Pesto Chickpea Pizza
Ingredients
For the dough
3 cups of all purpose flour or 2 cups all purpose and 1 cup white whole wheat
2 teaspoons of yeast or 1 packet
1 teaspoon of honey or sugar
1 teaspoon salt
1 1/2 cups warm water
The Pizza Toppings (for a 15 inch crust..adjust amounts to your need or liking)
1/4 cup of pesto
1 large roma tomato thinly sliced
a few cloves of garlic minced
1/1 cup of prepare chick peas.. rinsed and drained
1/2- 3/4 cup of cheddar cheese (or any kind you like..use vegan cheese if you want too)
salt, pepper, and parmeasan (optional) to sprinkle on top
To start, place honey, yeast and water into a jar or bowl and let sit to active until mixture starts to foam. Mix together flour and salt into a large bowl and add in yeast mixture. Stir until combined and dump onto a well floured surface. Knead dough for a a few minutes and form into a ball. Place back into bowl, drizzle with oil and top with a towel. Place somewhere warm to rise for an hour, or until dough has doubled in size.
When dough is done rising, dump back onto floured surface and divide into 4-8 equal sized balls.( 4 balls make 15 inch pizza… 8 balls are good for individual size pizzas) Place whatever dough you are not going to use into a closable plastic bag and either stick in fridge(if using within a few days) or freeze for future use.
Place skillet on high heat on stove and drizzle with oil. Also, preheat oven to 475 degrees. Roll out you dough and when the skillet is has gotten really hot, place dough right on in. Let cook for about 3-5 minutes or unit the cough has started to form bubbles and the bottom has started to brown. Turn heat down to low and cook other side for another 3-5 minutes or until browned.
Now pizzafy it.. Add on the toppings. Smear with pesto, add minced garlic, then evenly sprinkle cheese. Top with the chick peas and the sliced tomatoes. A sprinkle of salt and pepper and a dusting of grated parmesan……Right into the oven for about 10 minutes to melt it all together…..
Pizza Pizza!!!
One of the best things about winter is that I can have something in the oven at any time and not worry about how hot the house is going to get. I get to spend my free time (or my in between free minutes) baking up all the thing that I would not dare bake in the summer. (lots of bread and cakes) Yeah, I might complain a little about how cold it is outside (to my defense, -20 is kind of a bitch) but then I think of the super hot humid days that come during the summer and cringe. At least when its cold out I am able to get warm, (que oven) but when its super hot and humid, I just turn into something that border lines a wet towel and the rabbit animal… Not so pleasant. I much prefer cooler weather. So no big surprise….I made bread.. or focaccia to be exact. And now you should too because first off, you want to eat it, and secondly, you can probably whip this up faster then it would take to get all of you winter warmies on and leave the house. Don’t leave, just turn the oven on. The stuff, which isn’t a whole lot… Flour and salt. A mixture of honey, water, and yeast. And olive oil. Its pretty much my pizza dough recipe, tweaked with the addition of oil, less flour and no kneading. Mix together the wet and dry…I used my nifty dough whisk, but a wooden spoon or even your hand works. Mix mix mix. The dough should be really slack and sticky. And guess what.. no need to knead! Just make sure the dough is uniformly incorporated…hehe.. uniformly incorporated… sounds weird. Drizzle the dough (don’t worry about making it into a ball, a blob is good) with a little oil and place in a nice warm place topped with a towel to rise for about an hour or until dough has doubled in size. Once is has fully risen, drizzle 2 tablespoons oil in two 9 inch cake pans. Divide dough in half, and kind of smoosh dough into pans. Cover and let rise for another 20 minutes or so. When dough has finished its second rise, drizzle each with another tablespoon of oil and with your fingers, fill out the pan and indent the dough, kind of like playing a piano or tickling a puppy(?)….Then layer your toppings (if you want any) Start with any herbs, then the veggies. Then last, any cheese you got. I used thyme, cracked black pepper, tomato, onion, topped with parmesan cheese. And the other one is just plain old salt. Pulled from the oven when nice and golden brown..set on a wire rack to cool for a few minute and removed from the pans. The mister was practically salivating waiting for a slice… and he was so not disappointed. Crispy outside with soft airy insides… Everything a perfect focaccia should be. The one with the toppings was the favorite for the first night, but for a peanut butter and cheese panini for lunch the next day…plain is the way to go.. My suggestion, do what I did, jazz one up and leave one plain. And then make more if you need too because the forecast call for another week of below zero!!! Oh the things that I’ll get to make! Focaccia with out without stuff
3 cups all-purpose flour
1 tablespoon salt plus 2 teaspoons for topping (can use more or less if you want)
2 teaspoons active yeast (or one package)
1 1/2 cups warm water
1 tablespoon honey (or sugar if vegan)
6 tablespoons olive oil
Optional toppings
Fresh cracked pepper
Thyme or any other spices
Thinly sliced tomato
Thinly sliced onion
Parmesan Cheese
Anything you want!
In a bowl or jar, mix honey (or sugar), yeast and warm water together and let sit for about 5 minutes or until yeast is activated and starts to foam In a large bowl, whisk together flour and 1 tablespoon of salt. With either a wooden spoon, dough whisk, or if you have one, a stand mixer with a dough hook, mix the yeast mixture with the flour. The dough is going to be really sticky so mixing might get a little gloppy, but keep at it until everything is full incorporated.. for about 3-5 minutes and don’t be afraid to use your hand… you can wash it off. Once mixed drizzle with oil and cover with a towel. Let rise for about an hour or until dough has dubbed in size. When dough has double, coat two 8 or 9 inch cake pans each with 2 tablespoons olive oil. Dump dough onto floured surface and cut in half. Take each half a place in pan. cover and let rise again for another 20ish minutes. preheat over to 400 degrees After second rise, lightly take your fingers and push down dough, making little indents all over the surface. Drizzle each with another tablespoon of olive oil and sprinkle each with a teaspoon of salt. If using spices or any other toppings, nows the time to layer them on. And do any cheese last! Place in oven and bake for about 30 minutes or until the tops are golden brown. When done, place on a wire rack and let cool a bit before removing from pans. Done!! To store, place in a paper bag.. best eaten within a few days!
I know that it it spring, but I still have a winter farm share for another month and will be cooking and eating roots and squash until the summer share starts in early June. And I am good with that cause I love me some root veggies and butternut squash. But, yes, it is spring and my body isn’t craving the super hearty, rich foods that it was just a few short weeks ago (more like last week) When the temperatures first start to go up, I usually want my food to not feel as heavy or my spices to be quite at warming (I am still all over curries and hot hot hot sauces in the summer). It’s like I have said before, I tend to change up my spices with the seasons.
So to give a lighter feel to a heartier squash, I busted out one of my favorite spices, the oh so lovely tarragon. It has a sweet, light, fruity and floral taste that pairs beautifully with the squash and onions. It give the dish a nice spring like flavor that will leave you feeling satisfied without wanting to move directly onto the couch and hide under a blanket. This is a eat and ride you bike kind of dish ( you don’t actually have to go for a bike ride if you don’t want to)
Note. If I had a grill, I would definitely cook this dish on it. As of now, I don’t own one so I am left to cook on the stove. But by all means, if you have a grill, do it up!
Half of a medium sized butternut squash (or use a whole one.. I had a half in the fridge that was waiting to be cooked) and one whole onion (two if you use a whole squash) Apple cider vinegar, olive oil, salt , pepper, garlic powder, and, last but not least, the oh so fragrant and tasty, tarragon.
Chop the onion and the squash into big chunks. If you don’t like the skin of the squash, you can peel it, but I like it so I don’t peel. Drizzle olive oil in a pan or a baking sheet, toss the veggies in and add the garlic powder, tarragon, salt and pepper and a few splashes of apple cider vinegar. Toss around. Stick into oven at 425 degrees for about 30-40 minutes. When the squash is tender and the onions are cooked, remove from oven.
I am pretty sure you can figure out the rest.

Tarragon Butternut and Onions
Half of Medium Butternut Squash
1 Large Onion
1 Tablespoon Dried Tarragon (use fresh if you have it.. 2 tablespoons)
2 Tablespoons Apple Cider Vinegar
1 Teaspoon Garlic Powder
Salt ans Pepper
Olive Oil
Chop squash and onions into similar size pieces. Toss in a skillet or on a oiled baking sheet and add the rest of the ingredients. Toss around and place into a 425 degree oven for about 30-40 minutes or until squash is fork tender.
Remove from oven and eat.
Make as a side dish or add to a salad. Eat as a light lunch, or a midnight snack… eat it however you want.
I am one of those people that when traveling, likes to pick up a cool rock or piece of driftwood to being home as a momento of my trip. Over the years I have gathered an extensive rock collection and have many baskets of he coolest pieces of drift wood.
And I am also a lady that likes to wear a necklace, except I am very much not into metals (gold, silver) or anything fancy. Up until about a year ago I had a smooth piece of amber about the size of an apricot that the mr. got me a long time ago, but sadly that broke and I have been on the hunt for something pretty and something special to make my new necklace.
A couple weeks ago, I was playing with the rocks and driftwood ( a little and I were building rock towers while she wacked me with a large piece of wood) when I got that “ah ha” moment and few things crossed my mind. 1. My future children will only be allowed to play with big baskets of rocks and driftwood cause they make the best toys. 2. I know I can’t, but I kind of want to wack her back, and 3. I want that chunk of pretty driftwood that I got from a beach off the coast or Washington (we LOVE Washington) around my neck.
And so I made a awesome driftwood necklace.

The stuff you’ll need
A cool ass piece of driftwood that you want to wear on you neck (make sure it’s smooth or else you may end up with a sliver)
some hemp or cord the length you want you necklace plus a few extra inches
a cool button
a drill and a 3/8 (a small) bit
This project is going to take you all of about 5 minutes… so hold on tight.
Hole in wood….hemp through hole…
Make a loop and knot on one end and sting the button and knot it onto the other end. Trim away excess hemp.
My motive for this drink…get rid of a few candy cane….. And maybe make a little kid happy, but that was just a bonus… I would have made him drink this even if he didn’t like it. (I am awful like that)
I have noticed lately people are really into peppermint in their hot drinks and I have an excess of candy canes in my house, so this was the perfect drink to make. I was initially just going to make hot peppermint milk but added the cocoa for an extra treat. If you want, omit the cocoa and just make peppermint milk.. Or you might want to replace 1/2 the milk and add coffee! Or for those adults out there..maybe add a spash of vodka.. my version of .a hot black and white peppermint Russian(I just made that a thing)
A little advise ….check the temperature of the drink if you are giving it to a kid..What I thought was not too hot turned out to be a too hot. My little niece took a big gulp, and instantly sprayed the drink all over the kitchen and my clean hat, scarf and mittens… and then proceeded to cry….Hot chocolate is supposed to make the kids happy….so yeah…
All you need is a cup of milk(cow, soy, rice..whatever) a tablespoon of cocoa powder, a tiny pinch of salt and a candy cane. We don’t need to add any extra sugar because the candy cane is sugar.
Peel plastic off candy cane and place in a baggy and smash with something hard (rolling pin worked great)Stick all ingredients into a pot on medium heat and whisk until the candy cane is melted and the milk is as hot as you like it.
It you want(we did) top with a dollop of whipped cream(or whipped coconut cream) and sprinkle with a little more crushed candy cane…..Best served after a long afternoon of playing in the snow!
Go for it, watch your tongue and enjoy!
1 normal sized candy cane
1 tablespoon powdered cocoa
1 1/4 cup of milk(cow, soy, rice, hemp…what ever milk you want)
pinch of salt
Place unwrapped candy cane in baggy and smash. Place all but a sprinkle of the candy cane, the milk, and the cocoa in pot on medium heat and whisk until candy cane is fully melted and the cocoa is you preferred temperature.
Top with whipped cream and sprinkle with crushed candy cane.
I needed something quick, something everyone would like and I needed it to come from food I had in the house……Pretzels, peanut butter and chocolate chips turned into little nutty nuggets. A last minute christmas treat. I have stumbled apron something that I am sure to make many more times to come. People were really into them and for real, so easy and took so little time to make.. Fast, happy, peanut butter and pretzels dipped in chocolate, I mean, do you know anyone that would say no to that? And just because I made them for Christmas does not mean that we cannot make these for any occasion, like New Years, maybe a birthday party or even laundry day. You can even make these as a fun afternoon activity with the kiddos.…Make them whenever you need a fun little treat! Note….This is one of those treats that is vegan, gluten-free (just get gluten-free pretzels) and doesn’t have a ton of sugar..Eveyone can eat them! Hooray!!!!!! (Maybe don’t feed them to a child with a peanut allergy)
Simple as this….Half a bag of pretzel rods(any shape would work)… A big scoop of peanut butter and some chocolate chips…
. Pretzels go into the food processor and pulsed until a mostly fine crumbly crumble. Now in goes the big ol scoop of peanut butter. Pulse until mixture comes togetherGo ahead and take a bite……so good right?..Start turning the mixtures into small balls..think grape sized.
Once the mixture is all rolled out, stick into the fridge or freezer for a little about a 1/2 hour to set up.
Right before you take the balls out of the fridge…melt down the chocolate. Like my make shift double boiler? I know….jealous. If you have one, use it, but if not, a big pot with water and a smaller thin metal or a glass bowl works.. The pot or bowl should fit onto the big pot, but I was having a hard time and couldn’t find any of my bowls…..so i did what I could. Bring water to a boil then turn to simmer. Place chocolate in small bowl on big pot and stir until chocolate is melted, silky and smooth. Remove bowl from boiler and start to dip those balls! Reheat chocolate if needed but be careful to not get any water into chocolate or else it will seize up and you won’t be able to melt it anymore.
Drop a few balls into the melted chocolate. I was doing 2-3 at a time. Take a spoon or spatula and gently roll or coat entire nugget. Remove and place on a parchment lined baking sheet.
That’s it…Imperfect little perfect candy nugget truffle thingys….I sprinkled the tops with colored sugar.. you know, for a little holiday fun.. 3 simple ingredients( oil doesn’t count).. and 10 minutes of hands on time…can’t get much better then that.
Peanut Butter Pretzel Truffles
Ingredients
3/4 cup Peanut Butter
10-12 Pretzel rods
1 1/4 cup chocolate chips
tablespoon coconut oil
Pretzels go into food processor and pulse until a fine mealy constancy.. Add peanut butter and pulse until combined and is easily handled. Add a bit more peanut butter if the mixture seems to dry or another pretzel if mixture is too loose.
Line a baking sheet with wax paper. Roll mixture into small grape sized balls. Pace in the fridge or freezer for 1/2 hour.
After the balls have chilled, place chocolate chips and coconut oil into a double boiler and heat until chocolate is fully melted. Place balls 2-3 at a time into melted chocolate, roll around to completely coat, then transfer back onto wax paper. Once all balls are chocolate coated, sprinkle with something( if you want) and place back in fridge to set up.
Yesterday I spent the entire day (ok maybe not the entire day), but a the better part of the afternoon defrosting my freezer. Sure, I do the occasional chip chop here and there, just enough from around the freezer door so it will close, but ever few months I notice that everything in the fridge is not staying cold and that the freezer is not freezing stuff. Thats when I know its for real time to defrost. So a few days ago when I noticed my bananas were turing to liquid in the freezer, I knew it what I had to do….Completely empty the fridge and melt/hack away the 2-4 inches of ice build up that accumulated. It is such a freaking pain in the ass.So on this defrosting day, I took all the stuff from the freezer, stuck it in a cooler, and the rest of the stuff, which is basically all veggies, I just tossed on the table. As I am hacking away with a metal spatual, a wooden spoon, and a constant rotation of pots of boiling water, I was thinking about dinner. I figured I might as well just eat up as much of the veggies as I could, you know, so I didn’t have to put them back in the fridge. And also, I was getting pretty annoyed because this particular defrosting session was taking way longer the anticipated, which made making dinner seem like another pain in the ass. I figured I might as well just eat everything that is already out on the table, which pretty much narrowed down the “whats for dinner” conversations because it was already all over the place. And so dinner was a humongo salad for me, and for the mister, I made him a monster of a veggie sandwich. (my salad was exactly the same stuff as the sandwich, minus the bagel) Easy, fast, super duper yummy, pretty and piled so high with tons of veggies that the fridge is pretty much empty now.
Look at the is beast. I don’t call it a monster sandwich for nothing.
The stuff included in this monster veggie sandwich..
Romaine lettuce, tomato, avocado for there is not real sandwich without them. Thinly sliced radishes, cucumber,a and onion for nice crispy crunch. Shredded beets, carrots, and purple cabbage to give more crunch and a bit of sweetness. Then of course there needs to be something pickled, so I used banana peppers cause they are the SHIT!! And lastly some hummus for a nice creamy finish (plus a bit of protein) and yellow mustard because mustard on everything is just right. Heres to a mountain if goodness that is no longer in the fridge! Served with a another mountain of roasted parsnips and carrots (more stuff from the fridge) and a tall glass of iced tea.
Lucky that today is farm share pick up cause the fridge is pretty much on empty.

Note. This is just a guide.. Feel free to use whatever veggies you fancy.
Either a bagel, 2 slices of bread, or a big chunk of baguette (use a gluten free bread if you want or need too)
Hummus- Homemade or store bought
Mustard
Something pickled like pickles, banana peppers , jalapeños or all three
Lettuce, spinach or some kind of leafy green
Tomato
Avocado
Onion
Radishes
Cucumber
Shredded Carrots
Shredded Beets
Shredded Cabbage
To assemble. Ready your bread.. Toast if you want, and stick it on a plate
On either side, smear the hummus and the mustard.
Pick a side, start to stack by evenly disrupting veggies on top of veggies. Place the second piece of bread on top and giving a little smooth to keep it together.
And go at it. Cut in half or don’t. Have a napkin or a long sleeve ready to wipe your face.
Guess what guys ….I got myself a sick vintage waffle/ griddle iron. I couldn’t be more thrilled!!! I found this thing at the local recycled goods store the other day, along with a very beautiful old white pyrex mixing bowl. It was one of my best thrift store scores! (Checking out the inventory and the condition of all the old things that day, I would say an old lady had just died and all her perfectly keep, mint condition kitchen stuff had just been donated. But it’s cool, cause I get the feeling that she was at least 90, with a big loving family, and was happy until the day she died. And I am sure she would be pleased that I have taken over the waffle maker. Thanks old lady!)
And now I am pretty sure that everything I make for the next week will be cooked on said waffle/griddle. I am serious, I already have a list of things to try and cook on it; cookies, biscuits, granola bars, potatoes, fruit, some type of pasta situations…. the list of possibilities is endless and I bet that at least 1/2 of these things will be totally awesome and amazing.
But first thing first. I need to make dinner.
So waffles for dinner!!
Note. These waffles are completely 100% fantastic for any meal you want to make them for. They consist of nothing more then beans, a shit ton of veggies, and just a bit of cornmeal. But don’t let that fool you because they are super packed full of so much flavor, have a really soft tender inside, with a nice crispy outside and are so super pretty. They are wonderful! The stuff. First, we got a big old pile of shredded up veggies which include; carrot, beet, sweet potato, onion, parsnip, celeriac, and a little bit of kale. A we got a bowl of rinsed and strained white beans, a little bit of cornmeal and salt, pepper, and garlic powder.
The makings of something amazing!Before you do anything. get your waffle iron out and preheat it.
While thats going on, take you beans, add 3/4 cup water and puree until smooth with whatever blending device want to like to use. (I used my hand blender…less to clean)Now collect all the shredded veggies and dump into a big bowl with the bean puree, the spices and the cornmeal. Mix until combined. The batter should be thick, but not dry. If its seems to wet, add more corn meal, or too dry, add a little more water.
Note how my batter turned a magical pink… I love beets, they make everything pretty! And check out that bowl!When your waffle iron is preheated, oil it if needed (if your not sure, add a little oil just to really make sure your waffles don’t stick) and take appropriate size spoonfuls of the batter and stick on iron. Close it and wait…..My iron has a little light that turns on when the waffles are done cooking, so I waited patiently (ok iI did open it a few time) until light tuned on and removed the perfectly cooked waffles.
Did I mention how awesome my new/old vintage iron is?
SO AWESOME!!
I made a little gaucamole and gave the mister and little bowl of plain Greek yogurt with lemon juice, but feel free to top, drizzle, or dump whatever you want onto these beauties…

Veggie Bean Wonder Waffles
Makes 8-10 waffles (in my iron) feeds 2-3 peeps
1 small carrot shredded
1 small parsnip shredded
1/2 a small celeriac root
1 small beet shredded
2 kale leaves chopped into tiny bits
1/2 an onion, shredded
1/2 a small sweet potato shredded
1/2 cup cornmeal
2 cups(or 1 can) cooked, rinsed and strained white beans
2 teaspoons garlic powder
teaspoon each salt and pepper
oil for iron(if needed)
Note on veggies… I used what I had in the fridge and shredded, it came to about 3 cups. If you don’t have these specific veggies or only want to use a few.. go for it. Just make sure to have 3 cups of whatever veggies you use.
Take you beans and blend them up with whatever device you would like to use. Once creamy, add to a bowl with the rest of the ingredients. Stir until combined.
Once the waffle iron is preheated, oil it( if needed) and place the recommended amount of batter right on it there. Close and cook until golden brown and waffly.
Serve on a plate with topping of your choice, A few suggestions.. Guacamole, salsa, hummus, mustard, greek yogurt… anything that tastes good to you.
I had to share the last of the 5 pineapples cause if I didn’t, that would mean I ate 5 pineapples by myself. (I ate 4 pineapples by myself) So donuts were made and delivered to my sisters house where I proceeded to make her and her kids and another sister dinner. (hand made pizza on a weekday!) I then whipped out these pretty little upside down pineapple donuts for dessert, right after I cleaned up and made whipped cream. The kids were swallowing them hole and trying to steal just one more and my sister and the mister, well they had to eat their donuts all elegant like with forks. (weirdos)
I know I have said it before but just in case you forgot
I am the best sister/aunt ever!
The stuff. Flour, salt, and the baking soda whisked together into a bowl. Fresh pureed pineapple, milk, egg, melted butter, and white sugar. Than there is more melted butter, brown sugar and fresh pineapple for the upside down. This batter is pretty simple, just make sure to whisk all the dry really well. Dump all the wet stuff into the dry and mix until combined. Don’t over mix!Grease the donut pan really well and mix the brown sugar with the remaining melted butter
Drizzle the bottom of each donut round with the butter/ sugar mix then layer thinly sliced pieces of pineapple around the hole maker. (not as perfect as a pineapple ring, but still pretty)
Scoop donut batter on into the pan and stick into the oven preheated at 350 degrees. When donuts are all nice and golden brown, remove from oven and let sit and cool for about 5 minutes to give the donuts time to cool and the brown sugar to thicken. Dump donuts out onto a wires rackAnd serve them all upside down like. Maybe with a scoop of whipped cream or ice cream or nothing.

Pineapple Upside Down Donuts
Makes 12 donuts
1 cup flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup white sugar
6 tablespoons melted butter ( 1/2 s for batter 1/2 for sugar mixture)
1 egg
1/2 cup milk
1/2 cup pinapple puree (about 1 cup fresh pineapple chunks blended)
1/2 cup brown sugar
1 cup sliced pineapple
Note. I used fresh pineapple, but you could use canned. I think you would need a of rings (cut in half) and a an of chunks, blended up)
Preheat the oven to 350 and grease the donut pan(s)
In a large bowl, whisk together the flour, salt, sugar and baking soda. Melt 3 tablespoons of butter and mix that with into the flour mixture along with the pineapple puree, milk, and lastly the egg. Mix until combined.
Melt the remaining 3 tablespoons of butter and mix into the brown sugar. Drizzle (crumble) about a teaspoon of the mixture into the bottoms if each donut mold. Layer thinly sliced pineapple on top of that then scoop donut batter on top of that. Stick into the oven for about 10 minutes, or until donuts are gold brown and a tester comes out clean. Remove from oven and let cool for 5 or so minutes on a wire rack before turning out of pan.
If working with one pan, make sure to really clean the pan and re-grease before baking the second batch!
Serve donuts with a scoop of whipped cream and eat with your face.
The mr and I were suppose to go to our weekly dinner at my sisters house the other night, but when I texted her to double check that wet were still on, she informed me that her two kids had been sickos.. but we were still welcome to come.
Yeah, no. We stayed home.
But before I was informed of the ill littles, I started making these biscuits to bring over. And whoa, am I glad that we didn’t go cause if we did, I would have brought these and maybe killed a kid. See, one of the littles is very allergic to nuts, and I used almond milk in these, so if I had brought them over to the houes, he would have surly ended up with one of those epi pens stuck in his ass and a trip to the nearby hospital. And that would have sucked. I am usually so good about making sure there is not nut anything near anything that goes into that house, but the almond milk.. it just slipped by my awareness. Maybe cause I usually use soy milk, or maybe I am subconsciously out for the kid, but I am now more aware the ever. I think I might even make a little sign to go over the baking stuff that says “Watch your NUTS!” The mr or and any boy would like that.
So yeah, good thing we didn’t go, and now we have lots of biscuits, but that is also a good thing. The mr has had the pleasure of enjoying them all to his lonesome. for dessert, then for breakfast, then for lunch, and now for dessert again. He is a biscuit man through and through. And yeah.. APPLES!
To the biscuits!
The stuff. For the biscuit itself we got some flour, baking soda and powder, cold almond milk, cold earth balance. salt and a little brown sugar. Then for the filling we have more brown sugar, cinnamon, a little more earth balance and of course apples*.
*These apples, oh they are good. Nice and crisp and slightly sweet. They are also very little. I picked them off one of the many trees at our community garden. Unfortunately I have yet been able to identify them, so apple variety here is up to you. A granny smith, gala, or even a mac should do just swell.
To start off, thinly slice and chop up your apples.(I think peeling is a waste, but if you want to, I guess you could peel them). Add the apples to a pot with the earth balance and brown sugar.
Place on medium heat and cook until the apples are soft and the liquid sugar is starting to thicken. Add in the cinnamon and set aside.
Flour, baking soda and powder and salt are whisked together in a large bowl. Add in the cold earth balance and cut in with a fork or pastry cutter until it makes the flour crumbly.
Now add in the cold almond milk and mix until just incorporated. If the mixture seems to dry, add in another tablespoon or two of almond milk
Dump mixture onto a flour surface ands gather into a ball.
Side note.. SEE MY BOWL!!! It’s it amazing? My grandmother gave me here set of vintage ptyex mixing bowls last time I saw her. (It came with a medium red and a little blue one too!) And the best part, my dad remembers them from when he was a little. How fantastic is that.
Roll dough out into a square thats about 1/2 inch thick
Spread the apple mixture on half the dough, leaving a little boarder.
Fold dough over, press the sides tougher, roll the rolling pin over the dough, just to give it a little flatten pat, and cut into squares.
Place on a baking sheet and wash the tops with a little almond milk and sprinkle with more brown sugar.
Into the oven they go!!
Baked until fluffy golden brown. Remove and let cool for a minute or two.
Apple cinnamon biscuits heck yeah!

For the biscuits
2 cups all purpose flour
2 teaspoons baking powder

1/3 cup cold earth balance
2/3 cup cold almond milk (or any milk)

For the apple cinnamon filling
2 tablespoon brown sugar
1-2 tablespoons Vietnamese cinnamon (I like lots of spice so I used 2 tablespoons, but if you like a more subtle cinnamon flavor, use a little less. Also can use regular cinnamon if you don’t have viteneme cinnamon)
2 tablespoons earth balance
1-2 gala, granny smith or mac apples (about 2 cups thinly sliced)
a little extra almond mild to brush tops and bit of brown sugar to spindle the tops with.
Preheat oven to 425.
Slice and chop apples into small thin chunks and place in a pot with the 2 tablespoons of earth balance and sugar. turn heat on medium high and cook until the apples have soften and the sugar an butter have turned into a thin syrup. Remove from heat and set aside.
In a large mixing bowl, whisk together flour, baking soda and powder, salt and 1 tablespoon brown sugar. Cut in the cold earth balance until flour is crumbly. Add in almond milk and mix until combined If dough seems way to dry, add in an extra tablespoon of milk . Dump dough onto a lightly floured surface and bring together. Take your lightly floured rolling pin and roll dough out into about a 1/2 inch rectange. Take apple mixture and spread evenly on half the dough then fold over and press sides and ends together. Cut into 8 equal pieces. Place on a baking sheet (Iit might be a good idea to line it with parchment) and wash tops with a little almond milked and sprinkle with brown sugar.
Place in oven for 12-14 minutes until golden brown.
Remove and let cool for a minute and then eat them all. Or eat a few and save the rest for later.
Lasts for 2-3 days in air tight container, but will not be super crispy biscuity after being stored.
It’s official, all of the littles started school yesterday……HOORAY! (I say hooray cause school is cool and the start of school means it’s going to be fall so soon!. Also I like hanging out with the littles more when they are in school. There is more to talk about and any time away from school is cool time so they like to do more stuff and not just be summer bums)
One of the littles had his very first ever day of school. So me, being the bestest most awesomest aunt ever, made that little a celebration, hooray for school, banana ice cream cake.
This little has been bugging me for a while now to make him an ice cream cake. It all started a few months ago when I gave him a bowl of banana ice cream and told him that when he sleeps over he can have ice cream for breakfast That blew his little mind. We then proceeded to have a converastawtion about healthy food and what was ok to eat for breakfast. (He is very interested in being healthy) I then told him that whenever he sleeps over I would make a banana ice cream cake for breakfast cause bananas are healthy. But every time he is over, I never seems to have enough bananas.
Well I had the bananas and there is no better excuse then the first day of kindergarten to make a cake.. A very delicious peanut butter banana ice cream cake! And no, it wasn’t for breakfast, but the left overs can be! (there were no left overs here)
The stuff… Crispy rice cereal, peanut butter (I have some chiunky stuff at the moment, but any nut butter is good) and 4 frozen chopped up bananas.
Rice ceareal goes into a food processor with the peanut butter. Pulse until everything is all combined and starts to come togerter.
And ump the mixture into a spring for pan. If you do not have a spring form pan, a pie plate will work just as well.
Such a nice looking crust if I do say so myself. Now stick it in the freezer while you make your ice cream.
Frozen bananas go into the processor, get blended for a few mounters, and come out as ice cream…. freaking magic!
Now dump the magic ice cream into the crust.
And smooth it all nice like..and into the freezer it goes until its frozen.
After a few hours, you take it out of the freezer, remove from the pan (or leave it in the pan)
And gather your toppings. A handful of the rice cereal, some melted peanut butter, and a little melted nutella. (use whatever you want.. fruit would be great, some nuts, graham crackers, sprinkles. You get the idea)
Now, Wait for it….
Go crazy! Toppings all over!
And serve up, and watch out.. I almost got my hand eaten for kids going for seconds..

Makes a 6 inch cake
For the cake
4-5 frozen bananas
2 1/2 cups crispy rice cereal
4 tablespoon peanut butter
To garnish (use any, all or none of what you would like… and maybe not the super sugary ones if a breakfast cake)
melted peanut butter
melted chocolate
Nutella
handful of rice cereal
fresh fruit
jam
coconut flakes
sprinkles
anything else you would like!
Place cereal and peanut butter into a food processor and pulse until crumbly and combined and starts to come away from bowl.
Dump mixture into a 6 in spring form pan (or if you not have one, a pie plate works too) and press it down evenly on the bottom. Stick into freezer
Take bananas out of freezer and place into food processor. Blend until smooth. If needed, you can drizzle a tiny amount of water into it if you think it needs a little help to blend.
Once smooth, take crust from freezer and dump the nanaer ice cream on top and carefully smooth it out. Stick back into freezer (a pier of plastic over to prevent ice crystals )for at least 2 hours, or until the ice cream has completely frozen.
When it’s time to serve, remove cake from spring form (or leave it in the pie plate).and drizzle the top with melted peanut butter, melted, chocolate and another handful of crispy cereal. Or leave it bare. Or add sprinkles… the toppings are all unto you!
Eat like a camp, for breakfast or dessert.. Or eat some for dessert and then some for breakfast.
I never use to eat breakfast. Or I would drink a pot of coffee and call that my breakfast. (which still happens every now and then) But as I get older I have realized the importance of a eating a healthy morning meal.. If I eat breakfast I have more energy throughout the day. I go to the gym in the mornings and find that if I eat before or right after that I feel so much better and stronger and am less likely to have a major energy crash.. I also made breakfast a routine, where I read while I eat, which is one of my favorite parts of the day. This bowl of greatness has made me wake up hungry, to the point that sometime I go to bed excited to wake up and eat, and i’ll be honest, to drink coffee.(that’s totally not weird)
And I know, this might seem like a strange combination to some, that lentils should not be a breakfast food. But really think about it. Why not? I am a firm believe that anything healthy that provides a great amount of nourishment is good breakfast food.
This breakfast bowl is full of everything that I love. It’s backed full of proteins and all sorts of other hearhtly vitamins, minerals and antioxidants (I am not going to list everything) and is the optimal form of nourishment…. The perfect breakfast.
Still skeptical…Well don’t be because I am telling you, this is oh so tasty. Just trust.
The stuff*…. Cooked and cooled lentils, a carrot, a couple strawberries and a small apple, all chopped up. And cinnamon. Don’t forget the cinnamon.
*Note.. I always start with the lentils and carrots but will change uo the mix ins. I like peaches, blueberries, cherries, pears, roasted sweet potatoes. I’ll use pretty much whatever I have for fruit in the house. So what I am saying is use whatever you like.
Take you stuff, and pile into a bowl all nice and pretty.
Sprinkle on a spoonful of cinnamon..
This is for real, the best breakfast ever!

Between 1/2- 1 cup cooked and cooled lentils
About a cup of mix ins. (use whatever you like.. apple, pears, any type of berry, roasted sweet potato, cherries, peaches, nuts, carrots, mango)
Cinnamon
Place lentils and mix in’s into a bowl. Sprinkle on desired amount of cinnamon. Mix together and eat.
Can be made the night before so it is all ready for the morning.
Use a spoon or your fingers, Always chew with mouth.
Guess what guys ….I got myself a sick vintage waffle/ griddle iron. I couldn’t be more thrilled!!! I found this thing at the local recycled goods store the other day, along with a very beautiful old white pyrex mixing bowl. It was one of my best thrift store scores! (Checking out the inventory and the condition of all the old things that day, I would say an old lady had just died and all her perfectly keep, mint condition kitchen stuff had just been donated. But it’s cool, cause I get the feeling that she was at least 90, with a big loving family, and was happy until the day she died. And I am sure she would be pleased that I have taken over the waffle maker. Thanks old lady!)
And now I am pretty sure that everything I make for the next week will be cooked on said waffle/griddle. I am serious, I already have a list of things to try and cook on it; cookies, biscuits, granola bars, potatoes, fruit, some type of pasta situations…. the list of possibilities is endless and I bet that at least 1/2 of these things will be totally awesome and amazing.
But first thing first. I need to make dinner.
So waffles for dinner!!
Note. These waffles are completely 100% fantastic for any meal you want to make them for. They consist of nothing more then beans, a shit ton of veggies, and just a bit of cornmeal. But don’t let that fool you because they are super packed full of so much flavor, have a really soft tender inside, with a nice crispy outside and are so super pretty. They are wonderful! The stuff. First, we got a big old pile of shredded up veggies which include; carrot, beet, sweet potato, onion, parsnip, celeriac, and a little bit of kale. A we got a bowl of rinsed and strained white beans, a little bit of cornmeal and salt, pepper, and garlic powder.
The makings of something amazing!Before you do anything. get your waffle iron out and preheat it.
While thats going on, take you beans, add 3/4 cup water and puree until smooth with whatever blending device want to like to use. (I used my hand blender…less to clean)Now collect all the shredded veggies and dump into a big bowl with the bean puree, the spices and the cornmeal. Mix until combined. The batter should be thick, but not dry. If its seems to wet, add more corn meal, or too dry, add a little more water.
Note how my batter turned a magical pink… I love beets, they make everything pretty! And check out that bowl!When your waffle iron is preheated, oil it if needed (if your not sure, add a little oil just to really make sure your waffles don’t stick) and take appropriate size spoonfuls of the batter and stick on iron. Close it and wait…..My iron has a little light that turns on when the waffles are done cooking, so I waited patiently (ok iI did open it a few time) until light tuned on and removed the perfectly cooked waffles.
Did I mention how awesome my new/old vintage iron is?
SO AWESOME!!
I made a little gaucamole and gave the mister and little bowl of plain Greek yogurt with lemon juice, but feel free to top, drizzle, or dump whatever you want onto these beauties…

Veggie Bean Wonder Waffles
Makes 8-10 waffles (in my iron) feeds 2-3 peeps
1 small carrot shredded
1 small parsnip shredded
1/2 a small celeriac root
1 small beet shredded
2 kale leaves chopped into tiny bits
1/2 an onion, shredded
1/2 a small sweet potato shredded
1/2 cup cornmeal
2 cups(or 1 can) cooked, rinsed and strained white beans
2 teaspoons garlic powder
teaspoon each salt and pepper
oil for iron(if needed)
Note on veggies… I used what I had in the fridge and shredded, it came to about 3 cups. If you don’t have these specific veggies or only want to use a few.. go for it. Just make sure to have 3 cups of whatever veggies you use.
Take you beans and blend them up with whatever device you would like to use. Once creamy, add to a bowl with the rest of the ingredients. Stir until combined.
Once the waffle iron is preheated, oil it( if needed) and place the recommended amount of batter right on it there. Close and cook until golden brown and waffly.
Serve on a plate with topping of your choice, A few suggestions.. Guacamole, salsa, hummus, mustard, greek yogurt… anything that tastes good to you.
Eat as breakfast, lunch or dinner…

My contribution to last nights dinner at my sisters…. Freshy fresh veggies spring rolls.I had about 30 minutes between work and getting over to my sisters house to throw something together so it needed to be something fast, easy, and something I could make without going to the store. She was making the main course (some teriyaki situation and rice) so I was doing up the veggies.
I had just bought a package of spring roll wrappers…. Bingo! The perfect and logical choice. I grab the wrappers, a variety of veggies and after spending 12 of my 30 minutes trying to scrub the oil based paint off of my face and hands, I still managed to completely prepare, construct, and take pictures of these lovely tasty spring rolls. and get over to my sisters in time for dinner.
Impressed?

The stuff. Carrot, beet, asparagus, red cabbage, and kohlrabi, which all (except asparagus, which I just cut into thirds) got cut into matchstick sized pieces with my mandoiln. Then there are the rice spring roll wrappers that we need to make the veggies into rolls. Also a bit of red wine vinegar to drizzle onto the veggies for a little extra zing. And lastly, soy, fresh ginger, and a couple cloves of garlic for a spicy salty dipping sauce.Start by having everything set out and ready to assemble. Fill a large shallow dish or baking sheet with really warm water. Working with one at a time,place a rice wrapper into water and let sit for about 10 seconds or until the paper starts to soften. Remove from water and place on a damp surface (just splash a little water on the counter) Take a little bit of everything and and place on the lower middle part of the paper. Fold in the sides first, then tuck and roll the wrapper as tightly as you can without ripping the wrapper.
Repeat until you have used up all you veggies.For the dipping sauce. Finely grate ginger and garlic and add to soy sauce. Stir… and it’s done.Freshy, pretty and fantastically delicious. And for real, took about 8 minutes to make. (I even had enough time to wash the dishes before we left!)

Fresh Veggies Spring Rolls
Makes 8-10 but can easily be increased or decreased to desired amount
8-1o rice spring roll papers
Splash of Red wine or rice vinegar
1/4 cup soy or tamari sauce
2 cloves of garlic
teaspoon freshly grated ginger
1 medium carrot
1 medium beet
1/4 head of purple cabbage
10 thin fresh asparagus
1 small kohlrabi
Note… I used the veggies that I had in the fridge at the moment. If you have a bunch of veggies but not these particular ones, use what you have. Pretty much all veggies taste good inside a spring roll!
Gather your veggies and prep by either using a mandolin, a grater, or some sick knife skills, and julienne, shred, or slice you veggies into thin match sticks. Once all the veggies are prepared, sprinkle a little vinegar over the top.
For the rolls…Grab a large shallow vessel (a rimmed baking sheet works great) and add in warm water. Working one at a time, place the wrapper into the water for about 10 seconds or until the wrapper starts to soften. Remove and spread onto a clean, damp work surface. Gather a bit of each veggie that you are adding and place towards the bottom middle of the wrapper. Now fold the sides in over the pile of veggies. Then with the side closest to you, tuck and roll wrapper away from you, trying to keep it tight, but not to tight that it rips.. (Hopefully that makes since.) Place finished rolls onto a damp surface to keep from sticking and if not serving right away, drape with a damp towel or paper towel to keep from drying out.
For the soy ginger dipping sauce. Add grated ginger, minced garlic, and soy into a bowl and mix together. Serve with spring rolls.
Eat one, two, or a plateful. It’s nice to share but not a necessity.
It’s Mother’s Day weekend which means that you and I and everyone out there should feel the slightest bit obligated to at least do a little something nice for your mom for the mere fact that you were borned. And really what better way to celebrate mom than with food… It really is the least that you can do. (I think mom’s also like flowers and cards and handmade pasta necklaces) My mom is defiantly about the food. (she has had her fair share or pasta necklaces) A many years back on Mother’s day, this sweet little girl (me) made her mother a special breakfast treat…blueberry scones. And ever since that day, for every freaking holiday, birthday, whatever day, my mother requests (demands) a batch of those scones. She is always saying that these are her favorite treat and that no one has ever made them as good as I do. (I guess that just reiterates that I am her number 1 child)
And for the last few months my mom has been up my butt, trying to get me to make her some. Not going to lie, I have been saying I’ll get her a batch, but for some reason, I haven’t gotten around to making them. So two birds here.. Make the scones and she gets off my back for a least a little while (a month.. maybe 2) and I give her a fantastic Mothers day gift that I know she will love.
So here they are , oh mother of mine. Blueberry scones!
The stuff. Flour, baking soda, baking powder and salt. A bit of sugar, vanilla, buttermilk, and butter (use vegan butter and nut milk if you want to make them vegan) And of course we need the blueberries which can be fresh or frozen. I usually use fresh, but the store I stopped at only had really big containers of fresh that were like $1000 dollars a piece and the organic frozen happen to be on super sale. So you know, the cheap in me won that battle. So into the bowl goes all the dry stuff; flour, baking powder and soda, salt, and the sugar. Give it a good whisk.
Now for my special trick for a perfectly distributed cold butter in a pastry. Freeze your butter and grate it!
With a large wholed grater, grate the frozen butter directly into the bowl with the dry, stoping a few times to toss the butter chunks around so you don’t end up with a huge pile of grated butter. When it’s all grated, gently toss around so the butter is evenly distributed. Now dump the blueberries into the flour mixture. Toss them around to give them a coat of flour. Add in the buttermilk and vanilla and give a little mix until liquid is absorbed. We are trying to handle the dough as little as possible.Turn mixture onto counter. It’s very loose, but thats what it should look like. Very gently and with as little handling as possible, gather dough up, knead a few times till everything just comes together. Press dough into a disk that is roughly an inch thick…. and it doesn’t need to be perfect. Cut the disk into even sized pieces. Do 6 big, 8 normal, maybe even 10 smaller. Whatever size you like. (I did 8) Place the scones onto a baking sheet, using a spatula to transfer, and sprinkle the tops with a little bit of sugar. Into a preheated oven for about 20 minutes.And when the scones look all nice and browned and a tester comes out clean. remove and either serve right away warm, preferably with huge cup of coffee or tea, or stick on a rack to cool before storing in air tight container.
Perfect to serve as a breakfast pastry, at brunch, or even as a dessert. A nice little treat for a special lady. (dudes can eat them too)

Blueberry Scones
2 cups all purpose flour
1/3 cup sugar plus 2 tablespoons to sprinkle on top
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter frozen or really cold (use non dairy butter like Earth Balance for vegan)
1 cup blueberries (fresh or frozen)
1 teaspoon vanilla
3/4 cup buttermilk (use non dairy milk for vegan)
Preheat oven t0 400 degrees
In a large bowl, whisk together flour, baking soda, baking powder, sugar, and salt. Take the frozen butter and grate directly into flour mixture, tossing around to evenly disrupted. Add in blueberries and toss around till coated with flour, then lastly, add vanilla to buttermilk and mix into mixture until just barely coming together. Turn mixture out onto counter and with your hands, knead mixture a few times until it forms a solid dough. Shape into a disk and smoosh down until about an inch thick. Cut into 6-10 triangles and place on a non greases baking sheet and sprinkle tops with remaining sugar. Stick into oven and bake for 20 minutes or until tops start turning a golden brown and a tester in the middle of a scone comes out clean.
Remove from baking sheet and serve warm or let cool on a rack.
Mom gets first dibs, and if she is willing to share, eat one yourself with your face.
And that’s how I know that this is a winner. As an awesome aunt, when I have any of my nieces or nephews, I feel the need to make something special for dinner, something that the kiddos might not get very often, but also keep it on he healthy side. I have 2 littles for the night which gives me the perfect opportunity for a trash food recipe. You know trash food, things like boxed mac and cheese, beefaroni in a can, or, in this case, sloppy joes.
Sloppy yes, trashy, not so much. These are made with beans and bulgur. No meat.
And I figured it is nice enough out that I can make the kiddos some messy food and then just bring them out back and hose them off… I mean, why not right?
The stuff… We start with onion and green pepper, chopped into pieces. Black beans, bulgur, can crushed tomatoes. Chili powder, garlic powder, a bit o apple cider vinegar (which I forgot to picture) ,and some salt and pepper. Oh and cheese if you want… Plus a bun of some sort is necessary. Toss the chopped onion and peppers into a deep skillet or pot with a drizzle of oil. Cook on medium heat until tender and toss in the spices. Give a stir. Add in the beans, bulgur, and tomato, a splash of vinegar. Stir it all up, cover, and let simmer for about 15 minutes, or until the bulgur has absorbed the liquid and is nice and tender.
If you are a bun toaster… toast while waiting. If not, just get the buns ready And Then dump a good heaping pile right onto a bun. Add some cheese, or not..and eat with wild abandonment, making sure to get as much on your face as you get in you mouth.

Black Bean and Bulgur Sloppy Joes
2 cups or 1 can cooked black beans
1 16 oz can crushed tomatoes
1/2 cup bulgur
1/2 cup water
1 small onion
1 green pepper
1 teaspoon garlic powder
1 teaspoon chili powder
salt and pepper
a splash of apple cider vinegar
olive oil
4-6 burger or bulky buns
cheese (optional)
Dice the onion and the pepper and toss with a drizzle of olive oil into a large skillet. Sauté on medium heat until veggies become tender. Add in the spices, stir in and let cook for a minutes, then add in the beans, the tomato,water and the bugler. Cover skillet and let simmer until bugler becomes soft.
When the slop is ready, either toasted or not, scoop a generous portions onto buns. If so inclined, add some cheese.
Eat with hands… Sloppy is good.
Chomp Chomp Chomp… The sound I make as I eat this freaking fantastic crunchy granola. You know it’s good when the person sitting next to you is annoyed by the sound of you face while eating. I eat a lot of crunchy stuff. And I am pretty sure I annoy the mister a lot.
Oh well, he will live, and he eats his fair share of annoying stuff too so we can just call it even.
So granola. I love it. I make a batch every few weeks or so, and I usually make it just for me. (I almost never make things just for me) I like to keep it simple but flavorful. A tad sweet, but not really, and crunchy, without the oily fried taste. I also like a variety of sizes, some big clusters and some small pieces.
This granola fits the bill perfectly. Made with 5 ingredients, no oil, and the perfect sweetness level. It’s one of my favorite flavors yet. And I know I said I made it just for me, but the mister really liked it too. (I can’t help sharing)
The simplest of stuff. 1 smashed banana, a cup of pureed butternut squash, Vietnamese cinnamon*, honey, and old fashion oats. (and a dash of salt, not shown)
*Note. I only ever use Vietnamese cinnamon because once I start using it, regular old cinnamon just won’t cut it anymore. It is a bit sweeter and a lot more spicy. If you don’t have it or don’t want to use it, use regular cinnamon and add in 1/2 a teaspoon of all spice.Toss the cinnamon and salt with the oats. Mix together the banana, squash and the sweetener and combine with the oats until full incorporated.
Another note. Because I made this granola for me and no body else, I actually omitted the honey (I think that banana abs squash make it sweet enough) But if I was making this for lets say, the mister, or a friend, I would use add a bit. The sweetness level and sweetener of choice is up to you, but 2-3 teaspoons of honey or maple syrup is usually sweet enough for people.
Dump the mixture on a parchment lined baking sheet and give it a little pat, you know, to settle all the bit and pieces together, all cozy and evenly spread out. Now stick into a preheated oven and after about 20 minutes, take out of oven and give the granola a toss, breaking apart any super big chunks or overly wet pieces. Put back into oven for another 20 minutes. (I like my granola super crispy crunchy so I cook it a little longer, like 30 more minutes)And when you are happy with the crunchiness of you granola, remove from oven and let cool, trying not to eat all of it while it sit’s on the counter looking all pretty and smelling like happiness.
Grab a bowl, stick the rest into a jar with a lid, hide it from others, and chomp chomp chomp away!

Banana Butternut Granola
3 cups old fashion oats (use gluten free oats if needed)
1 ripe banana, mashed
1 cup butternut squash puree (can use canned)
2 tablespoons Vietnamese cinnamon (or 2 tablespoons regular cinnamon and 1/2 teaspoon of allspice)
1-3 tablespoon honey or sweetener of choice (use greater amount for sweeter)
dash of salt
Preheat oven to 375
In a large bowl, mix together oats, cinnamon and salt. Mix the mashed banana, squash, and sweetener of choice together and combine with the oats. If the mixture seems really dry, add in a very small splash of water to loosen just enough to mix.
Dump mixture onto a parchment lined baking sheet and evenly disperse the mixture. Give it a kind of smoosh to compact the oats and to make sure all its all the same thickness on the pan.
Stick into oven for 20 minutes. Remove and give granola a little toss, maybe breaking apart any really big chunks (unless you like really big chunks) and put back into oven for another 20 minutes. (30 for a crunchier granola) Remove from oven and let cool on baking sheet before storing in an air tight container. If you find that it is not as crunchy as you would like or is a few days old and lost some of its crunchiness, just stick it back into the oven for a few minutes to re crunch.
Eat as is, as a cold cereal, dip in peanut butter, add to popcorn or whatever way you want to eat it. No utensil required.
THE LOVELY CRAZY

Ahh, memories.
Now as an adult (kinda adult) St Patricks is celebrated a little differently. The little ones in the family still get their green milk (which they are told is leprechaun pee) and those nasty gold coins, but I think the pinching has stopped.( a great tradition lost) I myself don’t have any littles at home so no little leprechaun games or gross dyed food for me. Nope, in my house we celebrate with a few beers and a more traditional irish dish, Colcannon. Mashed up potatoes with cabbage and kale… I mean, can it get much better? It can when you use red potatoes and red cabbage. Not only is it so tasty tasty, but it is so pretty pretty. No need for green milk or nasty candy.
But I still make sure to wear green and you might find me doling out a pinch or two.
Note. If you do not have or want to use red potatoes, russet or white will work, it just won’t be as pretty.
While the potatoes are boiling, chop up the cabbage, shallots, and the kale and stick into a big skillet with a good drizzle of olive oil. Sauté on medium heat until soft and tender.
Have a great happy day full of green, potatoes, and pinches. Maybe even a leprechaun or two!

Red Potato Colcannon
Rinse and dice potatoes and place into big pot. Cover potatoes with water and add about a tablespoon of salt. Place on high high heat and bring to a boil. Turn heat to medium low and let potatoes cook until super fork tender. While potatoes are boiling, chop up cabbage, shallots and kale and sauté in a large cast iron skillet (or any skillet) with a good drizzle of olive oil. Once the potatoes are done, drain water and add potatoes to the skillet with the sautéed veggies. With a potato masher or fork, mash the potatoes and mix with the veggies, adding a drizzle or two (depending on your taste) of olive oil as you go. Salt and pepper to taste.
Serve from skillet or dump into a fancy dish with a big spoon.
Eat as a main dish or as a side….Good hot, warm and cold.
