THE LOVELY CRAZY

One of the mr’s little brothers really likes peanut butter cookies. He is always asking me to make them for him so this past weekend, for his 24h birthday, I did just that. Peanut butter chocolate chip birthday cookies,  Just for him. (I know, I am the best)

After rushing home the evening before to make this awesome cookies for the boy, I waited until a decent time the next day and I shot him a text.. “Happy Birthday! Where are you?, I want to bring you cookies!”. That was at noon. I get a text back around 3… “just woke up, I’ll come get them later.” (Sleeping until 3pm.. that must have been a crazy ass birthday morning!)

Well guess what. That little shit didn’t come get the cookie that I made all special like for him so now the mr has slowly been picking them off. And the mr. says that these cookies are like magic. That they are so freaking good, probably the best peanut butter cookie he has ever had.  (he doesn’t usually say things like that about cookies so the really must be amazing)

So if you are reading this Qui.. you have a a few magic cookies left…but I can’t promise anything after tonight.  The sister is coming over for dinner and I’ll just give them to her for dessert……….

The stuff. Rolled oats, peanut butter, brown sugar, sea salt and chocolate chips. Also a bit of baking soda, some vanilla extract and a bit of water.  You need no flour, eggs or butter, these cookies are all about simple goodness.

Notes. Chunky or smooth peanut butter is cool here and you can use natural or skippy.. the skippy cookie will just be a bit sweeter. And the sea salt. If you don’t have sea salt, add a teaspoon of table salt to the cookie batter. The sea salt is for the tops of the cookies and you should NOT use table salt for that.

Start by sticking the oats into a food processor and blending until your oats become oat flour.

Then dump everything else in (water first), EXCEPT the chocolate chips.

And pulse until it all comes together into a yummy peanut butter cookie dough.

Dump the dough into a bowl and now mix in the chocolate chip.  Once you do that, stop eating the dough and stick the bowl in the fridge for 10-15 minutes to slightly chill…. 

After the bout in the fridge, grab your dough and scoop out like sized balls of dough and place them on baking sheet. Give each ball a smoosh (use a fork or your fingers) and sprinkle the tops with a small little pinch of sea salt (again, if you don’t have sea salt, so not use table salt… just skip this)

And into the oven they go…

Only until slightly golden brown and just starting to look almost done….. that’s when they are done (about 8 minutes)

Let the cookies cool for a minutes on the baking sheet then transfer to a wire rack to finish.

Super awesome and super duper duper good. Made with love and good intentions for a little shit… but left to be eaten by others

But really these are so easy and fast to make. I’ll probably just end up making the boy a new batch. (again, so nice)

Make about a dozen

  • 1 cup old fashion oats
  • 1/2 cup warm water
  • 1 heaping cup peanut butter (creamy or chunky)
  • 2/3 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 ish cup chocolate chips/chunks (the tiny chips work the best)
  • flaked sea salt (optional)

Note. Flaked sea salt is a perfect finish for the cookie but if you don’t have it or don’t want to use it, add a teaspoon of table salt to the cookie batter but don’t sprinkle the tops with it.

Place oats in food processor ans blend until it turns into flour. Add in water, pulse, then add in the rest, EXCEPT the chocolate chip.  Pulse until a dough forms. Dump the dough into a bowl and now mix in the chocolate chips.

Stick the dough in the fridge for about 15-20 minutes…. In the mean time, do the dishes and a little cookie dance.

Preheat oven to 350.

With a scoop or spoon. scoop out your preferred sized cookies onto a baking sheet. Give each cookie ball a little smoosh with either a fork for a pattern or just your fingers. Sprinkle each smooshed cookie with a pinch of sea salt.

Stick the cookies in oven and bake for 8-9 minutes, until just barely golden brown. Remove from oven, let cool for a minutes then remove from sheet to cool on a wire rack.

Place a cookie or two on a plate, stash the rest away (or else you will eat them all) grab a nice cold glass of some milk situation or a pipping hot cup of coffee and sit down with a good book or even a smutty magazine (no judgment here), read, eat cookies and be happy.

We have been doing work on the house for a while now, ripping things out, patching things up.. must mostly ripping things out. Well yesterday we made our first purchase for something that is going into the house… A vintage green pedestal sink. YES!!! I scoured the internet,looked in salvage yards, all the while not really thinking I would find anything (anything I could afforded) but lo and behold, two days ago I found one on craigslist. Crazy, and only a little drive away. So the mr and I jumped on that and yesterday we drove out to the country, stopped at the pig farm, feed the cutest 5 week old piglets stale donuts and retrieved out new green sink from the frozen mud. I am so excited. We have officiallybought our first major piece for the house.  And it’s so pretty and green and almost tacky, (could get tacky) but is going to be perfect.  Oh how I love me the craigslist.

Other news.  Have you hear about the pre-peeled oranges from Whole Foods, the ones that made everyone all crazy and waere all over the news and internet? So stupid right. (Like yeah it’s kinda stupid to sell pre-peeled oranges and a waste of plastic, but is it any more dumb the to sell single serve plastic coffee pods, shrink wrapped potatoes, or plastic wrapped junk food. Just saying.) The mr and I were watching the morning news when the story came on. We started to have very normal discussion about who and why and all that when I guess I made a comment about how I have to peel his oranges. (I don’t peel his oranges, but I might have helped start a orange a few tines) And then all of a sudden this light hearted discussion about pre-peeled oranges went down hill. The pre peeled oranges made us turn on each other (our argument might not been entirely about the oranges…) Long story short. probably not going to be buying oranges for a while….Or maybe I’ll take it one step further and just stock the fridge with pre-peeled, sectioned off segments of oranges.

HAHAHAHA. I am brilliant!

So oranges, new green sink, and the temperature outside is going up up UP. Life is life and going pretty good.  I am excited and ready and going to pull my bike out of the basement today. As soon as all the ice is melted out of the road… look out world! And clean. All I want to do it clean. Have you gotten the spring clean itch yet? My itch is like a rash. I want to get ride of EVERYTHING and power wash the inside of the house. I also want to invent something that keeps the dog nasty off of my life kinda like a bath). Yeah, maybe we will wash Washer today. That could be fun (not at all fun)

Other then that, not sure. Hoping for a long leisurely walk (pre-dog bath), a spring time salad situation involving lots of fresh baby arugula and pears and at least one small nap on the couch with window open. Not to much to ask, but we shall see.

Yup. this is the current kitchen. Everything is ripped out (besides the floors… doing that on Monday)

And now the big question…What are we doing? Honest, I have no freaking idea. No that’s not true, I have way to many freaking ideas. The internet is driving me crazy with all of it’s pretty pictures and cool ideas, it’s so overwhelming. And then there is the budget. Did you know that everything is not free? I know, sucky, but we are on not in a position to spend away… Plus I like my things used or recycled with character and charm. (and free of cheap(but well made))

And it’s not like this isn’t like my 100th kitchen remodel, but this one is personal. Like has potential to me the kitchen of my (our, but mostly my) dreams. And that’s a lot of pressure. Here is the list of the big things we need to figure out. Soon.

  • Do I eat grass and dirt for a few months and save enough money to get a wolf gas range or do I get a way less expensivedecent stove that I will probably burn out within 5 years (I burn out ovens… I like to cook hot!)
  • Where does the fridge go ? Currently the old fridge is on the opposite wall, and it almost kinda works there, but I wanted that wall to be bare. so?
  • Dish washer? I could live without, but the mr wants one. He is probably right but we have been hand washing for so long now that I might miss it. (ok, probably not)
  • And the sink. Old farm sink or a newer 2 bay?
  • Do we do a tile back splash? And if yes, white subway or what ?(no color or anything trendy…)
  • The floor. We know that if the there is hard wood or any nice soft wood under the layers of shit on top, we will sand and keep. I am hoping for that, but it’s not looking good from what we see so far. So then what? I don’t think I want tile but should we really lay hardwood down?
  • Lighting. Actually not a big deal here cause I feel like lighting is so easily changed out for us that if we don’t like it,we’ll just change it.
  • And the biggy big big.. Cabinets and counter tops.  I know no laminate and no wood countersbut I don’t want fancy or expensive or ugly. And the cabinets could possibly come from ikea and we face them ourselves or I find some cool old dressers!?

What we do know is that we are going to stick some type of french door situation here. The doors have to be cool, old, and be half, if not entirely made of glass. I have my heart set on a pair of antique garden doors that came from FranceI saw last year at a reclaim store which have sense been sold.. SO whoever bought them give them back. That’s not a lot to ask right?

Yeah. Just looking for the right set. We might even find cool doors we like and DIY something. We want the doors soon, but are not going to settle on anything mah… we will wait for the right ones.

Thinking that the stove is going to go on the far wall where the black is. Have a little counter and a long counter against the opposing wall…. Still not 100% The sink is (was) in a good spot so it’s staying under the window.

Definitely our favorite spot in the house. The heater is getting removed, but other then that, again, not sure. Just know that it has to stay a fantastic nook for coffee consumption.

So that’s where we are right now with the kitchen. We have a little more time, but soon all ofthese decisions have to be made and we will start putting it all back together (SO EXCITED!) Until then, I will continue to scour the internet for ideas , the salvage yards and craigslist for all the cool stuff, and all the vending machines for any left change.

The sister came over for dinner again this week (we have established a weekly homework dinner club) which then turned into an argument between me, her, and the mr. I told them I was making shepherd’s pie and went about my way in doing so. The mr was gone for a bit, I was cooking, Barb was homeworking and all was good. When the mr came home for dinner and I pulled out the pie, he was skeptical. Then I served it up and handed him a nice big bowl of this amazing looking/smelling/tasting/ shepherd’s pie and the first thing he said was “this is not shepherd’s pie. Shepherd’s pie is mashed potatoes, corn and meat.” Well ,yeah” I said, “that is one way to make it, but shut it you… I am calling it shepherd’s pie” Haha. And little Barb, she was on my side and had none of the mr skepticism. and started to argue with him.(She is always in my side) Me, I just sat there and ate and let them fight.

By the end of dinner, the mr still wouldn’t call it shepherd pie but together they settled on a new name. “Judah Pie” because Judah is a religious name and a shepherd sound religious too and they are such freaking weirdos… I don’t know how they think. Oh how much do I love our dinners.

Anyway, still calling it shepherd’s pie so yeah, I win!

The stuff. One big rutabaga, some dried lentils.half a big onion, a zucchini, some frozen peas ,and a couple carrots.  Garlic, rosemary, and a bay leaf or two are going in to the mix along with some balsamic vinegar, olive oil and salt and pepper. All some good good stuff if I say so myself, but veggie wise…use what you got on hand. Heck you even go with a straight up bag of some frozen stuff..

Start by peeling and dicing up the rutabaga. When dicing, make the chunks kinda small (they cook faster) and stick them into a pot of cold water. Cook them like you would potatoes..(salted water, bring to boil, turn heat to medium and cook until super tender)

And get those lentils on the stove too. Add the rosemary and bay leaf to the water, stick on the stove, bring to a boil, then turn heat to low and toss a lid on the b.

Alright, so that stuff is cooking, now you can chop up the veggies and toss them into a skillet with a splash of oil and water. Stick those on the stove on medium heat for a few minutes, just to give them a little head start in cooking. Let them start to sweat, but don’t let them get mushy.

After a few minutes, toss in the peas, the garlic (after its minced up) and a few glugs of balsamic vinegar. cook for just another minute or two.

And the lentils are done!

Dump those babies into the skillet with the veggies (remove the bay leaves) and mix around. Season with salt and pepper, taste, add more if needed and more vinegar if you think you want too. And smooth out the mixture into the skillet.

Super fork tender and sprinkled with a good amount of salt and pepper and a splash of olive oil. Also add in a bit of the reserved liquid to fluff it up a bit.

The veggie lentil mixture gets topped with that mash and is spread out all nice like.  Ready to be popped into the oven to bake.

Look at that golden skillet of amazing. Baked to perfection…….. Smells so good.

Serves with a hunk of bread and a fork to eat it with.

Whatever you call it, we can all agree that we can call it good!

  • 1 medium sized rutabaga
  • 1 1/2 cups dried lentils
  • 3 cups water
  • 2-4 cloves garlic
  • 1-2 by leaves
  • 2 teaspoons rosemary
  • 2 small or one large carrot
  • 1/2 a large sweet onion (or ant onion)
  • 1 small zucchini
  • 1 cup frozen peas
  • balsamic vinegar
  • olive oil
  • salt and pepper

Note. This is one of those “recipes ” that is easily adapted to what you got in you fridge. The main ingredients are rutabaga and lentils, but the veggies can be swapped with whatever, just make sure you end up with about about 2 1/2 cups of veggies to mix in. And even the seasoning. You could swap out the rosemary and add curry instead. Oh would that be nice.

Start by peeling the rutabaga. Dice it into small chunks and place into a large pot of cold water with a good pinch of salt. Place on stove, bring to a boil then turn heat to medium and cook the rutabaga until fork tender. 

And right after the rutabaga is on the stove, get the lentils going. Water, rosemary, bay leaves, and the dried lentils all go into a pot, bring it to a boil, then reduce the heat to low and top with a lid. Cook until tender and the water has been absorbed, which should take about. 20 minutes. Check after 15 to see how they are coking. If they seem to dry, add in a little more water.

Preheat oven to 400.

Grab the veggies (besides peas) and chop them all into little chunks. Toss into a 10 or 12 inch oven safe skillet with a splash of olive oil and water and season with salt and pepper Stick on medium heat for a few minutes to just slightly soften the veggies.  Remove them from heat and toss in minced up garlic, the peas, a tablespoon or two of vinegar.

Once the lentils are cooked, toss those in with the veggies and mix all around then spread evenly in the skillet.

If you want to bake the shepherd’s pie in a casserole dish, just dump all the stuff into said dish once the mixture is done.

Now the rutabaga should be done now. Strain but reserve liquid and with a masher, mash the crap our of the rutabaga, adding in salt, pepper, olive oil to taste, and a little (like 1/4 -1/2 a cup of the reserved liquid to give it a fluffier consistency.  Once good and mashed, top the lentil veggie mixture with the mash and smooth out. Sprinkle with more pepper and pop the thing into the oven. Bake for 20ish minutes or until the top is a nice golden brown.

Remove, let cool a few minutes, dish it out, and dig in!

The other night at a dinner with my family, I was explaining to my dad ans sisters about a cookie that I have been making for myself that is coconut flour, sweet potato and lentils (I’ll share that recipe at some point) and all those ass faces were making fun of me. They couldn’t understand how I could make anything taste like a cookie with lentils. And not going to lie, I was slightly offended , not for myself but on the lentils behalf. Lentils can do and be anything!

Fast forward to the next nights dinner (we had a lot a family dinners). I was in charge of a dessert.  I had recently took a trip to the store where the bananas where on sale for .30 a pound… So I bough a few (like 20) and had quite a few ripe naners that were in need of being consumed. Banana bread is it. And because I was going to prove my point to the fam that they are all asses and have no idea about anything, I made the bread with beans in it. (the lentils are for me)

Long store short.. The bread was excepted into the mouths of the people with smiles ans yums. No one had any idea that there was anything different about it, only that is was so fantastic and that it was gone within the hour. I did tell everyone after the first few bites that I made it with beans and a lot less sugar then most but no one cared. The kids were actually excited that it had beans in it because it meant that they could have seconds. My dad asked for the recipe, and the rest of the people.. well they didn’t care, just ate it and yeah.

See, beans in bread is a great idea.. So what do you think of my lentil cookies now? HA

To the bread. Go banana bean, GO!

The stuff. We got some flour in a bowl with baking powder, baking soda, and a pinch of salt. Then we have a few ripe bananas, a cup of beans (in bean water), a bit of oil, brown sugar, some cinnamon, and a nip of vanilla.

There should be apple cider vinegar in there…. so pretend it is.

Start off by blending 1 of the bananas up with the beans (use you blending method of choice)  until pretty smooth (some chunks are fine, just not super bean chunks)

Then add in the second banana and mash it in, but leave it chunky (I just used the blender part to mash it up… why dirty a fork?)

Not into chunky, then blend it as well, the chunky/ smooth factor is up to you.

The rest of the wet stuff goes into the bowl (don’t forget the vinegar) and gets all mixed together with the naner beans.

Then the wet goes into the dry.

And mixed up until just incorporated.

Dump the mixtureinto a well greased bread pan. Grab that third banana and cut it length wise into thirds and press the pieces into the top of the mixture. This step is optional and also open to interpretation. The designs a banana can make………….

And into the oven it goes!

Baked to a golden perfection, remove from he oven and set to cool.

And after completely cooled (f you can wait that long) grab a knife, cut yourself a hunk, and go about your day knowing you made the right choice by eating sweet ass banana bread that happens to have a good does of beans in it.

One could almost consider this a health food! (almost)

Makes one loaf

  • 2 cups white whole wet or regular all purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup oil (like canola)
  • 2 ripe bananas (plus optional 1 for topping)
  • 1 cup white beans in the bean juice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 tablespoon cinnamon

Preheat the oven to 375

In a large bowl, combine the flour with the baking soda and powder, the a salt, and the cinnamon. In either the blender or a separate bowl using a hand blender, blend on of the bananas with the beans and bean water until pretty smooth. Once blended, mash in the remaining banana (can puree until smooth if you are not into chunks of banana) Now mix in the oil, vinegar, vanilla and the sugar. Mix until combined then mix into the dry until just combined.

Pour batter into a well greased bread pan and if you want, slice the extra banana into thirds and gently press into the top of the batter. And now stick it into the oven. Bake until golden brown and all pretty like and a tester stick in the middle comes out clean. (about 50 minutes)

Remove from oven and let cool in pan for a few minutes then flip out and let cool completely on a wire rack. When cooled, slice it on up into desired thickness and eat away, whether it be naked (you or the bread) or smothered with peanut butter, jam, butter or whatever.

Cooled bread is fine on the counter covered for a day but should be stored in a air tight bag in the fridge if longer then that..

Funny story. Our basement floods a little every year in the spring. I think that a lot of people around here have slight problem with basement water, the houses being so old and all. So when earlier this week we had a massive thaw and a bunch of rain, the mr preemptively set up the sub pump to keep the water away. All day he was checking the pump and all day it poured butthe basement stayed dry. He turned it off that night after it had stopped raining. We woke up to the most beautiful bright blue sky, the temperature so warm that I didn’t need to wear a jacket and to 3 inches of water in the basement. STUPID!!!!! But that happened and yeah. The mr spent a good few hours moving all of our stuff, (we store a lot of stuff in the basement) shop vac-ing and pumping up the water .He did such a good job that it was almost like it never happened. The only really wet thing was a big laundry basket of stuff. I wanted to wash itasap so it wouldn’t mold so when I got home,  into the washer it went. (the washer is in the basement too)  Go to change the load to the dryer and guess what.. the mr took the washer machine house out of the main drain to use it for the shop vac, and no, we forgot to stick the hose back in. We re-flooded the mother F-ing basement!!!!!AAAAAAAAHHHHHHHHHH!!!!!!!

But it’s kinda funny right?

Anyway the week has been heavy on the crazy. My Dad has been here so we have been spending a lot of time with the family doing family things all week. Over at the house we have pretty much gutted the kitchen (anyone want free kitchen cabinets?) and the mr is almost done muding the first floor. Once that happens we can move in (Just kidding… not even close) but we are well on our way. And the next project we tackle is going to be fun fun (rip the roof off!)

And the father of mine is leaving today, (which makes me a little sad)  I have no kiddos in my care, the water from the basement is pretty much gone and I don’t want to do a damn thing that involves work. It’s a down day for sure. No people, no fuss. I have a new book on hold at the library, although I am kinda torn.  Should I start a new book or binge watch Fuller House? (can I take more family drama?)  Have you watched it yet? Do me a favor if you have, let me know if it’s going to ruin the Tanner family for me.

OF all the places that we went on our adventure, this place was the craziest. Maybe it was because we had been traveling for a while by then and I might have been a little loopy and hungry and full of traveling endorphins , but Iceland felt more like we had traveled to a different planet. Covered in snow and ice, gigantic , jagged mountains, and barely a tree to be seen. The sun was limited,  rising around 1030am and setting around 330pm.  The landscape has a very barren, almost aggressive feel, but at the same time, really pulled me in. We only got to spend 4 days there( and they were the coldest 4 days they have had all year) but what time we did spend only made us want to go back (int he summer) to explore even more.

Our bnb wasin Hafnarfjörður,  a town outside of the big city. It isright next to a harbor with all the house build snuggled close on the hill in between rocks and boulders. The houses are so cute with a very danish feel, lots of clean edges, metal sidings, and fun colors. And the lights. Just about every house had some type of twinkly lights in there yard making the town light up like a fairy land at night. It was magical and beautiful and made me very happy.

We ended up taking a bus tour of the Golden Circle. I had never taken a bus tour before so I wasn’t exactly sure of what to expect. And I am not going to lie, I am so glade we did it, the tour lady had lots of really interesting stories and facts about the country to tell us andwe wouldn’t have been able to see any of what we saw if we didn’t do it, but I am not a fan of the bus. Eight hours of cramped seats, cold and damp withridged time restricted… not my cup of tea, but whatever, it was still really cool.  Oh and did I mention the elves and trolls yet?   I had heard this before we went, but Icelanders believe in another dimension where mystical creatures live and that sometimes travel to this world. YES YES YES!!!!  Isn’t that just freaking fantastic! On the tour, our guide was telling us all about it (she even believed in them) and how these creatures live under and in all the big rocks and boulders and those rocks and boulders cannot be moved or else you will disturb them. And not joke, there is anationalpsychicthat talks to the creatures in the matters of the roadand new building construction (are we to close to you boldermr. elf?) They take care not to disturb their natural habitats. (When I heard this I was just so happy.) All I know is thatI need to start believing in elves.

And the people. To be honest we didn’t have a lot of interactionwith local Icelanders. We stayed with the sweetest couple at theairbnb we rented, but they had only been in Iceland for a year. We did talked to people, but it seemed that everyone we talked to were traveling as well. The boys we were staying withm as wel as the tour guide had mentioned that the locals were not excatly the most friendly people. Not that they were mean or anything, just maybe a little standoffish. We kind of got that feel, but whenever we needed any help, the people we dealt with were very nice, but I kinda got what everyone was saying. It’s not the most jolly la la la place for people. 

Another strange part of being in Iceland was the food.  Eating was difficult and very expensive. There was a restaurantin the town, but they mostly served meat ans seafood.  There grocery store stocked very little in ways of fresh produce and what they did has was crazy freaking expensive ($6 for quart pund of carrots.. OUCH) Luckily I was able to score a bag of lentils, some apples, and a head of cabbage, so that’s what I lived off for the time we were there. Next time we go, I am for sure going to be packing a checked bag full of carrots. yeah, that’t what I will do.

So much, so much. I am sure I forgetting to tell you all about something I was going to tell you, but now I am just drifting in and out of all the pictures (I have so many more pictures)  and am having a hard tie concentrating.  So I will leave you with these to look. Andbefore I go, a little advice.  Next time you find yourself going to Europe, take advantage of the Icelandic layover. The place is not the cheapest, but how can you pass up a free stop in a crazy cool country. (think about it..)

Yesterday was kind of a shit show as far as the weather was concerned.  I woke up early to a lovely light blanket of snow, the temperature hovering around 32 degrees. The air was nice and crisp, the sky was a light grayish blue. The neighborhood was quite. I walked the pup and then took off for the morning. It was so nice.

How that changed fast. Walking home a few hours later I was a hot , drenched, cold and damp mess. All that snow turned into slush and gigantic puddles and it was raining a good steady soaking rain. And I had to walk my butt home. So that was great.

But you know what these weather make me think of… Spring!!!! Yes, warmer, slushy, mushy weather. Mud all over the house and a wet smelly dog All the things that should not be happening right now but are. And now I have the springtime feels hard.

With things all springy, I was thinking of spring veggies and just wanting something bright and pretty and tasty. Peas! Peas are a good spring veggie, and where there is peas, there carrots. (or should be)  But not plain, run of the mill peas and carrots. First off I got the prettiest colorful purple, white, and orange carrots because I needed some color. Right there that made me super happy, Then instead of just steaming them with some peas, I did roast those carrots to bring out all the sweet juicy flavors. Then those pea. Not really in season yet, so I went with frozen (I love frozen peas)  and made the brightest, most amazing creamy pea sauce infused with garlic lemon, and dill. (all spring time flavors)

The results… I love roasted carrots so no surprise there but the creamy peas…KA-POW amazing!!!! My mouth has never been so happy to eat peas. and it really loves peas. Fresh, clean, tangy…I made, I ate, I though about them all night. And of spring and all the peas and carrots I am going to plant…and eat.

The stuff. The prettiest bright and colorful carrots and some green as can be frozen peas. Dill, garlic, and lemon to add to the peas and some olive oil, salt and pepper to roast up the carrots.

Chop up the carrots and tossed with salt and pepper and a drizzle of oil. And onto a baking sheet and into the oven to roast.

Dump those peas into a pot with water, garlic, and the dill. Stick the pot on the stove ans bring to a boil for a few minutes then remove from the heat.

You see that? It’s amazing . Its gets blended until smooth and seasoned with salt, pepper, and the juice if half a lemon.  Give it a taste but don’t eat it all. (I almost ate it all) and pour into a nice little cup or jar and wait for the carrots.

Oh roasted lovely colored carrots.. So good all on your own.

But slathered with this pea sauce…. Always and forever. I am in love.. could eat all day every day.

I wish my stomach was big enough to eat all the peas and carrots….. All!

serves 2-3

  • 1 lb carrots (I used a variety of colored carrots but plain old orange carrots are always fantastic too!)
  • 2 cups frozen peas
  • 3/4 cup water
  • 1-2 cloves garlic
  • 2 tablespoon dill
  • 1/2 a lemon
  • olive oil
  • salt and pepper

preheat oven to 450

Cut carrots into quarter and in half (can cut in any size and shape you want)  Place the carrots on a baking sheet and drizzle with a wee bit of olive oil. Sprinkle with salt and pepper and toss it all around. Stick the carrots into the oven to roast.

Now grab those peas and stick them into a pot with the water, the dill, and the garlic. Stick on the stove and bring to a boil. Let boil for 2-3 minutes, then remove from heat. Either with a hand held blender or a regular blender…. blend until smooth. Add in the juice of half a lemon, season with salt and pepper, and then try not to eat it all before the carrots are roasted.

Once carrots are tender and browned and yummy looking (about 30 minutes) remove from oven and slather on the pea sauce.

Eat right away….. Make more tomorrow.

THE LOVELY CRAZY

Every year I look forward to St Patrick’s day.. And not because I am Irish, (which I am) or because I want to drink on excess (which I do not) and no,  green eggs and ham are not something that I plan on making. No Ido not look forward to any of those things (although I actually do like to pinch the littles that wear no green and talk about pots of gold and rainbows) I love this time of year because cabbage is always on a freaking super sale everywhere you go.  Something that is usually 80-99 cents a pound goes down to like 20 cents a pound. And for someone that eats like 10 heads of cabbage a week, this is a hug savings. SO yeah, I buy so so much (I have already bought 12 heads, but I actually plan on buying a full case before the sale is over)

No, I am not crazy, I will eat it all….. and I am going to be making so much sauerkraut. Woo hoo!

But until then. A cabbage pot roast. Yes. I remember growing up my mom would make pot roasts once in a while. A big pot full of big chunks of veggies topped with a big slab of some kind of meat. I never liked the meat, but I always loved the big chunks of the veggies at the bottom of the pot. So I figured I would make a big pot roast, replace the meat with a head of cabbage (I have so much) and add beans because protein and because they are just so good. . And when it’s all cooked and said and done, you end up with a big pot of plump and so flavorful veggies and beans and the most tender wedged of roasted braised cabbage.  This is my kind of pot roast.

Now go quick.. the cabbage sales will be over soon.

The stuff. One good sized head of cabbage, a few carrots, a big onion, and a hunk of rutabaga. Also have some dried kidney beans, caraway and fennel seeds, dried ground mustard, a bay leaf, some garlic, and salt and pepper. And water… water is needed.

Note. You can use just caraway or just fennel and you can replace or even add a potato in place of the rutabaga.

Dried beans, fennel and caraway into a pot with water. Stick the pot on the stove ans bring to a boil, then to a simmer to give the beans a quick head start before going into the oven.

While the beans are simmering, dice up the garlic and chop up the veggies into big chunks… you don’t want small chunks or they will kind of turn to mush while cooking.

And turn over the cabbage head, take a knife, and slice a deep x into the core. DO THIS or else the inside of the cabbage will not cook through. Oh and preheat the oven to 375.

Top those beans with all the chopped veggies,(don’t stir them in., you want to keep the bean under submerged in the water) sprinkle those with the mustard, salt and pepper and place that lovely cabbage head right on top…

Place a lid on the pot and slide it into the oven to cook away. It’s going to take a bit of time (about an hour) but it’s pretty much hands off. Just take a look after about 45 minutes, check the bean doneness, add in another cup or so of water and place lid bacck on and cook for another 12-20 minutes until the beans are done. When they are, take the lid off, crank the oven to 450 and cook for another 15 or so minutes until the cabbage gets all golden brown

Look at that… Tender roasted veggies, plump beans. Everything about this is right.

Grab a knife and cut the cabbage (its so tender) into big wedges.

A wedge into a bowl along with a big spoonful or two of the beans and veggies..

Finished with a dash of salt and pepper and (not shown here,) lots of mustard.. Oh cabbage… you are so good!

Eat away and Happy St Patrick’s Day.

serves 3-4

  • 1 cup dried kidney beans
  • 3-4 cups water
  • a medium sized head of cabbage
  • 2-3 carrots
  • 1 large onion
  •  a potato or a a small rutabaga(or both)
  • 1 heaping teaspoon caraway seeds
  • 1 heaping teaspoon fennel seeds
  • 1 heaping teaspoon ground mustard
  • a bay leaf
  • salt and pepper

Place the fennel, the caraway, and the bay leaf into a large dutch oven along with the dried beans and 3 cups of water. Place on the stove and being to a boil then, turn heat to low and simmer the beans for about 15 minutes.

While beans are simmering, chop up the carrot, onion and rutabaga into big chunks and dice up the garlic. Take head of cabbage and slice a deep x into the core.

Preheat oven to 375

Once the beans have simmered a bit, add in the chunks of veggies, the ground mustard and salt and pepper (Don’t stir, you want to keep the bean submerged in the water). Place the head of cabbage right on top of the veggies and sprinkle with salt and pepper.

Place a lid on the pot and stick the whole thing into the oven. After about 45 minutes, check the roast and the beans for doneness and adding in another cup of water id needed. Back into oven with the lid for another 15-20 minutes or until the beans are tender Onnce they are, remove the lid form the pot and crank the oven up to 425. Cook for another 15 minutes or so until the cabbage turns a nice golden brown.

Remove from oven, let cool for a few minutes, cut the cabbage head into wedges and serve it up with big spoonfuls of beans and veggies.

Eat until your full.

THE LOVELY CRAZY

Is it really Sunday already? This week has flown by, probably because it was to freaking hot that my brain kinda melted.  At least the heat is gone now and I can finally, maybe, function like a human being again.

Even with all the heat, lots of stuff has got done over at the house. Plumbing, walls fixed, tile samples bought. We even have narrowed down the kitchen design and are going to start doing the kitchen stuff soon. Everyday we get a little bit closer…. Now for the outside of the house, well not as great. Neither of us have dragged the mower out it a while and now there 3 ft tall thistle everywhere. Barefoot in the yard is not a good idea.And even though we worked worked worked all week, we did made a little time to finally pick our strawberries from our farm share. Now we eat nothing but zucchini and strawberries. Good stuff.

Other then that, not much else new. Not going to lie and say I haven’t been thinking about all the crazy shit that has gone on this past week in the country. Sad, alarming, frustrating. It’s a lot of heavy and it sucks. I am doing my best to send all good and loving energy out to the world. Kindness goes a log way.

As for today. hopefully the mr and I will be smart enough to chill a bit today, get in a little r&r, maybe bake some bread and go for a little bike ride before hitting it hard again tomorrow. (we will probably work at least some today too..the mr just won’t stop)

Hello to a long summer weekend full of all things sparkly and red white and blue.  Hard to believe that it’s already July 4th weekend. We are already deep into summer and I need to get on and do some serious summering.

We put in our time this week for sure, 8-12 hour days, some days at the house until 8pm. We had a deadline and had to bust some crazy ass to get what we needed to get done done before the insulators came. Phew..  we did it, and now all I can say is that the mr and I are pretty bad ass. As for the house, it’s just smooth sailing from here. (haha, yeah right)

Another big thing this week. Jeff Dad moved back, well not back to VT, but back east, close to where he grew up in PA. This is of much excitement for myself and the rest of my siblings. Now instead of being 14 (more like 20) hours away, he is only be 5 hours away. That is just enough away that we can see him whenever we want, but far enough that we don’t have to see him when we don’t. Plus he is only about an hour outside of NYC..so you know, party party in the city.

Today is a weird Sunday, cause it feels like a Saturday, which makes me feel like I need to put on my work pants and get to it. Lucky for me, the mr has plans for a fishing adventure and if he going on an adventure, then I am too! I am going to pack some food, my watercolors and a book try to just relax today. Maybe we will bring the new tent (we finally bought a new tent that is not our tiny backpacking tent with a hole in it) and just come home sometime tomorrow. You are not suppose to work on a holiday, right?  Hum, sounds like a good plan to me.

My baby brothers graduated from high school this week, as well as two nephews from 8th grade. When the hell did these boys get so old?  It all just makes me feel like an old lady. I guess I finally realized that compared to them, I am old. ( but am way cooler)

Other then graduating kids, the week has been full and hefty with the things that we do. I picked up our very first farm share of the summer season (hooray!) and wasted no time in pretty much eating it all within a two days. Good thing that as the season goes on, the amount of food doubles or even triples.(I can eat a pound of greens for a meal) I also have been harvesting the rhubarb and eating way to much of it myself. I am on a very slippery path of become a vegetable myself. I should probably eat some peanut butter for balance. We also had to bring the pup and kitty to the vets which I always dread but then after the visit remember how weird our animals are. For some reason (probably the treats) they both like going to to the vets and are always super behaved. If only they acted like that all the time. But yeah, just another week here, getting into the summertime swing.

And it’s Sunday once again. I hear that today is suppose to be a wet and cold day so, let all just embrace it and spend the day reading and making pie. (I have to make a rhubarb pie.. the mr has been patiently waiting for one)

Let’s just hit the weather for a minute here. Snow one week and 90 freaking degrees the next. Oh Vt, you can be so cray cray, but do me a favor and stop being 90..I can’t sleep, I am constantly sweating….I think I am pretty much melting, not to mention slightly bitchy.  Just be 80 with a nice cool breeze. I would like that a lot. Thanks.

The past week has been one full of the fullness that comes with owning apartment buildings. . A handful of the apartments are turning over so we have been running around dealing with repairs, cleaning, and over all property maintenance.  There has been lots of weeding, mowing, and tree cutting, you know, all sorts of fun stuff. The buildings are looking good but you should see our little fenced in yard right now. It kind of looks like a junk yard from all the shit we have been piling up for lack of time or space to deal with it all. That and we are also in the processes of getting a new work car. (the process being craigslist) , so until we do, moving stuff is on hold. Why is it so hard to find a working truck that doesn’t cost a million dollars and will get us from point a to point b without falling apart and being fancy.? We pretty much just need something to haul trash and lawn mowers and the occasional toilet. Is that to much to ask? Apparently it is. (we will find something, I am just being a whine ass)

Anyway, we have managed to get to the new house this week and get the rest of the metal roofing on, a temporary gate up so now Washer can roam free, and lots and lots of nails removed from the floors.Things are still moving along. I even spent some time with the plants while the mr mowed the front lawn (We do it mullet style. Short in the front yard,long in the back) And hopefully today we will have a little time to get over there as well. I really want to harvest some rhubarb and get a few more plants into the ground before it’s to late.

And hopefully you are having yourself a long and enjoyable weekend. It’s pretty much summer now so it’s time to do all the summer stuff that needs to be done.

 Happy Spring people! Aren’t you so excited? I know I am. The daffodils are starting to pop up, the birds are out like crazy with their churp churping and there is a hint of buds grazing all the tree. We are in for warmer weather, fresh green spring veggies, and lots of mud… I mean, what’s not to be happy about. (there are things but we don’t need to talk about them right now)

Yesterday the mr and I finished ripping up all the floor stuff (I managed not to hurt myself until the very last piece and stuck a nail into my hand) and then traveled the city looking at all the windows in all the stores. Window shopping is such a pain in the ass. If you never have to do it, don’t. But we have to and we need to make some decisions like now because this week a bunch of men are making their way over to the new house with their saws and hammers and a big dumpster and are going to cut the back roof off. I am so excited! The addition is going up and the best part is we decided it was just to much for the two of us to do so we hired out the hardest part. We don’t have to tear it down or frame it up anymore and oh does this make me happy. I was not to into the idea of me and the mr ripping of the roof ourselves. The mr, sure he knows what he is doing, but me, I would have probably taken the whole house down.

Anyway, going to be doing house stuff until we can’t which I am ok with because I am really starting to feel crazy and am ready to move.  I know it’s still a few months away but I have this weird feeling that I can’t really stop and chill until we are in the new house and I am relaxing there.. so we better get on it. 

And I can’t forget the cake. I need to make us a bunny with lots and lots of jelly beans.

Funny story. Our basement floods a little every year in the spring. I think that a lot of people around here have slight problem with basement water, the houses being so old and all. So when earlier this week we had a massive thaw and a bunch of rain, the mr preemptively set up the sub pump to keep the water away. All day he was checking the pump and all day it poured butthe basement stayed dry. He turned it off that night after it had stopped raining. We woke up to the most beautiful bright blue sky, the temperature so warm that I didn’t need to wear a jacket and to 3 inches of water in the basement. STUPID!!!!! But that happened and yeah. The mr spent a good few hours moving all of our stuff, (we store a lot of stuff in the basement) shop vac-ing and pumping up the water .He did such a good job that it was almost like it never happened. The only really wet thing was a big laundry basket of stuff. I wanted to wash itasap so it wouldn’t mold so when I got home,  into the washer it went. (the washer is in the basement too)  Go to change the load to the dryer and guess what.. the mr took the washer machine house out of the main drain to use it for the shop vac, and no, we forgot to stick the hose back in. We re-flooded the mother F-ing basement!!!!!AAAAAAAAHHHHHHHHHH!!!!!!!

But it’s kinda funny right?

Anyway the week has been heavy on the crazy. My Dad has been here so we have been spending a lot of time with the family doing family things all week. Over at the house we have pretty much gutted the kitchen (anyone want free kitchen cabinets?) and the mr is almost done muding the first floor. Once that happens we can move in (Just kidding… not even close) but we are well on our way. And the next project we tackle is going to be fun fun (rip the roof off!)

And the father of mine is leaving today, (which makes me a little sad)  I have no kiddos in my care, the water from the basement is pretty much gone and I don’t want to do a damn thing that involves work. It’s a down day for sure. No people, no fuss. I have a new book on hold at the library, although I am kinda torn.  Should I start a new book or binge watch Fuller House? (can I take more family drama?)  Have you watched it yet? Do me a favor if you have, let me know if it’s going to ruin the Tanner family for me.

Hey hey hey!!! 

Just checking in with the world….. I have been totally neglecting the Internet and pretty much all of normal life since we have been gone. So how are you doing? 

As of today, the mr and I are in Iceland, the land of trolls, elves, and kFC(I’ll tell you about it later) and are heading back home tomorrow night, so today we are going to spend it exploring for those elves and trolls(among other thing).

And I have so much to share. So when I get back, get my sleep back to normal and my life in real world mode again, I’ll post lots and lots of pictures and tell you all about it.

My brain has been slightly fogged this week with being kinda sick, which is almost worst then feeling sick cause you don’t act sick, you do normal life stuff, but you feel like shit. I think that today I am calling it.. I am sick.. official

But besides feeling like crap, this week has been pretty great. All fall and lovely.The weather is nice and cool (even cold) and the trees, the mountains, the world, all look like they are on fire with all the crazy amazing foliage.(so many pictures to come) and I have been just soaking it all up.  I away love living in Vermont, but this past week, oh man, I could not imagine living anywhere else. 

Anyway, not much in the way of news. Just going to take the day to chill out. cozy up with a book, nap, tea (coffee too), and try to shake the kinda sick out…

THE LOVELY CRAZY

There is a big difference between thinking about doing something and being motivated enough to actually do it. I have been thinking a lot about doing some baking (among other things, like being a functional human) but I haven’t been feeling all that motivated to actually do it.  To my defence we haven’t really been home and food situations have been taking place at sisters or moms house. So yeah, can’t exactly bake a cake, take pictures, and not pull my hear out with 15 people running around the kitchen.. But yesterday I had the afternoon at home to get some shit done and it was the perfect time to open the door,(it wasalmost warm enough to have the door open!!!) put on some tunes, and bake a little something something before we headed over to dinner at my sisters.

Nothing to fancy or overly pretentious, just something that people will eat (especially my mom, she needs all the cake in the word). And a loaf because loafs travel well and sometimes a cake just calls for 90 degree angles. Chocolate because it’s chocolate (everyone likes chocolate) with and orange glaze for a slight pop of brightness and honestly, cause I bought a shit ton of oranges a few weeks back and they need to be used up asap.

A welcome back to the kitchen, simple chocolate loaf cake. And after it was devoured by the family (mom loved it) I thought aboutchanging the name to a “Freak Yeah, Damn Tasty, Super Fantastic, Simple Chocolate Cake”…..  but that’s kind of a long name.

The stuff. Got abowl with flour, cocoa powder, salt, baking soda and baking powder, and sugar. Then a cup of what is 1/2 soy milkand 1/2 coffee, some vanilla extract, a little apple cider vinegar, and some oil. That’s cake stuff. The glaze stuff is the powdered sugar, the orange, and another pinch of salt and splash of vanilla.

Super simple. Whisk all the dry together

Then just dump all the wet stuff into the dry and mix it all up until everything is evenly incorporated.

Batter goes into a greased loaf pan and into the oven…….45 minutes later……  it’s all cooked and stuff. Ttake it out and let it cool.

While the cake is cooling, make that glaze. Powdered sugar, orange zest, a pinch of salt and a splash of vanilla go into a bowl. Whisk together with just enough orange juice to make it all come together and is all glaze like.

When the cake is completely cooled, drizzle (dump) glaze all over cake. And really, make sure the cake is cooled or else the cake will just absorb the glaze.

Drip drip drip…. Next time I will remember to do this over a plate or something, there is sugary glaze everywhere.

And now the loaf cake is done, ready for eating.

Makes one loaf cake

  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cups sugar
  • 1/3 cup oil (any oil but if you use coconut, make sure it’s melted)
  • 1/2 soy milk
  • 1/2 cup brewed coffee
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla

the glaze

  • an orange (about a tablespoon of fresh zest and 1/2 the juice of half of the orange)
  • 3/4 cup powdered sugar
  • pinch of salt
  • splash of vanilla

Preheat oven to 350

In a large bowl, mix together the flour, cocoa powder, sugar, salt, baking soda and powder. Dump in the rest of the ingredients and mix until evenly incorporated. Pour batter into a greased a 9x5loaf pan then stick into the oven. Bake for about 45 minutes or until a tester comes out clean

To make the glaze, mix the sugar, a tiny pinch of salt and the zest of the orange together. Add in a splash of vanilla and slowly add in orange juice until the glaze is the consistency that you want.(not to thick or to thin)

Once cake has completely cooled, drizzle the glaze all over the cake.

Now you can grab a knife, cut a slice,and call it a day.

My fingers are almost always stained a bright pink. My cutting board and counter tops, pink. Look closely at at dish towels and you will find pink blotches all over them as with any of my light colored clothes. You would think after years of trying to remove beet stains form everything that I would have gotten a system down or at least had a designated cutting board for them, but no. That would be to easy and really,  I think I kinda don’t care.  So pink my things will be.

Beets. You either love them or you hate them. I love them (so much), the mr, well I am making him love them. He needs to love them because I end up putting beets in everything. If you are a hater, there is still turn into a lover. But maybe you have never even eaten a beet or haven’t in a long long time.  I am actually surprised at how many people I have talked to that have never tried beets before. If you are one of those people, stop being that person and eat one already. OR if you think you hate them, why don’t you give them a second try, I bet you will change your mind. Sweet but earthy and nice and crisp but kind of juicy..they really are super tasty. And not to mention all the great health benefits(you can look those up yourself) Yup, beets be the shit!

 And I love a good roasted beet, but really, I prefer my beets raw. Which brings us to this salad. A simple salad of grated up beets, orange juice and toasted hazelnuts. Fast, easy, and tummy satisfying.  As long as you don’t hate beets (how could you) then you will love it.

Now you get those beets!

The stuff. A big beet, (or two smaller ones) an orange,( I bought navel oranges and sliced into this one to find it was a blood orange… not complaining), hazelnuts (raw or toasted) apple cider vinegar, and salt and pepper. Optional but also very nice, some greens and or some type of grain. (I happen to have a some quinoa in the fridge)

Hazelnuts. If yours are already toasted, then no need to do it again, but if they are raw, toss them into the oven for a few minutes (hazelnuts taste so much better toasted)

And grab the beet and a shallow dish and grate it all up.

Add to the beet the juice of the orange, a small splash of vinegar to cut the sweetness, and salt and pepper to taste. Give it a good toss and let it sit for at least 5 minutes, if not longer.

And if the hazelnuts are in the oven, take them out when they are slight golden brown. If you want to remove the skins, just stick them in a clean towel and rub it off.

Everything all ready to go.. Any extras are added to bowls.

Beets into bowls, topped with toasted nuts and a cute little orange segment.(if you happen to have one lying around)

Isn’t that just something. Beets are so pretty,, but more importantly, so freaking tasty good.

makes enough for 2 people as a side

  • 1 large beet or 2 smaller beets
  • 1 orange (I used blood orange but any orange would be good)
  • handful of hazelnuts (either already roasted or raw that need to be roasted)
  • apple cider vinegar
  • salt and pepper
  • Optional – quinoa (any grain would work) and or greens

If you hazelnuts are raw, toss them onto a baking sheet ans place them into the oven at 300 for about 6-8 minutes until slightly golden brown and smell so nice. When done remove and if you don’t like the skins, place nuts in a clean towel and rub the skins right off.

Wash beet(s) and grate into a swallow bowl. I don’t peel mine, but peel if you must. Add in the juice of the orange, a splash of vinegar and a dash of salt and pepper. Mix around and let sit for at least 5 minutes (the longer the better)

When you are ready for food, grab a bowl (add anything you want to add to the bottom, like quinoa or greens) and fill that bowl up with the beet salad and top with roasted hazelnuts.

Grab a fork and eat.

There is a joke about Vermonters, that all we talk about is the weather. Well, it’s kind of true. But to our defense, we get a lot of weather, and it’s always changing and intense and both lovely and crazy and all over. So yeah, we talk. A lot, about the weather. And on that topic, I am trying so hard not to complain, but honestly, I am getting a little sick, both physically and mentally from all of these  super, to freaking cold temperatures. Yesterday the high was 0 ( which was at like 2 in the morning)  and factor in the windchill, the temp stayed at like 25 below. It f**king sucks. I can’t  stay outside for too long or else I will probably die. The dog  is having a hard time making it around the block before he gets ice paws, and the mister, well he even started wearing gloves (he wears a sweater all winter and never gets cold…..he is officially cold)

 And not only is the cold keeping us all indoors, but its making us all borderline sick. We both have been fighting something for the past few week. The headaches, stuffy nose, chest congestions. The puppy is getting super dry skin and gave himself a hot spot. BLAh!! Ok, enough! No more complaining

Because  I do really love the winter and all the pretty snow!!!!

But we are feeling kind of sick so to make us feel oh so much better, a fantastic, super tasty, healing, good for me, good for you, soup. Turmeric ginger carrot… oh man. Made with lots of ginger, turmeric and garlic and finished with a drizzle of raw honey. This soup is exactly what we need. All ingredients scream.. FEEL GOOD, BE WARM AND COZY! Almost everything in it has antibacterial and anti inflammatory properties. The veggies are hearty and heathy and just eating soup helps to keep hydrated. And the best part..it tastes so freaking amazing. 

So whether  you are feeling a little mah, or just a little hungry.…this soup is where it’s at!

Lots of chopped up carrots, a small onion, a little bit of cauliflower I had left over and a small beet. If you don’t have the cauliflower and or a beet, just use  ares pepper or another 2 carrots.. no biggy. 

Then we have the fresh ginger ( you can use powdered) turmeric and garlic.  All the good healthy spicy and yummy stuff. 

I accidentally spilled the turmeric on the counter..but it kind of looks like I might have done it on purpose… yeah, let’s go with that.  Chop the garlic and he ginger into    chunksAnd toss into the pot to warm and activate. Just a little toasty toast. 

And the veggies are roasted and tender and smell so good.  It took a lot of will power to not eat the whole pan right there.

I added the roasted veggies and 3 cups water straight into my pot  with the spices because I used an emulsion blender. If you are using normal blender, add the veggies, the toasted spices and the water to the blender and blend until smooth. Then transfer to a pot.

Pretty much all blended together….(I left a few big chunks in there to snack on while I was waiting to eat serve…I was really hungry) and let to simmer for a little longer…

And now ladle into a bowl and get ready for a fantastic finish… drizzle a spoonful of raw honey into soup…….so so good. You could add the honey before serving, but heating it kills all the good antibacterial stuff so that’s why we wait. Then  I sprinkle some chopped kale and chives. (do it if you want, but not necessary)

Now enjoy. Let the warmth wash over you and feel all those good spices helping to fight the good fight to keep you well and all the yummy to satisfy your hunger.

And lets hope for some warm (above 0!!) weather!

Turmeric Ginger Carrot Soup

Ingredients

  • 5 large carrots
  • 1 small onion
  • 1 small beet*
  • quarter head cabbage ( or a cup of frozen)*
  • 2-3 teaspoons  turmeric 
  • 2-3 tablespoons fresh  ginger (1/2 teaspoon if using powdered)
  • 4-6 cloves garlic
  • salt pepper
  • raw honey (omit if vegan)

* If you don’t have or want to use beet and or the cauliflower, you can use a red pepper, a small sweet potato, or just use a few more carrots. 

Chop all veggies into similar sized chunks and toss into a lightly oiled pan or on a baking sheet and sprinkle with salt.  Stick in oven at 425 for about 30 minutes or until all veggies are fork tender. 

In a large soup pot or dutch oven, toss chopped garlic, ginger and the turmeric and place on medium heat for a few minutes to activate the spices. Add the roasted veggies and 3 cups water to pot (if using emulsion blender) and blend until smooth. If using a blender, add the toasted spices, roasted veggie and 3 cups water and blend until smooth then transfer to a large pot or dutch oven. Add salt and pepper to taste. Turn heat down to  simmer and let cook for an addition 10 minutes. 

When ready to serve, ladle soup into bowl and drizzle a spoonful of raw honey into soup. Garnish with fresh chopped kale, chives, cabbage or whatever you want. (or nothing is good too)

Mustard and carrots.  It’s that simple.

Yup, I eat this at least once a day. It’s that good (and easy).  Now I must admit that I don’t usually have such pretty carrots (The mister gave me this rainbow of carrots for my birthday) and I usually don’t chop the carrots oh so nicely or have a little vessel of mustard, but I figured for the sake of a picture, you would rather see this then a picture of me standing with the fridge open, chomping on a huge unpeeled carrot, squirting mustard directly in my mouth. (that’s how I usually eat most of my snacks)

Today I kept it simple with plain yellow mustard,  but I sometimes spice it up with horseradish or jalapeno mustard. Or once in a while I’ll do mustard and sprinkle on (or in my mouth) some nutritional yeast, garlic powder or even red pepper flakes for a little kick. The possibilities of mustard on carrots it endless.

You might be saying to yourself that this is crazy, but really, is it any weirder then some of the things that you eat that others find kind of strange? So maybe just try it.  I promise, you won’t be disappointed.

    I have been meaning do a post on seltzer and syrups for a while now and this one is perfect… Everyone around me has been getting sick and I am trying my hardest to not get anything. 

Citrus and ginger…. Two of my favorite things, combined into one super refreshing, light and crisp, thirst quenching drink. Tasty and packed full of vitamin C from the citrus and blood warming, tummy healing ginger. Its kind of a feel better elixir, a good for you drink, a sparkler pop.  A drink everyone can get into       (the mister even liked it), And it has no added sugars or nasty coloring, it can’t get much better.

Feeling Happy, feeling crappy, or just plain feeling, this drink is a good for it all.

 

I made the ginger date simple syrup ahead of time.. All I did what chop 2 1/2 tablespoons fresh ginger and  about 3 tablespoons pitted dates and added to a pot with a cup of water. Simmered the stuff until the dates were mostly dissolved, about 15 minutes, took off the  heat and pureed it. I let it steep for another 5 minutes and strained….no biggy.   This is a milder sweet simple syrup. If you like sweeter add more dates or even add a bit of honey… Do what tastes the best to you.

Juice the lime and blood orange…..so much pretty!

I ended up with about 12 tablespoons of juice from a the lime and the orange.. If you need or want to, juice an additional orange and lime. 

Add 2-3 tablespoons of the fresh juice per 12oz glass and add about 2-3 tablespoons of the ginger date syrup…(adjust amounts to you taste) Top off with cold plain seltzer water and maybe an ice-cube or two. ( I would have if I had thought to make ice)

So lovely…. so nice. I really got into these flavors. This drink has the ability to make you feel warm and cozy while being cold and fresh. It makes me happy.

Blood Orange Ginger Lime Sparkler Pop

Ingredients

  • 2 1/2 tablespoons fresh chopped ginger
  • 3 tablespoons chopped dates (more if you want sweeter)
  • 1 cup water
  • 1 lime
  • 1 blood orange
  • Plain Seltzer water
  • Ice (optional)

For the ginger date syrup

In a small pot on low heat, add chopped dates and ginger to a cup of water. Simmer until dates  have mostly dissolved, about 15 minutes. remove from heat and puree with either  a blender to a hand emulsifier. Let steep for another 5 minutes and strain, reserving the pulp (add it to soup or salad dressing). Let completely cool.

To assemble drink, juice blood orange, and lime. Add about 3 tablespoons of the ginger syrup and 2-3 tablespoons of the citrus juice per 12 0z cup. Top with plain seltzer water, give it a light swirl with a spoon or straw and add ice cube if you want. Now have at it!

  Whenever me and the mister get invited / show up for dinner at someone’s house, I like to bring at least one thing to contribute to the meal. First, because I am nice like that. Secondly, because I get to make food for other people besides Nick and get new feedback on recipes. (Sometimes I think he tells me things taste amazing when they might not) And thirdly, its nice to mess up someone else’s kitchen besides my own. So last night we went to my sisters and  I made a salad.  A very easy and virtually mess free salad…….I still made a mess (I cleaned it up myself!)

 The salad I made was a light, crisp, and citrusy thing of beauty. Not exactly what one would think to eat on a freezing my face off cold day, but hey, you can’t help what the body craves. Plus, if you  make it for. lets say, a sister that is making french fries and hamburgers for dinner..then a light and citusy salad is just what you need. Feedback from the mouths that ate it….Fanstastic combo! Best Salad ever! Never going to eat anything else! Ok, not so dramatic, but this was a winner. And for real, this salad takes about five seconds to compile and all the ingredients are really accessible right now so really, why not? 

  

 Nice crisp  kale. Thinly slices red onion for a nice bite. Orange for that sweet citrusy and juicy smack and avocado to add a perfect creamy finish. Lime to make it perfect.  Start with the  base layer of kale… then first goes the sliced onion. (Make sure it’s thinly sliced or else it will be to overpowering)  Add thinly sliced oranges…oh boy, your half way there!!!

Top with thinly sliced avocado, a sprinkle of salt and drizzle with lime juice. I also served with an extra wedge of lime, there is never too much lime.

Now you can stand back, take a picture, send to all your friends and make them jealous of you fantastically pretty and oh so delicious salad. They will ask, “What is that amazing looking dish you are eating?” Your response will be..”Check out the blog..the lovely crazy…and make it yourself! ” (yes, I am shamelessly plugging myself here)

Citrus Avocado Salad (Makes 2)

Ingredients

  • A few good handfuls of kale leaves
  • 1 orange
  • 1 avocado
  • 1 lime
  • 1/2 a red onion

Remove tough stems from kale and chop leaves into small month sized pieces. Thinly slice  onion, peel and thinly slice orange and cut avocado into…yup you got it, thin slices. 

Kale into bowls, top with  onion, orange and avocado. Top with the juice of half a lime…Add a sprinkle of salt.

I was cleaning out the fridge and found that I had a good few really ripe avocados that were in need of eating ASAP. (I bought like 8 at once… super sale!) My first thought was I wish I could freeze these and save them for later. Then I thought well why the heck don’t I freeze them. So that’s what I did. I pureed them up, added a little lemon juice and stuck a jar of tangy green creamy goodness into the freezer and all throughout the week found myself standing in front of the fridge with a spoon scraping at the jar of avocado. It was so good. I even added a little fruit to it toward the end. Avocado and fruit = oh hell yes.

And now that is is officially spring we should be eating popsicles (right?!). I figured you guys are cool enough that I would share my new found love of frozen avocados and you would be down with it.

I know, some might think that plain old frozen avocado doesn’t sound amazing, but when you add a little sweetness and swirl it around with super sweet and creamy mango. Trust me, it’s freaking amazing. The flavors go perfectly together, and the texture, it’s almost like ice cream… SO GOOD! Anyway, I know that it might not be the perfect spring weather as of today, but the beauty of these is that you make them, freeze them and leave them until the perfect moment. Say a good long day of raking up all the cat poop that the neighbors cat has left in all your spring flower beds, or picking up all the recycling that has blow into the bushes all winter long. Maybe a day of cleaning out the closet or dusting the ceilings. Make these popsicles now and treat yourself to one after doing some kind of crappy spring chores, its what you need to do.. Or better yet, bribe a little with a popsicle to do your spring cleaning….. Yeah, I might just do that.

Or just make them and eat them… no spring chores required.

The stuff. A nice ripe mango and a nice ripe avocado. A bit of lemon juice (from half a lemon),  a little maple syrup, and a some water.

Scoop the avocado into a jar and cut up the mango ans stick into a jar…..

Splash a little water into each jar and blend them up. (I used my hand blender. but use the blending device of your choice) Add the maple syrup to the avocado.. as much as you need, and if your mango is not super sweet, you can add a little to that too.

Scoop the avocado puree into the mango and gently swirl it around

Now pour/scoop the mixture into your popsicle molds. And because mine was thick enough, I was able to stick the wood sticks without them sinking.

Noe get them quick into the freezer

A good few hours (I didn’t even check until the next day but I bet 4-5 hours in a good freezer will do) the popsicles are nowposicles!!!!!

Pop them out of the mold (a few minutes on the counter and or a quick rinse under warm water) and do what needs to be done.

So creamy sweet and refreshing… This is a happy spring popsicle for sure.

Makes four 4oz popsicles

  • 1 ripe avocado
  • 1 ripe mango
  • 1/2 a lemon or lime
  • 1-2 tablespoons maple syrup (or any sweetener of you liking)
  • about 1/2 cup of water

Note.sIF your mango is not super sweet you might want to add a little maple syrup to thatto that as well. And depending on the actual size of your mango and avocado, you might find yourself with a little extra fruit puree…. so maybe an extra popsicle can be made or you can just eat it now.

Scoop avocado into a jar and cut and dice mango and place in a separate jar. Add maple to the avocado (and the mango if you want) and about 1/4 cup of water to each.  With a hand blender, blend each until smooth ( or use a regular blender) Once both are blended, dump one into the other and gently swirl around. Pour mixture into popsicle molds, add the sticks and stick into the freeze. Keep freezing until frozen which should take at least 4-5 hours.

And once frozen, pop out of molds (run mold under warm water or just leave on counter for a few minutes) and eat them like it hot!

My little sister came over last night for a homework and dinner night. I love these nights because when she comes over she spends a good amount of time poking and harassing the mr while I get left alone to cook dinner.  But then always at some point during the evening,usually after feeding them dinner,  they both turn on me and start to poke at me. They are brats like that. But what I also like is I can sometimes help her a bit with the homework. (like last night,… girl did a bit of procrastination.Good thing I am awesome and maybe a little bit of a hard ass. She got it done with a bit of help and it all ended happily ever after) Maybe cause I am an old lady now, but I like the feeling of using my brain for things that I no longer think about. I makes me feel smart again (kinda) SO we get together and eat and do homework and make fun of each other… Good times. I love hanging out with my sister.

Ok, so this pudding, its one of my favorites.. I could probably live off of sweet potatoes in all shapes and forms.. A long while back I started making this pudding and got the sister hooked on it as well. So whenever she comes over for dinner I make it for us. And we eat it and exclaim how, “OMG this is so freaking good” and eat, then lick our bowls clean. And it’s so easy and simple to make. Basically just sweet potato. So amazing.  The mr, he likes it, but doesn’t share the same enthusiasm as we do….But he is not a teenage girl and her sister so yeah. who really knows.But Anyone out there with a spare sweet potato.. make this pudding. It will change your life in all the right ways!

Your welcome very much.

The stuff. A sweet potato, a couple of dates, ans some cinnamon. That’s all you need!

Simple as can be. Bake the sweet potato until soft.  Remove the skin (I then eat the skin, but if you don’t like it, the dog also loves potato skins) and stick it onto a food processor with the dates (make sure to remove the pits) and blend together. I usually add in a few a few splashes of water while I am blending just to think it out a tiny bit. But that is a preference I will leave up to you.

Add in the cinnamon and blend some more until so nice and silky smooth.

  And a note here. You can omit the cinnamon if you like, the pudding is amazing without it but you could even use more spices like ginger and allspice or added a little splash of vanilla. OR.. Add a scoop of some nut butter… so good.

Once the you have spiced your pudding, scoop it out into jars, bowls, whatever and how much ever you want (1 large sweet potato is good for 2-3 servings)

Oh whats this.. Coconut cream!!!! And yes, hand beaten like a boss!

You have the pudding, a the whipped coconut cream. Big spoonful of that right on top.

Sprinkled with another pinch of cinnamon and some chopped up walnuts…

Pudding so good and so easy it will knock  your socks off!

Serves 1- 3

  • 1 large sweet potato
  • 1-2 pitted dates (If I am making the pudding for myself I sometimes skip the dates)
  • 1 tablespoon Vietnamese cinnamon

Optional. A pinch of ground ginger or allspice. Pumpkin pie spice or a splash of vanilla. A scoop of nut butter or even a handful of nuts. Chocolate chips or creamy nutella. Berries. And whipped coconut cream or some yogurt to top with. So many possibilities.

Bake sweet potato until tender. This can be done a ahead of time or you can use up left over sweet potatoes from dinner….

Remove the skin from the potato and place into a food processor or blender with the dates and the cinnamon or whatever spices you want to use. Blend until smooth. Can add in a few splashes of water to thing out a bit.

Once smooth, scoop out into serving sizes or just into one big jar to eat all to yourself. Top with coconut cream and chopped nuts or nothing.

Eat with spoon, like bowl clean.. And can be eaten without shame for breakfast, lunch, dinner or snack.

Are you ready for this weekend? You know what’s coming right? Yup, another arctic blast. -30 degree temperatures, windchill warnings and local news forecasters warning of dangerously cold conditions. “Don’t go outside , your face will freeze off”

Oh yeah, and Valentine Day.

What are your thoughts on the V day? The mr and I, well we could kind of care less, but at the same time, we like the excuse to spend the day together, traditionally going for a hike with the pup (not this year… we would die) and just spending the day together being sweet (pretty much the same way we spend any days off together) We don’t get fancy with dinner dates or overly large stuffed animals. No boxes of chocolate, bottles of champagne or fancy undies.  We keep it caj, maybe a sweet hand made card covered in glitter (never a store bought.) a stop for a good cup of coffee and an afternoon trip to the plant store to by a new pretty house plant (1. I really hate red roses and 2. I would much rather get a house plant then flowers that will die) But honesty, we just use V day as an excuse to not work and spend the day together, being left alone, eating whatever we want and doing whatever fun stuff we want.

This dish was kinda inspired by being so pretty bright pink, but also it was just what I wanted to eat for dinner. Spaghetti squash doesn’t get as much play as it should. Sure it’s not the most sweet and nutty of the squashes, but it has a really nice subtle flavor that makes it a fantastic base for pretty much anything. And the beet sauce. Again, it’s such a pretty color, but beside that, I can’t get enough of them. I love me some roasted beets (way better then any chocolate or sweet treat)

I could lie to you and say that this is the dish that I will be making for me and the mr on Valentines day, but no,this dish already happened this week and the mr got into it, but would rather eat his favorite meal (pizza) for dinner.  And I will be eating the left over beet sauce with carrot sticks (this beet sauce id for real.. topped with a little yellow mustard… I could eat it for life)  then make a hugmongo batch of popcorn covered in peanut butter. We wiil sit on he couch and watch a lot of Netflix (still working my way through the fresh prince) and maybe a cute Wes Anderson movie. I will be in bed by 9.

But don’t mind us old folks here. Go for it. Do up the Valentines Day. Make a pretty dish of food for your sweetheart, or if alone, make it for yourself, especiallyif you are hanging by your lonesome. Valentinesday is about being happy and this dish will make you happy, whether or not you plan on sharing it.

The stuff. One spaghetti squash big enough for at least 2 people (I love left overs so maybe big enough for 4), 2 largish beets, a a small onion. Also grab a clove of garlic of 4, a lemon, the salt and pepper, and some olive oil. Optional, but a very nice addition is a handful of tasted walnuts.

Quick and crank up the oven (make sure you take out the cast iron you left in there from last night), then stick the squash, beets and onion into the hot oven to roast. I stuck them all on a baking sheet and left them completely whole, but if you want, you could chop the beet and onion into chunks and drizzle with oil or you could wrap the beets in foil and bake them that way but really, why go through all that when you can just not? And don’t bother peeling them.(unless you think you must.. but you really really don’t need too)

And same for the squash. You could cut in half and roast it that way, but again, why when you don’t need to.

So anyway, roast the beets and onion until fork tender. And the squash as well (check by stabbing with a fork) All my stuff roasted up pretty much perfectly at the exact same time, but it really depends on the size of your stuff. So check after 40ish minutes.

And once you pull that roasted stuff from the oven, let it cool just enough where you can handle it. Chop the onion into a couple chunks, the beets into smaller chunks and slice the squash in half length wise and set aside.

Grab a blender and toss in the onion, beets the juice of the lemon (start with half) apinch of salt, a few pinches of pepper, and a clove or 2 of garlic (ok, I love raw garlic and used a lot. If you do not like the taste of raw garlic, just toss it with a little oil and stick into the oven with the beets for about 10 minutes. Or you could omit the garlic entirely)

Once all the stuff is in the blender, turn it on. Drizzle in about a tablespoon or two of olive oil and blend until a nice smooth sauce has formed. Taste, season with more salt and pepper if needed. Add the other half of lemon if you think it needs it. You can also add a bit of water to thin it out more.. if you want

So now the squash should be cool enough to handle. Scoop out the seeds and with a fork, scrape up into spaghetti!

Heaps of squash go into bowls then topped with a generous mound of beet sauce. Topped with some roughly chopped toasted walnuts, a sprinkle of pepper and some bits of green stuff (I just diced up some kale)

Look at that. So pretty, so pink and all ready to go. Dinner for 2 with a good bit of left overs for later!

makes 3-4 servings

  • 1 medium sized spaghetti squash
  • 2 large beets
  • 1 small onion
  • 1 lemon
  • 2-4 cloves garlic
  • handful of toasted walnuts (optional)
  • olive oil
  • salt and pepper to taste

Note. You might want to thin out sauce out a bit without the use of a ton of oil. Go ahead and add a little water. Also, I used raw garlic in mine, but some people might not like it raw. Just toss a few cloves of garlic in a bit of oil and stick into the oven for 10-15 minutes with the other stuff to give it a little roast. OR just omit.

Preheat oven to 425.

Stick the onion, beets and squash onto a baking sheet, drzzle the beet and onion with a tiny bit of oil and stick the sheet into the oven. Roast everything until fork tender which should take around 45-50 minutes. (depending on the size of your produce, some thing might take longer or shorter, so just check after 40ish minutes)

Once everything is roasted, let the beets and onion cool just enough to handle and cut into chunks and toss into a blender. Add in the garlic, the juice of the lemon, a few drizzles of olive oil and a pinch of salt and pepper. Now turn blender on and blend until smooth.

And the squash. Cut the thing in half and remove the seeds.  Then with a fork, scrap the squash from the skin into spaghetti like strands.

Place squash into bowls, sprinkle with salt and pepper, add a drizzle of oil if you want and top with a good hearty heap of beet sauce. Top with more cracked pepper and a few chopped walnuts and maybe add a little something green, you know, to make it pretty.

Serve warm with love and a fork.. your lips might turn pink with beet love.

  I use to suck the juice out of the seeds (they are actually called arils) of the pomegranate and spit out the actual seeds… I thought that the seeds were poisonous. (I blame my sister for this .She is the one that told me that).  And it turns out that it is an actual thing. That other people think that the seeds are not edible, so I guess don’t feel so duped. But I leaned. The seeds, they are very much edible, and very much tasty. I love biting into a pomegranate seed, letting the juice flood my mouth, followed by a nice little crunch from the seed inside, just like little crunchy red jewels. And the method of removing the seeds just makes them that much better. When you have to whack a fruit for it’s edible parts, it got to be good. And to make this clear…. to all the people out there that thick the seeds are poison… the seeds are NOT POISION. In fact, they are quite good for you.

Now that that has been established, we can get to eating these little pearls the right way.  And being all holiday and jolly lala, I was thinking of some classic side dishes that are typical around this time.  Creamed spinach came to mind, but that just seemed a little boring. That’s where the pomegranate comes in.  You add pomegranate to anything and it’s not boring anymore. Also I switched out the creamed part and replaced it with cashew cream, and spinach with kale… cause that’s what I do. And the results are fantastic! Sweet, creamy, crunchy, earthy… All the best flavors. And even though I ate most of it hot, it’s definitely a side that moves from hot to cold and still taste super great. Would even make a nice sandwich or maybe add a little bed of grains and you got yourself a nice little lunch.

But the again, you probably wont have any left overs

The stuff. A bunch of kale, some cashews that have been soaking for a little while,  and a pomegrante  (I only used half of one). We also need us some more fresh water, a lemon, a few cloves of garlic and salt and pepper.

Remove the arils (thats what the juicy seeds ae called) by placing half the pomegranate into a bowl and whacking  it with a big wooden spoon. (martha stewart taught me this)

Strain the soaking cashews and dump them into a blender with the juice of the lemon, the garlic, some fresh water and some salt and pepper.

Turn blender on and blend until a nice smooth consistency

Chop up the kale and place into a really big skillet with a few splashes of water.

Once the kale has wilted, pour the cashew cream all over it. 

Add in the pomegranate  seeds

And get yourself a fork (bowl is optional( and eat. 

Creamed food never tasted this good!

makes 3-4 servings 

  • 1 bunch (abut a pound) Kale
  • 1/2 cup cashews that have been soaking in water for a little while
  • 3/4 cup water
  • 1 lemon
  • 2-3 loves garlic
  • 1/2 cup pomegranate seeds (about 1/2 a pomegranate)
  • salt and pepper to taste 

Take your pomegranate , slice in half, and place half seed sside down into a bowl. Take a big wooden spoon or something like it, and whack the outside of the fruit. The seeds will all fall out.. but check for any stuck seeds

Strain cashews from soaking waterand dump into a blender with the juice of the lemon, the garlic, ¾ cups of water, and a pinch or two of salt. Blend until a smooth a creamy cream. If you think the cream is to thick, add in another splash of water

After washing kale, chop it up into smallish pieces. (remove stems if you want.. I don’t, I like the stems) Stick the kale into a large skillet with a few splashes of water and a sprinkle of salt and place on the oven on medium high heat. Stir around until kale is wilted and the water has evapotated. Pour on the cashew cream, mix around and top with the pomegranate seeds.

and eat..hot or cold. Its all good.

My oven is fixed!! The part came in yesterday afternoon, right before we were about to leave for dinner at my sisters. The mr ripped the package open, popped the stove out and within 5 minutes I had a brand new, working ovens! (not really brand new, but it is much cleaner now after taking it apart and seeing how nasty it was)

But before this happened, I was working with no oven. And all I wanted to do ( all I wanted to do all weekend) was bake something.  So yesterday, instead of just waiting around moping, I decided to make something with the part of the oven that still worked. And being that it’s the week before Halloween, I have got candy on my mind, plus  a hugmongo bag of walnuts. Hmm, the possibilities. 

No oven, big bag of nuts, candy thoughts = Spicy maple candied walnuts A perfectly sweet and spicy treat that packs lots of flavor, protein, and healthy stuff and not a bunch  of shit. Made on the stove top with no fancy equipment., takes about 5 minutes to make and tastes like Woo hoo! A (kinda )candy to feel good about eating.

Ask the mr. I think he ate them all last night. And I am ok with that cause it’s way better then him eating that shit candy and also, he fixed my oven. Thanks love! 

Now to the nuts!

The stuff. Whole walnuts, real pure Vermont maple syrup, cayenne pepper and salt. 

Stick the walnuts into a dry skillet and place on the stove on medium high heat to give the nuts a little pre toast and to preheat the skillet.

While the walnuts are slightly toasting, dump the maple syrup in a bowl with cayenne and give it a little stir.

Once the skillet has heated and the walnuts are slightly toasted and starting to smell all nutty ,dump the syrup into the skillet while string until the nuts until all are coated.

And for the next few minutes, continue to stir the nuts until the maple syrup starts to caramelize and  there is no longer any liquid left in the pan.(like 3-5 minutes)

Now dump the nuts onto a lined baking sheet and spinkle with a pinch or two of salt, and if you like spice, a pinch more of cayenne pepper (you can make them as salty and spicy as you like!)

Note. As soon as you dump the nuts, stick your skillet in the sink and fill with water to avoid a crappy stuck on sugar mess.

Walnuts a plenty cooling off. 

Oh man.. dez nuts! (I am sorry, I couldn’t resists)

Snack on these, it will make you happy.

  • 1 1/2 cups raw, whole walnuts
  • 1/4 cup maple syrup
  • 1/2 teaspoon cayanne powder (more if you like really spicy)
  • a couple pinches of salt 

Place walnuts into a large dry skillet  and stick on stove on medium heat. In a little bowl, mix the maple and the cayenne pepper together. When the skillet has preheated and the walnuts are slightly toasted ash giving off a nutty smell, pour mixture onto walnuts, string to evenly coat each nut. COntinue to cook and stir for another 3-4 minutes or until the syrup has caramelized ash dried. Once done, dump the mixture onto a lined baking sheet  and sprinkle with salt and maybe more cayenne pepper if yu want. Let cool, then eat…

These suckers make a great snack,  tossed into salads, or added to some apple strudel. Eat them whatever way floats your boat. 

Three things… One. I have a ton of beets, but that is because I have been taking mostly beets at the farm share pickup (I am scared I will run out so I hoard them) Two.  See that roasting pan? I got it a couple weekends ago  at a barn sale for 75 cents. Isn’t it awesome! (it is so awesome) So I really wanted to roast something in it. And three. Roasting means the oven is on and it has been chilly chilly at night (LOVE IT) but I am not willing to turn the heater on in my house until at least the first  of November. Until then, we will just roast all of our food for warmth.

But really, there is no better reason then that beets are tasty and potatoes are tasty. Together, they are super duper tasty. The combination, with the lemon and rosemary giving the dish  a fresh and vibrant boast,  satisfies that person who says he doesn’t like beets (the mr, but he eats them so yeah.) and me, who would rather just eat all beets (I ate some of the potatoes)  

Yup, rosemary lemon beets and potatoes.  A simple dish that screams fall, warm comfort food, and just happens to be really pretty too. (especially served in my awesome roasting pan)

The stuff. A couple of beets and a couple of potatoes. Some fresh rosemary (can use dried), a lemon, salt and pepper and olive oil. 

Preheat the oven to 450 and chop up the potato and beets into chunks that will fit in your mouth and dump the chunks into a bowl. 

Mince up the rosemary.. unless you don’t mind eating long, kind sharp pieces

Drizzle a bit of olive oil, add in the zest of the lemon, add a good few pinches of salt and pepper and toss in the rosemary and give it a good mix.

Dump onto a baking sheet or in a roasting pan (seriously, this roasting pan is SO PRETTY) Cut the lemon in half and squeeze on half of the lemon juice on the veggies. 

And into the oven it goes. 

All roasted up and ready to go.

 Those colors.. the smell. So good!

Serves 2-3 as a side 

  • 2-3 large beets
  • 2-3 large white or red potatoes 
  • a few sprigs of fresh rosemary( about 2 tablespoons.. can used dried, just decrease quantity a little)
  • 1 lemon
  • salt and pepper to taste
  • olive oil

Preheat oven to 450

Wash beets and potatoes well then dice them up into mouth sized pieces and toss into a bowl. Drizzle with  enough olive oil to coat the stuff, zest the lemon and add the zest to the bowl, and  cut lemon in half and squeeze half of the lemon juice in.  Oh, and mince up the rosemary and toss that in too. Season with salt and pepper to taste (potatoes like salt) toss it all around until everything is all coated and dump onto a baking sheet or into a roasting pan and stick into the oven for about 45-50 minutes or until golden brown and crunchy tender.

Remove, squeeze the remaining half of lemon on top and serve!

Holy shit is it hot out. My brain is all fizzy, my hair is all frizzy, and my over all being is just blah. I am not a fan of super hot weather (as some of you may know) and am getting more pissy as the days go  by and I continue to be a sweaty mess. I don’t want to feel like a big wet slob, I want to feel fresh and clean and wear clothes that are not drenched in sweat. I know, bitch, bitch, bitch, but seriously. Even the world around me is wilting, and in the nice, colorful fall foliage kind of way. It’s all crispy and brown.  The garden is barely holding on, the flowers are shriveling in the ground, and a few plants are just plan dead. It’s just too hot.

I think that only plus side of this past week of hot crap weather are these popsicles that I made. They were actually suppose to be a treat for the littles, but guess what, me and the mr ate them and didn’t share, and no, I feel zero bad about it. They were so good, so refreshing, so cold(if only for a minute) and just so needed.  A few minute reprieve from being miserably hot. And bonus, a great use of all the watermelon and tomatoes that I have taking over the countertops (I have so much watermelon and tomatoes) 

And really, these probably (better freaking be) the last batch of popsicles for the summer so I think I am going to make another batch today, eat them, savor the flavors of summer, and move on from there.

. Maybe I’ll even share them this time. 

The stuff. Some watermelon*, a tomato, a handful of basil, and a lime. 

*My watermelon had seeds, but you can use seedless. I also removed the green skin, but kept on as much rind as I could, although this particulate melon had very little white rind.

Dump the melon, tomato (cut in a few pieces, the juice of the lime and the basil into a blender. If your melon has seed, don’t worry about removing them.

The stuff all blended up.

. This step is more necessary  if you melon is seeded, straining the mixture pretty much caught most of the seed chunks. You can skip this if your melon is seedless.

Now pour the juice into your molds and stick into freezer to freeze. 

After about 2 ish hours, remove and stick the sticks into the semi harder pops.

And a few more hours later……Frozen goodness.

And pop one of those suckers out of the mold and savor every frozen delicious bite. 

Happy Tuesday… DON’T MELT!

Make six 3.5 oz popsicles

  • 1 ish cup watermelon (green skin removed.. rind is good)
  • 1 large ripe tomato (about a cups worth)
  • a few sprigs of basil
  • Juice of 1 lime

Place all ingredients into blender and blend until smooth. Strain mixture through a fine strainer into a bowl or jar and pour into popsicle molds. 

Place in freezer for a few hours. About 2-3 hours in the freezer, take them out and stick in sticks (or fallow you popsicle molds instructions) Place back into freezer

Once completely frozen, remove from molds and eat with your mouth.

Ugh. It has been so nasty gross out. A four day heat wave, and no, not just hot hot days, but those gross, hot hot with all the humidity in the world, kind of days. My body has rebelled and turned into a slug and my hair… well let’s not talk about my hair.

Yup, it’s been way to freaking hot to do anything, especially cook. And eating food is’t even especially appealing either (living off raw kale and, yes, lots of tomatoes at the moment) . What we all want is to drink something nice and cold and refreshing (and boozy). And what do I do when I want this, and have a lot of that? I turn that into this. That being tomatoes, and this, being a cold drink. Did that confuse you?

What I am trying to say is that I have a butt load of cherry tomatoes to eat but what I really want is a cold  drink. So I took the tomatoes and make them into a lemonade. And it is amazing. It hits all  the end of summer, super gross heatwave, I don’t want to move, spots that needed to be hit. And just in time for the weekend sow e get to add a little splash or two of something hard, cause we all know that after this past week, we all deserve it.

Think that combination sounds weird? Well don’t cause lemons and tomatoes are perfectly paired together. Tart and tangy, but still with a bit of sweetness from the tomatoes ( especially if using a sweeter variety like the sun-gold). It really is a great, refreshing drink, with or without the booze. A perfect match!

Tomato lemonade here we go!

The stuff. Tomatoes ( I used sun-gold cherry cause I have a buttload, but you can sure use whatever tomato you have to many of), lemons, water, and if your into it vodka.

Note. The mr. and I are not big on sweet drinks, so I didn’t add any sweetener, the tomatoes being sweet enough. But feel free to add a little sugar or honey to yours.

Start by dumping tomatoes into a pot with water. Stick on high heat and bring to boil, then turn heat to medium low,stick a lid on pot, and let tomatoes simmer for a little while. 

About 30 ish minutes later, the tomatoes have reduced to about 1/3 of what you started with and have turned into a a chunky like syrup. 

Strain the juice from the solids into a big pitcher.

Tomato juice! and it’s so pretty bright gold. Now let it cool far a little bit.

And while juice is cooling, juice your lemons

When the tomato juice is cooled off, add the lemon juice to the tomato. 

Add water and stir

Taste, and if you think it need sweetener, by all means, add a drizzle or two of some honey or spoonful of sugar.

A couple of glasses of ice, and if you shall,, a shot of vodka (add the shot to the glass, not the pitcher)

Me being so fancy added a garnish/snack. Basil leaf and cherry tomato skewer looks so nice.

And sit back, put your feet up. and take it all in. 

Weekend here we come!

  • 2 cups cherry tomatoes (can use 2 cups of any tomato) 
  • 1 cup fresh lemon juice (4-5 lemons)
  • 1 cup water plus 3 1/2 -4 cups water
  • a few basil leaves and extra tomatoes for garnish (optional)

Note. I did not add any sweetener to my lemonade but you could totally add in a few tablespoons honey or sugar. Do what floats your boat.

Dump tomatoes into a pot with 1 cup of water. Bring to boil then cover and turn heat to a medium low heat. Cook tomatoes down for about 30  minutes or until the tomatoes have reduced about 1/3 and is almost sauce like.

Using a fine mesh strainer, strain the tomato mixture into pitcher or jug that you can serve your drinks  from. Use a wood spoon or spatula to scrap the tomato around strainer to really make sure you get all the juicy goodness. Let tomato juice cool.

While cooling, juice lemons until you get a cup of fresh lemon juice. Add lemon juice to cool tomato juice along with 3 1/2 cups water. Mix and taste. If you think it needs a little sweetener, add a little in. If you think it tastes to strong, add in more water.

Good stir, ice in cups, a 2-3oz shot of vodka per 8-12oz cup of lemonade (the ratio is up to you my friend)… and your sitting pretty. Feeling a little fancy, take a basil leaf and wrap around a cherry tomato. Stab it with a tooth pick and garnish your drink. It ames for  anise snack too.

Sit back, sip and enjoy. 

Sunday Happy — The Lovely Crazy

 Happy Spring people! Aren’t you so excited? I know I am. The daffodils are starting to pop up, the birds are out like crazy with their churp churping and there is a hint of buds grazing all the tree. We are in for warmer weather, fresh green spring veggies, and lots of mud… I mean, what’s not to be happy about. (there are things but we don’t need to talk about them right now)

Yesterday the mr and I finished ripping up all the floor stuff (I managed not to hurt myself until the very last piece and stuck a nail into my hand) and then traveled the city looking at all the windows in all the stores. Window shopping is such a pain in the ass. If you never have to do it, don’t. But we have to and we need to make some decisions like now because this week a bunch of men are making their way over to the new house with their saws and hammers and a big dumpster and are going to cut the back roof off. I am so excited! The addition is going up and the best part is we decided it was just to much for the two of us to do so we hired out the hardest part. We don’t have to tear it down or frame it up anymore and oh does this make me happy. I was not to into the idea of me and the mr ripping of the roof ourselves. The mr, sure he knows what he is doing, but me, I would have probably taken the whole house down.

Anyway, going to be doing house stuff until we can’t which I am ok with because I am really starting to feel crazy and am ready to move.  I know it’s still a few months away but I have this weird feeling that I can’t really stop and chill until we are in the new house and I am relaxing there.. so we better get on it. 

And I can’t forget the cake. I need to make us a bunny with lots and lots of jelly beans.

THE LOVELY CRAZY

Yesterday we had a few pieces of really log ass metal roofing delivered to the new house so we can finish the little side parts of the roof off. The funny thing is we ended up with way more wood then metal. The roofing is super light and flexible so it has to be strapped to a super long wooden structure. And it was perfect. The mr and I have pretty much finished the fence except for the gate from the driveway which sucks because we still can’t bring Washer over to play without it ans we pretty much fenced the yard in for him. But the long ass wooded palette things.. IT was perfect. Well a perfect for now solution. A Already constructed tall and long (too long, we had to cut it down) wooded wall that is now our temporary gate.What a score! And now the pup can spend all day long laying around outside and not getting into any neighborhood fights with the other dogs. And look at us making use of all the scraps. We are so awesome.

Ok, so besides our awesomeness and the new temp gate, let talk about this greenest freaking soup that there ever was. It is probably the best green soup that I have ever tasted. (I know,  I have habit of proclaiming all of my soups as the best soup ever, mostly because they are.) It’s one of those soups that is super fast and so simple to make and is perfect for all the spring and summer time eating that will be going on. Eaten hot or cold and out of a bowl or a drank out of a glass. A soup for any time, any place. The mr even liked it and he says he doesn’t like peas. (but he so does). Who doesn’t like the best soup ever?

Now here is how to make it.

The stuff. A big bowl of fresh spinach and a bowl of peas (fresh or frozen.. mine were frozen) Also need an onion, a carrot, a few cloves or garlic, water, olive oil, and salt and pepper.

First thing first. Get the onion and carrot all nice and chopped up and tossed into a big pot with a drizzle of olive oil, a little splash of water,and salt and pepper. Stick that pot on the stove on medium high heat and start to cook cook.

Soften and yummy carrots and onion. I am not exactly sure if my carrots turned the onion orange or if my pot because it is so stained with turmeric that it turns everything yellow. Keep the pot on low heat and mince and stir in the garlic.

And for magic. The pot is sill on low and you are going to pile all the fresh spinach right on in to the pot. Add a few splashes of water and a lid and let it cook for a few minutes. And when you go back and remove the lid..Ca bang ! All the spinach is gone (not really, it just wilted).

It’s time for the peas and water to be added.The blender comes out and the soup gets blended until super smooth.

So green, so good.. This soup is all ready to go. But here is the thing, you can eat it at any temperature and it will be amazing so if you want to heat it up a little more, go for it. Cold soup shooters, just stick it in the fridge for a while and wait until its chilled. Or both. I ate a bowl warm then had cold soup for dessert.

And to finish, you must serve with fresh lemon and if you have it, a pretty little mint plant. I love the flavor of a little fresh mint added, but not all do. So mint if you like( it really is so good) but lemon in a must!

serves 3-4

  • 2 cup peas (fresh or frozen.. I used frozen)
  • 3 packed cups fresh spinach
  • a few sprigs of fresh mint (optional)
  • 3 cups water
  • 1 small onion
  • a carrot
  • 3 cloves garlic
  • 1 lemon
  • olive oil
  • salt and pepper

Small chop onion and carrot and toss into a big heavy bottom pot with a drizzle of olive oil and salt and pepper. Stick on stove on medium heat and cook until it becomes soft and fragrant. Now mince garlic and add that it too. Stir and cook for another minute or two then add in all the spinach and a splash of water. Place o lid on pot and let until cook until spinach is all wilted. (give it a stir to get it all cooked down). Once wilted, add the peas and the water. Stir all together and let simmer for a few minutes then remove from heat. Now blend the crap out of it until silky smooth.(use your blending device of choice).

And it’s done. You can either serve right away as a hot soup or sick it in the fridge and serve cold! Just remember that you need to serve it with cracked pepper, a squeeze of fresh lemon and some chopped up fresh mint(mint it optional but so good)

Eat with a spoon or forget the spoon and slurp out a a cup like the cool kids.

I was cleaning out the fridge and found that I had a good few really ripe avocados that were in need of eating ASAP. (I bought like 8 at once… super sale!) My first thought was I wish I could freeze these and save them for later. Then I thought well why the heck don’t I freeze them. So that’s what I did. I pureed them up, added a little lemon juice and stuck a jar of tangy green creamy goodness into the freezer and all throughout the week found myself standing in front of the fridge with a spoon scraping at the jar of avocado. It was so good. I even added a little fruit to it toward the end. Avocado and fruit = oh hell yes.

And now that is is officially spring we should be eating popsicles (right?!). I figured you guys are cool enough that I would share my new found love of frozen avocados and you would be down with it.

I know, some might think that plain old frozen avocado doesn’t sound amazing, but when you add a little sweetness and swirl it around with super sweet and creamy mango. Trust me, it’s freaking amazing. The flavors go perfectly together, and the texture, it’s almost like ice cream… SO GOOD! Anyway, I know that it might not be the perfect spring weather as of today, but the beauty of these is that you make them, freeze them and leave them until the perfect moment. Say a good long day of raking up all the cat poop that the neighbors cat has left in all your spring flower beds, or picking up all the recycling that has blow into the bushes all winter long. Maybe a day of cleaning out the closet or dusting the ceilings. Make these popsicles now and treat yourself to one after doing some kind of crappy spring chores, its what you need to do.. Or better yet, bribe a little with a popsicle to do your spring cleaning….. Yeah, I might just do that.

Or just make them and eat them… no spring chores required.

The stuff. A nice ripe mango and a nice ripe avocado. A bit of lemon juice (from half a lemon),  a little maple syrup, and a some water.

Scoop the avocado into a jar and cut up the mango ans stick into a jar…..

Splash a little water into each jar and blend them up. (I used my hand blender. but use the blending device of your choice) Add the maple syrup to the avocado.. as much as you need, and if your mango is not super sweet, you can add a little to that too.

Scoop the avocado puree into the mango and gently swirl it around

Now pour/scoop the mixture into your popsicle molds. And because mine was thick enough, I was able to stick the wood sticks without them sinking.

Noe get them quick into the freezer

A good few hours (I didn’t even check until the next day but I bet 4-5 hours in a good freezer will do) the popsicles are nowposicles!!!!!

Pop them out of the mold (a few minutes on the counter and or a quick rinse under warm water) and do what needs to be done.

So creamy sweet and refreshing… This is a happy spring popsicle for sure.

Makes four 4oz popsicles

  • 1 ripe avocado
  • 1 ripe mango
  • 1/2 a lemon or lime
  • 1-2 tablespoons maple syrup (or any sweetener of you liking)
  • about 1/2 cup of water

Note.sIF your mango is not super sweet you might want to add a little maple syrup to thatto that as well. And depending on the actual size of your mango and avocado, you might find yourself with a little extra fruit puree…. so maybe an extra popsicle can be made or you can just eat it now.

Scoop avocado into a jar and cut and dice mango and place in a separate jar. Add maple to the avocado (and the mango if you want) and about 1/4 cup of water to each.  With a hand blender, blend each until smooth ( or use a regular blender) Once both are blended, dump one into the other and gently swirl around. Pour mixture into popsicle molds, add the sticks and stick into the freeze. Keep freezing until frozen which should take at least 4-5 hours.

And once frozen, pop out of molds (run mold under warm water or just leave on counter for a few minutes) and eat them like it hot!

Tuesday tater tot time!

Sometimes you just want a tater tot. So what are you to do about it? Well I fought off the feeling for far too long (why? I do not know) and finally gave in got my shit together, got some potatoes, and made the tots. And then I was happy.

What was taking me so long?  Tater tots are freaking good.

These are nothing like those tots that were served in the lunch room cafeteria that we all know and loved. No these are sooooo much better, and probably (definitely ) way way healthier too cause they are baked, not fried. And to make’em even better, after making the tater tot tower you’re ready to eat, you can eat them up with whatever dippy type thing you can think of. Sure you could go with straight up ketchup (me, not a fan) or you could go nuts and make a big bowl of guacamole, grab the mustard and the hot sauce, and do that. Tater tots go so well with all sorts of stuff. (I was even thinking peanut butter but stopped myself for the time being)

. Next time I make them, I am so going to make a tater tot castle!

Tots away!

The stuff. Potatoes (duh), an onion, garlic powder, olive oil, and salt and pepper.

First thing to do is boil the potatoes…just a bit. Cut each potato into 4 wedges and stick into a big pot full of cold water, salted water. Stick pot on the stove ans bring to a boil, then turn heat down a little and continue to cook the potatoes until they are just barely for tender. Strain from the water and set aside to cool.

Once the potatoes have cooled off enough where you can handle them, grab a grate and grate them all up, along with the onion. ME, trying to use the least amount of dishes possible, I just grated it all onto the baking sheet that I was using to bake the tots off…. Worked like a charm. And once your taters and onion are grated, sprinkle in the garlic powder, a good amount of salt ans pepper ans drizzle it all with a little bit of olive oil. Mix it all around (I used my hands but a fork would work) and if you are using the baking sheet , just push the mound to one side.

And start forming the taters into tots…. Just grab a handful and squeeze it together into a tot shape.

Note. Have a dish towel close by to wipe your hands when they get to starchy… the tots stick together better when made with dry hands.

Tots ready for the oven. Bakes for 30-35 minutes at 400.. Flip after about 20 minutes.

Golden brown, all crispy an tot like. Ready for your eating pleasure.

Plate them up, serve with your favorite condiments (try guacamole , mustard and hot sauce) and eat them. Eat them all.

serves 3

  • 2 big russet potatoes
  • 1 sweet yellow onion
  • 1 tablespoon or so garlic powder
  • olive oil
  • salt and pepper

Slice the potatoes lengthwise into quarters and place into a pot of cold, salted water, making sure the potatoes are completely submerged.  Bring the potatoes to a boil then turn heat to medium and keep boiling until the potatoes are just barely fork tender., like 8-10 minutes. Drain the potatoes and let them cool.

Preheat oven to 400

Once cooled, grate the potato, along with the onion into a bowl or onto a baking sheet. Sprinkle with the garlic powder, add a good amount of salt ans pepper and drizzle with olive oil. Toss around until its evenly coated then start forming the mixture into tots. Place the tots on a baking sheet and once all the tots are formed ans ready to go, stick into the oven. Bake for about 20 minutes, remove, flip them over, then continue to bake for another 10-15 until they are all nice and golden brown.

Remove from oven, grab your favorite condiments and eat right away.

Yesterday was kind of a shit show as far as the weather was concerned.  I woke up early to a lovely light blanket of snow, the temperature hovering around 32 degrees. The air was nice and crisp, the sky was a light grayish blue. The neighborhood was quite. I walked the pup and then took off for the morning. It was so nice.

How that changed fast. Walking home a few hours later I was a hot , drenched, cold and damp mess. All that snow turned into slush and gigantic puddles and it was raining a good steady soaking rain. And I had to walk my butt home. So that was great.

But you know what these weather make me think of… Spring!!!! Yes, warmer, slushy, mushy weather. Mud all over the house and a wet smelly dog All the things that should not be happening right now but are. And now I have the springtime feels hard.

With things all springy, I was thinking of spring veggies and just wanting something bright and pretty and tasty. Peas! Peas are a good spring veggie, and where there is peas, there carrots. (or should be)  But not plain, run of the mill peas and carrots. First off I got the prettiest colorful purple, white, and orange carrots because I needed some color. Right there that made me super happy, Then instead of just steaming them with some peas, I did roast those carrots to bring out all the sweet juicy flavors. Then those pea. Not really in season yet, so I went with frozen (I love frozen peas)  and made the brightest, most amazing creamy pea sauce infused with garlic lemon, and dill. (all spring time flavors)

The results… I love roasted carrots so no surprise there but the creamy peas…KA-POW amazing!!!! My mouth has never been so happy to eat peas. and it really loves peas. Fresh, clean, tangy…I made, I ate, I though about them all night. And of spring and all the peas and carrots I am going to plant…and eat.

The stuff. The prettiest bright and colorful carrots and some green as can be frozen peas. Dill, garlic, and lemon to add to the peas and some olive oil, salt and pepper to roast up the carrots.

Chop up the carrots and tossed with salt and pepper and a drizzle of oil. And onto a baking sheet and into the oven to roast.

Dump those peas into a pot with water, garlic, and the dill. Stick the pot on the stove ans bring to a boil for a few minutes then remove from the heat.

You see that? It’s amazing . Its gets blended until smooth and seasoned with salt, pepper, and the juice if half a lemon.  Give it a taste but don’t eat it all. (I almost ate it all) and pour into a nice little cup or jar and wait for the carrots.

Oh roasted lovely colored carrots.. So good all on your own.

But slathered with this pea sauce…. Always and forever. I am in love.. could eat all day every day.

I wish my stomach was big enough to eat all the peas and carrots….. All!

serves 2-3

  • 1 lb carrots (I used a variety of colored carrots but plain old orange carrots are always fantastic too!)
  • 2 cups frozen peas
  • 3/4 cup water
  • 1-2 cloves garlic
  • 2 tablespoon dill
  • 1/2 a lemon
  • olive oil
  • salt and pepper

preheat oven to 450

Cut carrots into quarter and in half (can cut in any size and shape you want)  Place the carrots on a baking sheet and drizzle with a wee bit of olive oil. Sprinkle with salt and pepper and toss it all around. Stick the carrots into the oven to roast.

Now grab those peas and stick them into a pot with the water, the dill, and the garlic. Stick on the stove and bring to a boil. Let boil for 2-3 minutes, then remove from heat. Either with a hand held blender or a regular blender…. blend until smooth. Add in the juice of half a lemon, season with salt and pepper, and then try not to eat it all before the carrots are roasted.

Once carrots are tender and browned and yummy looking (about 30 minutes) remove from oven and slather on the pea sauce.

Eat right away….. Make more tomorrow.

My little sister came over last night for a homework and dinner night. I love these nights because when she comes over she spends a good amount of time poking and harassing the mr while I get left alone to cook dinner.  But then always at some point during the evening,usually after feeding them dinner,  they both turn on me and start to poke at me. They are brats like that. But what I also like is I can sometimes help her a bit with the homework. (like last night,… girl did a bit of procrastination.Good thing I am awesome and maybe a little bit of a hard ass. She got it done with a bit of help and it all ended happily ever after) Maybe cause I am an old lady now, but I like the feeling of using my brain for things that I no longer think about. I makes me feel smart again (kinda) SO we get together and eat and do homework and make fun of each other… Good times. I love hanging out with my sister.

Ok, so this pudding, its one of my favorites.. I could probably live off of sweet potatoes in all shapes and forms.. A long while back I started making this pudding and got the sister hooked on it as well. So whenever she comes over for dinner I make it for us. And we eat it and exclaim how, “OMG this is so freaking good” and eat, then lick our bowls clean. And it’s so easy and simple to make. Basically just sweet potato. So amazing.  The mr, he likes it, but doesn’t share the same enthusiasm as we do….But he is not a teenage girl and her sister so yeah. who really knows.But Anyone out there with a spare sweet potato.. make this pudding. It will change your life in all the right ways!

Your welcome very much.

The stuff. A sweet potato, a couple of dates, ans some cinnamon. That’s all you need!

Simple as can be. Bake the sweet potato until soft.  Remove the skin (I then eat the skin, but if you don’t like it, the dog also loves potato skins) and stick it onto a food processor with the dates (make sure to remove the pits) and blend together. I usually add in a few a few splashes of water while I am blending just to think it out a tiny bit. But that is a preference I will leave up to you.

Add in the cinnamon and blend some more until so nice and silky smooth.

  And a note here. You can omit the cinnamon if you like, the pudding is amazing without it but you could even use more spices like ginger and allspice or added a little splash of vanilla. OR.. Add a scoop of some nut butter… so good.

Once the you have spiced your pudding, scoop it out into jars, bowls, whatever and how much ever you want (1 large sweet potato is good for 2-3 servings)

Oh whats this.. Coconut cream!!!! And yes, hand beaten like a boss!

You have the pudding, a the whipped coconut cream. Big spoonful of that right on top.

Sprinkled with another pinch of cinnamon and some chopped up walnuts…

Pudding so good and so easy it will knock  your socks off!

Serves 1- 3

  • 1 large sweet potato
  • 1-2 pitted dates (If I am making the pudding for myself I sometimes skip the dates)
  • 1 tablespoon Vietnamese cinnamon

Optional. A pinch of ground ginger or allspice. Pumpkin pie spice or a splash of vanilla. A scoop of nut butter or even a handful of nuts. Chocolate chips or creamy nutella. Berries. And whipped coconut cream or some yogurt to top with. So many possibilities.

Bake sweet potato until tender. This can be done a ahead of time or you can use up left over sweet potatoes from dinner….

Remove the skin from the potato and place into a food processor or blender with the dates and the cinnamon or whatever spices you want to use. Blend until smooth. Can add in a few splashes of water to thing out a bit.

Once smooth, scoop out into serving sizes or just into one big jar to eat all to yourself. Top with coconut cream and chopped nuts or nothing.

Eat with spoon, like bowl clean.. And can be eaten without shame for breakfast, lunch, dinner or snack.

Are you ready for this weekend? You know what’s coming right? Yup, another arctic blast. -30 degree temperatures, windchill warnings and local news forecasters warning of dangerously cold conditions. “Don’t go outside , your face will freeze off”

Oh yeah, and Valentine Day.

What are your thoughts on the V day? The mr and I, well we could kind of care less, but at the same time, we like the excuse to spend the day together, traditionally going for a hike with the pup (not this year… we would die) and just spending the day together being sweet (pretty much the same way we spend any days off together) We don’t get fancy with dinner dates or overly large stuffed animals. No boxes of chocolate, bottles of champagne or fancy undies.  We keep it caj, maybe a sweet hand made card covered in glitter (never a store bought.) a stop for a good cup of coffee and an afternoon trip to the plant store to by a new pretty house plant (1. I really hate red roses and 2. I would much rather get a house plant then flowers that will die) But honesty, we just use V day as an excuse to not work and spend the day together, being left alone, eating whatever we want and doing whatever fun stuff we want.

This dish was kinda inspired by being so pretty bright pink, but also it was just what I wanted to eat for dinner. Spaghetti squash doesn’t get as much play as it should. Sure it’s not the most sweet and nutty of the squashes, but it has a really nice subtle flavor that makes it a fantastic base for pretty much anything. And the beet sauce. Again, it’s such a pretty color, but beside that, I can’t get enough of them. I love me some roasted beets (way better then any chocolate or sweet treat)

I could lie to you and say that this is the dish that I will be making for me and the mr on Valentines day, but no,this dish already happened this week and the mr got into it, but would rather eat his favorite meal (pizza) for dinner.  And I will be eating the left over beet sauce with carrot sticks (this beet sauce id for real.. topped with a little yellow mustard… I could eat it for life)  then make a hugmongo batch of popcorn covered in peanut butter. We wiil sit on he couch and watch a lot of Netflix (still working my way through the fresh prince) and maybe a cute Wes Anderson movie. I will be in bed by 9.

But don’t mind us old folks here. Go for it. Do up the Valentines Day. Make a pretty dish of food for your sweetheart, or if alone, make it for yourself, especiallyif you are hanging by your lonesome. Valentinesday is about being happy and this dish will make you happy, whether or not you plan on sharing it.

The stuff. One spaghetti squash big enough for at least 2 people (I love left overs so maybe big enough for 4), 2 largish beets, a a small onion. Also grab a clove of garlic of 4, a lemon, the salt and pepper, and some olive oil. Optional, but a very nice addition is a handful of tasted walnuts.

Quick and crank up the oven (make sure you take out the cast iron you left in there from last night), then stick the squash, beets and onion into the hot oven to roast. I stuck them all on a baking sheet and left them completely whole, but if you want, you could chop the beet and onion into chunks and drizzle with oil or you could wrap the beets in foil and bake them that way but really, why go through all that when you can just not? And don’t bother peeling them.(unless you think you must.. but you really really don’t need too)

And same for the squash. You could cut in half and roast it that way, but again, why when you don’t need to.

So anyway, roast the beets and onion until fork tender. And the squash as well (check by stabbing with a fork) All my stuff roasted up pretty much perfectly at the exact same time, but it really depends on the size of your stuff. So check after 40ish minutes.

And once you pull that roasted stuff from the oven, let it cool just enough where you can handle it. Chop the onion into a couple chunks, the beets into smaller chunks and slice the squash in half length wise and set aside.

Grab a blender and toss in the onion, beets the juice of the lemon (start with half) apinch of salt, a few pinches of pepper, and a clove or 2 of garlic (ok, I love raw garlic and used a lot. If you do not like the taste of raw garlic, just toss it with a little oil and stick into the oven with the beets for about 10 minutes. Or you could omit the garlic entirely)

Once all the stuff is in the blender, turn it on. Drizzle in about a tablespoon or two of olive oil and blend until a nice smooth sauce has formed. Taste, season with more salt and pepper if needed. Add the other half of lemon if you think it needs it. You can also add a bit of water to thin it out more.. if you want

So now the squash should be cool enough to handle. Scoop out the seeds and with a fork, scrape up into spaghetti!

Heaps of squash go into bowls then topped with a generous mound of beet sauce. Topped with some roughly chopped toasted walnuts, a sprinkle of pepper and some bits of green stuff (I just diced up some kale)

Look at that. So pretty, so pink and all ready to go. Dinner for 2 with a good bit of left overs for later!

makes 3-4 servings

  • 1 medium sized spaghetti squash
  • 2 large beets
  • 1 small onion
  • 1 lemon
  • 2-4 cloves garlic
  • handful of toasted walnuts (optional)
  • olive oil
  • salt and pepper to taste

Note. You might want to thin out sauce out a bit without the use of a ton of oil. Go ahead and add a little water. Also, I used raw garlic in mine, but some people might not like it raw. Just toss a few cloves of garlic in a bit of oil and stick into the oven for 10-15 minutes with the other stuff to give it a little roast. OR just omit.

Preheat oven to 425.

Stick the onion, beets and squash onto a baking sheet, drzzle the beet and onion with a tiny bit of oil and stick the sheet into the oven. Roast everything until fork tender which should take around 45-50 minutes. (depending on the size of your produce, some thing might take longer or shorter, so just check after 40ish minutes)

Once everything is roasted, let the beets and onion cool just enough to handle and cut into chunks and toss into a blender. Add in the garlic, the juice of the lemon, a few drizzles of olive oil and a pinch of salt and pepper. Now turn blender on and blend until smooth.

And the squash. Cut the thing in half and remove the seeds.  Then with a fork, scrap the squash from the skin into spaghetti like strands.

Place squash into bowls, sprinkle with salt and pepper, add a drizzle of oil if you want and top with a good hearty heap of beet sauce. Top with more cracked pepper and a few chopped walnuts and maybe add a little something green, you know, to make it pretty.

Serve warm with love and a fork.. your lips might turn pink with beet love.

  I use to suck the juice out of the seeds (they are actually called arils) of the pomegranate and spit out the actual seeds… I thought that the seeds were poisonous. (I blame my sister for this .She is the one that told me that).  And it turns out that it is an actual thing. That other people think that the seeds are not edible, so I guess don’t feel so duped. But I leaned. The seeds, they are very much edible, and very much tasty. I love biting into a pomegranate seed, letting the juice flood my mouth, followed by a nice little crunch from the seed inside, just like little crunchy red jewels. And the method of removing the seeds just makes them that much better. When you have to whack a fruit for it’s edible parts, it got to be good. And to make this clear…. to all the people out there that thick the seeds are poison… the seeds are NOT POISION. In fact, they are quite good for you.

Now that that has been established, we can get to eating these little pearls the right way.  And being all holiday and jolly lala, I was thinking of some classic side dishes that are typical around this time.  Creamed spinach came to mind, but that just seemed a little boring. That’s where the pomegranate comes in.  You add pomegranate to anything and it’s not boring anymore. Also I switched out the creamed part and replaced it with cashew cream, and spinach with kale… cause that’s what I do. And the results are fantastic! Sweet, creamy, crunchy, earthy… All the best flavors. And even though I ate most of it hot, it’s definitely a side that moves from hot to cold and still taste super great. Would even make a nice sandwich or maybe add a little bed of grains and you got yourself a nice little lunch.

But the again, you probably wont have any left overs

The stuff. A bunch of kale, some cashews that have been soaking for a little while,  and a pomegrante  (I only used half of one). We also need us some more fresh water, a lemon, a few cloves of garlic and salt and pepper.

Remove the arils (thats what the juicy seeds ae called) by placing half the pomegranate into a bowl and whacking  it with a big wooden spoon. (martha stewart taught me this)

Strain the soaking cashews and dump them into a blender with the juice of the lemon, the garlic, some fresh water and some salt and pepper.

Turn blender on and blend until a nice smooth consistency

Chop up the kale and place into a really big skillet with a few splashes of water.

Once the kale has wilted, pour the cashew cream all over it. 

Add in the pomegranate  seeds

And get yourself a fork (bowl is optional( and eat. 

Creamed food never tasted this good!

makes 3-4 servings 

  • 1 bunch (abut a pound) Kale
  • 1/2 cup cashews that have been soaking in water for a little while
  • 3/4 cup water
  • 1 lemon
  • 2-3 loves garlic
  • 1/2 cup pomegranate seeds (about 1/2 a pomegranate)
  • salt and pepper to taste 

Take your pomegranate , slice in half, and place half seed sside down into a bowl. Take a big wooden spoon or something like it, and whack the outside of the fruit. The seeds will all fall out.. but check for any stuck seeds

Strain cashews from soaking waterand dump into a blender with the juice of the lemon, the garlic, ¾ cups of water, and a pinch or two of salt. Blend until a smooth a creamy cream. If you think the cream is to thick, add in another splash of water

After washing kale, chop it up into smallish pieces. (remove stems if you want.. I don’t, I like the stems) Stick the kale into a large skillet with a few splashes of water and a sprinkle of salt and place on the oven on medium high heat. Stir around until kale is wilted and the water has evapotated. Pour on the cashew cream, mix around and top with the pomegranate seeds.

and eat..hot or cold. Its all good.

You know how some people are brussels sprouts people and some are not. I am a for sure a spouts person. 

I can even remember my first introduction to the cabbage like veggie.  It was about 15 years ago and honestly, up to that point in my life, I had never even seen, let alone eaten brussels sprouts  (Growing up, my family pretty much ate only peas, beans, and corn). So one night at my friends and the mr’s house (this was before we were dating) I stayed for dinner and there was as big bowl of steamed brussels sprouts on the table. First thing I noticed was that they kinds smelled like fart, but I wan’t exactly sure if the sprouts were the culprit (they were) Second thing I noticed was that everyone at dinner seemed to be really excited, or at least not offended by the sprouts. It was kind of weird because I had a preconceived notion that brussels sprouts were nasty and nobody actually enjoys wearing them. But up close and personal with the things, they didn’t seem so bad.  So not wanting to seem rude, plus I was pretty curious,(and hungry) I grab a few. And then I ate them (minus the mayo that everyone was dipping them in)  And then I knew. I was hooked.  Brussels sprouts for life!

Now here is the thing. Those first sprouts that I had, they came from a bag in the frozen food section a the grocery store. (I know cause my friend had made them) And not that I don’t like me some frozen veggies (I eat frozen veggies on the reg) but there is nothing like a fresh stock of brussles sprouts. Slightly sweet, leafy, tender and crisp… They don’t even need to be cooked, which, if you are not a fan of the slight aroma that comes from cooked sprouts (kinda like fart) is great cause they don’t really smell! Fresh sprouts are were it’s at.

So if you are one of the cool ones (a brussels sprouts person) this salad is for you. And if you think you don’t like them, well my suggestion is.. Try them again cause you probably will. And watch. They will probably turn into the new green superfood, so you are going to have to like them eventually anyway so you might as well get used to them now!

The stuff. Brussel Sprouts, toasted walnuts and an onion. Also have some brown mustard, maple syrup, red wine vinegar, and some salt and pepper.

Take those lovely sprouts and slice them all as thin as you can.. and do the same to the onion. Then stick it all into a bowl, sprinkle with salt and give it a toss. Set aside.

Grab a big skillet and dump in the maple, mustard and vinegar. Stick it on the stove on medium high heat, constantly mixing.

Keep mixing, and after a few minutes, the stuff has started to thicken and brown a bit… and smells so good!

Now grab the bowl of chopped sprouts and dump the contents into the skillet. Add in a splash of water just to loosen up the sauce. Give it all a good mix, making sure that everything is evenly coated. Now let skillet sit on the heat for just another minutes or two.

After a few minutes hanging in the hot skillet, remove from heat and dump the sprouts into a big bowl.

Top with the toasted walnuts, and garb yourself a fork. OR stick it in the fridge and save it for later (taste Fantasitc freshly made.. even better after a few hours.. so eat whenever. Your call)

Makes enough for 2 people as a side, or a nice lovely salad for 1

  •  1 1/2 -2 lbs  fresh brussels sprouts(removed from the stalk)
  • 1 small onion (red or white works)
  • handful of toasted walnuts (if not toasted.. sticking a dry skillet, high heat for a few minutes to toast)
  • 1/4 cup brown mustard
  • 2 tablespoons maple syrup
  • 2-3 tablespoon red white vinegar
  • salt and pepper
  • splash of water

Rinse sprouts and remove any of the gross leaves then slice them as thinly as you can. Grab the onion and slice that as thinly as you can too. Toss into a bowl, sprinkle with a little salt, and toss everything together. 

In a large skillet, mix together the maple, mustard, and vinegar. Place on medium high heat and stir constantly until the mixture starts to thicken and brown a bit. Grab bowl of sprouts and toss them into the skillet, mixing everything together until the sprouts are all coated. Give the skillet a little splash of water. and let cook for another minutes or two, just so the sprouts are not completely raw (you can cook them longer if you like) Remove from heat and dump back into bowl. Toss on the walnuts and give it all a good stir. Serve immediately , or let it sit and serve later (tastes even better after a few hours!)

Yeah SPRING!!!!! Not officially, but we don’t need official.The birds are a chirping, world is bright and warm and green things are popping up all over. And the mud. THE MUD! So much mud, all over my house, tracked in by the mr and the dog. (not ever me) It’s a never ending battle of vacuuming and mopping (but II secretly kinda love all that mud.. yea, I am a werido)

So how was your week? Mine was good, mostly full of work stuff. Lots of papers and tearing up floors. The floors are going ok, except yesterday we got to the kitchen and found that the previous owner had installed a sub floor of wood slats that contain 8 million nails per inch. I have never seen so many freaking nails in a single piece of wood in my life and it’s making for a very slow and frustrating floor tearing up process. I thought for sure we would be done by now, but this super find has delayed us in a big way. So we were planning on putting in another full day of floor ripping up today but my waking up, my body is kinda telling me to stop of else body will break in half and my arms will fall of. Yeah, I am a bit beat up. You should see all the cuts and bruises on my legs and arms.. I look like I fell down a side of a cliff.. (that’s what I tell people if they ask) Hum, I wonder if they make a construction worker barbie?

Should we continue on with the hammers and crow bars and the floor of a million nails or take the day completely off, apply some ice, drink lots of coffee and nap? I am voting for the coffee and the naps (so happy for the extra hour of light, not so happy about having an hour taken away from me on a Sunday… take an hour out of Monday!) And I think that the mr will agree. Rest day today, get back to it tomorrow. Maybe if we take the day off I can enjoy some of this fantastical sunshine and ride my bike to the library.. Ah, that sounds so good!

We have been doing work on the house for a while now, ripping things out, patching things up.. must mostly ripping things out. Well yesterday we made our first purchase for something that is going into the house… A vintage green pedestal sink. YES!!! I scoured the internet,looked in salvage yards, all the while not really thinking I would find anything (anything I could afforded) but lo and behold, two days ago I found one on craigslist. Crazy, and only a little drive away. So the mr and I jumped on that and yesterday we drove out to the country, stopped at the pig farm, feed the cutest 5 week old piglets stale donuts and retrieved out new green sink from the frozen mud. I am so excited. We have officiallybought our first major piece for the house.  And it’s so pretty and green and almost tacky, (could get tacky) but is going to be perfect.  Oh how I love me the craigslist.

Other news.  Have you hear about the pre-peeled oranges from Whole Foods, the ones that made everyone all crazy and waere all over the news and internet? So stupid right. (Like yeah it’s kinda stupid to sell pre-peeled oranges and a waste of plastic, but is it any more dumb the to sell single serve plastic coffee pods, shrink wrapped potatoes, or plastic wrapped junk food. Just saying.) The mr and I were watching the morning news when the story came on. We started to have very normal discussion about who and why and all that when I guess I made a comment about how I have to peel his oranges. (I don’t peel his oranges, but I might have helped start a orange a few tines) And then all of a sudden this light hearted discussion about pre-peeled oranges went down hill. The pre peeled oranges made us turn on each other (our argument might not been entirely about the oranges…) Long story short. probably not going to be buying oranges for a while….Or maybe I’ll take it one step further and just stock the fridge with pre-peeled, sectioned off segments of oranges.

HAHAHAHA. I am brilliant!

So oranges, new green sink, and the temperature outside is going up up UP. Life is life and going pretty good.  I am excited and ready and going to pull my bike out of the basement today. As soon as all the ice is melted out of the road… look out world! And clean. All I want to do it clean. Have you gotten the spring clean itch yet? My itch is like a rash. I want to get ride of EVERYTHING and power wash the inside of the house. I also want to invent something that keeps the dog nasty off of my life kinda like a bath). Yeah, maybe we will wash Washer today. That could be fun (not at all fun)

Other then that, not sure. Hoping for a long leisurely walk (pre-dog bath), a spring time salad situation involving lots of fresh baby arugula and pears and at least one small nap on the couch with window open. Not to much to ask, but we shall see.

THE LOVELY CRAZY

 Happy Spring people! Aren’t you so excited? I know I am. The daffodils are starting to pop up, the birds are out like crazy with their churp churping and there is a hint of buds grazing all the tree. We are in for warmer weather, fresh green spring veggies, and lots of mud… I mean, what’s not to be happy about. (there are things but we don’t need to talk about them right now)

Yesterday the mr and I finished ripping up all the floor stuff (I managed not to hurt myself until the very last piece and stuck a nail into my hand) and then traveled the city looking at all the windows in all the stores. Window shopping is such a pain in the ass. If you never have to do it, don’t. But we have to and we need to make some decisions like now because this week a bunch of men are making their way over to the new house with their saws and hammers and a big dumpster and are going to cut the back roof off. I am so excited! The addition is going up and the best part is we decided it was just to much for the two of us to do so we hired out the hardest part. We don’t have to tear it down or frame it up anymore and oh does this make me happy. I was not to into the idea of me and the mr ripping of the roof ourselves. The mr, sure he knows what he is doing, but me, I would have probably taken the whole house down.

Anyway, going to be doing house stuff until we can’t which I am ok with because I am really starting to feel crazy and am ready to move.  I know it’s still a few months away but I have this weird feeling that I can’t really stop and chill until we are in the new house and I am relaxing there.. so we better get on it. 

And I can’t forget the cake. I need to make us a bunny with lots and lots of jelly beans.

Funny story. Our basement floods a little every year in the spring. I think that a lot of people around here have slight problem with basement water, the houses being so old and all. So when earlier this week we had a massive thaw and a bunch of rain, the mr preemptively set up the sub pump to keep the water away. All day he was checking the pump and all day it poured butthe basement stayed dry. He turned it off that night after it had stopped raining. We woke up to the most beautiful bright blue sky, the temperature so warm that I didn’t need to wear a jacket and to 3 inches of water in the basement. STUPID!!!!! But that happened and yeah. The mr spent a good few hours moving all of our stuff, (we store a lot of stuff in the basement) shop vac-ing and pumping up the water .He did such a good job that it was almost like it never happened. The only really wet thing was a big laundry basket of stuff. I wanted to wash itasap so it wouldn’t mold so when I got home,  into the washer it went. (the washer is in the basement too)  Go to change the load to the dryer and guess what.. the mr took the washer machine house out of the main drain to use it for the shop vac, and no, we forgot to stick the hose back in. We re-flooded the mother F-ing basement!!!!!AAAAAAAAHHHHHHHHHH!!!!!!!

But it’s kinda funny right?

Anyway the week has been heavy on the crazy. My Dad has been here so we have been spending a lot of time with the family doing family things all week. Over at the house we have pretty much gutted the kitchen (anyone want free kitchen cabinets?) and the mr is almost done muding the first floor. Once that happens we can move in (Just kidding… not even close) but we are well on our way. And the next project we tackle is going to be fun fun (rip the roof off!)

And the father of mine is leaving today, (which makes me a little sad)  I have no kiddos in my care, the water from the basement is pretty much gone and I don’t want to do a damn thing that involves work. It’s a down day for sure. No people, no fuss. I have a new book on hold at the library, although I am kinda torn.  Should I start a new book or binge watch Fuller House? (can I take more family drama?)  Have you watched it yet? Do me a favor if you have, let me know if it’s going to ruin the Tanner family for me.

Not to much is going on here, just trying to enjoy the last bits of summer, while secretly saying to myself that I am ok for the hot weather to be gone, for summer to pitter out and let the cooler weather roll in.  Bring on the sweaters, apples, and root veggies (and maybe a little more couch cuddling and a new tv show to sink my teeth into while knitting).  And I have already noticed a few trees giving away some colorful leave. Foliage season…  the best time of year (minus all the annoying leaf peepers) But before we get to ahead of ourselves, we have the other time of the year coming up.. Back to school!! I myself am not really effected by this,other then all the littles in my life are going back, which means less babysitting (happy!/Sad)  And let’s not mention all the back to school supplies I am drooling over. Trapper keepers, watercolors and cool new backpacks.  The kiddos are all getting ready with their new sneakers, crisp, empty notebooks,  and a fancy new sweater. Me, I am just being jealous, hoping maybe one of them will give me one of their extra cool new pencils with the removable eraser. Maybe once everything ends up on clearance,  I’ll buy myself a new composition notebook. You know,  the ones where you can color all the white parts in with a bright pink neon marker. A customized badass notebook  Those are my favorite.

So besides all that, here are some eventful things from the my life this week in list form.

  • got some husk cherries to make something special. and ate them all. Need to get more (more to eat, and more to make something with to share..maybe)
  • Starting knitting the mr his annual new winter hat (going with a grey watch cap)
  • Painted a ceiling gold
  • scratched my face on a raspberry bush
  • went to my family reunion, came home and found 2 white hairs on the top of my head (no joke)
  • Had two other awesome websites mention my recipes this week!!! (Food52 and feedfeed)
  • made a few jars of pickles 
  • Discovered Reading Rainbow is now on Netflix.(my childhood right there)

Yeah, that’s about sums it up.

This past week my dad has been in town to spend some time with the family. Besides going about my normal life,  every day I have been with at least one, if not a bunch of my siblings and or father (Aaaaaaahhhhh!!!). Spending as much time as I have with them this week has made me realize how much I love them, and how crazy they are.  I am happy to have spent all this time with everybody, but am very much excited to have a day to myself, because again, they are all f ing crazy. 

But today is not a reclusive day.

Today is our annual  Stem family reunion. We all get together, immediate and extended, at my uncles cabin, up in the sticks of Vermont and gossip, hike around, eat,  and try not to drive our 94 year old grams completely cray.  It’s one of the highlights of my summer. 

So now, before heading out, I am trying to figure out what exactly I have for ingredients to throw together some type of  peach situation… so I gots to get to that. And of course the coffee. I need the coffee, and lots of it.

Wowzers…Is it for real Memorial day weekend? Where has all the time gone? Let’s talk about a week gone by fast. My brain is on complete overdrive and I am having a hard time keeping it from exploding…SO MUCH TO DO! (Not bad stuff, just a lot of stuff) But lo, that’s life right? There is always a lots of “stuff” to do, but today I am going to try and let that stuff chill and maybe give myself a few hours of coffee, (so much coffee) reading a book in the sunshine, gardening, and just some overall chillin.

We didn’t find the geo, but we found this gigantic mushroom. Just as cool, maybe even cooler.

I love brick and there is one street in all of burlington (that I know of) that has brick sidewalks. I like to walk down it a lot. 

Nurse lady making food… I compare this to a big foot sighting. I have heard stories that she cooks,but have never actually witnessed it myself. (Just kidding….kinda)

Yesterday I spent the entire day (ok maybe not the entire day), but a the better part of the afternoon defrosting my freezer. Sure, I do the occasional chip chop here and there, just enough from around the freezer door so it will close, but ever few months I notice that everything in the fridge is not staying cold and that the freezer is not freezing stuff. Thats when I know its for real time to defrost. So a few days ago when I noticed my bananas were turing to liquid in the freezer, I knew it what I had to do….Completely empty the fridge  and melt/hack away the 2-4 inches of ice build up that accumulated. It is such a freaking pain in the ass.So on this defrosting day, I took all the stuff from the freezer, stuck it in a cooler, and the rest of the stuff, which is basically all veggies, I just tossed on the table. As I am hacking away with a metal spatual, a wooden spoon, and a constant rotation of pots of boiling water, I was thinking about dinner. I figured I might as well just eat up as much of the veggies as I could, you know, so I didn’t have to put them back in the fridge. And also, I was getting pretty annoyed because this particular defrosting session was taking way longer the anticipated, which made making dinner seem like another pain in the ass.  I figured I might as well just eat everything that is already out on the table, which pretty much narrowed down the “whats for dinner” conversations because it was already all over the place. And so dinner was a humongo salad for me, and for the mister, I made him a monster of a veggie sandwich. (my salad was exactly the same stuff as the sandwich, minus the bagel) Easy, fast, super duper yummy, pretty and piled so high with tons of veggies that the fridge is pretty much empty now. 

Look at the is beast. I don’t call it a monster sandwich for nothing.

The stuff included in this monster veggie sandwich..

Romaine lettuce, tomato, avocado for there is not real sandwich without them. Thinly sliced radishes, cucumber,a and onion for nice crispy crunch. Shredded beets, carrots, and purple cabbage to give  more crunch and a bit of sweetness. Then of course there needs to be something pickled, so I used banana peppers cause they are the SHIT!! And lastly some hummus for a nice creamy finish (plus a bit of protein) and yellow mustard because mustard on everything is just right.  Heres to a mountain if goodness that is no longer in the fridge! Served with a another mountain of roasted parsnips and carrots (more stuff from the fridge) and a tall glass of iced tea.

Lucky that today is farm share pick up cause the fridge is pretty much on empty.

A Monster Veggie Sandwich

Note. This is just a guide.. Feel free to use whatever veggies you fancy. 

  • Either a bagel, 2 slices of bread, or a big chunk of baguette (use a gluten free bread if you want or need too)
  • Hummus- Homemade or store bought
  • Mustard
  • Something pickled like pickles, banana peppers , jalapeños or all three 
  • Lettuce, spinach or some kind of leafy green
  • Tomato
  • Avocado
  • Onion
  • Radishes
  • Cucumber
  • Shredded Carrots
  • Shredded Beets
  • Shredded Cabbage

To assemble. Ready your bread.. Toast if you want, and stick it on a plate

On either side, smear the hummus and the mustard.  

Pick a side, start to stack by evenly disrupting veggies on top of veggies. Place the second piece of bread on top and  giving a little smooth to keep it together.

And go at it. Cut in half or don’t. Have a napkin or a long sleeve ready to wipe your face.

      And that’s how I know that this is a winner. As an awesome aunt, when I have any of my nieces or nephews,  I feel the need to make something special for dinner, something that the kiddos might not get very often, but also keep it on he healthy side. I have 2 littles for the night which gives me the perfect opportunity for a trash food recipe. You know trash food, things like boxed mac and cheese, beefaroni in a can, or, in this case, sloppy joes.

Sloppy yes, trashy, not so much. These are made with beans and bulgur. No meat.

And I figured it is nice enough out that I can make the kiddos some messy food and then just bring them out back and hose them off… I mean, why not right?

The stuff… We start with onion and green pepper, chopped into pieces. Black beans, bulgur, can crushed tomatoes. Chili powder, garlic powder, a bit o apple cider vinegar (which I forgot to picture) ,and some salt and pepper. Oh and cheese if you want… Plus a bun of some sort is necessary.      Toss the chopped onion and peppers into a deep skillet or pot with a drizzle of oil. Cook on medium heat until tender and toss in the spices. Give a stir. Add in the beans, bulgur, and tomato, a splash of vinegar. Stir it all up, cover, and let simmer for about 15 minutes, or until the bulgur has absorbed the liquid and is nice and tender.

If you are a bun toaster… toast while waiting. If not, just get the buns ready And Then dump a good heaping pile right onto a bun. Add some cheese, or not..and eat with wild abandonment,  making sure to get as much on your face as you get in you mouth.

Black Bean and Bulgur Sloppy Joes 

  • 2 cups or 1 can cooked black beans
  • 1 16 oz can crushed tomatoes
  • 1/2 cup bulgur
  • 1/2 cup water
  • 1 small onion
  • 1 green pepper
  • 1 teaspoon garlic powder 
  • 1 teaspoon chili powder
  • salt and pepper
  • a splash of apple cider vinegar
  • olive oil
  • 4-6 burger or bulky buns
  • cheese (optional)

Dice the onion and the pepper and toss with a drizzle of olive oil into a large skillet. Sauté on medium heat until veggies become tender. Add in the spices, stir in and let cook for a minutes, then add in the beans, the tomato,water and the bugler. Cover skillet and let simmer until bugler becomes soft.

When the slop is ready, either toasted or not, scoop a generous portions onto buns. If so inclined, add some cheese. 

Eat with hands… Sloppy is good.

     Spicy, crispy cauliflower… um yes please.  I really like cauliflower. The mister loves it, or at least likes it better than any other vegetable. So when he asked for spicy cauliflower, well yea I am going to make it because I am so nice and really, could I say no to a veggie request? (I might have said no if it involved deep frying) Also, I found fresh cauliflower on sale! ($2.25) I don’t usually cook fresh cauliflower, but  I figured at that price, it wouldn’t be bad to cook a head. (If I am cooking cauliflower, which I do a lot, I just use frozen….casue it be waaaay cheaper) 

Fresh, cheap and requested veggies….those are must makes. And the mister was happy with I handed him the plate of oh so lovely looking crispy crunchy loveliness. (I kind of like to make him happy…sometimes)

The stuff. Cauliflower, chopped and broken into pieces. Corn meal mixed with salt, pepper, onion and garlic powder, and because I made this for the mister, parmesan cheese. And in the green bowl, srirsachi and a little oil. The cauliflower gets a coat of the hot sauce and then tossed around in the corn meal mixture. Handling as little as possible, place coated pieces on a lightly oiled baking sheet and stick those suckers in the oven for about a half hour, taking them out and flipping half way.And take them out of the oven when pieces tuned golden brown, stik them on a plate, and serve immediately.

A bit of spice, a bit of crispy , a lot a yum.  Serve with some crunchy veggies, maybe a squeeze of lemon and definitely some type of avocado situation.

A beer would be lovely too!

Spicy Crispy baked Cauliflower

  • 1 head cauliflower, chopped or broken into florets
  • 1/2 cup corn meal
  • 3-4 tablespoon sriracha or your favorite hot sauce
  • 1 tablespoon olive or coconut oil
  • salt and pepper
  • Any seasonings you might like (garlic or onion powder, parmesan cheese, national yeast…. whatever floats your boat)

Preheat oven to 400 degrees 

In a bowl, mix together sriracha and oil. In a separate  bowl, mix salt, pepper, any seasonings you might like, and corn meal.  Take cauliflower and toss in sauce to coat. Remove from sauce and toss around in cornmeal mixture till fully coated, but try not to hand too much so the coating doesn’t come off. Place pieces on a lightly oiled baking sheet and stick into oven. Bake for about 15 minutes, remove and flip pieces. Back into the oven for another 15-20 minutes (depending on you crispy preference) Remove when golden brown (or darker if you like) and serve immediately.

Cucumber, celery, and carrots are great accompaniments.. also a little mashed avocado or guacamole is much appreciated.

THE LOVELY CRAZY

I was cleaning out the fridge and found that I had a good few really ripe avocados that were in need of eating ASAP. (I bought like 8 at once… super sale!) My first thought was I wish I could freeze these and save them for later. Then I thought well why the heck don’t I freeze them. So that’s what I did. I pureed them up, added a little lemon juice and stuck a jar of tangy green creamy goodness into the freezer and all throughout the week found myself standing in front of the fridge with a spoon scraping at the jar of avocado. It was so good. I even added a little fruit to it toward the end. Avocado and fruit = oh hell yes.

And now that is is officially spring we should be eating popsicles (right?!). I figured you guys are cool enough that I would share my new found love of frozen avocados and you would be down with it.

I know, some might think that plain old frozen avocado doesn’t sound amazing, but when you add a little sweetness and swirl it around with super sweet and creamy mango. Trust me, it’s freaking amazing. The flavors go perfectly together, and the texture, it’s almost like ice cream… SO GOOD! Anyway, I know that it might not be the perfect spring weather as of today, but the beauty of these is that you make them, freeze them and leave them until the perfect moment. Say a good long day of raking up all the cat poop that the neighbors cat has left in all your spring flower beds, or picking up all the recycling that has blow into the bushes all winter long. Maybe a day of cleaning out the closet or dusting the ceilings. Make these popsicles now and treat yourself to one after doing some kind of crappy spring chores, its what you need to do.. Or better yet, bribe a little with a popsicle to do your spring cleaning….. Yeah, I might just do that.

Or just make them and eat them… no spring chores required.

The stuff. A nice ripe mango and a nice ripe avocado. A bit of lemon juice (from half a lemon),  a little maple syrup, and a some water.

Scoop the avocado into a jar and cut up the mango ans stick into a jar…..

Splash a little water into each jar and blend them up. (I used my hand blender. but use the blending device of your choice) Add the maple syrup to the avocado.. as much as you need, and if your mango is not super sweet, you can add a little to that too.

Scoop the avocado puree into the mango and gently swirl it around

Now pour/scoop the mixture into your popsicle molds. And because mine was thick enough, I was able to stick the wood sticks without them sinking.

Noe get them quick into the freezer

A good few hours (I didn’t even check until the next day but I bet 4-5 hours in a good freezer will do) the popsicles are nowposicles!!!!!

Pop them out of the mold (a few minutes on the counter and or a quick rinse under warm water) and do what needs to be done.

So creamy sweet and refreshing… This is a happy spring popsicle for sure.

Makes four 4oz popsicles

  • 1 ripe avocado
  • 1 ripe mango
  • 1/2 a lemon or lime
  • 1-2 tablespoons maple syrup (or any sweetener of you liking)
  • about 1/2 cup of water

Note.sIF your mango is not super sweet you might want to add a little maple syrup to thatto that as well. And depending on the actual size of your mango and avocado, you might find yourself with a little extra fruit puree…. so maybe an extra popsicle can be made or you can just eat it now.

Scoop avocado into a jar and cut and dice mango and place in a separate jar. Add maple to the avocado (and the mango if you want) and about 1/4 cup of water to each.  With a hand blender, blend each until smooth ( or use a regular blender) Once both are blended, dump one into the other and gently swirl around. Pour mixture into popsicle molds, add the sticks and stick into the freeze. Keep freezing until frozen which should take at least 4-5 hours.

And once frozen, pop out of molds (run mold under warm water or just leave on counter for a few minutes) and eat them like it hot!

Holy shit is it hot out. My brain is all fizzy, my hair is all frizzy, and my over all being is just blah. I am not a fan of super hot weather (as some of you may know) and am getting more pissy as the days go  by and I continue to be a sweaty mess. I don’t want to feel like a big wet slob, I want to feel fresh and clean and wear clothes that are not drenched in sweat. I know, bitch, bitch, bitch, but seriously. Even the world around me is wilting, and in the nice, colorful fall foliage kind of way. It’s all crispy and brown.  The garden is barely holding on, the flowers are shriveling in the ground, and a few plants are just plan dead. It’s just too hot.

I think that only plus side of this past week of hot crap weather are these popsicles that I made. They were actually suppose to be a treat for the littles, but guess what, me and the mr ate them and didn’t share, and no, I feel zero bad about it. They were so good, so refreshing, so cold(if only for a minute) and just so needed.  A few minute reprieve from being miserably hot. And bonus, a great use of all the watermelon and tomatoes that I have taking over the countertops (I have so much watermelon and tomatoes) 

And really, these probably (better freaking be) the last batch of popsicles for the summer so I think I am going to make another batch today, eat them, savor the flavors of summer, and move on from there.

. Maybe I’ll even share them this time. 

The stuff. Some watermelon*, a tomato, a handful of basil, and a lime. 

*My watermelon had seeds, but you can use seedless. I also removed the green skin, but kept on as much rind as I could, although this particulate melon had very little white rind.

Dump the melon, tomato (cut in a few pieces, the juice of the lime and the basil into a blender. If your melon has seed, don’t worry about removing them.

The stuff all blended up.

. This step is more necessary  if you melon is seeded, straining the mixture pretty much caught most of the seed chunks. You can skip this if your melon is seedless.

Now pour the juice into your molds and stick into freezer to freeze. 

After about 2 ish hours, remove and stick the sticks into the semi harder pops.

And a few more hours later……Frozen goodness.

And pop one of those suckers out of the mold and savor every frozen delicious bite.

Make six 3.5 oz popsicles

  • 1 ish cup watermelon (green skin removed.. rind is good)
  • 1 large ripe tomato (about a cups worth)
  • a few sprigs of basil
  • Juice of 1 lime

Place all ingredients into blender and blend until smooth. Strain mixture through a fine strainer into a bowl or jar and pour into popsicle molds. 

Place in freezer for a few hours. About 2-3 hours in the freezer, take them out and stick in sticks (or fallow you popsicle molds instructions) Place back into freezer

Once completely frozen, remove from molds and eat with your mouth.

This little guy asked me to make him some popsicles, and of course I said yes because, well look at him. 

So we made a date. A popsicle and playground date to be exact.

For these particular pops, I decided to use watermelon, mainly because I had just broken into one and once I open a melon, I have a race with myself as to how fast I can consume the in entire thing. ( It’s a sick form of watermelon gluttony) But also because the little was really really excited to hear that I could in fact make watermelon popsicles. And the other stuff I added because I had it and it all tastes really good together. 

 I made the popsicles the day before  so they would be ready for our date.  He came over, we ate lunch,(peanut butter sandwich and carrot sticks) wondered around the neighborhood with the pup, and made a quick stop at the playground. (we only managed a couple runs on the slide  before it was too hot and our sweat had us sticking to the slide and it was more of a painful scoot then a glide) We then made our way home and rewarded ourselves for a walk well done with these amazing, super refreshing, and healthy frozen treats that I made just for us. While we were eating the popsicles, our conversation turned to food. We talked about all the different varieties of popsicle that we could make, and how we could eat them for breakfast, lunch or dinner because they are made of only good things and are really healthy (he is really trying to eat healthy)  It was the perfect ending to a fantastic afternoon with a five year old, or any human for that matter…

The Stuff.  Fresh seedless watermelon (make sure to have lots on hand cause you are going to be eating it as you make these), a fresh lime, a handful of blueberries and a sprig of fresh mint. And don’t forget  a mold of some kind that form the liquid into a popsicle (if you don’t have a mold, little paper cups work too)

Remove watermelon from rind and cut into small chunks. Juice the lime and add that, the watermelon chunks, the mint and the blueberries to a blender or vessel if using a hand blender) and blend everything until smooth. 

Look at how pretty that is.  And so tasty…. I am not going to lie and say that I didn’t make a little extra to drink, cause I did.

Now pour the puree into your molds to the fill line (follow the instructions that your molds give you) and place into the freezer.

And yes Shannon, these are in fact, your popsicle molds. Don’t worry, I’ll bring them back soon. (I am thinking some type of booze infused situation)

Once the freezer has done its job freezing… pop those suckers out.. (I let the mold sit on the counter for a few minutes so the popsicle pops out clean)

And heres to the best popsicle date ever!

  • A big chunk of seedless Watermelon (aboutt 11/2 cups)
  • 1/2 ish cup of blueberries (fresh or frozen)
  • Juice of 1 lime
  • a few fresh mint leaves

note. The popsicle mold that I used only needed 2 cups of popsicle juice. If you have a larger mold, just use more of everything to get the amount you need

Remove rind from watermelon and add to a blender with the lime juice, mint and blueberries. Blend until eveytthing is pureed and mixed all together. Pour liquid into popsicle molds and stick in freezer for at least 4 hours.

When ready to eat…, pop those suckers out of there molds and EAT! 

I can’t stop eating these. They are like little balls of crack and I am an addict.

Frozen peanut butter grapes… I mean, I just can’t stop.

So you say you have never frozen your grapes? Well you should. It’s the only way I like to eat them anymore.  I was never a huge grape fan, but one day long ago, I discovered the wonder that is the frozen grape and it is amazing, Now whenever grapes are on sale at the grocery store, I buy way to many and end up filling our tiny little freezer with jars and bowls of grapes.  Then whenever the mister goes to grab the bag of  frozen peas for his sore back or knees, there is almost always a frozen grape avalanche. Why I don’t put a lid on those containers is even a mystery to me.  Oh, now I remember.. I want easy access.Oopen the freezer, grab a few grapes, and go on my way… not having a lid to take off makes the process a little easier.

Then one day, the frozen grape game turned into something else, something a little more decadent and even more addicting. Where it came from, I do not know. Maybe it’s some subconscious throwback to a childhood full of peanut butter and grape jelly sandwiches, or maybe it’s just that fact that I think peanut butter can pretty much go with anything. But no matter why, I started dipping those frozen grapes into peanut butter and never looked back. And now when I have grapes, it’s all I want to eat.

I am warning you now, once you start making these, watch out, because before you know it, you will develop a frozen grape addiction too. And littles.. they are as easily  addicted to these as well. I have seen kids that hate grapes go totally bonkers for these.  Just so you know.

The stuff  you will need. Washed and drained fresh grapes (green or red. I usually use red but the green were half the price and the red ones didn’t taste very grapie*) Creamy peanut butter, skewers, and a little bit of cinnamon or cocoa powder (optional)

*Note. When you are the store, try  before you buy. You know what I mean, eat a few while shopping aground. I say this because not all grape are created equal. Some taste way better than others. I have bought grapes before that didn’t taste like anything or that have really tough skins, and those just piss me off, so eating a few will guarantee that your money is being well spent and that the grapes won’t disappoint you.

Ok, so now let’s make these bad boys.

Simple simple. Two grapes per skewer (or toothpick) Lay on a wax paper covered dish or pan and stick them in the freezer until frozen. When the grapes are frozen, melt peanut butter. Take a big glob and stick in a tall skinny cup or bowl and stick in the microwave or heat in a sauce pan and then transfer to a tall skinny vessel.  Take frozen skewed grapes and, one skewer at a time, dip in the peanut butter. Cover with as much or as little of the peanut butter as you want and place on wax paper. If you are feeling feisty, add a sprinkle or cinnamon or even a dash of cocoa powder. Or, this may seem a little crazy, but garlic powder is so F*ing good.(it’s worth at least giving it a try) When all grapes are dipped, place back into freezer for another 10 minutes or so to let the peanut butter set up a bit.

Whenever your ready… Eat. And be so happy. And always keep a back stock of frozen grapes in the freezer. They are the best.

Peanut Butter Freezer Grapes

the quantity is up to you, but I recommend making a shit ton!

  • Creamy Peanut butter (I use organic creamy from Trader Joes, or natural skippy)
  • Green or Red Grapes
  • Cinnamon and or cocoa powder (Optional)
  • Toothpicks or skewers

Wash grapes and skewer 2 grapes onto a stick. Place on a flat surface and stick into the freezer until frozen, which usually takes about an hour.

Once grapes are frozen, stick a big glob of peanut butter into a tall skinny vessel (Like a juice cup or a 4 oz ball jar) and warm to a liquid constancy in the microwave (about 30-45 seconds) or if you don’t have a microwave, stick in a sauce pan, warm on stove, and pour into a glass (what I do)

Remove frozen grapes from freezer and dip into melted peanut butter. Place on a wax paper line tray or pan and sprinkle with cinnamon and or cocoa powder, or not, or a few (whatever you want) and stick back into freezer for another 10 minutes.

Eat as many as you want… Make so many because you will become addicted!
