THE LOVELY CRAZY

No matter what is going on in my day, seeing a blue sky like this puts a smile on my face….To bad that smile turned to ice and my face froze in place. Because for some reason, winter around here now means below zero all the time. I mean, I love winter, but I am not going to lie… I wouldn’t mind if the wind would stop blowing and we had a couple of days of above zero weather.. and maybe a good foot of snow. I guess I’ll just have to be patient, cause its bound to happen. I mean, we live in Vermont, and if nothing else, we get weather. 

Anyways.. another week full of stuff that fills. I am a little taken aback that its already February… when was it January? Time just keeps going by fast and faster, (especially when I get cabin fever) and I think, “What have I done in the past year?” Well, I have done a lot. I was just looking through pictures from a year ago and found some of our tiny home in working progress. Not to many people can remodel a five unit house and a meat locker to live in, within a year.. by ourselves. (ourselves being Nick and I)..So yeah, that made me feel pretty freaking awesome and accomplished. (I needed to remember that because I haven’t been feeling it) But now I am feeling inspired and am looking forward to some new projects and fun things to come! (hopefully getting my pottery studio up and running, maybe another house remodel and lots of traveling!!…. take that winter blues!) 

Anyway.. here are a few little bits from my week that made me happy.

The mister called these snow mounds goosebumps… I think that is exactly what they are 

The only warm day this week. (20..woo whoo!) Took the little out for a sled ride. She spent the entire time dragging her hands in the fresh snow. 

And oh how I cannot  handle how freaking cute she is!! Plus, a shout out to my brother in law….MADLOVE!

89 cents a pound for fresh organic cranberries. Score!! Made these Oatmeal fresh cranberry coconut chocolate chip cookies with them. Big hit.

This picture was taken exactly a year ago…..The mister and I were finally putting in the bathroom of our tiny little home…. And look at that awesome sink! (another amazing salvage yard find) If you ever need or want to remodel a bathroom, I suggest using a old cast iron utility sink. So practical, so functional, so pretty.….it makes me happy everyday!

This past weekend was the annual Stem family reunion and I had signed up to bring a dessert to the circus, (circus being an event with lots of my family)  I went out of my way to get the nieces, sweetest, most delicoius peaches and  was planning on making them into some type of epic peachy peach cake, but being that the weekend turned into a shit storm, I didn’t get a chance to make that epic peach cake. So come Sunday morning, a few hours before we were suppose to leave for the reunion, I was deesertless. 

So I did what anyone that has a bunch of the fruit, little time, and doesn’t want to make a big mess should do. I made a crisp.  

And it was good. Gooey sweet and  cardamon spiced peaches under a slightly sweet, oatie topping. A perfect dessert for a late summer afternoon. Served warm or at room tepature, add a little whipped cream or ice cream and a cup of coffee. Dessert time is perfect. And any left over makes for a fantastic breakfast treat….or just make it for breakfast, it’s totally a breakfast food too. 

 I am almost glad that I didn’t get a chance to make that cake.(although I really wanted to make a cake, just for shits and giggles) I’ll just make one later. But until then.

To the crisp!

The Stuff.  Peaches of course and some old fashion rolled oats and a pinch of salt mixed with gluten free flour*. Some earth balance*, honey*, cardamon and cinnamon and a tiny bit or arrowroot powder 

Notes.. You can totally use regular all purpose flour in place of gluten free. Also can sub regular butter for the earth balance and use maple syrup instead of honey.. 

In a bowl, mix/mush  together the oats, flour, honey, half the cardamon and cinnamon, and earth balance. The mixture is going to be a little gloppy and wet, but that’s how you want it to be.

Toss the other half of the spices into the peaches with a bit of arrowroot powder or corn starch and mix all around. 

If you peaches are not super yummy sweet, you can always drizzle in a little extra honey or maple here too.

Now place the peaches in a well greased oven safe skillet.

Distribute the topping all over. 

And into the oven it goes..

After about 45 minutes, check for doneness. When top is all golden brown and nice… you are there!

For the filling

  • 4-5 Large ripe, but firm peaches
  • 1 tablespoon corn or arrowroot starch
  • 1  teaspoon cardamon
  • 1/2 teaspoon cinnamon
  • tablespoon honey or maple (optional if peaches are not really sweet)

For the topping

  • 1/3 earth balance or butter plus 1 tablespoon
  • 1 1/2  cup old fashion rolled oats
  • 1/2 cup gluten free flour or all purpose flour
  • 1 teaspoon cardomon
  • 1/2 teaspoon cinnamon
  • 1/2  cup honey or maple
  • dash of salt

Preheat oven to 350

Slice peaches in half, remove pits, and cut into pieces and toss into a bowl with the cinnamon, cardamon and starch, In a large oven save skillet, smear or melt 1 tablespoon earth balance and cover bottom and sides of skillet. Add in the peach mixture. In a large mixing bowl, (using your hands if you don’t mind), mix together oats, flour, salt, spices, earth balance and honey. until a combined. Evenly disptuipt to the top of the peaches. Now place skillet into oven to bake. When the top golden brown and all crispy, remove from oven. Let cool for a few minutes and serve.

Some type of creamy situation  like ice cream or whipped coconut cream would be extra nice here…but not necessary .

Yesterday I spent the entire day (ok maybe not the entire day), but a the better part of the afternoon defrosting my freezer. Sure, I do the occasional chip chop here and there, just enough from around the freezer door so it will close, but ever few months I notice that everything in the fridge is not staying cold and that the freezer is not freezing stuff. Thats when I know its for real time to defrost. So a few days ago when I noticed my bananas were turing to liquid in the freezer, I knew it what I had to do….Completely empty the fridge  and melt/hack away the 2-4 inches of ice build up that accumulated. It is such a freaking pain in the ass.So on this defrosting day, I took all the stuff from the freezer, stuck it in a cooler, and the rest of the stuff, which is basically all veggies, I just tossed on the table. As I am hacking away with a metal spatual, a wooden spoon, and a constant rotation of pots of boiling water, I was thinking about dinner. I figured I might as well just eat up as much of the veggies as I could, you know, so I didn’t have to put them back in the fridge. And also, I was getting pretty annoyed because this particular defrosting session was taking way longer the anticipated, which made making dinner seem like another pain in the ass.  I figured I might as well just eat everything that is already out on the table, which pretty much narrowed down the “whats for dinner” conversations because it was already all over the place. And so dinner was a humongo salad for me, and for the mister, I made him a monster of a veggie sandwich. (my salad was exactly the same stuff as the sandwich, minus the bagel) Easy, fast, super duper yummy, pretty and piled so high with tons of veggies that the fridge is pretty much empty now. 

Look at the is beast. I don’t call it a monster sandwich for nothing.

The stuff included in this monster veggie sandwich..

Romaine lettuce, tomato, avocado for there is not real sandwich without them. Thinly sliced radishes, cucumber,a and onion for nice crispy crunch. Shredded beets, carrots, and purple cabbage to give  more crunch and a bit of sweetness. Then of course there needs to be something pickled, so I used banana peppers cause they are the SHIT!! And lastly some hummus for a nice creamy finish (plus a bit of protein) and yellow mustard because mustard on everything is just right.  Heres to a mountain if goodness that is no longer in the fridge! Served with a another mountain of roasted parsnips and carrots (more stuff from the fridge) and a tall glass of iced tea.

Lucky that today is farm share pick up cause the fridge is pretty much on empty.

A Monster Veggie Sandwich

Note. This is just a guide.. Feel free to use whatever veggies you fancy. 

  • Either a bagel, 2 slices of bread, or a big chunk of baguette (use a gluten free bread if you want or need too)
  • Hummus- Homemade or store bought
  • Mustard
  • Something pickled like pickles, banana peppers , jalapeños or all three 
  • Lettuce, spinach or some kind of leafy green
  • Tomato
  • Avocado
  • Onion
  • Radishes
  • Cucumber
  • Shredded Carrots
  • Shredded Beets
  • Shredded Cabbage

To assemble. Ready your bread.. Toast if you want, and stick it on a plate

On either side, smear the hummus and the mustard.  

Pick a side, start to stack by evenly disrupting veggies on top of veggies. Place the second piece of bread on top and  giving a little smooth to keep it together.

And go at it. Cut in half or don’t. Have a napkin or a long sleeve ready to wipe your face.

The past week has been pack full of everything.. Birthdays (3 nephews within the week), Christmas, family family family…..Its a lot, but its been great. Not going to lie, I am ready for a little quite time, maybe a nice long day of locked doors and dead phones….we will see. But anyway, here are a few little bits of happy that I managed to snap photos of(I have been slack on picture taking this week)This is an amazing book, full of pictures and information about 123 different varieties of apples….I am so excited to read it! My love got it for me for Christmas….So nice, so sweet. Its been a weird weather week..warm and gray.. This touch of blue really stood out.I found my favorite rag wool socks (Hooray!!!!).. and wore them all week.(don’t judge)

Ice Skating!!! One of my nephews was born on Christmas so we always do a skating  party at the ice rink on Christmas eve……….another of  my favorite family traditions…Always a super blast. Here my sister and nick were giving this little her first ever skating lessons. All I can say is good thing she was wearing a helmet.

 Another gift from the mister…a weck juice jar……If you know me or are getting to know me, you will know that I am jar obsessed and weck jars are some of my favorite. I eat, drink, store everything in jars. This beauty is destined for tea and or coffee.

I am not saying this because he is my lover, but Nick is an amazing artist. He has really gotten into using spray paint and has been doing some really awesome large scale images(nothing illegal…….yet!!) He did this whale a few days ago.. I am always blown away at he talent.

Popcorn drizzled in melted peanut butter….. WHOA!!!!! I also like to add garlic salt and chunks of fresh apple. It is the best most fantastic movie snack ever………Maybe I’ll share with you sometime.An early morning walk with the pup to the waterfront…We watched the sun come up…I am so lucky to live in such a beautiful place.

I hope everyone is having a wonderful holiday.. eating some good food, relaxing, spending time with loved ones. So soon it will be 2015(Holly f***!!) Lets get ready!!!!!

Before we left for the weekend, I was was trying my hardest to empty the fridge out of all food with the intention of leaning it empty so I could leave it open to defrost while were were gone. Unfortunately I was not able to make it happen. What I did make happen was emptying it almost completely so that when we got home, we had pretty much no food in the house, except for a few things that probably should be eaten.  Plus one of the last things that I want to do after sitting in a car for 6 hours is go to the grocery store, or anywhere for that matter, so I was determined to make with what wet had in the fridge:

  • Carrots
  • half of a gigantic kohlrabi
  • soy milk
  • iced tea
  • bananas that needed to be frozen
  • strawberries

Perfect!  A few carrots and half of a gigantic kohlrabi.. plus at the hotel we were staying at, there were fruit bowls in he lobby full apples. Every time I went past the apples (which was a lot) I grab one or two, so I have a few apples (I actually have a lot of apples now). All the things I need for a super awesome salad slaw. Apples with their  nice sweet crispiness and kohlrabi with its cabbagey, crunchy earthiness, tossed together with some vinegar, some toasted walnuts and some carrots, I mean, so freaking good. And to make it a bit more of a meal, I made some lentils to go with it. But the best part was there was no need to leave the house!!

     The stuff… A huge hunk of a bigger then my head kohlrabi (or 2 normal bulbs). A carrot, an apple, toasted walnuts, red wine vinegar, and some salt.

Pretty simple stuff going on here. Just peel and julienne the kohlrabi, carrot and apple. (no need to peel the carrot or apple unless you want too) and stick it all into a bowl.  I used my mandolin, which is one of my favorite kitchen tools ever, but if you don’t have one, a box grater works too.Sprinkle with salt and a good glug glug of red wine vinegar. Chop up the walnuts (some big chunks and some very small pieces makes for good eating), toss it all together and, well that’s it. But wait…. let it sit for a few minutes before serving to really let the flavors draw out.And there we have it. Super fast, full of flavors and crunchy texture. A salad slaw after my own heart.

Serve it as it or add to a bed of greens, rice, or lentils… and make sure to save at least as little… cause its an awesome little pre-bed snack.

Kohlrabi Apple Walnut Slaw

  • 2 medium sized Kohlrabis 
  • 1 medium apple   
  • 1 small carrot
  • 1/2 cup toasted walnuts
  • red wine vinegar
  • salt

In a large bowl, julienne kohlrabi (after peeled) apple and carrot. Sprinkle with salt, add in vinegar. Rough chop walnuts and toss the whole bit together. Let sit for at least 10 minutes, if not longer before serving. (A great salad to make ahead of time)

Eat as is, or toss onto a bed of greens, plate of rice or a bowl of lentils.

Any left overs only end up tasting better the next day.

Whenever my little sister comes over for dinner, I always end up making lentils in some form or another because she, like me, is awesome and loves a good lentil. It makes me so happy that she has such great taste in food and wants to eat what I make.  It’s validation from a teenage girl which is the best kind of validation. 

So last night when she came over after school for dinner and trash talk (she likes to verbally abuse Nick)  we decided  to make both of our favorites … Lentils AND sweet potatoes. How can you go wrong with that combo? Well I am telling you that you can’t. The rich creamy soft and slightly sweet sweet potato mixed up with the hearty, earthy, oh so fantastically tasty lentil. Add in a bit of kale and cheese if you wish and serve with salsa and guac… Whoa, it’s the best!!!

Such a great evening, I get to the cooking, the sister gets to the verbal abuse and the mister, begin the champ that he is, takes it and dishes it right back. 

I am the greatest(coolest) sister. 

Baked sweet potatoes, cooked lentils, chopped up kale and monetary jack cheese (Cheese is optional.. and make it vegan cheese if you want) And you don’t need then, but salsa and guacamole are the best toppings.. So you have them. 

Cut the cooked potato in half lengthwise and scoop the flesh out into a bowl. With a fork, smooth the potato , sprinkle with salt and pepper and mix in lentils and kale.

Stuff the mixture back into the skins of the potato.

And add some cheese (The mister and the sister wanted lots of cheese, no cheese for me) and stick the potatoes into the oven and let bake for another 5 or so minutes or until the cheese is all melty or the top is nice and crispy. 

Remove and plate… Serve with salsa and guacamole and maybe some corn chips.

Makes 2 serving

  • 1 Large Sweet Potato
  • 1 cup Prepared Lentils
  • 1 cup Chopped Kale
  • 1/2 cup Grated Monetary Jack Cheese (Vegan style or not) 
  • Salsa (optional)
  • Guacamole(optional)

Place potato in oven at 400 degrees for 30-40 minutes or until soft a baked throughout.

While potato is baking, prepare lentils.  2 cups water to 1 cup lentils. Add water and lentil to pot, bring to a boil, add a sprinkle of salt, and reduce to simmer until lentils are tender. 

When potato is cooked, remove potato  and let cool for a few minutes. Cut in half lengthwise and scoop out most of the flesh out of the skins and place into a big bowl. WIth a fork, mash the potato a bit  Add in the lentils and the kale, a sprinkle of salt and pepper, and mix to combine. Stuff the mixture back into the skins of the potatoes and top with cheese. (if using ) Place potatoes back into oven for 5-10 minutes until cheese is melty and bubbly or the top of the potato is a bit crispy. Remove from oven and serve on a plate with salsa and guacamole.

Eat and be happy.

     I have never in my life seen, let alone received, a kohlrabi as big as the one I picked up from my farm share last week. It was, no joke, bigger then my head. (completely nuts)  If I didn’t know the farm and the farmers of my CSA, I would have to question whether or not it was grown in radioactive sludge…(kind of like the dandelions in the Teenage Mutant Ninja Turtle movie from the 90’s)

What is a kohlrabi you ask? It’s kind of a cross between a turnip and a cabbage that is usually the size of a baseball. It can be eaten raw (I like chunks dipped in mustard) or cooked. (roasted chunks dipped in mustard)  It pairs well with sweet stuff like apples and honey, or in any savory stuff. Its one of my favorite vegetables (I say that about them all!)

So now that you know about kohlrabi (if you didn’t already) its time to get yourself some and make this soup. Because for real,  I am not kidding when I say that this is one of the best soups that I have ever made.  You really must try it. And do it soon because hopefully in the next few weeks the soup weather will turn into fresh pea weather and we might not want soup as much (I eat soup all year long)

A gigantic kohlrabi cut in half ( I only used one of the halts) A whole yellow onion and 2 large carrots. I also added in 4 cloves or garlic

Peel the kohlrabis tough skin off and chop up into chunks. Chop the carrot, garlic and onion as well .

   All of those chopped veggies get thrown into a pot with two cups of water and a good sprinkle of salt and pepper. Cover and place on medium heat for about 20-25 minutes. (give a stir ever now and then) Keep cooking until the veggies are fork tender. 

Once the chunks are all cooked up, its time for the  immersion blender. (or into a regular blender) Add in at least 3 cups of water, but more to thin out to your desired consistency and let it rip. Stop blending once the soup is nice and creamy. Taste and season with salt and pepper to taste. Leave on low heat to bring back to a good soup  eating temperature.

 Now the soup is done.. and you can eat it just as it is, but you should really add in the asparagus. It is just so f*ing good. Just grab a few spears, dice them nice and small, and throw into the soup pot. Let it cook for another 5 minutes and wa la.. Soup is done. Ladle into bowls and if you want a little fancy presentation, add a swirl of mustard (it’s so good) and a whole cooked asparagus spear.

And eat one of the greatest soups ever!

Creamy Kohlrabi Soup with Asparagus

  • 3-4 kohlrabi (or 4 cups chopped Kohlrabi)
  • 2 large carrots
  • 1 large onion
  • 4 or more cloves of garlic
  • Salt and Pepper
  • 4-6 spears of Asparagus (extra if you want to garnish)
  • Yellow Mustard (optional)

Peel outer layer of kohlrabis. Roughly chop the onion, carrot, kohlrabi and garlic and stick it all into large dutch oven or stock pot. Add water until veggies are half submerged . Add a good sprinkle of salt and pepper and place on burner on medium heat and cover. Check ever 5 or so minutes and give the pot a good stir. After about 25 minutes, all the veggies should be very tender and almost fall apart when stuck with a fork. With an immersion blender or regular blender, blend till smooth, adding water until soup is at your desired constancy. Return soup to medium heat. Small dice asparagus and add to pot. (I added 2 extra whole pieces and fished them put once cooked for garnish.) Keep on heat for another 5-10 minutes until asparagus is cooked. 

Scoop into bowl and squirt top with yellow mustard and top with a spear of cooked asparagus.

Eat with a spoon and lick bowl clean.

You ever have one of those days where its  9 am and your ready to call it a day? . Yesterday was one of those day for me. Its spring vacation around here (more like an  arctic vacation) and I had volunteered my day to babysitting/ hanging out with 2 of my nephews, ages 11 and 13. (I know, I am the greatest sister). I had all of these great ideas and plans of things to do, but when it came down to it, they wanted to do nothing but play video games and not really listen to anything I said. I basically had to drag them outside to go for a walk we me and that’s all I could get them to do  My great little nephews, I love them so much, but yesterday they had their minds set on being little monsters.

I needed a drink. And I needed lunch. And so I was inspired to make this bloody mary tomato soup. Its got all the essentials to a great drink, the tomato, the spice, the zingy flavors, but warm and thick to eat as soup which was a perfect lift for a freezing cold dragging day. And no, I didn’t add the vodka to it because that would be irresponsible of me.  I am not about to serve up lunch soup to a couple  young boys with alcohol in it. I am not a dumb ass…Save the vodka for when the kids go home!

 What we have going here…… Chopped up onion, celery, and carrot in a pot. Stick that pot on the stove for a few minutes on medium heat to start the cooking process.  While that happening get the other stuff ready.  A big can of diced tomatoes, hot sauce, worcestershire sauce*,  prepared horseradish*, celery salt, garlic powder, salt and pepper And last but not least a good squirt of yellow mustard. Now add it all to the pot and bring to a boil. Turn down to low and stick a lid on it.

*I used  the horseradish that is made with only horseradish and vinegar…..You can use the other stuff that contains sugars and milk, but I don’t know how tastes. And the worcestershire sauce I used did not contain fish but be aware that a lot of the popular brands do, so if you care, check labels!

After about 20 minutes the veggies should be soft and the flavors should all have melded together. Taste  soup as it is cooking and add any more spice that you want.

Now in goes the emulsifying stick of fun! (Or dump in a blender) Blend blend blend!  

I stopped when I got to a smooth consistency with the littlest bit of texture.

And now the soup is now ready for the bowls!

And there it is…served with a stock of celery and a wedge of lemon (I forgot to add them to the pictures!)  A bloody Mary to take the edge off any drag of a cold weather day. And best part..   left over soup is great served chilled with a shot of vodka to loosen this Mary up!

Bloody Mary Tomato Soup

The Stuff

Side note…The spicier ingredients…hot sauce, horseradish, and worcestershire sauce are pretty flexible. My advice is to start with the lesser amounts of the ingredient and work your way up until you get to your happy soup place.

  • 32 oz can of crushed or diced tomatoes
  • 2 medium carrots
  • 1 small onion
  • 2 stalks or celery plus more for garnish
  • 1-2 teaspoons horseradish
  • 1-2 teaspoons worcestershire sauce
  • 1-2 teaspoons hot sauce or  ground cayenne pepper
  • 1 tablespoon yellow mustard 
  • A lemon cut into wedges (To squeeze on as a garnish)
  • 2 teaspoons celery salt
  • 1 teaspoon garlic powder
  • Salt and cracked pepper to taste

Dice up carrots, onion and celery and place in a large pot and cook on medium heat for about 5 minutes. Once the  veggies are slightly soft, add in the rest of the ingredients plus one tomato can  worth of water. Bring to boil, cover and turn heat down to low. Cook for another 15-20 minutes or until all the veggies are super soft and the flavor have all developed.  Add salt and pepper, taste and add any additional spicier spices that you want.

When happy with taste, either  in a blender or with a hand emulsifier, blend soup until smooth (or to your desired constancy) Soup is now ready to serve.

Ladle or pour into bowls  and serve with a stalk of celery and maybe a wedge of lemon. Crackers or croutons are welcome too.

Eat with a Spoon

Soup left overs are great refrigerated and served cold. Add a splash of vodka to make it fun.

A simple post for the simplest of soups. Minimal ingredients, no fuss, fast to make but can be left all day to simmer……. And oh so very very good. 

This has been one of my go to soups this winter. Warming, hardy, comforting….every kind of soft cozy feeling that I need when I can’t leave my house because it’s so cold out that all I want to do is sit on the couch wrapped up in a blanket, with a book, and eat hot soup. (That’s the my plan for the weekend) But it’s also good for any type of weekend activities you might have… it’t kind of the perfect soup.

The Stuff. A medium sized butternut squash, seeded and diced (no need to peel, but go for it if you want) About a pound of broccoli, (fresh or frozen) and a few shallots. Salt, pepper and a few cups of water. 

Note.. I didn’t add any spices to this batch because I really love the flavor without anything. With that being said, I have made this same soup with sage, rosemary, turmeric, even curry. Almost any flavor works in this soup. 

    The chopped squash and broccoli go into a big pot with about 2-3 cups of water. Add about a tablespoon of salt and pepper. Lid up the pot and place on medium low heat for about a half hour, or unitl squash and broccoli is fork tender. Now blend together with either a emulsion stick blender or place in a blender for 3-5 minutes until completely smooth. Add enough water to keep things moving. Add more water if you want a thinner soup, less for a thicker soup. Season with more salt and pepper to taste. Once blended, place back in pot on simmer until ready to serve. 

When the soup is simmering, thinly slice the shallots and toss into a pan. Sauté until soft and fragrant. 

 Finish off with a drizzle of balsamic vinegar and top with the  sautéed shallots.

Soup and a spoon. So simple, so good.

Butternut Broccoli Soup

The Stuff 

  • 1 medium butternut squash 
  • 1 pound of broccoli (crown and stem and can use frozen)
  • 4 shallots
  • Balsamic Vinegar
  • salt and pepper

Split squash in half, remove seeds, and dice into chunks.  Place in big pot. Chop up broccoli and add to pot. (or just add frozen chopped broccoli) Add water until stuff is about half way summered. Place a lid on the pot and cook on medium low heat for about 30 minutes or  until squash and broccoli are fork tender. Blend together with either a stick blender or place in a blender. Add enough water to keep things moving. Add more water if you want a thinner soup, less for a thicker soup. Add more salt and pepper to taste. Once blended, place back in pot on simmer until ready to serve. 

When the soup is on simmer, thinly slice the shallots and place in a pan to sautee until soft and fragrant.  

To serve, ladle soup into bowl, drizzle with balsamic vinegar, and top with sautéed shallot.

Eat with a spoon

     Before we get to the fries, I just want to mention that  yesterday was one of those fantastic winter days that reminds me why I love living in Vermont.  Pretty white snow everywhere, the sun was out, and 20 degrees without a gust of wind. The trash dog an I were even able to go for a little hike.  It was so nice and soooo sooo needed!  Anyways, the other day as me, my sister and the mister where putting together  one more piece of Ikea furniture, (I am the master at Ikea assembling!)  a little runs into the room and presents the mister with a Dominos pizza. Yup, a whole pizza just for him. Why you might ask? Well I guess my sister was  delivered the wrong pizza and the place didn’t want it back and she didn’t want it, so she gave it to him.

A whole pizza to himself. I didn’t mind too much..he was just going to be eating it for lunch and dinner until it was out of the fridge. But for dinner I did want him to eat something of the vegetable matter that didn’t come out of a box. I was going to make him a big salad, but then realized that would mean sharing the last of the greens that I had for MY dinner and I was not about to do that, so I made him parsnip and carrot fries instead. No biggy, just some slicing, a little tossing and a bit of time in the old oven. And I figured I might as well make a nice sauce for those fries because I be so very nice.

The biggest problem that I ran into when I made these fries was that I didn’t make enough, so you should probably make twice as many as you think you will eat. If you end up not eating them all (which you probably will), well then you now have a great start for a soup or a nice addition to a salad. Either way, you will eat them because they are amazing and addicting… and as healthy as can be!

The carrots and the parsnips are all sliced up into big matchsticks and ready to be baked to crispy browned perfection.  I added the oil to the pan to toss the fries in and then sprinkled with a fair amount of salt and pepper.  If you don’t have and or want to use a cast iron pan, a baking sheet works just the same.

   Oh saucy sauce stuff. Tomato puree, sriracha, and yellow mustard. Add a little bit of honey to lighten it up (can use brown sugar if keeping it vegan), a splash of apple cider vinegar and a couple minced cloves of garlic. Topped off with the smokey delightful spice of cumin. I cold eat this on everything…and I kind of did. 

All mixed up in an oven safe dish, I stuck it into the oven for a about 8 minutes until it got a little bubbly, just to let all the flavors fuse together…

Fries are done, Sauce is ready. Served in super cute tea cups.(from now on I want to serve everything in tea cups.) A perfect side dish, snack, or even a light meal.  It lead the mister to ask the question…What pizza?

Parsnip and Carrot Fries with Smokey Sriracha Sauce

The Stuff

For the Fries

  • 2 large parsnips
  • 2 large carrot
  • salt and pepper
  • 1 tablespoon oil

For the Sauce

  • 1 tablespoon Sriracha
  • 1 tablespoon mustard
  • 2 tablespoon tomato puree (or 1 tablespoon tomato paste and 1 tablespoon water)
  • 2 cloves or garlic
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon cumin
  • a splash of apple cider vinegar
  • a pinch of salt

Preheat oven to 425.

Wash and trim carrots and parsnips and cut into large matchsticks (any shape is good, just make them all uniform) Toss with oil and sprinkle with salt and pepper. Place on cast iron pan or baking sheet and stick in oven for 30 or so minutes, and rotating after about 20. The fries are done when  crispy and brown.

For the sauce. Mince garlic and add to all the sauce ingredients in an oven safe bowl. stick into oven for about 8 minutes until slightly bubbly and hot.

     WOO WHOA!! MARDI GRAS! I wish I was down in New Orleans today celebrating… and soaking up some warmth and sunshine, catching beads, maybe even  taking my shirt off(?!!?) 

No, I keep my shirt on today because I am not like that, and also, I would die of hypothermia. Today I wear a shirt, underneath 5 other shirts ad sweaters.  Because today is just another day of -20 below here in Vermont. 

To keep me from going completely crazy, I am thinking of warm weather and I am thinking of New Orleans (love that place!) and the humongo celebration that’s been going on there for the past week. Everyone partying out in the streets. Big floats and beads all around. I might be feeling a little jealous, (more of the weather then the partying) but thats ok, I have TV to watch and a warm comforter to wrap myself up in. And maybe I should have done a post of fried donuts or of some type of alcohol party drink to celebrate the day, but I really just wanted to make something warm and spicy, so I went with some dank cajun beans. And also I wanted to sing…. “Beans Beans the musical fruit, the more you eat the more you toot!!” hehe

But for real, these beans  are sooooo f-ing tasty and super versatile. You can serve the spicy beans with the rice or just eat just the beans. You could do the beans and  add to a bed of kale (me) or add cheese, guacamole and a few  corn tortillas to the mix (the mister).  Simple to make, super tasty and full of flavor!  And pretty freaking heathy to boot! This dish gets an A+!

This dish is so full of flavor but so simple to make. We start with presoaked black beans drained and rinsed. Cajun seasoning (which is basically 1 part onion powder, thyme, oregano,  and 2 parts paprika, garlic powder, cayenne power, and salt and pepper) Sliced onion and jalapeno, and a few tablespoons of tomato paste. Oh, and the rice.

     Beans are in a pot filled with water unit beans are completely sumerged. Add in the onion, jalapeño, tomato paste and cajun seasoning. Bring to a boil then cover with a lid and simmer for about 45 minutes…..  After about a half hour, start up the rice. Water in pot with rice, bring to a boil, cover and simmer for 15-20 minutes. 

The rice is done and fluffed with at fork. The beans are cooked with just the tiniest bit of bite, bathing in a thick spicy tomatoey sauce. The chunks of onion and jalapeño have broken down and are hiding in every bite…. Oh so good!

 Now get ready for the bowl!!! Bringing a little spice and  nice to this crazy cold winter day or any fun festivities you may have planned.

Cajun Black Beans and Rice

Ingredients

  • 1 1/2 cups dried black beans* soaked for at least 4 hours or overnight..Rinse and strained
  • 2 tablespoons tomato paste
  • 2 tablespoons Cajun seasoning
  • salt and pepper
  • 1 Jalapeño
  • 1 small yellow onion
  • 1 tomato (I used a large roma)
  • 1 1/2 cup of dried rice plus 3 cups water

*If you want to use canned beans, go for it…Just sub in 2 cans rinsed and strained black beans and only add a cup of water to the beans. Pre sauté the onion and the jalapeño before adding to the beans and only simmer the beans for about 15 minutes. 

Place you soaked beans into a pot and fill with water until the beans are completely summered.  Slice the jalapeño and onion and add to the pot along with the  tomato paste and the cajun seasoning.  Bring to a boil then place a lid on it and turn heat down to low. Let simmer for about 45 minutes or until the beans are completely cooked.

When the beans are about half way done, add rice to water and bring to a boil. Once boiling, place a lid on pot and turn heat down to simmer and cook for about 15 minutes or  until all water is absorbed and rice is tender. Fluff with a fork.

To sever. place a scoop of two of rice to a bowl and top with a scoop of two of beans.… Top with diced tomatoes and scallions… (The mister added shredded pepper jack to his and thought it was excellent)

Eat with a fork or spoon.

CHILI MONDAY!Well it is, but I am talking about making some super duper, yes I’ll have seconds, tummy filling, bone warming, pumpkin chili.. And heathy oh so healthy to boot. Reals, it’s the best.

This pumpkin chili recipe had evolved over the years. The first time I made pumpkin chili was for my very first dinner party that I  threw back in college.  Instead of cutting the pumpkin and adding it into the chili, I chopped the little pumpkins in half, roasted them, and used the halves as bowls..A good idea except no one at the pumpkin and I was left with a bunch of slobbered on roasted pumpkin halves. ( I probably should have said something, but being a few drinks in, I didn’t think to say anything about the edible bowls and I don’t think I noticed the abandoned pumpkins until the next morning). After that somewhat failed attempt, I started adding the pumpkin to the chili and left the drinking tip after the food is served. ( I learned so much in college)

But yeah, this recipe has traveled a few years with me and every time I make it, I always think, jeez, why don’t I make this every weekend.  Well maybe now I will.

Don’t let this spread scare you.. it’s just veggies from the fridge, a chopped up pie pumpkin and pre soaked beans. Oh and some canned tomato and spices. It took about 10 minutes of hands on time and one big pot. No big mess to clean up and you can get rid of those veggies in the fridge that are on the way out. WIN WIN WIN!

All the chopped veggies, the chopped pumpkin go into the pot with salt. pepper , and spices.( I added a fresh jalapeno and about 5 cloves of garlic to this mixture) Let the mixture sweat for about 5 minutes, giving it a  quick stir or two.

Now toss in the beans and the tomatoes… Add a cans worth of water as well. Bring to a boil, then turn to low heat and cover.

A last minute addition.. I added a few chopped up kale leaves. I wanted a little more bright color and adding kale to anything is a good idea.

I added a little sliced avocado to one of the bowls (I only had enough for one) and cut up some lime wedges to squeeze on top. (I did, Nick didn’t) 

Best chili I have made in a long time…and yes, there is a bunch of left over which is fantastic because now I have lunch for the next couple days… 

HOORAY FOR FOOD!!!

  •  small sugar pie pumpkin
  • 2 cups dried beans..I used a 1 1/2 cups black and 1/2 cup kidney or 2 cans of beans
  • 28 oz can of crushed or diced tomatoes
  • 1 small onion
  • 1 small
  • 1 carrot
  • 1 /4 head of cabbage
  • a small broccoli crown
  • 1/4 head of cauliflower
  • a few kale leaves
  • 1 jalapeño 
  • 5 cloves garlic
  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoon coriander
  • salt and pepper

Either the night before or morning of, presoak dried beans..(beans in pot with about 4 cups water and a sprinkle of salt)

Take pumpkin and slice in half, de-seed and chop flesh into little chunks. (You can peel it if you want, but really, there is no reason to) Rough chop all the veggies (minus the kale) and stick into a large pot with the pumpkin. Pot on medium heat.. let the veggies sweat for about five minutes.  Now add the garlic and the spices and let cook for a few more minutes.

When the mixture starts to become fragrant… drain, rinse and add presoaked (or canned) beans. Then the tomatoes, and 1 1/2 cans worth of water. 

Bring chili to a boil then cover and reduce heat to low. Let cook for about an hour, giving it a stir every now and then………

Add in chopped kale a few minutes before serving

Serve in a bowl and top with sliced lime, avocado, a sprinkle of cheese….Whatever you want.

Before we left for the weekend, I was was trying my hardest to empty the fridge out of all food with the intention of leaning it empty so I could leave it open to defrost while were were gone. Unfortunately I was not able to make it happen. What I did make happen was emptying it almost completely so that when we got home, we had pretty much no food in the house, except for a few things that probably should be eaten.  Plus one of the last things that I want to do after sitting in a car for 6 hours is go to the grocery store, or anywhere for that matter, so I was determined to make with what wet had in the fridge:

  • Carrots
  • half of a gigantic kohlrabi
  • soy milk
  • iced tea
  • bananas that needed to be frozen
  • strawberries

Perfect!  A few carrots and half of a gigantic kohlrabi.. plus at the hotel we were staying at, there were fruit bowls in he lobby full apples. Every time I went past the apples (which was a lot) I grab one or two, so I have a few apples (I actually have a lot of apples now). All the things I need for a super awesome salad slaw. Apples with their  nice sweet crispiness and kohlrabi with its cabbagey, crunchy earthiness, tossed together with some vinegar, some toasted walnuts and some carrots, I mean, so freaking good. And to make it a bit more of a meal, I made some lentils to go with it. But the best part was there was no need to leave the house!!

     The stuff… A huge hunk of a bigger then my head kohlrabi (or 2 normal bulbs). A carrot, an apple, toasted walnuts, red wine vinegar, and some salt.

Pretty simple stuff going on here. Just peel and julienne the kohlrabi, carrot and apple. (no need to peel the carrot or apple unless you want too) and stick it all into a bowl.  I used my mandolin, which is one of my favorite kitchen tools ever, but if you don’t have one, a box grater works too.Sprinkle with salt and a good glug glug of red wine vinegar. Chop up the walnuts (some big chunks and some very small pieces makes for good eating), toss it all together and, well that’s it. But wait…. let it sit for a few minutes before serving to really let the flavors draw out.And there we have it. Super fast, full of flavors and crunchy texture. A salad slaw after my own heart.

Serve it as it or add to a bed of greens, rice, or lentils… and make sure to save at least as little… cause its an awesome little pre-bed snack.

  • 2 medium sized Kohlrabis 
  • 1 medium apple   
  • 1 small carrot
  • 1/2 cup toasted walnuts
  • red wine vinegar
  • salt

In a large bowl, julienne kohlrabi (after peeled) apple and carrot. Sprinkle with salt, add in vinegar. Rough chop walnuts and toss the whole bit together. Let sit for at least 10 minutes, if not longer before serving. (A great salad to make ahead of time)

Eat as is, or toss onto a bed of greens, plate of rice or a bowl of lentils.

Any left overs only end up tasting better the next day.

I have been meaning to make this jam for a while now. I’ll buy a bunch of jalapeños, then slowly, before I get to cooking them down, end up eating them all. But not today, and the rewards are great, Fresh jalapeño jam. So much potential for the greatest of things (I am thinking mango jalapeño sorbet… no, I am making jalapeño mango sorbet) And if you, like me are a jalapeño fan, this is going to make your life amazing. You will find yourself jamming up everything, or maybe just eating it with a spoon.

Whatever you want to do with it, just make it. 

Honey and jalapeños.. All you need, well a little salt and water too, but that’s it.

What you need to do is remove the stems,, most of the ribs and half of the seeds removed. (You could remove all or none of the seeds depending on you heat preference) Chop the peppers into small chunks, toss into a pot, sprinkle with a bit of salt, add in a splash of water. Place the pot on medium heat. Top it with a lid, and give the peppers a good stir every few minutes. While the peppers are cooking, you want to make sure the bottom isn’t sticking and buringin. If that starts to happen, just turn the heat down a bit and add in a little splash more of water.

After about 20 minutes, the peppers are fully cooked and falling apart. The liquid is cooked down and the peppers are starting to caramelize on the bottom of the pan. When that happened, remove the pot from heat.

Now you can either blend the peppers, mash the peppers with a fork, or leave it chunky. Thats a choice Ill leave to you. ( I like to blend, but keep some chunks)

And drizzle in a bit o honey. As little or as much as you like.

And scoop into a jar. Eat the jam on anything you want. (I found myself eating it with a spoon)

Keep it Real!

Makes about 1 1/2 cups of jam

  • 10 large jalapeño peppers
  • a pinch of salt
  • About 1 tablespoon of honey, but add more if you like (And if you want to keep it vegan, use agave or sugar)

Wash, remove ribs and most seeds (the more seeds you leave the hotter it will be) and dice jalapenos into small chunks. Place in a pot with a few splashes of water and a sprinkle of salt. Turn on medium heat and cover, stirring every few minutes. If the peppers seem to be sticking  o the pot and burning, turn heat down and add another splash of water. After about 20 minutes, the peppers should be really tender and falling apart. The liquid should be completely cooked out and the peppers will start to caramelized at the bottom of the pot. When that starts to happen, remove from heat.  Now either mash with a fork, blend with a hand blender, or leave superr chunky. Drizzle in honey (or sweetener) and stir. 

Eat right away or stick in a jar and store in the fridge for up to a week (It won’t last that long)

I had to share the last of the 5 pineapples cause if I didn’t, that would mean  I ate 5 pineapples by myself. (I ate 4 pineapples by myself) So donuts were made and delivered to my sisters house where I proceeded to make her and her kids and another sister dinner. (hand made pizza on a weekday!) I then whipped out these pretty little upside down pineapple donuts for dessert, right after I cleaned up and made whipped cream. The kids were swallowing them hole and trying to steal just one more  and my sister and the mister, well they had to eat their donuts all elegant like with forks. (weirdos)

 I know I have said it before but just in case you forgot

I am the best sister/aunt ever!  

 The stuff. Flour, salt, and the baking soda whisked together into a bowl. Fresh pureed pineapple, milk, egg, melted butter, and white sugar. Than there is more melted butter, brown sugar and fresh pineapple for the upside down.  This batter is pretty simple, just make sure to whisk all the dry really well. Dump all the wet stuff into the dry and mix until combined. Don’t over mix!Grease the donut pan really well and mix the brown sugar with the remaining melted butter

      Drizzle the bottom of each donut round with the butter/ sugar mix  then layer thinly sliced pieces of pineapple around the hole maker. (not as perfect as a pineapple ring, but still pretty)

Scoop donut batter on into the pan and stick into the oven preheated at 350 degrees. When donuts are all nice and golden brown, remove from oven and let sit and cool for about 5 minutes to give the donuts time to cool and the brown sugar to thicken. Dump donuts out onto a wires rackAnd serve them all upside down like. Maybe with a scoop of whipped cream or ice cream or nothing.

Pineapple Upside Down Donuts

Makes 12 donuts

  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 6 tablespoons melted butter ( 1/2 s for batter 1/2 for sugar mixture)
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup pinapple puree (about 1 cup fresh pineapple chunks blended)
  • 1/2 cup brown sugar
  • 1 cup sliced pineapple

Note. I used fresh pineapple, but you could use canned. I think you would need a of rings (cut in half) and a an of chunks, blended up)

Preheat the oven to 350 and grease the donut pan(s)

In a large bowl, whisk together the flour, salt, sugar and baking soda.  Melt 3 tablespoons of butter and mix that with into the flour mixture along with the pineapple puree, milk, and lastly the egg. Mix until combined.

Melt the remaining 3 tablespoons of butter and mix into the brown sugar. Drizzle (crumble) about a teaspoon of the mixture into the bottoms if each donut mold. Layer thinly sliced pineapple on top of that then scoop donut batter on top of that. Stick into the oven for about  10 minutes, or until donuts are gold brown and a tester comes out clean. Remove from oven and let cool for 5 or so minutes on a wire rack before turning out of pan. 

If working with one pan, make sure to really clean the pan and re-grease before baking the second batch!

Serve donuts with a scoop of whipped cream and eat with your face.

Because sometimes you just need to think of yourself and what will make you happy.  Eating this makes me happy. 

This flavor  situation just made so much sense. All three flavors on their own are fantastic, but combined into one super amazing frozen sorbet treat.. I mean, like WHOA! I was inspired by the 4 really ripe and juicy mangos I had waiting on the  counter. I had also just made a batch of jalapeño jam and was thinking about how nicely jalapeños and mangos go together. And I happened  to have a can of coconut cream on hand. My first idea  was to do a savory dinner type thing, but after a day of heat and humity, all I wanted was something cold and easy. Ding ding… Lets freeze this shit and turn it into a sorbet.

Such a good idea.

The Stuff. Simple as can be. 2 mangos, peeled, diced and frozen. A can of coconut cream, and some jalepno jam. 

Frozen mango is really easy to blend. Just stick into a blending device and add a little bit of water. Mix until a nice creamy puree is formed. And try not to eat it all right now.

Whip up the coconut cream. You don’t need to go to crazy and make it all fluffy, just whisk it for a minute or two just to loosen it up.

Time to scoop. First a few big dollops of the frozen mango puree. Try to work fast to prevent the mango from completely thawing out.

Next, scoop some of the coconut cream and drop a few scoops of jalapeño jam right on in there to. Add more mango, more coconut , and more jam until you container is full.

Note.. My sister had the idea of mixing he jalapeño jam into the mango puree. I think I might try that next time.

Take a knife and cut through the sorbet, first width wise, then length, then width. or whatever. You’re  just trying to kind of marble and swirl the flavors together.

Once your done playing and swirling, into the freezer it goes….

Remove from freezer when completely frozen and do what you need to do. I flipped the pan and sliced into slabs on a cooking sheet, and me, the sister and the mr. took turns with the fork and ate it off the pan. We be so classy.  But go ahead and use o plate or scoop it or maybe even eat directly from the container with a fork. No judgement here.

  •  2 1/2 cups  fresh mango (2 large mangos), peeled, diced and frozen. (Or just buy frozen mango)
  • 1/2 cup water
  • 1/2  can of cold coconut cream (I used Ttrader Joes.. It’s the best)
  • around 1/3 cup  Jalapeño Jam.. more if you like (Here is the recipe for that )

Place frozen mango into a blending device, add about 1/3- 1/2 cup water and blend until a smooth puree.  Open coconut cream, drain the liquid, and place half the cream into a bowl. Whisk until loose and slightly fluffy . 

In a freezer safe container. scoop a few dollops of the mango puree,  add in a few dollops if coconut cream and then a few dollops of the jalapeño jam. Keep adding dollops of the stuff until you use up all of the ingredients. Take a knife and run through thet sorbet length and width wise a few times to swirl  the flavors. Place in freezer for at least 3 hours or until fully frozen

Remove and either scoop, slice, or eat directly from container.

Last week I bought this nice hunk of locally made tofu to bring to my sisters for dinner. I was planning on making T.A.L.T.’s, but when I told her what I planned on making, she turned it down. She asked, ” is there bacon with that? If not, I don’t really feel like tofu”. And I was like, “No there is not F**king bacon….. when did I  mention bacon?”

We still went over for dinner, Just me,her,and the Mr. I brought myself a big salad. The other two ended up eating a frozen pizza and  blue cheese dressing (I think they might have eaten dressing with a little bit of pizza…barf) But whatever, her lose, cause I made the T.A.L.T.’s  a few days later. They were amazing (the tofu was soo good!) and I am pretty sure she would have loved them. Oh well, now she will just have to make them for herself if she ever decided to she wants one.

So here.. To everyone  and to Shannon….. How to make a T.A.L.T. .. There is NO BACON!

The stuff… Some nice firm tofu, half a ripe avocado,lettuce (I used baby greens), and some sliced up fresh and tasty tomato. To spice up the tofu, we use galic powder, salt pepper, and a nice smokey paprika. Oh.. and a big hunk of a soft and crusty baguette to stick it all in. 

To get this TALT going, thinly slice up as about a 1/3 of a block of tofu. (for one sandwich) Or slice up the whole thing to make more sandwiches.

On a plate or in a bowl, mix together the garlic powder, paprika and a little salt and pepper. Gently dredge both sides of each piece in the mixute. 

Paprika is so bright and pretty.

Place the tofu in a lightly oiled and preheated skillet on medium heat. Cook each side until crispy and golden brown.

Slice you bread open and toast if you want.  Scoop avocado onto the bread( a little on both sides). Add the tomato and the seasoned tofu and last but not least,  pile on the greens. 

TA DA! A Sandwich… a damn good one at that .

Makes on 6-8 inch sandwich

  •  1/3 block of extra firm tofu*
  • 1/2 of a ripe avocado
  • 1 small tomato thinly slices
  • a handful of baby greens or a few lettuce leaves
  • A 6-8inch hunk of a soft and crusty baguette (use a gluten free bread of choice if needed)
  • 1 tablespoon SMOKEY paprika*
  • 1 tablespoon garlic powder*
  • salt and pepper.*

*Note.. This is enough for one sandwich. If making more then one, use the whole block, or even if you not, you might as well cook the whole thing for and have some extra for later use. If you do cook it all, just add another tablespoon or so of the paprika and the garlic powder.

Remove tofu from package and stick between a clean dish towel. Press as much liquid out as you can without smooshing it. Cut tofu into 1/4 inch thick slabs. Mix the spices with a pinch of salt and pepper in a shall bowl or plate and dredge both side of  the tofu in the mixture. Lightly oil and preheat a skillet to medium heat. When the tofu is seasoned, stick onto skillet and cook each side until crispy and brown. Remove from heat and let cool for a minute. (If you like you tofu a little more on the crunchy and dried out side you can stick the tofu in the oven for a few minutes)

To assemble. Slice bread, toast if you want. Place  equal amounts of  avocado  on each side of bread. Layer on the sliced tomatoes, the cooked tofu and add on the greens. Close up sandwich and place on a plate.

Bite, chew, swallow.

This little guy asked me to make him some popsicles, and of course I said yes because, well look at him. 

So we made a date. A popsicle and playground date to be exact.

For these particular pops, I decided to use watermelon, mainly because I had just broken into one and once I open a melon, I have a race with myself as to how fast I can consume the in entire thing. ( It’s a sick form of watermelon gluttony) But also because the little was really really excited to hear that I could in fact make watermelon popsicles. And the other stuff I added because I had it and it all tastes really good together. 

 I made the popsicles the day before  so they would be ready for our date.  He came over, we ate lunch,(peanut butter sandwich and carrot sticks) wondered around the neighborhood with the pup, and made a quick stop at the playground. (we only managed a couple runs on the slide  before it was too hot and our sweat had us sticking to the slide and it was more of a painful scoot then a glide) We then made our way home and rewarded ourselves for a walk well done with these amazing, super refreshing, and healthy frozen treats that I made just for us. While we were eating the popsicles, our conversation turned to food. We talked about all the different varieties of popsicle that we could make, and how we could eat them for breakfast, lunch or dinner because they are made of only good things and are really healthy (he is really trying to eat healthy)  It was the perfect ending to a fantastic afternoon with a five year old, or any human for that matter…

The Stuff.  Fresh seedless watermelon (make sure to have lots on hand cause you are going to be eating it as you make these), a fresh lime, a handful of blueberries and a sprig of fresh mint. And don’t forget  a mold of some kind that form the liquid into a popsicle (if you don’t have a mold, little paper cups work too)

Remove watermelon from rind and cut into small chunks. Juice the lime and add that, the watermelon chunks, the mint and the blueberries to a blender or vessel if using a hand blender) and blend everything until smooth. 

Look at how pretty that is.  And so tasty…. I am not going to lie and say that I didn’t make a little extra to drink, cause I did.

Now pour the puree into your molds to the fill line (follow the instructions that your molds give you) and place into the freezer.

And yes Shannon, these are in fact, your popsicle molds. Don’t worry, I’ll bring them back soon. (I am thinking some type of booze infused situation)

Once the freezer has done its job freezing… pop those suckers out.. (I let the mold sit on the counter for a few minutes so the popsicle pops out clean)

And heres to the best popsicle date ever!

  • A big chunk of seedless Watermelon (aboutt 11/2 cups)
  • 1/2 ish cup of blueberries (fresh or frozen)
  • Juice of 1 lime
  • a few fresh mint leaves

note. The popsicle mold that I used only needed 2 cups of popsicle juice. If you have a larger mold, just use more of everything to get the amount you need

Remove rind from watermelon and add to a blender with the lime juice, mint and blueberries. Blend until eveytthing is pureed and mixed all together. Pour liquid into popsicle molds and stick in freezer for at least 4 hours.

When ready to eat…, pop those suckers out of there molds and EAT! 

  You ever make dish, completely on the fly, just to use something up (I have a lot of ripe tomatoes) with no real expectation, just because… Then have it be one of the best freaking things that you have ever made? This salad is one of those things.. maybe not the best thing I have ever made, but definitely the best salad I have ever made…. this week.

A salad compiled of all things amazing, taking just a few minutes to make and is the perfect balance of uber fresh with baby spinach, raw kale, and crunchy quick pickled onions. Then adding a touch of warmth with the sweet and juicy seared tomatoes and big chunks of creamy avocado.

I mean, for reals. ……Best Salad Ever !!!! (this week)

Now let’s do this.

 The Stuff. A big bowl of baby spinach and chopped up kale, a few sliced up roma tomatoes, some super thinly sliced red onion, half an avocado, red wine vinegar and salt and pepper.  Before you do anything, place the sliced onions into bowl, sprinkle with a pinch of salt and add a few glugs of the red wine vinegar. You want the onions to sit in the vinegar for at least 5 minutes on the counter cause the longer they sit the more crispy pickly they get. (after eating onions like this, you will never want to eat them any other way) Lightly oil a skillet and preheat to a medium heat. Once the skillet is hot, sprinkle the tomato slices with salt and pepper and  place tomatoes right on in, snugly, but not overlapping. Let cook for about 3-4 minutes, or until the bottoms start to brown. Flip and cook other side for another few minutes.Once the tomatoes are seared on both sides, remove them gently from skillet and toss them on top of the bowl of greens.

Take the pickled onions and toss those right on top, with any of the residual vinegar, add dice and scoop the half of avocado and toss that on in as well.And now eat the best salad ever (this week).

Skillet Seared Tomato and Quick Pickled Onion Salad

Serves 2 as a side, 1 for a hungry eater

  • 2 large or 3 smaller roma tomatoes
  • 1/2 of a red onion
  • 2-3 tablespoons red wine vinegar
  • 1 1/2 cups baby spinach
  • 1 1/2 cups chopped kale
  • salt pepper
  • 1/2 a ripe avocado 
  • olive oil (to grease pan)

Thinly slice red onion and place in a bowl.  Add vinegar into a and sprinkle with salt. Let sit on counter for at least 5 minutes, if not longer,

Slice tomatoes into 1/2 inch thick rounds and sprinkle with a pitch or salt and pepper.  Lightly oil a skillet and preheat it on medium heat. Once the skillet is preheated, stick the tomatoes on it (watch out for splattering tomato juice) Cook first side for about 3 minutes or until the bottom has browned, then flip and do the same for other side. 

One tomatoes are seared, place directly onto the greens. Now dump the pickled onions and residual vinegar on top. And  dice up  avocado and add that on top too. 

Now eat your salad, fork or fingers…  

And I know, ba-daaaamn. So good.

Me, well I  have a peanut butter and jelly lunch date at the park with some littles, a butt load of plants to stick into the ground, and hopefully drinking much to much coffee while basking in the glow of the very lovely world. (which has been on point all week with warm weather, sunny days, splashed with the perfect  moments of rain) Everything is so green and lush and freshy, it’s hard to not to be full of happy and the feeling that anything is possible. It’s fantastical! Oh, and I got to give a shout out to my big sister for graduating from nursing school this week…Whoa HOO!!!!! (Does she realize she is from a family of hypochondriacs?  Texting nurse Shannon……she is screwed.)

Summer here we come…It’s GO TIME!

It’s Mother’s Day weekend which means that you and I and everyone out there should feel the slightest bit obligated to at least do a little something nice for your mom for the mere fact that you were borned. And really what better way to celebrate mom than with food… It really is the least that you can do. (I think mom’s also like flowers and cards and handmade pasta necklaces) My mom is defiantly about the food. (she has had her fair share or pasta necklaces)  A many years back on Mother’s day, this sweet little girl (me) made her mother a special  breakfast treat…blueberry scones. And ever since that day, for every freaking holiday, birthday, whatever day, my mother requests (demands) a batch of those scones. She is always saying that these are her favorite treat and that no one has ever made them as good as I do. (I guess that just reiterates that I am her number 1 child)

And for the last few months my mom has been up my butt, trying to get me to make her some. Not going to lie, I have been saying I’ll get her a batch, but for some reason, I haven’t gotten around to making them. So two birds here.. Make the scones and she gets off my back for a least a little while (a month.. maybe 2) and I give her a fantastic Mothers day gift that I know she will love.

So here they are , oh mother of mine. Blueberry scones!

The stuff. Flour, baking soda, baking powder and salt. A bit of sugar, vanilla, buttermilk, and butter (use vegan butter and nut milk if you want to make them vegan) And of course we need the blueberries which can be fresh or frozen. I usually use fresh, but the store I stopped at only had really big containers of fresh that were like $1000 dollars a piece and the organic frozen happen to be on super sale. So you know, the cheap in me won that battle. So into the bowl goes all the dry stuff; flour, baking powder and soda, salt, and the sugar. Give it a good whisk.

Now for my special trick for a perfectly distributed cold butter in a pastry. Freeze your butter and grate it!

With a large wholed grater, grate the frozen butter directly into the bowl with the dry, stoping a few times to toss the butter chunks around so you don’t end up with a huge pile of grated butter. When it’s all grated, gently toss around so the butter is evenly distributed. Now dump the blueberries into the flour mixture. Toss them around to give them a coat of flour. Add in the buttermilk and vanilla and give a little mix until liquid is absorbed. We are trying to handle the dough as little as possible.Turn mixture onto counter. It’s very loose, but thats what it should look like. Very gently and with as little handling as possible, gather dough up, knead a few times till everything  just comes together. Press dough into a disk that is roughly an inch thick…. and it doesn’t need to be perfect. Cut the disk into even sized pieces. Do 6 big, 8 normal, maybe even 10 smaller. Whatever size you like. (I did 8) Place the scones onto a baking sheet, using a spatula to transfer, and sprinkle the tops with a little bit of sugar. Into a preheated oven for about 20 minutes.And when the scones look all nice and browned and a tester comes out clean. remove and either serve right away warm, preferably with huge cup of coffee or tea, or stick on a rack to cool before storing in  air tight container.

Perfect to serve as a breakfast pastry, at brunch, or even as a dessert. A nice little treat for a special lady. (dudes can eat them too)

Blueberry Scones 

  • 2 cups all purpose flour
  • 1/3 cup sugar plus 2 tablespoons  to sprinkle on top
  • 1  teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted  butter frozen or really cold (use non dairy butter like Earth Balance for vegan)
  • 1 cup blueberries (fresh or frozen)
  • 1 teaspoon  vanilla 
  •  3/4 cup buttermilk (use non dairy milk for vegan)

Preheat oven t0 400 degrees

In a large bowl, whisk together flour, baking soda, baking powder, sugar, and salt. Take the frozen butter and grate directly into flour mixture, tossing around to evenly disrupted. Add in blueberries and toss around till coated with flour, then lastly, add vanilla to buttermilk and mix into mixture until just barely coming together. Turn mixture out onto counter and with your hands, knead mixture a few times until it forms a solid dough. Shape into a disk and smoosh down until about an inch thick. Cut into 6-10 triangles  and place on a non greases baking sheet and sprinkle tops with remaining sugar. Stick into oven and bake for 20 minutes or until tops start turning a golden brown and a tester in the middle of a scone comes out clean. 

Remove from baking sheet and serve warm or let cool on a rack.

Mom gets first dibs, and if she is willing to share, eat one yourself with your face. 

Yesterday I spent the entire day (ok maybe not the entire day), but a the better part of the afternoon defrosting my freezer. Sure, I do the occasional chip chop here and there, just enough from around the freezer door so it will close, but ever few months I notice that everything in the fridge is not staying cold and that the freezer is not freezing stuff. Thats when I know its for real time to defrost. So a few days ago when I noticed my bananas were turing to liquid in the freezer, I knew it what I had to do….Completely empty the fridge  and melt/hack away the 2-4 inches of ice build up that accumulated. It is such a freaking pain in the ass.So on this defrosting day, I took all the stuff from the freezer, stuck it in a cooler, and the rest of the stuff, which is basically all veggies, I just tossed on the table. As I am hacking away with a metal spatual, a wooden spoon, and a constant rotation of pots of boiling water, I was thinking about dinner. I figured I might as well just eat up as much of the veggies as I could, you know, so I didn’t have to put them back in the fridge. And also, I was getting pretty annoyed because this particular defrosting session was taking way longer the anticipated, which made making dinner seem like another pain in the ass.  I figured I might as well just eat everything that is already out on the table, which pretty much narrowed down the “whats for dinner” conversations because it was already all over the place. And so dinner was a humongo salad for me, and for the mister, I made him a monster of a veggie sandwich. (my salad was exactly the same stuff as the sandwich, minus the bagel) Easy, fast, super duper yummy, pretty and piled so high with tons of veggies that the fridge is pretty much empty now. 

Look at the is beast. I don’t call it a monster sandwich for nothing.

The stuff included in this monster veggie sandwich..

Romaine lettuce, tomato, avocado for there is not real sandwich without them. Thinly sliced radishes, cucumber,a and onion for nice crispy crunch. Shredded beets, carrots, and purple cabbage to give  more crunch and a bit of sweetness. Then of course there needs to be something pickled, so I used banana peppers cause they are the SHIT!! And lastly some hummus for a nice creamy finish (plus a bit of protein) and yellow mustard because mustard on everything is just right.  Heres to a mountain if goodness that is no longer in the fridge! Served with a another mountain of roasted parsnips and carrots (more stuff from the fridge) and a tall glass of iced tea.

Lucky that today is farm share pick up cause the fridge is pretty much on empty.

A Monster Veggie Sandwich

Note. This is just a guide.. Feel free to use whatever veggies you fancy. 

  • Either a bagel, 2 slices of bread, or a big chunk of baguette (use a gluten free bread if you want or need too)
  • Hummus- Homemade or store bought
  • Mustard
  • Something pickled like pickles, banana peppers , jalapeños or all three 
  • Lettuce, spinach or some kind of leafy green
  • Tomato
  • Avocado
  • Onion
  • Radishes
  • Cucumber
  • Shredded Carrots
  • Shredded Beets
  • Shredded Cabbage

To assemble. Ready your bread.. Toast if you want, and stick it on a plate

On either side, smear the hummus and the mustard.  

Pick a side, start to stack by evenly disrupting veggies on top of veggies. Place the second piece of bread on top and  giving a little smooth to keep it together.

And go at it. Cut in half or don’t. Have a napkin or a long sleeve ready to wipe your face.

My flowers are coming up, I have packed away my winter jacket, and I haven’t worn anything but sandals for the past week. Plus yesterday I made the first batch of sun tea and saw my first hot air balloon of the season (which lead to a heated discussion with the mister about how hot air balloons take flight. We were both kinda right, but me more than him)So yeah,  it’s for real… Winter is gone and spring has sprung, or more like spring sprung then bounced cause now it’s basically summer weather. Not complaining, but I hope we get a least a few more weeks of pleasant, not hot and humid weather. 

Anyway. Sun tea, one of my favorite summer time drinks. Made by infusing regular old teas with water by using the almighty power of sun.

Why do we want to make iced tea this way instead of just using boiling water? Well you can still do that, but sun tea makes a more mellow, lovely, and I find, more sweeter tea. It brings out more complex flavors that you don’t get with the boiling water method.  And it’s nice to know that it took zero effort on my part to make the drink (not that boiling water takes that much effort, but still)

It can be made with any variety  of teas, infused with other fresh herbs, dried spices, or even chunks of fruit. You can also make the teas and add flavors after the infusing is over. Have fun and play with flavor combos.

A few of my favorite sun tea combinations

  • Any mellow black tea like orange pekoe or english breakfast with a few springs of mint
  • Chamomile and mint 
  • Green with a fruity tea, like blueberry or pomegranate
  • Lemon Zinger with a few springs of Rosemary

These are just a few of the endless possible flavors. And you don’t have to get fancy with it either, you can totally use plain old lipton tea bags (I still do that too)

Now harness the sunshine and feel awesome and fancy by making some tea!

SUN TEA

 What you’ll need

  • Tea- Either bags or loose leaf
  • Water- Preferably Filtered
  • A glass jar with a lid
  • Sunshine

I  use a ratio of 1 tea bag or 1 tablespoon loose leaf tea per 2 cups of water. And I usually make my teas in half gallon ball jars so I use 4-5 teabags or tablespoons of tea. (makes just enough tea for 4-6 tall glasses, depending on you glass size)  If it’s a mint tea, I usually use a little less because I find that mint teas can become to strong and bitter so I  use 3 teas bags or tablespoons of loose.

Directions

Place tea loose or bags into jar. Fill with water, leaving about an inch for tea expansion, place lid on tight, and stick in the sun for anywhere between 3-5 hours  (depending on how strong you like your tea). When tea is infused to your liking, remove teabags or strain the loose tea and stick into the fridge to chill. Serve as is  in a drinking vessel with a few ice cubes and add sweetener if that’s what you do.

Drink within a day or two, then rinse jar and make a new batch!
