Wowzers…Is it for real Memorial day weekend? Where has all the time gone? Let’s talk about a week gone by fast. My brain is on complete overdrive and I am having a hard time keeping it from exploding…SO MUCH TO DO! (Not bad stuff, just a lot of stuff) But lo, that’s life right? There is always a lots of “stuff” to do, but today I am going to try and let that stuff chill and maybe give myself a few hours of coffee, (so much coffee) reading a book in the sunshine, gardening, and just some overall chillin. 

Hopefully.

And hopefully you party people out there will be able to do a little of the same, or at least the chillin part. It is a 3 day weekend after all (not for us, but whatever)

We didn’t find the geo, but we found this gigantic mushroom. Just as cool, maybe even cooler.

I love brick and there is one street in all of burlington (that I know of) that has brick sidewalks. I like to walk down it a lot. 

Nurse lady making food… I compare this to a big foot sighting. I have heard stories that she cooks,but have never actually witnessed it myself. (Just kidding….kinda)

No matter what is going on in my day, seeing a blue sky like this puts a smile on my face….To bad that smile turned to ice and my face froze in place. Because for some reason, winter around here now means below zero all the time. I mean, I love winter, but I am not going to lie… I wouldn’t mind if the wind would stop blowing and we had a couple of days of above zero weather.. and maybe a good foot of snow. I guess I’ll just have to be patient, cause its bound to happen. I mean, we live in Vermont, and if nothing else, we get weather. 

Anyways.. another week full of stuff that fills. I am a little taken aback that its already February… when was it January? Time just keeps going by fast and faster, (especially when I get cabin fever) and I think, “What have I done in the past year?” Well, I have done a lot. I was just looking through pictures from a year ago and found some of our tiny home in working progress. Not to many people can remodel a five unit house and a meat locker to live in, within a year.. by ourselves. (ourselves being Nick and I)..So yeah, that made me feel pretty freaking awesome and accomplished. (I needed to remember that because I haven’t been feeling it) But now I am feeling inspired and am looking forward to some new projects and fun things to come! (hopefully getting my pottery studio up and running, maybe another house remodel and lots of traveling!!…. take that winter blues!) 

Anyway.. here are a few little bits from my week that made me happy.

The mister called these snow mounds goosebumps… I think that is exactly what they are 

The only warm day this week. (20..woo whoo!) Took the little out for a sled ride. She spent the entire time dragging her hands in the fresh snow. 

And oh how I cannot  handle how freaking cute she is!! Plus, a shout out to my brother in law….MADLOVE!

Cabbage at the farm share pick up! Love ICF!!!

89 cents a pound for fresh organic cranberries. Score!! Made these Oatmeal fresh cranberry coconut chocolate chip cookies with them. Big hit.

This picture was taken exactly a year ago…..The mister and I were finally putting in the bathroom of our tiny little home…. And look at that awesome sink! (another amazing salvage yard find) If you ever need or want to remodel a bathroom, I suggest using a old cast iron utility sink. So practical, so functional, so pretty.….it makes me happy everyday!

I don’t think I need to tell anyone about how weird the past few weeks of weather have been, so I will just leave it alone because we don’t need to keep thinking about how stupid cold it is outside or that the next week is only suppose to get worse. Booooo, but oh well. More time for cooking, reading, and trolling the internet (I have spent a little more time then usual getting sucked into the world-wide web.) Beacause I have been spending a little more time interneting, I have added an addition to  my usual happy bits,  a few links that I have stumbled upon that I think are cool and of things that I want or want to make… Cool internet stuff…..a bit of internet happy. 

  • So I recently discovered that I can waste a good amount of time on pintrest, especially looking at interiors and architecture and clothes (which I found really weird, but with one pin, an open can of worms…Dangerous stuff). I have a long way to go before I have nearly as many pins as other folk, but I am getting a good a start. Check out my boards…
  • I smiled so much when I read   this article.    So sweet and are some of the coolest tattoos  ever.
  • The original nomad. I am not a hot tub person (it makes me feel like I am being cooked..) But I might be able to get into one of these when doing some camping.
  • I practically started salivating when I saw this falafel.  I am so going to make it for a special mister and me dinner!
  • I don’t have any big kitchen utensils… like a kitchen aid or a panini grill, and for now, I am ok with that, but I really want this waffle iron. I could so use the crap out of it.

So that’s some internet stuff and here are a few life moments…..

I got to hang out with my little sister for the first time in like a month… She is just so busy being busy. I guess high school,play practices and boys and friends can fill up ones time at 15… but I miss her so much! I was very excited that she was able to hang out with me this week.  What did we do? Well we spent most of out time together taking pictures of her in my glasses, making food and then taking pictures of her eating food.  (She is eating whipped carob moose… like one should eat it) A fantastic day of silliness. 

I have been feeling like I might be fighting off an illness so I have been eating this Turmeric Ginger Garlic Carrot soup which I have been adding cabbage and topping with these pickled heart beet, all week long. So tasty and full of so much good.

 Oh yeah. Me, the mister, my sister, and her lovely little little went to Ikea this week. (the littles first international trip!!! Over the border and into Montreal) And of course at the end of any good shopping trip there is some type of food…. She  was so excited for the hot dog and frozen yogurt cone at check out. Champion food eater this one is.

And what’s not to love about pretty flowers (primrose)…..Sadly this is not a current picture. I need to get me some color today. 

Which leaves me with my goals for the day..

  • Get 2 new library books (and return the huge stack by the door)
  • Make something tasty good for dinner and prep food for the week
  • clean bathroom and change sheets
  • buy flowers
  • Take a nap

First week of the New Year.. and I am ready to take this year and ride it like a bull.(I don’t know  exactly what that mean, but it sounds right) I am not a new years resolution kind of gal, but I am a goal oriented person and this week I have been thinking a lot about my goals and wishes for life…. and I am on my way..Nothing is going to stop me!(unless I end up getting arrested, but that is not a goal) Anyway, as always, the mister and I spent a good chunk of time with the family. Everyone’s kids have had the past two weeks off and I think all of my sisters are about to kill a small child(possibly one of their own), so we tried to help out as much as we could.I mean, I am even happy that the kids all go back to school tomorrow. But it was a good week, we went to a bouncy castle birthday party (I didn’t get to bounce..so sad)  and made balloon animals(well sort of. Nick knows how to do a few, I know how to make a snake and inappropriate jokes.) I got to bake a lot and test out a few new food recipes(tasty things to come!) Its been pretty freaking cold so we spent more time then usual indoors which meant I got to read a lot.  We even cleaned out the basement and made it more human friendly..and didn’t kill each other doing it! All in all, not a bad start to the new year.  Here are some happy highlights.

New Years Eve hike. Anything outside makes me happy.This giant tree fell over on the trail and it looked so pretty. And yes, Washer looks handsome  too. 

        My Grammy Stems Poppy seed roll recipe…My Dad makes them every year and this is the first time I ever made them. I split the recipe in half( the recipe make 6 huge rolls) and turned one of the rolls into little rolls. Those little rolls might be one of the prettiest things I have ever made. I am going to be making them again soon. 

We had to take out Christmas tree down…which is kind of sad, but I stopped watering it and Nick stopped watering it….and it turned into fire tinder.  Nick took the popcorn garland from the tree and lined the fence…. that made up for not having the tree anymore. Best Christmas present ever…The Mister paid off my outrageous library fine so I can start taking books out again.!(what a guy) I am reading both of these at the moment… and both are excellent!  I kinda don’t want to do anything but read. 

This situation going on here…sometimes the most simplest of ingredients make the best dishes… This blue arrow, a marker in the woods. I love arrows

A visit to a green house. I am a house plant slut…I have a ton and always want more.  But ever since we moved into our little cave(it has almost zero natural light) my plants have been sad and I am trying my hardest to keep them happy.  I was on the hunt for some plant food to keep my green babies alive and I found myself happily wondering this greenhouses. I think everyone should have a green house full of plants, it’s impossible to not feel good in a light warm room of color. 

 Freshy snow walk. Our feet were the first to lay tracks around the neighborhood. Our feet are awesome.

I love my little kitchen wall, but I would love a little more space/storage/light. I am dreaming up a few kitchen projects for the mister and I to tackle, maybe more shelves, some hooks..Maybe a big old hole in the wall? I spend a lot of time fantasizing about little ways to make the kitchen a little more awesome(it’s pretty awesome now) But I mean, a window would make everyone happy. Just an idea…We will see.

So yeah,  the little bits.

Fresh Mint Limeade — The Lovely Crazy

I am a mint lover, even when it grows at such a ferocious speed that it threatens the lives of all the plants near it. That just means that I have to be vilagent and harvest and use as much as I can.

This drink is a fantastic way to use up some of that mint. I have been making and drinking fresh, hot, mint tea almost ever night for the past few weeks, but this weekend was way to freaking hot to be doing hot tea. So using my little noggin, I figured I should just chill it and added some lime because mint and lime are oh so nice together.  Now my favorite, and one of the most refreshing drinks after a long hot day.

 And limes just happen to be on sale this week…. 

The stuff. A few stems of fresh mint, a couple juicy limes, and water. And if you want, a little sweetener of your choice. (I used a tiny bit of honey..not shown) 

Start by placing  the mint, leaves and stem, into a big pot. Take a wooden spoon and gently muddle the mint. Add in the water, making sure that all the mint is fully sumerged (stuff it down in the pot)

Now place pot on the stove and bring water to a boil. Once boiling, remove from heat and let sit for a few minutes.

After steeping  for a few, pout tea into a big jug, straining out the mint leaves. Add any sweetener that you might like (just a little.. you can always add more later if you need it) and stick into fridge to cool, or just leave it on the counter if your want.

While you are waiting for the tea to cool, you might as well juice the limes (cause we need the lime juice) 

After the tea  is cool, add in the juice of the limes and mix/shake/stir around.

And thats it.. 

Serve in a cup with a few chunks of ice and a mint leaf garnish (not necessary but nice)

A nice tall glass of cold yumminess… Keeps one from melting completely in this crazy hot weather and keeps mint from killing everything around it.

  • 4 full stems of fresh mint
  • 6 cups water
  • 2-3 limes (I used 2 1/2 which was almost a full cup of juice)
  • sweetener to taste (a tablespoon of honey is nice)

Place mint, stems and all, into a large pot large pot. With a wooden spoon or sme type of blunt object, lightly muddle the plant. Pour water over mint and place pot on the stove. Bring water to a boil, then remove and let cool for a few minutes. Pour the mint tea into a big jar, straining out the mint leaves..(A half gallon ball jar works perfectly) If using a sweetener, add it to the tea while it is still warm.( little goes a long way… you can alway add a little more later!) Place mint tea into the fridge to cool. When the tea is cool, juice you limes and dump the juice into the tea and mix or shake.

It is now done and ready to serve. Pour over ice (thats in a cup) and serve with a fresh mint leaf (if your fancy)

THE LOVELY CRAZY

The official, unofficial, last weekend of summer. A little sad, but not really, cause I am super pumped for fall. I have my sweaters unpacked, my knitting started, and am looking forward to eating nothing but apples and pumpkins for a while. I am ready.

Now to get through the next few days of close to 90 degree weather. (Globaly warming… you suck!)

This past week of summer has been great. We have managed to get a lot of work crap done, but also had time to do a little river hopping, have a sleep over with a few littles, and go to a family gathering. The mr, being the most bestest guy, even hand mowed out little yard so we can actually sit outside without being surrounded by 3 ft tall weeds and hay. He is so nice. We did get a chance to pick a few apples from our community garden (not sure of the variety, but they are so good!) and we played on one of the coolest,most dangerous, playgrounds around here. All in all, not a bad way to leave the summer behind.

And now it’s Sunday and I am feeling good. Going to sit around and read, knit, garden, and drink so much coffee. And best part? Tomorrow is Labor Day! Three day WEEKEND!!! so I will probably make tonight a party night and stay up past 9:30 (yes, I am an old lady) and  binge watch the rest of season 1 of Playing House (fucking fantastic show) before it goes away and I don’t get a chance.

Lofty goals, but I think I can manage. 

So how about you? Is this a three day weekend for you as well? Hopefully so and hopefully you are spending it doing you, and having fun, relaxing and remembering not to labor or at least not labor to hard.

HEY HEY HEY!! HAPPY SUNDAY!!!

So what do you guys think of the new site? For reals, I would love to know cause I spent a shit ton of time making it and it would be nice to know if you like of hate it or if there is some weird wonky thing going on that I have not noticed. The sight itself has pretty much the same content as the old one, but is a little cleaner and easier to get to. (I think) And yes, I am still fin tuning so there might be a slight little change here or there over the next few weeks, but other then that….. WOO HOO!!!!

So apart from spending my week rebuilding this site,(I think I might have spent 20 hours on changing around fonts alone) the mister and I have been super busy busy with the rest of our life, a.k.a. crazy June apartment turnovers. Toilets, trash, painting, cleaning… You know, fun landlord stuff. Its been hectic, as usual, but we got it done.. And on top of that stuff,  we had a little or two at least 5 different times this week, so needless to say, we are some freaking tired party people here and today this very sunday, we are going to take a break. I see a river, a picnic, and a book in my future., followed by naping and the drinking of lots of coffee.

Note to anyone with wants or needs from us today….Leave us alone! (hehe, not really, but really)

The conversation I had with my little brother on his birthday…

Me- “Happy Birthday!”

Bro- “Thanks”

Me- “What do you want to do.. want to come over, I’ll make you something, anything you want…donuts, cake, pizza…”

Bro- “Make me a shelf, I got like seven books for my birthday”

Me- “Um, ok… what are you thinking?”

Bro- “Something to hold like seven books”

Yup, he got “like seven” books and needed a shelf……. I guess I didn’t realize that “like seven” was a unit of measurement. Man, I love my little brother,  but sometime I wonder about the kid. Anyway, Being that coolest big sister he’s got (and coolest big brother in law who did most of the work), we went along and made him a  shelf. Hopefully it holds those “like seven books”.

Here is the list of what you will need to make the exact shelf with the same measurements that we used…but feel free to use and adjust the measurements to your want or need.

  • 2 pieces of 1×8 common pine measuring 25 1/2 inches (sides)
  • 2 pieces of 1×8 common pine measuring 17 1/2 (top and bottom)
  • 1  piece od 1×8 common pine measuring 16 inches (middle shelf)
  • 2 pieces of 1×8  common pine measuring 4 inches (legs)
  • Wood glue
  • About 20 (having a few extra never hurt) 2 1/4 inch finishing screws

Tools

  • Drill
  • Either a circular saw or a chop box to cut the legs
  • Measuring tape
  • Speed Square or something to make a perfect straight line

The legs are the hardest part to make and really, it’s so not hard. Take both 4″ pieces of pine and cut in half ( each piece will end up being 3  5/8″.. how is that you ask? Well here is some knowledge… 1×8  pine actually measures 7  1/2 “…. nuts right?) With each piece, measure an inch in on the bottom and side…Draw a vertical line to connect and  then cut the line. Repeat last step with the second piece you just cut, then repeat the whole processes with the second piece  of 4” pine. These words seem a little confusing, just look at the picture above, it has all the measurements on it too. In the end, you should end up with 4 legs.

Take one of the 17 1/2″ pieces and with a straight edge, draw two lines form opposite corners to find dead center.  Measure 8″ from center on each line, that is where the legs are going to be placed. Working with one leg at a time, add a smear of wood glue to each leg as you are about to screw it down. Place leg on mark and sink a screw about an inch up from the inside of the leg, screwing at a slight angle (see photo)..

Phew.. this is the most complicated part of the whole shelf so once you get the legs on… its all smooth sailing.

Flip bottom onto legs and sink a screw in (1 inch in on both sides) into each leg.

Now grab the top piece (17 1/2 “) piece and the two sides pieces (25 1/2”). Add a bit of wood glue to the side ends and line up top piece with the sides.  Sink 2 screws into each side. If you have another person helping, have them hold the pieces for you while you screw the top into the sides.. if not, use the bottom to rest a side against (like in picture). 

Now flip over and screw the bottom piece into the sides……

Take a minutre…. Look at what you have accomplished! You have a kick ass square with legs!

Now place the shelf. We went for just about center.. 12 1/2″  from the bottom. Mark the measurements on both sides and use a square edge to draw a line.

Place shelf on the lines (The wood should fit in tight, you might even have to bang it a bit to get it into place….but you want it to fit nice and snug.) Now screw the shelf…two screws on each side.

Flip onto legs and ……….TA DA!!!! So Fancy!

 You now have a shelf to shelf things.. Simple as that. And I tested it out…It holds more the “like seven” books. A success! 

Note……If you are feeling like you need to, use a little wood putty to fill in the screw holes. You can sand it if you want. You might even want to stain or paint it. Up to you. The shelf is made and is yours to do what you will. Me, I like it just the way it is.

 I spent a lot of time indoors this week, due to the fact that my eyelids would freeze shut when going out for more than a few minute..(for real, walking to the gym the other day, I had my head tightly wrapped and the condensation from my breath went up, into my eyes, and froze.)  I mean, I love winter, I love the cold, but I am not a huge fan of -30 with wind chill… I get cold bones.  After that morning, the mister insisted on diving me…Love. So we (me, Nick, and especially Washer) might have felt a little trapped this week, and when trapped inside, we get a little antsy, but we have been trying to make the most of it. Cooking, baking, cleaning, drawing, reading, knitting, drinking lots of coffee and tea, and overall trying to stay warm (and sane) Yup. trying to ward of the cabin fever, especially this year, living in a little tiny bit of a room with one window..has been a little difficult. And I know it’s going to be a bitch when it hits. But it’s all cool, We have plans in the making, places to look forward to, things to see. It always helps to have an adventure awaiting to keep the fever at bay.

Anyway, not a bad week, maybe a little stuffy, but nothing to complain to much about. Here are a few of highlights that made(make) me happy.

The kitchen, living room, dinning room, office…all over great room., covered in piles of clothes. Sometimes listening to music and folding laundry can be so, I don’t know, peaceful. I just felt happy at this moment. (might be the fact that I know have some clean clothes and dish cloths)

  

The trash dog and I went for a lovely little hike by ourselves…It was so nice to get out of the house. We both really really really needed it that day. And look how handsome he looks.. so red against the world. 

 Standing in line at the grocery store, saw this magazine and started to laugh. I love Oprah…but now…I really love Oprah. Best magazine cover ever!

  I am doing little recipe testing and this situation in this pot is so freaking good! Just trying to work out a  few technical kinks.

I made a large quantity of banana dream (what I call banana ice cream). This stuff is like crack.. Once I start eating it, I can’t stop. I might overdose on bananas but I am ok with that. 

 

I went to a granite and marble showroom this week. And like whoa, so freaking cool. Walking among huge pieces  of gorgeous slabs of stone is kind of magical… and a little cold.

A basket of roots….More like a basket of rainbows. 

 

I currently don’t have a pretty vase of zinnias on my table, (these beauts are from this past summer) but I really wish I did. Fresh flowers are one of my favorite  things. This picture has inspired me, I am on the hunt for some pretty fresh.

FA LA LA LA LA….. LA LA LA LA….Happy eve of Christmas! What better way to celebrate the holidays than with the sweet and spicy flavor of ginger…in donut form! There is nothing better.

This donut is ideal for Christmas morning(or any other morning)..Warm and sweet, bright and tangy….The perfect balance to make everyone happy! It’s really fast and easy, so you can make a batch while the coffee is brewing, or you can even make them tonight and maybe leave a donut out for santa. Have guests over for the holidays…Dazzle them with a homemade donut. Hanging out at home by yourself…make some donuts…..traveling….well you are kind of screwed at the moment… but think about making donuts when you get where  your going. 

It all started a few Christmases back when the mister gifted me with a wonderful addition to my kitchen bakeware….a donut pan…. and it was a game changer. If you do not have a donut pan I suggest that you immediately go buy one.. No joke, it’s so worth it. The pan elevates a simple cake recipe to something more… A round of frosted soft cakeness. Circles with holes…..happiness. Hopefully you already have a donut pan, but if not, I trust you will soon.(you can still make this recipe without the pan, just bake it in a 9×9 pan. Yes, it will still taste amazing, but it’s that much better as a donut!)

 I am really excited to finally share a donut recipe with you all. I haven’t made a batch yet that hasn’t won a round of applause or at least a super double thumbs up. If you haven’t made donuts yet, bookmark this recipe and make it  priority for your next baking adventure

.What I started with….flour, baking soda, baking powder and salt whisked together. A little bowl of fresh ginger, powdered ginger and cinnamon.  Molasses, brown sugar, vanilla, and egg, melted butter and milk. Not a bad line up

The spiced mixed in to the dry….I used fresh and powered ginger but if you don’t have any fresh.. just add more powdered…but fresh adds that extra bit of gingery spiciness.

                                                   The wet ingredients all mix together. Molasses first, then the butter, vanilla, and the brown sugar, mix that then add the egg and the milk last.(avoid adding egg and melted butter together so it doesnt scramble)  Mix wet mixture with the dry until fully incorporated and smooth. 

A beautiful donut batter….Scoop small spoonfuls of batter into very well greased donut pan …smooth tops with a spoon or spatial….I may have added just a little too much batter the first round, , which is totally cool, it’s just the donuts came our with a bit of a spare tire around the bottom…a little more to eat I say.Out of the oven and turned onto a cooling rack…This beauties smell so very nice.

      While the donuts are cooling, prepare the icing. Mix  1/4 cup of cream cheese with 1/2 cup of sifted powdered sugar. Half of a lemons worth of juice with a teaspoon of lemon zest and mix…  add a splash or two of milk to get the desired consistency(this is a cream cheese glaze, it won’t harden like a sugar glaze)When the donuts are full cooled, dip into glaze….

Flip and let drip……and admire. I had to beat a few hands away while taking these pictures..I am telling you, people will do crazy things for a donut…..CRAZY THINGS…Just look at these. And for real, they really don’t take much time. You could totally whip these up in less than 30 minutes.. just make sure to have someone else do all the dishes!!!

Gingerbread Donuts with Lemon Cream Cheese Glaze

Ingredients……Makes about 8

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon  powdered ginger
  • 1 teaspoon fresh grated ginger
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tablespoons molasses
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 3 tablespoon melted butter

Lemon Cream Cheese Glaze

  • 1/2 cup powdered sugar
  • 1/4 cup cream cheese
  • 1 teaspoon lemon zest
  • half a lemon worth of lemon juice
  • a splash or two of milk

Instructions Preheat oven 350

Grease  donut pan In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, powdered and fresh ginger. In a small bow mix molasses, vanilla, brown sugar and melted butter. Stir and add milk and egg last.

Mix the wet with dry ingredients and until just combined. Scoop small amounts of batter to each donut mold… fill to about 2/3 full. and level out with a spoon if spatula. Stick in oven and bake for  10 minutes or until edges just start to turn golden brown and a cake test comes out clean.

While donuts are cooling, stir together cream cheese, sugar, lemon juice and zest. Add small splashes of milk until you reach the desired consistency(not to runny, think dish soap) Dip baked side of donuts into glaze, flip and return to wire rack.

And then you open your mouth…..EAT DONUT……..EAT!!!

Being that its Thanksgiving this week (YIKES!!!) and I am getting those holiday feelings like love and thankfulness, and blah blah blah…(Not to mention the stress and frustration) I want to stop and share with you some things that I love..Little bits of my happiness.

Vintage Tupperware melts my heart… I know that plastic is not fantastic, but I am obsessed. Yesterday I picked up a few pieces at the recycled house good store. I spent a little too much time shuffling around shelves, filled a basket them narrowed it down to three pieces. I think an old lady died and all of her stuff went there….RIP and thanks for the goodies!

   Blooming Christmas cactuses.. How can you not love these plants. I feel like mine aways bloom a week or two before everyone else’s. I have  seven and one  is from 10 years ago. It’s one of my very first house plants that I ever bought. Home Depot clearance rack for 50 cents… I also love Home Depot clearance plant rack

The first snow……Washer seeing the first snow….He is a snow dog and once the white stuff starts to pile up, he’ll be swimming in it. It some funny shit.

When my lover leaves for the weekend. I cleaned the holy hell out of my house. I left the toilet seat down and it stayed down. Had our car all to myself and ate dinner on the couch with a book and the computer…Yes. that is a gigantic bag of spinach..Dont judge.

When My lover comes home from being gone for the weekend. Even my  food was missing him.

This Brick wall at the YMCA. I bike there every morning and lately I have been hitting the sun just right and seeing the greatest shadows. That;s my bike.

A finished knitting project!! I started this hat a few weeks ago for one of my sisters littles….I then proceeded to start a few other projects and forgot about it. After a few days of freezing cold weather and a sister who kindly reminded me that my nieces ears were about to freeze off for lack of hat, I went along and finished it for her. I know, I am the best aunt.

I am a mint lover, even when it grows at such a ferocious speed that it threatens the lives of all the plants near it. That just means that I have to be vilagent and harvest and use as much as I can.

This drink is a fantastic way to use up some of that mint. I have been making and drinking fresh, hot, mint tea almost ever night for the past few weeks, but this weekend was way to freaking hot to be doing hot tea. So using my little noggin, I figured I should just chill it and added some lime because mint and lime are oh so nice together.  Now my favorite, and one of the most refreshing drinks after a long hot day.

 And limes just happen to be on sale this week…. 

The stuff. A few stems of fresh mint, a couple juicy limes, and water. And if you want, a little sweetener of your choice. (I used a tiny bit of honey..not shown) 

Start by placing  the mint, leaves and stem, into a big pot. Take a wooden spoon and gently muddle the mint. Add in the water, making sure that all the mint is fully sumerged (stuff it down in the pot)

Now place pot on the stove and bring water to a boil. Once boiling, remove from heat and let sit for a few minutes.

After steeping  for a few, pout tea into a big jug, straining out the mint leaves. Add any sweetener that you might like (just a little.. you can always add more later if you need it) and stick into fridge to cool, or just leave it on the counter if your want.

While you are waiting for the tea to cool, you might as well juice the limes (cause we need the lime juice) 

After the tea  is cool, add in the juice of the limes and mix/shake/stir around.

And thats it.. 

Serve in a cup with a few chunks of ice and a mint leaf garnish (not necessary but nice)

A nice tall glass of cold yumminess… Keeps one from melting completely in this crazy hot weather and keeps mint from killing everything around it.

  • 4 full stems of fresh mint
  • 6 cups water
  • 2-3 limes (I used 2 1/2 which was almost a full cup of juice)
  • sweetener to taste (a tablespoon of honey is nice)

Place mint, stems and all, into a large pot large pot. With a wooden spoon or sme type of blunt object, lightly muddle the plant. Pour water over mint and place pot on the stove. Bring water to a boil, then remove and let cool for a few minutes. Pour the mint tea into a big jar, straining out the mint leaves..(A half gallon ball jar works perfectly) If using a sweetener, add it to the tea while it is still warm.( little goes a long way… you can alway add a little more later!) Place mint tea into the fridge to cool. When the tea is cool, juice you limes and dump the juice into the tea and mix or shake.

It is now done and ready to serve. Pour over ice (thats in a cup) and serve with a fresh mint leaf (if your fancy)

Wowzers…Is it for real Memorial day weekend? Where has all the time gone? Let’s talk about a week gone by fast. My brain is on complete overdrive and I am having a hard time keeping it from exploding…SO MUCH TO DO! (Not bad stuff, just a lot of stuff) But lo, that’s life right? There is always a lots of “stuff” to do, but today I am going to try and let that stuff chill and maybe give myself a few hours of coffee, (so much coffee) reading a book in the sunshine, gardening, and just some overall chillin. 

Hopefully.

And hopefully you party people out there will be able to do a little of the same, or at least the chillin part. It is a 3 day weekend after all (not for us, but whatever)

I love brick and there is one street in all of burlington (that I know of) that has brick sidewalks. I like to walk down it a lot. 

Nurse lady making food… I compare this to a big foot sighting. I have heard stories that she cooks,but have never actually witnessed it myself. (Just kidding….kinda)

The other day the mister and I started reminiscing about some of our earliest memories of what our parents fed us or what they used to eat when we were growing up. One of the dishes that we both remember eating was the classic creamed beef on toast, or as my mom use to call it, shit on a shingle.   Yup, shit on a shingle. (who ever started calling creamed meat on toast is a freaking genius) I think that as a kid, I liked  the dish just for the mer fact that I could say the word shit and get away with it.  I think my mom liked it for few reasons; she could make a big butt load of it really fast, for a crap load of kids, on the super cheap. And I think that she just really like it.  

Shit on a shingle is one of those foods that I like to call “trash food”, you know stuff like beefaroni or pork and beans. Stuff that we all loved as little kids but might think twice about feeding to anyone now. ( I’ll still feed nick a can of beefaroni.. he likes it) As a throwback to our earliest food memories, (also a lack of food in the house and wanted to make something fast, easy, and cheap.. thanks mom!) I made the mister my rendition of the classic. Creamy Lentils and Mushrooms on toast. Not quite as trashy as creamed beef (lentils, mushrooms and onions are not trashy) but you get the same reminiscing feeling. I guess I could call it something like “stuff on a shingle” or lumps on a shingle”, but what kid (or adult)  would want to eat that. Let’s just stick with shit, it makes it more awesome to eat it.

The shit….. A few mushrooms, a bit of onion, cooked lentils, flour, milk, oil, salt and pepper, and garlic powder. And the shingles.. 2 pieces of thick white country bread. Slice the mushrooms and the onion and toss into a skillet with a drizzle of oil. Cook on medium heat until browned and fragrant..Remove from pan.In the empty pan still on medium heat, add in the olive oil and the flour. Whisky constantly, slowly add in the milk. Keep whisking until sauce thickens. Remove from heat. Add in  salt, pepper, and garlic powder.Add the mushrooms and the lentils into the sauce and give it a good mix. Oh, and don’t forget to  toast up the bread. Now dump that shit all over those shingles! Oh the memories.

If you need to, make it classy by serving it with a cloth napkin and a nice fork and knife. But eat it however you need to. (As kids we like dirty hands and no fork, preferably with a big tall glass of overly sweetened red flavored kool-aid)

 Shit on s Shingle (Creamy Lentils and Mushrooms on Toast)

One serving

  • 1 cup cooked lentils
  • 2- 3 mushrooms
  • 1/2 small onion
  • 1 cup milk (cow, nut, plant… whatever you want)
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 1 teaspoon garlic powder
  • salt and pepper
  • 2 pieces of nice thick but soft white sandwich bread

Slice the mushroom and onion and toss into a pan or skillet with a drizzle of oil. Cook on medium heat until brown and fragrant than dump onto a plate. In same skillet, add the oil and the flour and mix with a whisk while slowly adding in the milk. Keep whisking until sauce starts to thicken. Turn heat to simmer and add in the cooked lentils and the sautéd mushrooms and onions. Push down the bread in the toaster.. and when it pops up, dump the shill over it.

 I’ll let you know now, I am a make and eat soup all year long person. I can think of few things better then sitting outside, basking in the sun, hopefully with a light wind, a book in hand, enjoying a nice big cup of some good homemade soup. (Doesn’t that sound so freaking lovely?) This soup right here is perfect for just that. Parsnips are the best, kind of like a big white sweet, yet starchy carrots. And cooked together with a little bit of light and lemony thyme, rich earthy turmeric and a couple more chopped veggie….. you got yourself a nice thick and fragrant bowl of happiness that fills you up without weighing you down. It’s food you can eat that fills you up, leaves you feeling cozy, yet still wanting to hop on a bike or lace up the running shoes.  Hearty without the feeling of all the heaviness.

A perfect soup for spring! (or summer, winter, or fall)

The stuff. Parsnips, carrots, onion and garlic. Thyme and turmeric, salt and pepper. the tinniest bit of oil and water (water not shown)Chop all the veggies and the garlic, drizzle a dutch oven or a pot with oil, toss in the veggies. Add the turmeric, the thyme, and 1/2 cup of water. Sweet sweating the veggies. Turn pot on medium and cook until the water completely cooks out. When the veggies start to brown and stick to the pot, deglaze with water. Give a good stir and keep cooking. Repeat the deglazing process until the veggies are super soft and ready to blend. (I did this 4 times.. it only took 10 minutes)Add enough water to cover the cooked veggies. And now blend the heck out of it.. Go as smooth or chunky as you want. I blended as smooth as I could get with this crappy immersion blender. (Blender on loan until I finally decide on, and buy a new one)And there you have it. Scoop into bowls, add lots of cracked black pepper, and go to town. I made enough to save a bowl for later…  it didn’t last for later. 

Soup so good.

Parsnip Thyme and Turmeric Soup 

  • 4 large parsnips
  • 2 carrots
  • 1 whole onion
  • 3-4 cloves garlic
  • 2 teaspoons thyme
  • 2 teaspoons turmeric 
  • salt and pepper
  • olive oil
  • water

Dice up the parsnips, carrots, garlic and onion and place into a large dutch oven or pot. Drizzle with a bit of olive oil,  sprinkle on the spices, salt and pepper and add about 1/2 cup of water. Turn heat on medium and start cooking down the veggies. Once the water evaporates and the veggies start to caramelize, deglaze pot with about a 1/2 cup of water. Give pot a stir, and continue to cook until water evaporates.  Repeat this 2-3 more times until the veggies are super soft and fragrant. 

When the  veggies are ready, add enough water to the pot to submerge the veggies. Bust out the immersion blender or dump into a blending device and blend until smooth (or the consistency that you want) Have a cup of water ready to thin out if needed. When blended, taste for salt and pepper, add more if you want, and cook on low heat until you are ready to serve.

Garnish with a lot of good cracked pepper

Eat from a vessel, use a spoon

The bounty of spring is upon us. Asparagus is everywhere and I have been embracing it.. smelly pee and all.  And along with all my spring veggies and smells,  I have grabbing for more springy spices. I go through seasonal spice kicks, like cinnamon and ginger in the fall, curries and chills in the winter. And for spring, I am big on sumac. If you haven’t heard of it or tasted it, it kind of taste like a tangy salty lemon..without actually having any salt. And its a really pretty, a bright red, almost purple color. I use it on a lot of things, especially veggies and bean dishes, sometimes as a lemon replacer, but mostly to add another level of tangy flavor. It’s fantastic, really great for all those springy time dishes. Nice and bright!

 This dish is perfect made and eaten right away, but it’s one of those dishes that tastes even better the day after. Also it’s good and safe to serve room temperature. (think lunch box or a picnic!) And did I mention healthy? Protein packed quinoa and the lean green asparagus, I mean come on. You won’t feel an ounce of guilt for eating a hugmongo bowl of this stuff because you should, so it’s totally ok.

Eat away! 

The stuff of the stuff. Quinoa and asparagus for the base. Sumac, lemon, garlic, onion, salt and pepper and a little splash of oil for the dressing. 

Note. Sumac is not always the easiest spice to find. I know that its available online (what isn’t) and that some health food store or herbal apothecaries carry it, but i have ye tot see it at a conventional supermarket. And once you find it, buy a good amount cause you will also fall in love with it and use it on everything. 

     Start by making the dressing. You want to have it sit for at least 10 minutes. It will be perfect by the time the quinoa is done. Mince the garlic, dice the onion and juice the lemon. Stick it all into a jar with the sumac, a pinch of salt and pepper and about a teaspoons worth of olive oil. Stick a lid on the jar and shake shake shake. and let it sit.

Now you should make the quinoa.. Water and quinoa go into pot, high heat until boiling,  topped with a lid and set to simmer for about 15 minutes. 

When the quinoa is simmering, cook up the asparagus. Add a drizzle of oil, to a pan and a few splashes of water. Place trimmed and chopped asparagus to pan and sprinkle with salt. Cook on medium heat for about 8 minutes, or until cooked but still has a nice crunch to it. Take off heat and add the dressing to pan.  Let it sit and marinate for a few minutes.When the quinoa is tender, fluff with a fork and add to the skillet with the asparagus and dressing. Toss around to make sure all the quinoa gets dressed. Take a taste.. does it need a little salt and pepper? Add a pinch if it does.Pile into a bowl, add a bit of cracked pepper.. and eat.

Or… Idea! Make this dish and pack it into a jar. Maybe grab a baguette and some hummus os some other  tasty foods and take yourself and a friend out for a picnic.

Quinoa and Asparagus with Sumac Dressing

serves 3-4  as a side dish or 2 as a main meal. 

  • 1 cup quinoa
  • 2 cups water
  • 8-10 asparagus 
  • olive oil

For the Dressing

  • 1 tablespoon sumac
  • 1/2 small red onion
  • 2-3 cloves garlic
  • Juice of 1 jumbo lemon or 2 small lemons
  • 2 teaspoons olive oil
  • salt and pepper

Start but making the dressing. Mince the garlic and finely dice the onion. Place in a  jar with the sumac, the juice of the lemon, a pinch of salt and pepper, and a little splash of oil. Top the jar and shake the crap out of it for a minute. Let sit and meld. (This dressing can be made ahead of time and is fantastic on all sorts of everything)

In a large pot, add water, quinoa and a spindle of salt. Bring to a boil, cover , and reduce heat to simmer. Let cook for about 15 minutes or until water has completely absorbed.  When the quinoa gets going, trim the woody parts of the asparagus and chop the remain asparagus into inch long pieces. Toss into a lightly oiled skillet with a few splashes of water, sprinkle with salt and put on medium heat for about 8 minutes, or until asparagus is cooked, but still crispy. Take off heat and add the sumac dressing. Once the quinoa is done, fluff it with a fork and toss it with the sumac dressed asparagus. Scoop into a bowl, add some cracked pepper. Bring food to face and eat. 

Any leftover? This dish is fantastic serves cold or at room temperature.

Is it really for real April? Where has all the time gone and where the hell is the warm weather? It’s not funny anymore. I am officially OVER winter!  Ok, so now that I got that off my chest…..

Last night the misters Dad came over for a long awaited dinner accompanied by talk of life goals and what her referred to as “narratives” or the story of our lives. Some deep shit to be talking about at dinner, especially with zero alcohol to be had.

Me, being so super awesome, was all up in taking charge in making the food. Except that  last night I didn’t have a bunch of time and honestly, much energy to be doing anything.  And sure, I could have just made a pot of spaghetti, but that just felt like cheeping out. So Polenta it was. And because I just made a hug pot of navy bean, those were going into the polenta too.

Beany polenta baked in the oven with a tomato sauce cooked on the stove. About 5 minutes of hands on time and an hour to cook it all. It’s the perfect meal to make when you have guests coming over. Fast prep, into the oven and on the stove, and then you have an hour to clean and make yourself presentable. See, I am a thinker. (I ended up skipping the making myself presentable part… I stayed in my gym clothes.. no need to impress family right?) Then after about and hour you end up with a hearty healthy pretty meal, all from scratch, that seems like you spent the afternoon cooking. When in fact you spent the past hour vacuuming and watching Gilmore Girls. 

The Stuff. Cornmeal, water, navy beans and parmesan for the polenta. Crushed tomatoes, garlic, dried basil, onion, carrot, zucchini, and summer squash for the sauce. Salt, pepper, and olive oil all around.

Cornmeal and water go into a cast iron skillet (or any oven safe dish) with a pinch of salt and pepper. Give it a little mix and stick it into the oven at 400 degrees .

Once the polenta is in the oven, make the sauce. Chop up all the veggies and stick into a dutch oven or sauce pot with a pinch of salt, the basil and a good drizzle of olive oil. Stick on medium heat and let veggies cook down a bit.  When the veggies are tender, add in minced garlic, crushed tomatoes and another drizzle or oil.  Turn burner to lowest setting and simmer (giving it a stir every now and then) for about 45 minutes or until the polenta is done. After about 30 minutes when the water had pretty much all cooked down, take the polenta out of the oven and stir in the beans, the parmesan, a tablespoon or two of olive oil and salt and pepper. Smooth top out and sprinkle with more pepper, parmesan and drizzle with a bit more oil. Stick back into oven for another 1/2 or until polenta  has formed a crust and no longer giggles when you wiggle the pan.

Pull polntna from the oven and let sit for at least 1o minutes.

Two big spoons and a pile of plates. Have the people serve themselves!

Baked Navy Bean Polenta with Chunky Tomato Sauce

Serves 4 hungry people

For the Polenta

  • 1 1/2 Cups Course Ground Corn Meal
  • 4 Cups Water
  • 3 Cups Prepared Navy Beans (Or just use to cans)
  • 1/2 Cup Parmesan Cheese or Vegan Parmesan (Optional)
  • 3 Tablespoons Olive Oil
  • Salt and Pepper

For the Sauce

  • One 28oz Can of Crushed Tomatoes
  • 1 large Carrot
  • 1 Small Onion
  • 4 (or more ) Cloves Garlic
  • 1 teaspoon Dried Basil
  • 1 Small Zucchini
  • 1 Small Summer Squash
  • Olive Oil
  • Salt and Pepper

Preheat oven to 400

In a large skillet, mix together the cornmeal and the water and add a good pinch of salt and pepper. Place into oven for about 30 minutes or until the polenta starts to congeal at the edge of the skillet nd most of the waster has cooked down.

Remove skillet from oven and with a whisk or wooden spoon, mix in the beans, the parmesan (if using) and 2-3 tablespoons of olive oil. Smooth out mixture, sprinkle with salt, pepper, parmesan and drizzle with olive oil. Stick back into oven for another 30 minutes or so.  Polenta is done when it no longer wiggles when you giggle the skillet.

For the sauce

Small dice the carrot and the onion and stick into a medium dutch oven oor sauce pan with a drizzle of olive oil. Place on medium heat and cook until the veggies are tender. Add in tomato, minced up garlic and basil. stir and let simmer on stove top for about 45 minutes. When you place the polenta back into the oven for the second bake, dice up zucchini and squash and add to sauce. Stir and keep on simmer until ready to serve.

Once the polenta has completely cooked, remove from oven and let sit for at least 5 minutes…10 is better to solidify.

Spoon big piles of polenta on a plate or in a bowl, top with a big heap of tomato sauce. Sprinkle with a little more parm  and maybe another dash of pepper .

Eat…..Spoon or fork is recommeded.

Last night I had my sister and her kiddos come over for dinner. Nothing fancy, nothing to complicated,  just something  fast and something that I knew the littles would eat.  Spaghetti and meatballs, except replace meatballs were bean balls So they came, we played, did a little drawing and had a bit of first grad gossip. Then came  dinner time  when I was told by one little that she was not going to eat.. She had pasta for lunch. Well I made her sit anyway and she mainly just ate carrots (I was ok with that) Then the other little was all into his pasta and bean balls, 1 down, 3 more to go, when the mister let slip that the meatballs were not really meat. He ate around the remaining balls, said he didn’t want them anymore. And my sister, well she doesn’t eat anything that is not pizza.

Good thing a neighbor stopped by while we were eating. He had a few of the balls and told me that they were amazing. I needed someone to tell me that.  

So yeah, the littles were not overly enthused with the ball, but the Mister the Neighbor, and I thought that they were awesome and delicious. Maybe next time I will make sure that  pasta was not lunch and tell Nick to keep his mouth shut and stop talking about balls at the dinner table.

I feel like I don’t need to tell you how to boil pasta or heat up the sauce, so I left that portion of the recipe out. I have faith that you are capable in doing that part without my instruction.

The bean ball stuff. Chickpeas (soaked and cooked or canned), sweet potato, carrot, onion, and some chick pea flour. Dried garlic, basil and oregano. Salt and pepper and a little bit of olive oil. Small chop all the veggies and toss them and the dry spices into a skillet with a drizzle or two of olive oil. Stick on medium  heat and add about 1/4 cup of water to pan. Top with  slid and let veggies cook down until soft and fragrant.

Add the cooked veggies to a food processor or blender with  the rinsed and drained chickpeas. The mixture gets pulsed until combined,  keeping a little bit of chunkiness.  Now go warhead and taste  the mixture. Add another pinch or two of salt , pepper or any of the spices that you think it need.  Dump the mixture into a bowl and mix in the chickpea flour than stink the mixture into the fridge for a least a 1/2 hour. Cooling to off is really important to forming the balls. If you don’t, it’s much harder to keep mixture from falling apart and sticking to your hands.

After the mixture has had time to cool and set, start rolling the mixture into balls roughly the size of ping pong balls. In a shallow bowl, add a few tablespoons of the chickpea flour with a pinch of salt, pepper and garlic powder. Take each ball and roll in flour and place each ball on a well oiled baking sheet. When the balls are all rolled, stick into the oven and bake away for about 30-40 minutes, flipping balls after about 20.  After you flip the balls, get the pasta ready so its finished about the same time the balls are done.You pasta and sauce is cooked and the balls are all crispy and oh so nice.

Serve balls over pasta with sauce and eat with a fork.

Your day is now complete.. balls and all.

Spaghetti and Bean Balls

makes about 20 balls

  • 4 Cups (or 2 cans) Cooked, Rinsed and Drained ChickPeas
  • 1 Small Sweet Potato
  • 1 Small Onion
  • 1 Carrot
  • 1/4 Cup Chickpea Flour plus extra to roll balls in
  • 1 Heaping Teaspoon Basil
  • 1 Heaping Teaspoon Oregano
  • 1 Heaping Teaspoon Garlic Powder
  • Olive or Vegetable Oil
  • Salt and Pepper
  • Your choice of Spaghetti (Use Vegan and or Gluten Free if needed)  Prepared as package recommends
  • Marinara or Pasta Sauce of your choice

Preheat Oven to 425 degrees

Small dice the carrot, onion and sweet potato and toss into a skillet on medium high heat with a splash of oil. Add in the dry spices and add in about a quarter cup of water. stir and cover the skillet with a lid and let the veggies cook down until the water has evaporated and the veggies are tender. 

Add rinsed and drained chickpeas to a food processor with the cooked veggie mixture. Pulse together until the mixture is combined and slightly smooth, but still with a little bit of texture left.Place bean mixture in a bowl  and mix in the 1/4 cup of chickpea flour. and stick in the fridge for a least a 1/2 hour to cool. (Mixture can be made a day ahead if you want)

Once the mixture has time to cool and set up , remove from fridge and with a light head, roll mixture into ping-pong sized balls. In a separate shallow dish add a bit of chickpea flour with a pinch of salt and pepper. Roll each ball in the flour mixture and place balls on a well oiled baking sheet. Once balls ae made, stick into the oven and bake for about 30-40 minutes, flipping after about 20 minutes. The balls are done when the outsides are once and golden brown and crispy. After about 30 minutes, get to cooking your pasta and mariana sauce.

Once the pasta and sauce is done, plate it and toss on some of those awesome bean balls!

Bean balls also make fantastic bean ball sandwiches or bean balls on a toothpick. 

 Being that it was St. Patricks day this week and lots of folks buy up a good amount of cabbage, I figured that this is a good time to get people to try one of my most favorite of favorite meals…..Beet bean and cabbage steaks. I love to play around with food, how to pair textures and colors plus tastes while trying to make whatever I am making healthy and balanced. This is one of my fav creations. And sure,  this may seem like a somewhat weird combo, maybe a little like a extremely hippy dippy vegan fake meat thing, and you might be kind of right, but screw if it doesn’t taste like A-mazing. First off, notice how freaking dang pretty this thing is. The roasted beets bring a earthy hearty flavor but also pack a huge punch of color, especially when blended together with the ever so sweet white bean, which  brings a nice mellow taste and a great serving of protein. (Beets and beans are meant for each other). Spread that  brightly colored, tasty mixture onto of a huge slab of one of my favorites, roasted cabbage with all its crunch and cabbagy flavor and you got yourself a hearty healthy meal of deliciousness.  

So maybe this might seem a little out of your normal food routine, but why not try it? Trust me….you will love it and everyone you make it for will think you are a number 1 badass too.

Cabbage, white beans, and beets. There is a lemon involved, but it didn’t make it into the picture.

Notes…. I used white beans, but I have also done this with chick peas and lentils. All are fantastic. Also, I did not peel my beets because I never do.(I do not peel anything the skin is full of goodness and I love the taste) If you don’t want to eat the skin, then peel them. Cabbage is cut into inch thick slabs… I like to us the inter most part of a cabbage head cause I like the core. But use any cut that you want.  2 beets are chopped into chunkers and both the cabbage and the beets are placed on a lightly oiled baking sheets, seasoned with salt and pepper,  and stuck into the oven for 20-25 minutes at 400 degrees.

Once the beets are tender and the cabbage is cooked to a nice withered golden pretty, take out of the oven, but leave the oven on.  Leave the cabbage on the pan but throw the beets into a blender or a big bowl if using a hand blender  with the white beans

    Beans and beets get pureed together. Add the juice of 1/2 a lemon (or the whole lemon, depending on your taste) and a pinch of salt and pepper. With a big spoon or spatula, scoop equal amounts of the bean/beet mixture on top of the cabbage steaks and spread around. Sprinkle with cracked pepper and place back into oven for another 5-10 minutes. (You could totally skip the second bake, but I like my cabbage well done and crispy)

Oh ho boy… And with a good squirt of mustard to finish off… I could eat this all day, everyday

Beet and Bean Cabbage Steaks 

Makes 2 Thick Cut Steaks

  • 1/2 head of cabbage (green or red)
  • 2 cups or 1 can of cooked white beans
  • 2 medium beets
  • 1 lemon
  • salt and pepper
  • Mustard (Optional)

Preheat Oven to 4oo degrees

Cut two 1 ish inch thick rounds of cabbage from the widest part of the head. Place on a lightly oiled baking sheet. Chop beets into chunks and toss on same baking sheet.(Peel if you want) Sprinkle everything with salt and pepper. Stick into oven for 20-25 minutes or until the beets and cabbage  are tender. Remove veggies from oven and place roasted beets into a  blender (or bowl if using a hand blender) but leave the cabbage on the baking sheet. Add the white beans, the juice of half a lemon, and salt and pepper to the beets and puree until smooth. Scoop equal amounts of the mixture to each cabbage steak, sprinkle with pepper and place back into oven for another 5-10 minutes to give the beans and beets a nice crunchy crust (You can skip this step if you don’t want to be crusty)

Remove from oven, stick on a plate and drizzle with mustard….Fork and knife are good ways to eat it, but eating it with you fingers makes less dirty dishes.

Happy St Patricks Day!!!! As a kid, St Patricks day always meant green milk, green eggs, and those nasty gold foil covered chocolate coins. (you know, from the pot of gold) Not to mention all the leprechaun hunting and  pinching.  In my family, if you were unlucky enough to forget to wear green, you ended up as a walking target. It all started out nice an innocent, a pinch here or there, but by the end of the day, someone would end up pinching a little to hard or maybe just one too many times and the game would go from pinches to punches.   

Ahh, memories. 

Now as an adult (kinda adult) St Patricks is celebrated a little differently. The little ones in the family still get their green milk (which they are told is leprechaun pee) and those nasty gold coins, but I think the pinching has stopped.( a great tradition lost)  I myself don’t have any littles at home so no little leprechaun games or gross dyed food for me.  Nope, in my house we celebrate with a few beers and a more traditional irish dish, Colcannon. Mashed up potatoes with cabbage and kale… I mean, can it get much better? It can when you use red potatoes and red cabbage. Not only is it so tasty tasty, but it is so pretty pretty. No need for green milk or nasty candy. 

But I still make sure to wear green and you might find me doling out a pinch or two. 

  The stuff…. Super pretty red potatoes, red cabbage, shallots, kale, salt and pepper, and olive oil.

Note. If you do not have or want to use red potatoes, russet or white will work, it just won’t be as pretty. 

   Dice up the pretty potatoes and stick them into a pot and fill up with water and add in a good tablespoon of salt.  Stick on high heat and bring to a boil, then turn the heat down to medium  and cook those taters until super fork tender. (bring them to the edge of falling apart)

While the potatoes are boiling, chop up the cabbage, shallots, and the kale and stick into a big skillet with a good drizzle of olive oil. Sauté on medium heat until soft and tender.

Once the potatoes are super tender, drain the water and dump them into the pan with the sautéed veggies. With a potato masher or a fork, mash up the potatoes and mix in the veggies, adding a drizzle or more of olive oil as you go. (Start with a drizzle and work your way up until it tastes good to you) Salt and pepper to  taste. 

The most pretty pan of smashed up potatoes that I have ever seen. Eat as a side dish or even a light main dish. Fork is a good utensil to use, but I found that my fingers worked just as well.

Have a great happy day full of green, potatoes, and pinches. Maybe even a leprechaun or two!

Red Potato Colcannon

  • 5-10 Red potatoes Red Potatoes depending on the size (about 3 1/2 – 4 chops chopped)
  • 1 Cup Chopped Red or Green Cabbage
  • 1 Cup Chopped Kale
  • 1-2 Shallots
  • Olive Oil
  • Salt and Pepper

Rinse and dice potatoes and place into big pot. Cover potatoes with water and add about a tablespoon of salt. Place on high high heat and bring to a boil. Turn heat to medium low and let potatoes cook until super fork tender. While potatoes are boiling, chop up cabbage, shallots and kale and sauté in a large cast iron skillet (or any skillet) with a good drizzle of olive oil.  Once the potatoes are done, drain water and add potatoes to the skillet with the sautéed veggies. With a potato masher or fork, mash the potatoes and mix with the veggies, adding a drizzle or two (depending on your taste) of olive oil as you go. Salt and pepper to taste.

Serve from skillet or dump into a fancy dish with a big spoon.

Eat as a main dish or as a side….Good hot, warm and cold.

  There is irish soda bread in your future. I can see it. A nice hardy hunk slathered in butter and honey, crumbs all over the place.  So all you have to do know is make it. 

I remember reading somewhere (I wish I could remember where) that irish soda bread is just four ingredients, flour, sea salt, baking soda and buttermilk and adding  anything else would make  it a cake. So when I decided to make irish soda bread, thats all I used. ( I made it with some wheat flour) What you end up with is a highly dense, super fragrant, soft, chewy bread with a crunchy crust. Definitely not a cake.

Note….You can for sure add in a bit of sweetener or even little fat to make it richer and softer, but then it wouldn’t be bread (or so that’s what I read) There are tons of other recipes out there that have other stuff in them. This is just a really simple basic recipe. 

White whole wheat flour and all purpose flour mixed together. Salt baking soda and buttermilk. That’s it.All the dry whisked together and in goes the buttermilk. Mix together until dough starts to form then dump onto a floured surface.  Handling dough as little as possible, knead into ball.

Place on a baking sheet and dust with flour. Take a sharp knife and cut  an X through the top about 1/2 inch deep.

Stick in into the oven for 50 ish minutes, or unit la tester stuck into the middle comes out clean and there is kind of a hollow thunk when tapped on. 

And now you have a very pretty, dense hunk of irish soda bread. 

Cut and serve with butter and honey (thats how the mister likes it) or whatever you want to eat it with.

Irish Soda Bread

  • 1 cup all purpose flour 
  • 1 cup white whole wheat flour (or you can use all purpose) 
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk (or your choice if milk plus a tablespoon lemon juice) 

Preheat oven to 375

In a large bowl, whisk together flours, baking soda and salt. Mix in buttermilk until the dough starts to come together. If the dough seems to dry, add another splash or two of milk. Dump out dough onto a floured surface and shape into a ball. transfer onto a baking sheet, dust with flour and cut a x about 1/2 inch into the top. Stick into oven for 50 minutes until a toothpick comes out clean and the bread makes a hollow sound when tapped.

Let cool enough to handle.

Cut into and serve with a smear of whatever you want

Best eaten within a day or two
