Every year I look forward to St Patrick’s day.. And not because I am Irish, (which I am) or because I want to drink on excess (which I do not) and no,%u00a0 green eggs and ham are not something that I plan on making. No Ido not look forward to any of those things (although I actually do like to pinch the littles that wear no green and talk about pots of gold and rainbows) I love this time of year because cabbage is always on a freaking super sale everywhere you go.%u00a0 Something that is usually 80-99 cents a pound goes down to like 20 cents a pound. And for someone that eats like 10 heads of cabbage a week, this is a hug savings. SO yeah, I buy so so much (I have already bought 12 heads, but I actually plan on buying a full case before the sale is over)
No, I am not crazy, I will eat it all….. and I am going to be making so much sauerkraut. Woo hoo!
But until then. A cabbage pot roast. Yes. I remember growing up my mom would make pot roasts once in a while. A big pot full of big chunks of veggies topped with a big slab of some kind of meat. I never liked the meat, but I always loved the big chunks of the veggies at the bottom of the pot. So I figured I would make a big pot roast, replace the meat with a head of cabbage (I have so much) and add beans because protein and because they are just so good. . And when it’s all cooked and said and done, you end up with a big pot of plump and so flavorful veggies and beans and the most tender wedged of roasted braised cabbage.%u00a0 This is my kind of pot roast.
Now go quick.. the cabbage sales will be over soon.
The stuff. One good sized head of cabbage, a few carrots, a big onion, and a hunk of rutabaga. Also have some dried kidney beans, caraway and fennel seeds, dried ground mustard, a bay leaf, some garlic, and salt and pepper. And water… water is needed.
Note. You can use just caraway or just fennel and you can replace or even add a potato in place of the rutabaga.
Dried beans, fennel and caraway into a pot with water. Stick the pot on the stove ans bring to a boil, then to a simmer to give the beans a quick head start before going into the oven.
While the beans are simmering, dice up the garlic and chop up the veggies into big chunks… you don’t want small chunks or they will kind of turn to mush while cooking.
And turn over the cabbage head, take a knife, and slice a deep x into the core. DO THIS or else the inside of the cabbage will not cook through. Oh and preheat the oven to 375.

Top those beans with all the chopped veggies,(don’t stir them in., you want to keep the bean under submerged in the water) sprinkle those with the mustard, salt and pepper and place that lovely cabbage head right on top…
Place a lid on the pot and slide it into the oven to cook away. It’s going to take a bit of time (about an hour) but it’s pretty much hands off. Just take a look after about 45 minutes, check the bean doneness, add in another cup or so of water and place lid bacck on and cook for another 12-20 minutes until the beans are done. When they are, take the lid off, crank the oven to 450 and cook for another 15 or so minutes until the cabbage gets all golden brown
Look at that… Tender roasted veggies, plump beans. Everything about this is right.
Grab a knife and cut the cabbage (its so tender) into big wedges.
A wedge into a bowl along with a big spoonful or two of the beans and veggies..
Finished with a dash of salt and pepper and (not shown here,) lots of mustard.. Oh cabbage… you are so good!

serves 3-4
1 cup dried kidney beans
3-4 cups water
a medium sized head of cabbage
2-3 carrots
1 large onion
%u00a0a potato or a a small rutabaga(or both)
1 heaping teaspoon caraway seeds
1 heaping teaspoon fennel seeds
1 heaping teaspoon ground mustard
a bay leaf
salt and pepper
Place the fennel, the caraway, and the bay leaf into a large dutch oven along with the dried beans and 3 cups of water. Place on the stove and being to a boil then, turn heat to low and simmer the beans for about 15 minutes.
While beans are simmering, chop up the carrot, onion and rutabaga into big chunks and dice up the garlic. Take head of cabbage and slice a deep x into the core.
Preheat oven to 375
Once the beans have simmered a bit, add in the chunks of veggies, the ground mustard and salt and pepper (Don’t stir, you want to keep the bean submerged in the water). Place the head of cabbage right on top of the veggies and sprinkle with salt and pepper.
Place a lid on the pot and stick the whole thing into the oven. After about 45 minutes, check the roast and the beans for doneness and adding in another cup of water id needed. Back into oven with the lid for another 15-20 minutes or until the beans are tender Onnce they are, remove the lid form the pot and crank the oven up to 425. Cook for another 15 minutes or so until the cabbage turns a nice golden brown.
Remove from oven, let cool for a few minutes, cut the cabbage head into wedges and serve it up with big spoonfuls of beans and veggies.
My brain is buzzing with all sorts of happy fall feelings. Warm, fuzzy feelings %u00a0about sweaters, socks, and the smell of decomposing leaves. I think that we are %u00a0pretty much entering the fall season around here and I couldn’t be happier. (about the weather)
Fall means soup. Soup all the time. And yeah, I am a soup person all year round, but soup in the fall just so right and almost taste better because: one, you are not sweating profusely while making and eating it, Two, there is so much fantastic stuff coming from the farm and garden that the ingredients are just aces. And three,%u00a0pretty leaves and cozy cuddles on the couch make soup a magic treat.
Doesn’t that sound about right?
And this soup is one of my go to favorites. Especially this time of year when I have tomatoes coming out of my ears and peppers stuck into every available crevice in the fridge. (Oh what farm people problems I have) I take all of my tomatoes, pick out the best looking ones, stick those back on the tables, and use the leftover ones, the ones that are starting to maybe go a little or are not as pretty as the others. Then I do the same with the peppers, whichever ones are starting to go or looking a little sad, I grab those and use those as well. That’s another thing about soup, you can use the veggies that might not be up to snuff for other dishes. Soup is a good way to cut back on any food waste! Soup. Tastes so good and is combating food waste with ever bowl! But yes, you can use the prettiest of your produce too cause if you don’t use the pretty up, it will eventually turn into the not so pretty and mold stuff. Anyways..
Roasted red peppers and roasted tomatoes= (in a Mavin Gay voice) %u00a0Oh yeah!
Now lets just crank on the oven and make the soup!
The stuff. Tomatoes, peppers, onion, garlic, a lemon, salt pepper and olive oil. %u00a0
Take tomatoes, remove cores and chop into chunks. Remove stem and seeds from peppers and chop into a few chunks as well. Grab the onion and chop that up too.The garlic can go in as whole cloves.. no need for chunks.
Dump it all into a well oiled skilled or dutch oven and sprinkle well with salt and pepper. Place into oven to roast away.
And when everything in the skillet is all roasted soft and falling apart, remove from oven.
And dump the roasted stuff into a pot and add in a few cups of water.
Squeeze in the juice of the lemon and using a hand blender, go to town. Belnd unit la nice creamy smooth. Now I let my soup simmer on the stover for a little longer, like 10-15 minutes, just for it to meld a little more, but really you could go for it right away, or even let it simmer for longer.
When you are ready, ladle into bowl, grab a spoon, maybe a book (soup and a book is my happy place) and eat you until your belly is happy.

6-8 medium tomatoes
3-4 big red (yellow or orange work too) peppers
1 large onioon
1 head of garlic
1 lemon
salt
pepper
olive oil.
2-3 cups water
Tunn oven on to 450
Core tomatoes and core and remove seeds from peppers. Cut into big chunks along with the onion and toss into a large well oiled oven safe skillet or dutch oven. Add in the cloves of garlic and season with salt and pepper. Stick into oven to roast %u00a0for about 45 minutes or until everything is all soft and bubbly and good.
Once everything is roasted all the way, remove from oven and transfer the veggies to a pot (unless already in a pot). Add in the juice of the lemon, about 2 cups of water (more if you want it a bit thinner) %u00a0and using a hand blender, blend until smooth and creamy. If you don’t have a hand blender, use a regular one.
Place soup in pot on medium low heat and simmer for 1at least 10 minutes (if you can wait, 1/2 is good)%u00a0or until ready to eat.
Serve with lots of %u00a0cracked pepper and a spoon and maybe something crunchy.
You ever have that problem where your clothes start to smell a little on the funky side, even when you wash them, remember to swtcich to dryer right away (I forget to switch a lot, which leads to a bad smell as well), and really, fully dry them? %u00a0Maybe it’s just our washer and dryer or maybe it’s because we use the non smelly non yucky laundry soup that might actually just be made of thickened water, or maybe it’s because we are just extra dirty people. But no matter what it is, our clothes as of late have been coming out of the dryer kind of stale..
. I want my clothes to smell fresh, or else why do I bother washing them (ok, I know why, but still)
Being the %u00a0problem solver that I am, I made these little satchels of good smelling herbs.%u00a0Sure I could go and buy dryer sheets, but those just smell like chemical ass to me and I might actually prefer the smell of stale clothes. I also %u00a0have a ton of the nieces oh nice smelling rosemary growing outside my door. It just made sense. Good smelling herbs stuck into a sack and tossed %u00a0into the dryer with the clothes.
It works like a charm! Our clothes have been smelling nice and freshy fresh!%u00a0No more stale ass clothes!
Stuff you will need
A bunch of fresh or a handful of dried, good smelling herbs (rosemary, lavender, cinnamon stick. dill..whatever smells good to you)
citrus peels (totally optional)
Scrap faric
needle and thread or use your sewing machine
Directions .
Just sew up a little sack roughly the size of your hand,, leaving one side open. Stuff with herbs and peels of your choice and sew the last side up and toss into your next dryer load%u2026%u00a0
Can be reused 4-5 times. And when it starts to lose its effectiveness, the sack can be riped open on one side and refilled with fresh herbs.
I am kind of sick right now. A chest cold thing and maybe e coli from all the romaine. Plus my arm hurts a shit ton from kind of dropping a 500 pound cast iron sink on it. Oh and I spilt boiling hot water on my leg and burn the shit out of myself, and I grabbed a falling cactus which got a hand full of prickers stuck into it. Plus I am still feeling all sorts of sad about Only. I guess you could say I am not at my finest right now. But this time nest week, I am sure I will be radiant and gleeful. HAHA. (But I sure do hope so.)
The past two weeks have been a blur. Only getting sick and then having to put him down took it all right out of me. Dealing with him being so sick and then the week after him being gone%u2026just so shitty. But there was good stuff too.. There was lots of snow that made me so so happy. Shannon had a pizza birthday party. The family did the annual pre -Thanksgiving Thanksgiving, which the mr and I only spent a short time at because we had to bring Only to the vets. There were dinners with the littles, more snow, cold weather, work stuff, broom shopping, heavy cast iron sink moving. There was stuff.
Then we did a little Thnaksgiving on actual Thanksgiving with Erin and the littles. We played board games (well, they did, I was cooking), made Christmas decorations, listened to Christmas music and danced a little. I made tofu lasagna, mac and cheese, potatoes, and bread. And of course there were veggies and fruit, but yea, starch bomb. But that is what the littles wanted. I am nothing but accommodating. Quite, low key, and everyone was happy. It was a just what I needed.
And then the day after Thanksgiving was Erins birthday so the littles came over again and we made her a cake and they slept over and we watched more Christmas movies and ate pancakes for breakfast all the while I was feeling like garbage. So after we brought them home, I kind of curled in on myself. I can%u2019t deal with being sick.
So today the mr and I are going to keep it a low key day, probably just putz around the house, maybe hang the Christmas lights outside, read a lot, drink lots and lots of hot tea (and coffee). I don%u2019t want to get any sicker then I am so I need to kick it. That%u2019s the goal for the day Get un-sick!

Pictures from the past two weeks. There are not a lot because I pretty much didn%u2019t take any pictures for a week.
I have so so so many winter squash. It’s getting kind of out of hand. The mr is even making me a couple of wall shelves specifically for the squash so we can get our table back (it is currently covered in squash and tomatoes).%u00a0I hoard them and I can’t exactly tell you why. I think there is a part of me that is afraid that sometime durning the winter I am going to ran out of squash and am going to be forced to eat, I don’t know, other food. And there also the part of me that knows that I will eat it all and why the hell not hoard them.. they are so pretty and lovely and%u2026..well because I can!%u00a0When I sit here and think about it, %u00a0there is no real logical reason for me to have so many, especially sense I will be doing a winter farm share and we get squash at each pick up all winter long.%u00a0
Hum%u2026.Things to think about..Oh well. I’ll just call it a little werido quork of mine%u2026 squash hoarder, which is much better then a trash hoarder or a “stupid shit I found on the side of the road” %u00a0hoarder (that would be the mr.. but I don’t judge).
So yeah, %u00a0I might need a squash intervention, or I can just make everyone around me happy by baking them sweet ass squash treats. I have shared and I always like to share my squash loot (see, another resin to have so many)%u00a0but I found that most of the people in my life do not have the same kind of hunger for savory cooked squash.(weirdos) But you know what they do like? Cake Everyone will eat cake.
And for this cake I used delicata. It is really sweet,(I think all on its own it taste like a sweet dessert)%u00a0so tasty, and easy to cook, The perfect squash for a cake. Add in the warm fall spices and you got yourself a winner. And bonus.. if you have heard that there is a canned pumpkin shortage this year and are are worried about you pumpkin fix. Stop. You don’t need canned pumpkin. Just make your own puree and make it with all the squashes, especially delicata.%u00a0
Now go bake a cake.. I will probably make another one this weekend while I start on eating/baking with the sweet dumplings and buttercups that are piled on the fridge (seriously.. I have squash EVERYWHERE!)
The stuff. In the big white bowl there is white whole wheat pastry flour, baking soda and powder, salt, cinnamon and nutmeg. Then we have some brown sugar, oil, water with some vinegar and a already baked delicata squash. Also going to need another uncooked squash, earth balance and a little more brown sugar for the upside down part.
First off, grab yourself 10-12 inch skillet, preferably one that you have not just cooked garlic in.%u00a0
Slice up the uncooked delicata into 1/2 inch slices and remove the seeds (to roast later)
Stick the earth balance and the lesser amount of brown sugar into the skillet and place it on low heat, just to melt the butter and sugar down to form a sauce.
Now layer the squash rounds in the sauce. Fill in the skillet as much as you can. (%u00a0any left over can be for %u00a0cooked for lunch)
The already baked delicata squash (minus the seed and skin.. save the seeds to roast, skin you eat right away) goes into a bowl with the brown sugar and oil. Mix it all together until combined.%u00a0
Note.. My squash was still warm when I mixed it with the sugar and oil. which really helped the sugar resolve and for the mixture to be smooth. If you squash is cold,%u00a0warm it up a bit..
Whisk together all the dry and dump in the squash mixture and mix.
And slowly pour in the water/ vinegar mixture and mix until just incorporated.
Now slowly pour batter over the delicata in the skillet.
And into the oven it goes!
After 45-50 minutes, the cake should be browned and beautiful and a tester should come out clean when stuck in the middle. Remove the cake and place on cooling rack for about 8-10 minutes to cool. Don’t get to excited and do it to soon or else the caramelization on the bottom will still be too liquid and completely soak into cake. Giving it a few minutes will let it cool enough to set up and stick to the top%u2026.so just wait!
And for the best and scary part%u2026flip the skillet onto a plate or cutting board and be amazed. oh, but right before you do, run a spatula or knife around the edge to make sure the cake is loose.
It really should have no problem coming out of the skillet, but if any of the squash sticks (one piece of mine did) just scrap it out and place it back on the cake%u2026 no one will notice)
Now time for a slice%u2026 or maybe two!
And for reals, go get yourself lots of squash, even if it’s just to make cakes with!

Makes a 12 inch skillet cake (can be made in a can pan)
For the cake
1 3/4 cup white whole wheat pastry flour (can use white pastry, wheat pastry, or all purpose)
3/4 cup brown sugar
1 cup warm delicata squash puree*
1 teaspoon baking soda
1 teaspoon baking powder
1/3 cup mild flavored oil (canola or veggie)
1 cup water%u00a0
1 tablespoon apple cider vineagr
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg%u00a0
For the upside down part
1/4 cup of brown sugar
3 tablespoons earth balance]
1 small uncooked delicata squash%u00a0
*Note.. To make delicata puree, simply stick the whole squash into the oven and roast until fork tender. Remove and let cool enough to handle. Cut in half, scoop to the seeds and scoop the flesh into a bowl%u2026.thats it. Oh, save seeds to roast and eat the skin as a snack (skin is my favorite part and the seeds are almost better then pumpkin!)
Preheat oven to 350 degrees.%u00a0
Grab yourself a 10-12 inch clean cast iron skillet (maybe don’t cook garlic in it before you make this cake). Stick the earth balance and the brown sugar in it and place on low heat until the butter and sugar melt together and form a sauce. Remove pan from heat. Take the raw delicata squash and slice it into 1/2 inch rounds. Remove the seeds(save for roasting) and place the rounds into the bottom of the skillet, fitting in as many as you can, without overlapping. Set aside and make cake batter.
In a large bowl, whisk together the flour, salt, baking soda and powder and the cinnamon and nutmeg. In a separate bowl, combine the cooked warm squashwith the oil and the brown sugar. (if you squash puree is cold, warm it up. It mixes better warm)%u00a0Mix until completely combined. Dump wet into dry and whack together then slowly pour in water/ vinegar mixture and whack until everything is full incorporated.%u00a0
Pour cake batter over the stuff in the skillet and place into the oven. Bake for 45-50 minutes , until a nice golden brown and tester in middle comes out clean. Remove and place on a cooling rack or ontop of the oven to cool for 8-10 minutes. Once %u00a0cooled, take a plate, cooling rack, or cutting board that is a least a little bigger therm the skillet, place it ontop pif the killet, and flip. The cake should drop right out%u2026. if anything sticks in the skillet, trust scrap it off and stick it back on the cake.
Now the cake is ready to eat.. so grab a knife, cut a slice and do it.
It just hit me, it is December, the last month of the year. The year is almost over, again. I never get used to it, that feeling that it can%u2019t possible be the end of the year because it just started, right? But it%u2019s cool, I love December and I love me a fresh new year so we are good. Welcome December, I am going to enjoy the hell out of you.
The past week has basically been one big hack fest here at my house. The mr way worse then me, but we both have been coughing up our lungs unaccompanied by feeling like garbage. Being sick had put a slight damper on everything. Bed by 8 (or 7), humidifer on full blast, tons of liquids, and just trying to take it easy. We both would go through the day, doing what we need to do, but not really having much energy to do much else. I did work a little on decorating for Christmas and making our cards, but haven%u2019t really gotten as far as I would like to with those (I wanted them done). I worked at the studio (I cleaned the shit out of the glaze buckets.. cleanest buckets ever), baked a cake, dropped a cake, baked a new cake, and cleaned out the fridge. The mr did some stuff too even though he has been feeling worse. Besides work, he finally hung his collection of old trowels on the wall (not sure I like where they are). He also spent a few days in the basement plumbing and setting up a complicated series of buckets to act as a clay trap for the new sink. That took a lot of research and finding of random pipes and such, all for me (or all so I don%u2019t clog the drain with clay) but still. He is so nice. And having a sink in the basement has been so wonderful. Water without having to drag a heavy ass bucket up and down the stairs. It%u2019s the little things, you know.
Anyway, we have been lame for the most part. No big hikes, no hanging with the littles, a quick dinner with Barb, but that was just pastas and lasted just enough time for her to eat and run away and I did stop by Megans to say hi and get some human interaction, but nothing super exciting. But we on the upswing and getting better, in fact we are getting much better which leads us to today!
Today is the day I have been waiting all year for (or really, the past week). The mr and I are going to hike the mountains and bring us home our Christmas tree!!!!! Per our tradition, we hike into the Green Mountain National Forest, find the finest tree (our taste differ greatly from most) and drag it back to the car. Spend the entire of the hour or so drive home listening to Hanson Christmas album, get giant coffees, and worry the entire way that the tree is going to fly of the top of the car. I am so excited!!!!

Feels like we are nearing the end of summer, no? I am all on board, feeling that feeling one gets when the season starts to change over. It%u2019s that deep down in my bones feeling, the feeling my body gets because it knows whats coming and is getting ready. The shift is coming on fast. Grasp those last summer days as much as you can.
Another intense week. After a super duper good camp at Ricker State Park, it was full steam ahead. The mr has been super crazed, all out, sanding and assembling bowling alleys into gigantic countertops for a local restaurant. Most days he is gone as I get home, home when I am in bed. But not quite as bad as last week. We have managed a few meals together and an adventure or two, like when we went to a church in the islands,, had ourselves a picnic and picked their apples. The apples were not good yet. But the church was lovely.
Other then being busy busy, there was other stuff. Barb and her man child came over for dinner and brought along Coco. We ate, he cried. I gave him a cookie, he laughed and ran around like a lunatic. (Coco, not barbs boyfriend) The older littles have been away at summer camp all week so we saw none of them.(We miss them!) We had dinner at my moms with the boys and Barb and I was lucky enough to see the world greatest tan lines ever. I also worked the last day of art camp (YAY!), picked blackberries, gave the mr a haircut, and scrubbed the shit out of the bathtub. All the fun stuff. Not fun stuff was when the car battery died when I Was trying to leave the house, the underglaze I was bringing home to use dumped all over me and the inside of the car (I was so pissed!) or when I was at the grocery store, lost my credit card, freaked out and ran around the store, then drove home, and back to the store looking for it, only to find it underneath one of my canvas bags in the shopping cart. The whole freaking time. At least I found it though cause I was about to cancel it. Look at me seeing the bright side.
Then I picked up farm share and all the tomatoes. Coming off of last weeks tomato hall, and all the tomatoes that are starting to come in in my garden, I am up to my ears in so many tomatoes. I have been cooking down pots and pots, freezing and jarring and of course eating. Eating so many tomatoes that my belly is on fire. And of course I have no help from the mr. He says he is officially tomatoed out. I wonder how is that possible? I think he is just being a butt is all. But whatever, no more tomatoes for him. (that he will know of. HAHA) And I%u2019l just have to keep on keeping on and eat them. The season only lasts so long.
Yesterday the mr and I took a few hours to get away. We packed lunch and went in search of land. Picked a few properties to look at (but only made it to one) and hiked around the property. It was really nice, had a lot of what we are after but probably not THE property. But close so we are getting there and hopefully we will get there sooner then later. Ready to build our cabin life. And then we went home, I started cleaning and the mr went back to work and didn%u2019t get home until like 3 am this morning.
Not gonna lie, I am bumming. We are not going camping today because well, the mr is still working like a madman and installing those bowling alleys today and tomorrow and we just can%u2019t make it happen. So today, well I am going to make good use of it. Probably going to weed out some dead shit from the garden, maybe do a little replanting. Grocery shopping, clean the car, do a few loads of laundry, return books to the library, process food like a boss. (More tomatoes, hot sauce, freeze chard and pickles!) That and probably do some porch reading. And coffee all day. All. Day. It%u2019s no camping but it will do. Next weekend we are back at it.

Summer at it%u2019s fullest and greatest. And not so great, at it%u2019s hottest. At least this past week was freaking amazing, especially compared to last weekend. That humid heat damn near killed me!
The week started off with a soggy hike and a heat soaked day of camping and fun times. Groton State forest, at the Stillwater campground. The mr and I were both a little drained and tired from being so so hot but we managed alright, went and did some hiking, the mr did a little fishing, I sat around and read. The normal, just a little slower then usually. But it all changed that night. We woke up and walked down to the water to watch the sunrise and take in the fresh, glorious, air. It was not hot and humid and we was alive again. HA
Then after camp, home we went, back to the week. Stuff happened, like stuff that needed to happen, like those taxes that I have not wanted to talk about%u2026 They are pretty much done. HOORAY!!! All the ups and downs. The few tears, the rage, the anxiety. Over. And now I can stop worring about them for a least a few more months, until next year that is. Because every year. Blah. Stupid taxes.
Besides taxes, there was a dentist appointment that I sat around and waited for but never got to be seen. (SO PISSED) Paul came over for resume help and food. The mr, Barb, Coco, and I spent an afternoon at the park. I weeded for hours in the garden. And lets talk about the garden. Whoa it is going and going. Right now it%u2019s all about the squash, chard, and greens and the tomatoes will be booming soon!!!!!!!!!! That on top of farm share, well I am just one happy, full to the brim, lady.
The rest of the week was and went.
Friday I worked the studio all day then the mr and the littles picked me up. We ran to the store to get supplies, then went home for our first backyard campout. The rule was, besides me, no one was allowed inside at all until just before bed time to use the bathroom and brush our teeth. (Or to go number two. They needed to use the toilet for that. Ha). And so I got dinner stuff ready (In the house but I needed to use the fridge and because I could), we ate dinner at the picnic table, set up the tents, made a fire, did so-mores, played with fire, and the kids ran around hopped up on sugar. We went to the park, walked around the neighborhood, and when it got dark, lit up some sparklers. It was the best! The kids were so happy, the mr and I were happy to be camping again, even if it was just the backyard, and really, it just was so great. Even when we were in our tent trying to fall asleep and all I could hear was Miley and Judah whispering and giggling and playing cards in their tent. Because that is what you do when you camp and it had me falling asleep smiling.
When we woke up (I woke up 3 hours earlier then everyone, made a pot of coffee and read on the porch) the breakfast stuff was ready outside. Eggs and toast on the camp stove. Hot chocolate, and freshly picked raspberries from the bushes in the yard. Then back to the park, and home they went. Probably some of the best camping yet. And now that we know they are awesome in a tent, we are taking them to a state park in the next few weeks. That%u2019s gonna be fun.
Today we are heading south to camp. Lake St. Katherine or maybe Half Moon. Not sure yet. The plan is to get close and see which one feels right. We were going to bring the kayaks but It might rain and thunderstorm during the afternoon and tonight so I figured we can just go hiking instead. I would rather be in the woods and not in the middle of the lake during a lightning storm. That would kind of suck. But watch, it probably won%u2019t rain, and even if it does, I am ok with that. We won%u2019t melt.

Already? That week just blew on by. Probably because of the midweek holiday and that always makes time move in weird ways.
This week felt like a lot went on. Some of the same old, same old, but there was a lot of activities thrown in. We went on a bike ride picnic one day, another day we had lunch at the co-oop with my mom. Then on the third of July a lot of places do fireworks and so, after the mr saying we had to do something this year, we decided to go to the fireworks in Montpelier. Whoa did that kick my butt. Staying out and awake past dark was no way an easy feat. But well worth it. Sure the fireworks were ,well, they were what they were (I don%u2019t really care for fireworks) but the lead up was amazing. On our way to the town we stopped on the side of the road at a giant old graveyard. We were so early that we decided it would be something cool to do while it got dark out. Well this graveyard was on a massive hill and when we got to the top, we had the most amazing view of the valley and where the fireworks were going to go off so, duh, we stayed and walked around. And then it happened. Dusk came, it started to get dark, and all of a sudden. Fireflies. Everywhere. It was magical. And then the fireworks went off and we couldn%u2019t get home fast enough. I was dead ass tired.
The next day, I was exhausted, but oh well. The littles came over for the afternoon and we played the day away in the sprinkler and ran around with water guns. Barb and Paul came over too, ate grilled veggies dogs, mac and cheese, chopped cabbage, and popsicles. We lit the sparklers, walked the block, and then off they all went to do more fire stuff and I went to bed super early. I was still trying to recover from being out so late the night before.
The rest of the week was doing little things around the house, going to the studio, running errands. Being hot.
Then yesterday. A very productive day even with the nasty humid. Grocery shopping, the dump, rainbows, cleaning. I even did a good hour of weeding in the garden even though I was sweating through my soul. Gosh it really was gross. And then I went for a little walk and got caught in a crazy downpour of rain. And I wasn%u2019t made about it. Not one bit.
And it is Sunday again. Today is unplanned for the most part. I%u2019ll bike to gym and thats all I got so far. After yesterday, doing anything outside will be fantastic so I am hoping that the mr wants to go for a hike or something. I know he said there was work he needed to do but come on, mid 70%u2019s and no humidity%u2026. I%u2019ll be dragging his ass somewhere.

Sometime you look back at a week and think, blah, or whatever, or that sucked. This week I look back and smile. It was a good week. Nothing to special, just springy and warm. I got to hang out with my peoples, see the world turn green and lush, and I didn’t stress too much about anything because what is the point? Plus I bought a single pink carnation at the grocery store at the beginning of the week for the mr. and every time I see it, I smile a little. Sometimes just a little something something is all we need.
So yeah, the week was good. There was the normal stuff of work and what not but also a fair amount of not work stuff. I saw my moms for Mothers day and brought her food. The mr and I went for some long walks that did not involve any outdoor clothing (just normal indoor clothing) We hung out with the littles for a good afternoon of tree house chilling, baby running, three wheeling, and all sorts of other fun. Miley was super pumped to show off her new shoes that are partially gold. She was obsessed and needed to wash them off at the end of the day. Those were the days,when you cared about your shoes? (I am assuming you don%u2019t now , like me, but maybe you do.) Also Barb finally come back to me (school is over so she has time again) me and I feed her soup. Megan also came over for a soup lunch and a walk because that is what we do. (We are a family of eaters and walkers.) I worked on some clay rainbows, planted some more plants, and cleaned under my fingernails. The one big thing that I tried to accomplish and haven%u2019t yet managed is the bike thing. I have been shopping for a new bike and it is so so so HARD! I am not good at buying anything in general, especially when it is for me, and not food, and costs more than 5 bucks. But not just that, it%u2019s that there are so so so many bikes to choose form. I am all like , YIKES! And so I did myself a favor and just gave myself another week to ponder and look and decide. The right bike will present itself when it is suppose to, or when I finally break down and just buy this one.
Yesterday was a good solid day of getting shit done. I got the winter tires changed to summer (thanks Justin!) and hung with Alex while it was happening. We talked music and cassette tapes and how music is everything. Then I went home to the yard and all the massive piles of leaves, dead tree(so sad) and over all lawn degree and the mr and I got it all into the truck to send off to compost land. After hitting the transfer station to offload we made a really quickly stop over to see Anthony getting ready for his prom%u2026.Oh my shit. The kid is like not a kid anymore and was wearing a tux and looking all old and what not. The shinny ass shoes alone were too much for me. (more shoes that need cleaning). How is it possible that I have a sister that is old enough to have a kid that is old enough to be going prom? OH, because I am getting old. That is how. Ha.
And after that, it was back home to finish cleaning and eat dinner and water the garden and feel exhausted but accomplished. I don%u2019t mind being super tired, just as long as I have something to show for it (The yard looks A+ so I am happy)
I think today mainly going to be a work day. The mr has a project that he is in the middle of so he is going to be doing that all day and I have a few things I need to get done and then a ton of other things that need doing as well. Don%u2019t worry, I will be spending some of that time outside with the green things in the dirt, making sure I have sun screen on, listening to some good tunes and drinking coffee like it is going out of style.

It is super chilly and dark out and the smell of jelly donuts is wafting in from open windows (it’s coming from the donut factory down the street) and I am thinking about grabbing the wool blanket from the packed away winter stuff and crawling back into bed, just for a little while longer until the coffee is done brewing. (4am wake up this morning and I am feeling like a nap is in order soon, even if it is 6am) This is the stuff of the best fall morning. Now if this could be my all day.#lifegosls
The week was a week, but a good week at that. Started getting squash with the farm share which lead to a discussion between me and the mr about what our absolute #1 food we could live off of forever (him, pizza.Me, super roasted kombucha squash covered in nut butter)%u00a0 I made a sheet birthday cake that also contained about an entire package of oreo cookies for a newly 15 year old Jackson that is making me feel old. There was a dinner here and a dinner there and just a lot of people and family. We haven’t spent much time at home or by ourselves this week so I am definitely ready for a quite day all to my lonesome. My brain is on overload.
We ordered the downstairs flooring!!! Come this Wednesday, the mr and I will be unloading 40 or so bundles of some pretty white “utility grade” oak.%u00a0 We also found some floor tile for the bathroom for dirt cheap at the resourse store( tiny white squares.. nothing fancy but looks sharp) Flooring is for real you guys. Once we lay this stuff it’s over. We are good and yeah. (until 2 hours later when we realize we have a million other things to accomplish) But all is good. We have flooring.
So today is going to be a fun one. The mr, my brother and I are going to attempt to move the 10 million pound radiators from the back yard to the upstairs….. Going to be oh so much fun (no, not it is no) Once we move them, I am going to finish painting them and the mr will install them. Whoa hoo! Plumbers are coming soon to hook up the new boiler so we have to get all this shit ready. WORK WORK WORK WORK WORK!

We are moving into the house!!! Oh wait, no we are not, at least not for real, but we are thinking about setting up the tent and sleeping in the yard for a while. It’s summer and it’s been so freaking hot and why the hell not right?
And to prolong our move in date some more, the mr and I have decided to re-floor the entire downstairs. HA! We figured we kinda wanted to but weren’t really sure if we should. And so we said screw it, lets just do it now and get it over with. So keep that in mind if you offer to help cause we might just take you up on it.
Other then house stuff, the week has been full of all the little littles, birthday parties, flowers, and tomatoes! The farm started dishing out the fattest, juiciest, most lovely tomatoes. I have found myself on a few occasions devouring whole tomatoes by accident, like i look at them and just need to eat them. (they take away my will power) Thinking I might have to make a cake with a few of the this week (if i don’t eat them all) and frost them all twirly, whirly sparkly like the cupcakes that I made this week, (they looked so awesome)%u00a0 I think the mr would like that.
But for today, no baking. I would actually like to stay away from anything that creates heat (besides coffee) because it is finally not so hot and humid and my brain needs time to reform from the melt. We will probably just go floor shopping (blah) but that way I can ride with windows down and my head sticking out of the window like a dog. Fun fun.

WHAT WHAT..It’s. Sunday already? That happened.%u00a0
I guess starting off %u00a0last Monday pretty much a sleepless zombie didn’t help, plus for some reason, the world became super hot again and that sent me over the edge. Once I get the taste for cool crisp weather, anything warm and hot makes me crazy. I felt almost ill all week from the heat. But I think (it really must be) the end of that weather. Next week is all about the low 70’s with cold nights! Oh man, it’s going to fantastic!
Yup, last week was a busy one, but we did manage to get in some fun. Wild apple picking (HARD CIDER), a little hike,%u00a0and we did spend a fare amount of time at the garden. (which is on it’s was out). We are trying to go every day cause we are still picking tomatoes, zucchinis, peppers and a few other things.%u00a0%u00a0The flowers are still growing and the kale and chard are doing great, but you can just tell that this time next week, the tomatoes will be no more. The last zucchini is going to be picked, and as for the kale and chard. I am just goojg to harvest it all and eat it all to my face cause we are being kicked out of the garen plot by the end of the month. This makes me sad, but at least I have all of my house plants to surround my self with.%u00a0And honestly, not going to the garden all the time, I’ll have more time to sit on my butt and read and knit. (I am already falling behind on my knitting projects)
Anyway, today is definitely %u00a0going to be a me day. Tomorrow is the kick off for family birthday party season, which means I will be spending my weekends making lot s of cakes and going to a bunch of littles birthday parties. Fun times, but crazy. One a week for the next 6 months%u2026%u2026I am already tired.

The week past by fast. Mostly because I just wanted to get through it, get over the chilly rainy days and also the slight ick that I have had. It stared strong with dinner with Shannon who has found a new hobby basting chicken in butter.(she loves a good basting) Then we threw Megan’s birthday in for good measure. We did accomplish a good bit of work, did some toilet and tile shopping, scouted out the work to be done for a few of the apartments (we are going to be busy to say the least) and went to a cedar mill to check out the product. Getting ready to burn some cedar siding here really soon,%u00a0 Taxes are just about done and ready to be sent to man. Got rid of a bunch of shit from the basement and I finally spent some time cleaning out the loft. I think it’s the spring cleaning bug, but I just want to take everything and throw it out.( When I say throw out, I mean donate, give away, and or recycle) I am so sick of stuff!
Today is outside all day long day. The backyard is in some serious need of attention (more then I can give it in one day),%u00a0 the car could use a cleaning, and my bike. I can’t wait to get my bike out of the basement. I think I need a new tire if I am remembering correctly, but maybe I’ll change that out today too. OR maybe I will put on my favorite comfy sweater, grab a nice big blanket, fill a jug with coffee and spend the afternoon laying out in the grass reading, drawing, and or napping.%u00a0 Yay Spring!!!!

It%u2019s a smoothie. And no, we have never really been smoothie people in this house, but what can I say, sometimes smoothies happen, especially when you have about 20 ripe bananas in the fruit bowl with no room in the freezer and no need for 7 loafs of banana bread.
So I smoothied. And I like it (a lot).
This is a smoothie of simplicity. Nothing fancy. Simplest of simple. Straight to the point. And all sorts of good.
You might think, does this simple smoothie you speak of taste very good? Yes, yes indeed it does. It is all sorts of fantastic. Basically if you like creamy, nutty, oaty, bananery things, you will like this. And it%u2019s a perfect breakfast, snack, dessert, or just wanting a little treat like thing that is not garbage food. A smoothie of all smoothies with the most basic ingredients. And takes about 15 seconds to whip up. Can%u2019t complain about that.
To the smoothie goodness!
The stuff. A ripe banana, some old fashion rolled oats, a pinch of salt, water, and a smidge of maple syrup if you want it.
Everything goes into blender.
And blended until smooth. Hence the word smoothie.
Pour it into a cup (or if you are feeling primal, drink it straight from the blender%u2026 it%u2019s totally cool)
And done.
A banana oat smoothie.
Let the good time roll!

makes 1 smoothie
1 very ripe banana
1/3 cup raw old fashion oats
1 1/2 cups water
pinch of salt
a tablespoon or two of any sweetener you like (optional)
a pinch of cinnamon (optional)
Place everything into a blender and blend until smooth. Pour into a cup, sprinkle with cinnamon if you wish, and drink right away.
We went from -30 degrees to 50 above in 2 day. What the F! Yesterday the day rained but got nice and warm, then the temperature fell hardl and last light the world started to get so slick and slippery. Going out was getting a little scary because of the ice. I went to bed a little afraid that I have to leave the house today for fear of slipping and smacking my face. It’s a real fear and I know its bound to happen. I can already picture it, me walking along, maybe whistling a little tune, and smack, just like a cartoon character slipping on a banana peel.%u00a0 I will go down fast and hard. I am not a graceful person.
But the day is going to happen and I have things to do that involve leaving he house.. I have the arnica and frozen peas ready just in case, but I might just leave on my hands and knees.
Enough about my irrational (but totally rational) fear. Lets talk about food. I am already thinking ahead to dinner. Or more like I am thinking behind to last nights dinner of oatmeal. A grain typically used as a breakfast food, cooked until light and fluffy, topped with sugars and fruits and sweet things.%u00a0 Oatmeal for breakfast is always welcomed and always will be. But today my friends I am going to blow your mind and tell you to eat your oatmeal at dinner time,with salt and pepper and lots of yummy savory beans and veggies.%u00a0

But doesn’t make complete sense? Oats are so good, hearty, heart healthy, and pretty freaking cheap. Easy to cook, goes with everything. It’s almost like rice, but I find is even more filling and contains more protein. Have no idea what to do for dinner. Grab the oats and a can of beans! Had a long day at work and just want something quick and easy and comforting. Oats with a bunch of veggies!%u00a0 You can pretty much do anything with a bowl of oatmeal and it will be good. (tomato sauce, crispy tofu, a fried egg, cheese if you like.. you get the idea) It seems weird to me now that people all over are not eating oatmeal for dinner all the time…. yet. I have a strong feeling that everyone is going to be eating savory oatmeal for dinner very soon, so I am giving you the heads up so you can jump on this wagon now!
The stuff. A big cup of old fashion oats, a few mushroom, an onion, some cooked chickpeas, a clove or two of garlic and a mound of chopped greens. And we are going to also need a little olive oil, balsamic vinegar, salt and pepper and, if you have any, a small handful of cashews (or any other nut).
Begin by dicing up the onion and the mushrooms nice thing ans tossing them into a skillet with a touch of olive oil. Stick the skillet on the stove on medium heat and begin to cook.
When the veggies are on the stove, bring 2 cups of water to a boil, sprinkle it with salt, then dump in your oats. Give the oats a quick stir, then tun the heat down to medium and place a lid on the pot and leave it alone.
Once the veggies have cooked down a bit, mince up the garlic and toss into pan, along with the chickpeas (drain any liquid). Add a good glug glug of balsamic vinegar and continue to cook on medium heat until everything is nice and cooked and golden brown and tasty.
And lastly, toss in the chopped up greens and stir around until wilted.
And i bet that your oatmeal is done by now, cooked until oats are soft and the water has absorbed.
And the veggie bean mixture is ready.
A big heaping scoop of oatmeal, sprinkled with salt and pepper, and topped with a hearty heap of the cooked veggies and chick peas. Adding a few chopped nuts on top and another glug of vinegar…. It’s the most perfect meal.

Serves 2
1 cup old fashion oats
2 cups water
1 cup or so of cooked chickpeas
small onion
3-4 large white or cremini mushrooms
2 big handfuls of chopped greens (kale,spinach, collards, or broccoli leaf.. whatever greens you got!)
1-2 cloves garlic
balsamic vinegar
olive oil
salt and pepper to taste
handful of cashews or some other nut (optional)
Start by chopping you mushrooms and onions and tossing them with splash of olive oil into a skillet. Sprinkle with salt and pepper and Begin to cook on medium heat.
Grab a heavy bottom pot ans bring the water to a boil. Once boiling, dump in the oats, add a pinch of salt, give a little stir and reduce heat to medium low. Stick a lid on pot and leave it alone for about 10 minutes.
Once the mushrooms ans onions are starting to cook down, mince up garlic and add in, along with the chickpeas (drained of liquid) and a few tablespoons of the vinegar. Continue to cook until the veggies are browned, the chick peas are hot, and everything tastes good (give it a taste) Lastly, add in the chopped greens and stir around until wilted.
And the oatmeal should be done. (it;s done when its nice and light and fluffy and that water has absorbed)
Grab a bowl, add a big scoop of the oatmeal, sprinkle with salt and pepper, top with a large amount of the veggie bean mixture and top with another glug of vinegar and some of those cashews all chopped up.
Oh yes, It is Sunday and man oh boy, am I beat. Yesterday the mr and I spent the day digging 2 1/2 foot holes for fence posts at the new house. It was actually pretty great because we got to spend the day outside and it was the most lovely day, all sunny and warm. The only problem we had was that the fence line landed on top of all the most gnarly tree roots and it took about an hour of hacking away per hole. We got to 6 and have 11 more to go (Ouch!) SO yeah, a little sore, but luckily the hardest part is done and we are going to take today off from fencing and be hang with the fam (cause it;s mothers day)
Which brings me to a my, “Happy Mothers Day to all you ladies out there being mommas and all out wonderful human beings!” You have the hardest job of all and today you deserve all the breakfast, lunch, dinner, flowers, naps, macaroni necklaces and then some. Take the day and do you forget about the to do list. IT can wait until tomorrow.
As for me, I am not an actual mom, but I have enough litttles in my life that I am kinda like a part time momma. So after an afternoon of family and mom ladies and feeding them all lunch, I am going home, walking the pup (I am his momma) and taking a nap myself. I am greatly looking forward to it.

Cabbage and Kidney Bean Pot Roast — The Lovely Crazy

Every year I look forward to St Patrick’s day.. And not because I am Irish, (which I am) or because I want to drink on excess (which I do not) and no,%u00a0 green eggs and ham are not something that I plan on making. No Ido not look forward to any of those things (although I actually do like to pinch the littles that wear no green and talk about pots of gold and rainbows) I love this time of year because cabbage is always on a freaking super sale everywhere you go.%u00a0 Something that is usually 80-99 cents a pound goes down to like 20 cents a pound. And for someone that eats like 10 heads of cabbage a week, this is a hug savings. SO yeah, I buy so so much (I have already bought 12 heads, but I actually plan on buying a full case before the sale is over)
No, I am not crazy, I will eat it all….. and I am going to be making so much sauerkraut. Woo hoo!
But until then. A cabbage pot roast. Yes. I remember growing up my mom would make pot roasts once in a while. A big pot full of big chunks of veggies topped with a big slab of some kind of meat. I never liked the meat, but I always loved the big chunks of the veggies at the bottom of the pot. So I figured I would make a big pot roast, replace the meat with a head of cabbage (I have so much) and add beans because protein and because they are just so good. . And when it’s all cooked and said and done, you end up with a big pot of plump and so flavorful veggies and beans and the most tender wedged of roasted braised cabbage.%u00a0 This is my kind of pot roast.
Now go quick.. the cabbage sales will be over soon.
The stuff. One good sized head of cabbage, a few carrots, a big onion, and a hunk of rutabaga. Also have some dried kidney beans, caraway and fennel seeds, dried ground mustard, a bay leaf, some garlic, and salt and pepper. And water… water is needed.
Note. You can use just caraway or just fennel and you can replace or even add a potato in place of the rutabaga.
Dried beans, fennel and caraway into a pot with water. Stick the pot on the stove ans bring to a boil, then to a simmer to give the beans a quick head start before going into the oven.
While the beans are simmering, dice up the garlic and chop up the veggies into big chunks… you don’t want small chunks or they will kind of turn to mush while cooking.
And turn over the cabbage head, take a knife, and slice a deep x into the core. DO THIS or else the inside of the cabbage will not cook through. Oh and preheat the oven to 375.
Beans looking a bit plumped..
Top those beans with all the chopped veggies,(don’t stir them in., you want to keep the bean under submerged in the water) sprinkle those with the mustard, salt and pepper and place that lovely cabbage head right on top…
Place a lid on the pot and slide it into the oven to cook away. It’s going to take a bit of time (about an hour) but it’s pretty much hands off. Just take a look after about 45 minutes, check the bean doneness, add in another cup or so of water and place lid bacck on and cook for another 12-20 minutes until the beans are done. When they are, take the lid off, crank the oven to 450 and cook for another 15 or so minutes until the cabbage gets all golden brown
Look at that… Tender roasted veggies, plump beans. Everything about this is right.
Grab a knife and cut the cabbage (its so tender) into big wedges.
A wedge into a bowl along with a big spoonful or two of the beans and veggies..
Finished with a dash of salt and pepper and (not shown here,) lots of mustard.. Oh cabbage… you are so good!
Eat away and Happy St Patrick’s Day.

serves 3-4
Place the fennel, the caraway, and the bay leaf into a large dutch oven along with the dried beans and 3 cups of water. Place on the stove and being to a boil then, turn heat to low and simmer the beans for about 15 minutes.
While beans are simmering, chop up the carrot, onion and rutabaga into big chunks and dice up the garlic. Take head of cabbage and slice a deep x into the core.
Preheat oven to 375
Once the beans have simmered a bit, add in the chunks of veggies, the ground mustard and salt and pepper (Don’t stir, you want to keep the bean submerged in the water). Place the head of cabbage right on top of the veggies and sprinkle with salt and pepper.
Place a lid on the pot and stick the whole thing into the oven. After about 45 minutes, check the roast and the beans for doneness and adding in another cup of water id needed. Back into oven with the lid for another 15-20 minutes or until the beans are tender Onnce they are, remove the lid form the pot and crank the oven up to 425. Cook for another 15 minutes or so until the cabbage turns a nice golden brown.
Remove from oven, let cool for a few minutes, cut the cabbage head into wedges and serve it up with big spoonfuls of beans and veggies.
Eat until your full.
