I think we are pretty much out of the clear. Yes I woke up yesterday morning to a light coating of snow on the ground, but I feel like that was it. It has got to be because I have to wash my winter jacket that is as of now, covered in dirt and concrete so it needs to be washed. And once it is washed, it is getting packed away with all of the other winter stuff. So you see, we really cannot have any more winter jacket weather because I won%u2019t have a jacket anymore. It must be sweater weather or warmer and that is that. Are you listening weather?
The week good, if not a bit hectic and all over. There was work, paper work, the %u201cmust not be mentioned%u201d and no they are not done yet but must be by next Monday or else. The mr has been running around all over town doing this and that which has been a slight pain because when he is super busy and I am busy and we only have one car and my bike needs a good tune up before it is safe%u2026 Well it makes things some what difficult. But so far we have managed and there wasn%u2019t too much arguing over car. We did manage to take a nice walk down by the lake, I also was able to sneak in a warm afternoon of clearing out the garden and picking up yard trash. The back porch is almost ready for summer living and green things are popping up all over the place making me ache for more more more. Think of it, trees with leaves. I am getting more excited every day.
Friday was a crazy day. Woke up, went to the gym with no plans other then work at the studio and having the littles over for dinner. By the time I came home I had plans to quickly make a cake before work because the littles pizza party turned into a family birthday party for Megan. So I made that cake, ran to work, moved 700lb of clay and loaded kilns. The mr picked me up with littles in tow, we ran home in time for all the family and partied partied until I kicked everyone out of the house at 7 because I was exhausted and plus Megan needed to go to Costco so she needed to leave anyway. Ha.
Yesterday, after a near sleepless night due to a racing mind, we woke up (again, to snow. BLAH), I bundled up and out we went to spend half the day pouring wet, heavy, cold concrete. I must say, pouring concrete usually isn%u2019t the worst, but yesterday, well it was. First off, we were working in very tight quarters making moving somewhat difficult.. Secondly, I was sore from all the clay moving the day before. And I was freezing. And tired, so so tired. By mid morning my fingers and toes had tuned to ice, I was covered in so much dirt and concrete, the mr was basically rolling around in dirt (reference picture above) so was trashed worse then me, but we were getting it done. The mr was brilliant and saved us so much time and hassle by coming up with a tarp and jostle concrete mixing technique so that was good. Anyway, the concrete was all poured and it is over. (Now we wait for it to set to finish porch construction) The rest of the day was short and went by with cleaning the house. I don%u2019t know how my family does it but there were sprinkles from the cake EVERYWHERE!
Today, after a quick romp to the gym, the library, the grocery store, and all the other little chores I need to do, the mr and I are going for a drive to look at a van. We need a work car. The life car is getting trashed, we have been having to get materials delivered (which costs money and stupid time) because we cannot fit wood and big stuff in the car, and it is just not practical for us to share. So van. A van for work, A van for cross country travel. A van for sanity. Hopefully this van is the one. Wish us luck.

I can%u2019t remember the last time I have gone a day without eating lentils. Seriously, even when we travel I buy or bring along a bag of lentils. Or when we are camping, its basically all we eat. So it is safe to say that I know my way around a lentil or two. They are probably my favorite food (I say that about all my favorites)
Other then lentils being amazing delicious, the are so versatile. I am sure I say it all the time, but there is nothing you cannot make with lentils, sweet or savory. And nutritional as all heck. So much iron and a super amount of protein. Lentils are basically the perfect food in tiny little coin shaped form. Take it from this vegan lady here. Lentils help keep me alive. HA.
But enough about how many lentils I eat, what we need to address is this chili. It doesn%u2019t matter if you are a lentil feen or not, you will very much enjoy yourself a big bowl of this hearty, slightly spicy, warming goodness. Especially now, when it%u2019s cold outside and the days are short and you just want to eat something filling and healthy and that is not left over holiday cookies. And big bonus, this is a chili that you could come home to start at 5 and basically have it ready to eat by 6. That is just one bit of the magic of lentils, they so cook so fast.
And it%u2019s chili and chili is the best so you really should just get it made. It%u2019s what you need, I can tell.
To all the lentil goodness!
The stuff. Green lentils, crushed tomatoes, a cubanelle pepper, an onion, a couple carrots, and some cauliflower. Also a few cloves or garlic, cumin, chili powder, ground ginger, a red jalape%u00f1o, and salt and pepper.
Get started by small choping the carrot, onion, and pepper. Mince up the garlic too.
Grab that jalape%u00f1o and remove steam (and seeds if you want heat) and dice into very very small piece.
Into a big old pot it all goes, along with the cauliflower and all the spices. Add a splash of water and a sprinkle of salt and pepper and stick it on the stove for a few minutes to warm up the veggies and spices.
Looking good.. So good I wanted to eat it all, but don%u2019t, it%u2019s for the chili.
Now add all the tomatoes and water and place back on stove on high heat until it starts to boil, then reduce heat to a medium and cook until lentils are tender.
Well look at that, chili.
And why not top with a little avocado while you are at it. It is a very good addition, to the spiciness.
Very little amount of works for such great rewards. Probably going to be your new favorite chili recipe just so you know.
Lentil chili. Grab a bowl, kick up your feet, and dig on it.

makes a lot of chili, like 10-12 servings
1 pound green lentils
1 large onion
5-6 cloves or garlic
1 cubanelle pepper (or any green or sweet pepper)
2 large carrots
3 cups chopped cauliflower (fresh or frozen)
6 cups (two 28 oz cans) crushed tomatoes
2 hefty tablespoons cumin
1 hefty tablespoon chili powder
1 teaspoon ground ginger
1 jalape%u00f1o pepper
6-8 cups water
salt and pepper
diced avocado for serving (optional)
Remove steam and seeds from cubanelle pepper and small dice it along with the carrots and onion then place int all nto a large heavy bottom pot. Mince the garlic add into pot. Remove steam and seeds from jalape%u00f1o pepper and finely dice it and add to pot. Last but not least, add the spices to the mix. Add a splash of water and place on high heat and cook the veggies and spices until for 5 or so minutes, just to give them a little heads start and to activate the spices.
Once the veggies have had a few minutes of heat, dump in the dried lentils, the tomatoes, and 6 cups of water. Stir around and keep on high heat until it starts to boil then turn down to medium and continue to cook, stirring once in a while, until the lentils are tender and the chili has thickened, which should take about 35-40 minutes. If at any time you the lentils are not submerged in liquid but are not cooke through, add more water. And once the lentils are cooked you can thicken bu continuing to cooke does or thin it out by adding more water. Taste soup and season with salt and pepper as you see fit.
To serves, ladle into bowls and tope with diced avocado.
Left overs are fantastic hot or cold and will last in the fridge for about a week. Or if you want, you can freeze a few servings.
Another week come and gone. The month of February is already flying by and I would be lying if I said I cared, because I kind of don’t. It’s not that I am not appreciative of every day and all that good stuff, but I am,%u00a0and more so everyone around me, are in the midst of some serious winter crazy. It happens, and I accept it,%u00a0but I just want to open all windows, stop having to wear all the layers,%u00a0sleep under a tree, and get away from all the people.%u00a0I could do all that now, but then I would be really cold , so I wait, and I deal with all the crazy. At least I like winter weather and have been able to escape outside when I need to. But I think that hardest part for me right now it food. I miss freshy fresh food. This is probably my slimmest month for food, which is basically all roots.%u00a0%u00a0I have gone through pretty much all of my back stock of frozen and canned stuff from last summer. I have already gone through all my farm share which %u00a0is basically all roots and hasn’t had much for greens lately and probably won’t for another few weeks. I am starting to really crave the fresh stuff, more greens, beans, tomatoes, eggplants, you know, the spring and summer stuff.%u00a0Yeah sure I can go buy that food at the grocery store, but it is all %u00a0out of season and would probably taste like shit so I will settle for bitching a little here and wait for the good stuff to be more in season. That is the natural thing to do.%u00a0
Enough of the bitching because it really hasn’t been a bad week. %u00a0The mr and I went for a little hike in the woods which was just so very very nice. Did a bit of babysitting of just the baby. (he is obsessed with his Woody and Jessie calls.. so dang cute)%u00a0We hung out with the bigger littles and talked lofted bed building, and my mom and Barb came over to eat the cutest little heart jam hand pies. The mr got his new mud hawk which he now carries around the house everywhere with him and has also been bringing home more and more tools to add to the collection on the back porch (aka, the wooden spoon carving work shop) %u00a0He is now officially obsessed.%u00a0
The Olympics started and I have sound myself on more then one occasion watching the people do the craziest of things.(are you watching?)%u00a0I never used to really care but I don’t know, I found myself a little more interested this year, especially in the figure skating. Those athletes are beasts.%u00a0How the heck they do what they do %u00a0it is beyond me. I guess that is why we watch them right?%u00a0
I was talking last week about how I wanted to start painting everything. Well I haven’t painted everything, but I did paint the kids rooms cave a really dark blue. I am really excited to finish painting all the stars and set the room up more for the kids and also so that the mr and I can use it a bit too. %u00a0House projects.. I am trying to not get myself to deep into anything right now, at least until I can open the windows to air out the fumes. (paint fumes are not joke)%u00a0
I am not are whats going on today. The mr is running around, doing some %u00a0landlord stuff, some moving , some shaking. (That guy, I tell you, he is always doing something for someone else. He really is a gem of a person.) Me, I might lend a hand too, but I really just want to keep on painting the room,%u00a0do laundry, take a walk into the woods,%u00a0and nap. Or drink all the coffee in the world, embrace the crazy stirring inside of me,%u00a0and see where I end up. Maybe I’ll go take a crack at some figurer skating.. hahaha. I don’t not need to spend the day in the hospital.%u00a0

Mid January. I love this time of year. All the big holidays are over so the pressure is off, my body is acclimated to all the snow and cold so I handle it just fine, and every day gets a little bit longer. I feel like it’s when I really get %u00a0focus on and enjoy winter for all it’s greatness. It’s just so dang pretty and I am again wondering why I do not live in a little cabin in the middle of the woods. Or why I have yet to go sledding. On the agenda for the week…Build a cabin and speed down a hillside on my ass. Can’t wait.%u00a0
The beginning of the week I was still feeling like garbage. I thought for sure that what I had was a 24- 72 hour thing, but it lingered well into the week. (watch out, everyone is getting it) I feel better now, but am still a little low energy. Getting sick sucks so I think I won’t do it again.%u00a0
And the twins turned 20. I would tell you all about how great it was to hang out with them but they are too cool and didn’t return any of my texts for hanging out and I guess they don’t care about me any more so whatever. Instead the mr and I brought Judah over to Shanons to crack eggs and make giant bowls of marshmallows with Cameron for dinner. So Happy Birthday Mark and Paul. You suck.
The mr and I made a trip out to Barton for a day of hard work. We gutted a bathroom, the mr moved some plumbing,%u00a0and Jes and I starred down an actual “shit hole”( i.e. a hole that shit comes out of and is the proper use for the term), while sewage spewed all over the place and the mr stood strong and held up all the pipes in a sea of shit. It was a very dirty job, but someone had to do it. Unfortunately it was us, but there are worse things I guess.%u00a0%u00a0And now Jes is well along her way to putting a floor down over the hole %u00a0and spending quality time with the purple swans the adorn her bathroom walls.%u00a0
After that, the week just flew by. There was the farm share (thank goodness, I was starving), more family stuff with my and the mr’s family,I re-pierced my ear and may have gotten it infected,%u00a0and I started a new sourdough starter (the yeast loves Red Cat Farm flour!). And let’s not forget the crazy ass weather. Friday afternoon I had all the windows and the front door wide open and the heat turned off. 60 something degrees and almost every speck of snow had melted. It was so, well, it was nice, but so weird. And very short lasting because we got like 6 inches and dropped like 70 degrees by the next day. Ah, Vermont. Love it or go crazy.%u00a0
Today is one of those days where it could go either way. I have a pile of papers that I need to go through, people to see, laundry to do, but I am also thinking that an afternoon of wondering outside,%u00a0reading and knitting might just take priority. Next week is going to be hectic so maybe I rest up today. And ice my ear because it really hurts.

Happy Merry Christmas Eve you guys. I hope today and %u00a0tomorrow brings rest and relaxation and excitement for all the fa la la las la to come.%u00a0
I am excited. And really tired, and maybe a little stressed, but still really excited. We are doing the family Christmas tomorrow at our house, all 23-25 of us. Our house is officially the sponsor of all family gatherings. And because of this, I think that my family should all chip in and buy me a robot vacuum because I think I finally have gotten to that point where I am sick of constantly vacuuming (and the mr is sick of me constantly vacuuming too) %u00a0
%u00a0We started off %u00a0the week strong, with a sense that I had everything done, covered,%u00a0planned, and no stress. There was a bit of running around, especially for the mr, who was finishing up some jobs, but we got things done. I even got the loft cleaned (again) for Jeff when he gets here (he is coming the day after Christmas) I did a morning of gift wrapping for HANDs, finished up my Christmas shopping, picked up the farm share and made it to the %u00a0grocery store before all the food was gone.%u00a0Things were going smoothly. And good things happened too.%u00a0I made a chocolate babka wreath for fun. Shannon got the news of a New Year hip (but the mr fixed it with his bandaid and gave her a little penis to boot(see photo below)) Barb got excepted to a college, and I ended up with the most fantastical tree skirt that I have ever seen. A panda bear Christmas. If you new me as a little you would know that I was obsessed with pandas and that this tree skirt is perfection for my young self and gives me all sorts of happy feels.%u00a0
And all the snow. I think that we got about 5-6 inches of the most fluffy fun warm stuff that makes the world glow. That was the best.%u00a0
Yesterday was a nut of a day. It started out slow but by 11, we had the three littles (Coco aka Emersion, is walking now which makes things a littler more interesting to say the least) over for lunch/christmas present making /newspaper snow flakes. It couldn’t have been any more crazy and messy. We started out %u00a0painting on fabric to make pillows (the coolest pillows ever) for them to give to their mother. (she doesn’t read my blog so she I am not spoiling anything here) That was a mess in itself but we topped that off with trying to eat lunch at the same time. Three starving littles with paint all over, we rushed to get them some food. The mr was making the sandwiches and accidentally smashed the bowl of egg salad on the floor. It was eveywhere, glass and egg, and all sorts of gross, and the kids were starving and the baby was walking. But we were still all ok. Then I burnt the grilled cheese very badly while a little spilled the soup all over the table and the iPad. %u00a0They finally ate carrots and apples and cheese quesadillas, but they definitely were starting to get a little toody and crazy themselves. Paint and egg, and wetness everywhere (going in and out of the house and it started to rain) the mess was just getting bigger and bigger.%u00a0And I didn’t even mention the soccer net the mr is making that is hanging in the middle of the living room.%u00a0To top it all off, my mom dropped off enough food to feed an army for the shenanigans on Christmas so there was bags of food everywhere. But she brought me flowers so everything was good.%u00a0After that we figured what the hell and just made a shit ton of newspaper snowflakes and really just committed to trashing the house.%u00a0Then they left and I spent the evening cleaning the fuck out of everything.%u00a0
I am hoping today goes a little more smoothly, although I am pretty freaking tired %u00a0because I spent most of the night tossing and turning over the things that I need to do today. (white chocolate chip or oatmeal white chocolate chip cookies? Do I have a empty recycling box for wrapping paper? Is there enough toilet paper in the house?)%u00a0I know I am going to have to spend at least 15 minutes removing the sheet of ice that has accumulated over the car last night before I can leave for the gym, but the then that it’s, the rest of the day I am going to be spent in the kitchen.%u00a0%u00a0My plan all week was to spend yesterday baking and to spend today relaxing with a book but yesterday did not happen as planned. Todays schedule is now %u00a0to make all the cookies,%u00a0a birthday cake,%u00a0(Cameron’s birthday is tomorrow too) and last minute Christmas things to finish up (doesn’t involve shopping!) At least my house is clean for the time being. I know it will be short lived but hopefully someone brings that vacuuming robot with them tomorrow.
True story. The mr likes to pick me up and tell me he wishes I wonuld fit in his pocket so he can carry me around with him everywhere. So sweet right?%u00a0Yesterday in the midst of my crazy (I was going crazy)%u00a0he picked me up and said he wished I was tiny enough to stick me in his pocket so I would shut my mouth and be quit. How has your week been? Besides being sad and stressed about all the crazy shit that it going on in the world, (what the fuck world, what the fuck?)%u00a0my week has been pretty good.%u00a0Got the snow tires on the car, picked up the first winter farm share which was all sorts of fantastic, and broke my favorite ceramic knife cutting into a frozen hunk of spinach.(it wasn’t all great) %u00a0Miley and Judah reminded us that all you need is a hill and the know how on how to roll down it to have fun and we bought a washer and dryer!!! I almost forgot about that because %u00a0they haven’t been deceived yet. I can’t freaking wait because the laundry situation is getting pretty freaking ridiculous. Just a few more days (Thursday will be a magical laundry day).And best of all, the downstairs bathroom is finally done! (besides a little touch up paint and a light fixture and mirror, but that is all easy peasy) Now there really isn’t any big house projects left which is kind of unbelievable and fantastic and I am just so glad that we don’t have to live with the air compressor in the middle of the dinning room anymore. And now that there is not any more big projects, maybe I can actually start to arrange rooms and furniture and hang more art and do all the things people do when they first move into a house.
%u00a0We were lucky to get out for a hike earlier this week before the deep freeze set in. But really, I am kind of loving the cold weather, maybe not the inch of frost that took 15 minutes to scrap from my car, but just the way the world is feeling. Most people hate November, but me, I really like it. I don’t even mind it getting dark earlier. Honestly, I like being outside in the cold, its %u00a0refreshing. Plus with it being so cold, I can catch up a little on the TV.%u00a0I finally watched Stranger Things and whoa. I %u00a0know I am late to the game, but forgive me, I haven’t been watching much tv lately. Anyway, So GOOD! So good in fact that I watched the entire series last week. And now I have all of season 2 to watch, but I think I might take my time with it, savor the goodness. OR watch it all today, we will see what happens.%u00a0
I made the cinnamon star bread that was on my list of things that I wanted to do, and it came out oh so lovely. I am really appreciating the kitchen right now since this time last year we still didn’t have a kitchen here. All I want to do now is bake, I just need people to come over to eat the stuff. (I had Megan and So come over to help eat at %u00a0the bread this time). While they were here So found my hoard of butternut squash in the pantry and spent the afternoon playing house with all her squash babies. She did the same thing that next day while I was babysitting. That little, she has the best imagination. She was telling me all about how she is going to have babies when she grows up and how babies are made. I guess all I have to do is let my stomach get really really big and then one day a baby will POP right out of my stomach. Good to know right.%u00a0
That was the week and for todayI think that this afternoon I am going to try to clean the back porch, hang some pine cones and the new fern prints the mr and I found at the thrift store,%u00a0and maybe brush my hair. I am also starting to think about Thanksgiving and birthdays and all the holiday stuff.I got to get on it before it all gets on me.%u00a0

This week has been pretty fantastic. The weather here could stay like this forever and I would be happy. Warm days, cold night, sunshine. We have fully embraced it all. The mr finally fixed his brakes on his bike so we have been riding our bikes everywhere, for work and play. I don’t mind doing chores when you get to bike around to do them. We have gone to a few rivers for fishing/ reading time. We even took a long ass drive out to the Kingdom to see our friend Jess’s new farm (we got to see it but not her. It’s ok thought because we plan on going up again really soon with our overalls and shovels and upper arm strength) Spending time outside really makes this lady here feel all sorts of good.
A huge step this week. We finally replaced the glass in the front door!!!! It’s been about a year since I smashed it out with a 2×4. We went a long time without fixing because I would have probably just smashed it again anyway. But we are finally done with the outside of the house and hopefully with any more 2×4’s and the door was the last step. And holy moly all the light. It’s like the door is wide open. The mr made the comment that the new glass makes him feel like an adult now. I totally agree. No more plywood front door. Glass is class!
More little things are happening around the house and we are starting to get things ready for fall/winter here and at he other houses. It’s the in between time where we could not do anything for a little while and then in two months get slammed with snow or something and all those little things that we should have done now are now big things that are going to suck ass doing then. You get what I mean?%u00a0 So we are thinking about all those things and probably going to start doing them.
The week was also the start of school for all the littles so we tried to see everyone one last time before school starts and it’s all homework and sports and friends. We had dinners, played in the sand, and worked on our pasta sauce faces.. All the good stuff for the last days of summer. We also moved the bees from the house to the loft for the winter (see, winter stuff has begun). The mr has plans of indoor hives and I am just going to let him do his thing just as long as the bees are not flying around inside the house. And on that note, Jeff (my dad) is coming to town this week and I gots to clean the shit out of the loft and weed wack and bring over some toilet paper and towels and make it habitable for people again. I have been slacking over there lately. My pottery wheel is in the middle if the room and there is a nice layer of dust on on the clean dishes. Dust, clay, and bees. He is going to have a blast.
I am really embracing the cold wet day we are suppose to have. I am going to do a few chores that I have been avoiding like cleaning out the spare closet (it’s full of sewing stuff, glitter, and who knows what else) maybe finally unpack my clothes and hang those up, maybe start knitting a hat? Whatever I do, I am looking forward to just kind of having a home day with my socks, cozy sweater, and never ending supply of coffee.

This summer I have gotten like 5 lbs of blackberries, a humongo bowl of raspberries, so so so many pears, and lots of random veggies, all from my neighbors and their gardens We live in a very giving and generous neighborhood. And it helps that they can’t possible eat all that they grow and that I am always willing to take it off their hands (and put it into my mouth) In return we have given out rhubarb and jars of honey and overall charm and smiles. (the charm and smiles are on the mr to give out)
The other day on a walk, the mr and I saw this sign outside of a neighbors house. Plums, please take some! Well pull my arm, I guess I will have too, because the sign said please right? Anyway, these little plums, not sure what kind they are, but they are so good. Sweet and bite sized and pretty. I ate a few then decided that I needed to share my shared plums and went about making a cake to stick those said share plums into.
I made the cake, invited my mom and a couple of sibs over. Mom didn’t come but Barb and Paul did so they got the cake, Well they got half the cake, the mr ate the rest. I was told that this cake is one of the best. I bet it is when you used share plums because sharing is caring and sharing cake is all that good stuff.
The stuff. A bowl with flour, baking soda baking powder, and slat. Then you have brown sugar, coconut oil. vanilla extract, soy milk, and a little apple cider vinegar. And plums of course.
Once you have started preheating the oven, cut your plums in half and remove the pit.The best way to do this is to run the knife along the pit all the way around the plum and then twist to break in half. Pop the pit out with you finger.
Set plums aside while mixing cake
Warmed coconut oil, brown sugar, and vanilla all get mixed together into a smooth consistency then dumped into the bowl of dry stuff.
Soy milk and vinegar get added and mixed in.
Batter gets poured into a very well greased cake pan and the plums get placed, cut side down,right on top. A sprinkle of sugar to top it off is not a bad idea.
Into the oven it goes to turn to cake!
Pulled from the oven looking so nice. Let the cake cool completely in the pan before taking it out. Hot cake is hard to handle!
And as soon as you get it out of the pan you can start eating.

Makes a 12 inch cake
Ingredients
2 1/4 cups all purpose flour
1 teaspoon baking sods
1 1/2 teaspoon baking powder
1 teaspoon salt
1 cup brown sugar
3/4 cup coconut oil (warmed so it’s liquid)
1 teaspoon vanilla extract
1 cup soy milk
1 tablespoon apple cider vinegar
12-14 small plums (the plums I used where golf ball sized so you might need less for larger plums)
1 tablespoon white sugar
Preheat oven to 350
Start by slicing the plums in half and removing the pits. Set them aside. Hint. for slicing, the best way to do this is to run the knife along the pit all the way around the plum and then twist the plum in half. Pop the pit out with you finger or spoon.
In a large bowl, whisk together the salt baking soda and powder, and salt . In a smaller bowl mix together the coconut oil, brown sugar, and vanilla until smooth. Pour the wet into the dry and add in half the milk, mix together, then the rest of the milk and apple cider vinegar. Mix until all incorporated and smooth.
Pour batter into a well greased 12 inch round cake pan.%u00a0 (If you don’t have that a 9×9 square pan will work) Smooth out the top then grab your sliced plums and stick them, cut side down, on top. Give each plum a little push into the batter so it half submerged. Sprinkle the top with white sugar and pop into the oven
Bake for 45-50 minutes or until a fork or toothpick stuck int he middle comes out clean.
Remove and let cool completely in cake pan, it’s easier to remove the cake when it is not hot.
And once it’s cool, remove cake gently and ta-da. Cake time
Well that blizzard happened. And so did a bunch of other crazy shit.
We got slammed here in the northwest parts of Vermont. 30 inches or so all in a days time. It was lovely and exciting and a little daunting. I shoveled and shoveled and shoveled some more. My boots got filled with snow, my mittens soaked, and my arms a bit sore, but all in all I came out unscathed and actually quite happy for the massive amount of the white stuff. If it’s gonna snow, might as well make it a massive snowstorm. And now thanks to all the snow drifting and city workers blowing the sidewalk snow into the front yard, I now have my very own snow tunnel system. Miley and Judah being the architects and the mr and I the labor.%u00a0 Nothing beats a warm sunny day playing in the snow.
And then there was the furnace that shit the bed. The mr has been dealing with this heater at one of our buildings for a few weeks now and finally during the storm, after a few visits with the plumbers, the old hunk of metal decided it was time. On it’s last leg, barely lasting the week, the mr has been obsessively running back and forth to relight the thing just to milk as much heat as possible from it until the plumbers come Monday morning with a all new heating system. (There goes our vacation to the Bahamas. Ok, there was never a vacation planned, but now there won’t be one)
%u00a0To top off a strange week, one nephew (Jackson) broken an ankle and another (Alex) is in the hospital after his appendix almost exploded. Then we attended an elementary school play where Miley played a bum and a knight and Judah dance like a rat. A day with Sophia throwing snow at the mr and leaving a trail of glitter all over house and car…..What a week. What a week indeed.
I feel like today is kind of a make up day for all the shit that I didn’t get a chance to do the past few days. A little paperwork, a bit of cleaning, grocery shopping. But if I am good and get it all done early enough I hope to escape to the trees and spend part of the day outside being calm and quite. I think I can make it happen. I need to make it happen.

I have managed to wear my overalls all week, cause it has been that kind of week. Rainstorms, the loudest and longest clap of thunder I have ever heard, yard and garden work,%u00a0and many many mosquito%u00a0bites. Me and the mr. took the afternoon on Friday to go pick strawberries and snap peas down at our farm share and now%u00a0my%u00a0hands are stained red and%u00a0think I have eaten my weight in strawberries over the past two days. And one might think that I would get a little berried out, but every time%u00a0I walk by the big bowl of berries I left%u00a0on the table, I grab a few. (pretty much every time I get up in my house, you walk by the table) We also got to spend a little time hanging out with the family and seeing some little littles.%u00a0%u00a0Grilled cheese sandwiches (with american cheese of course) drawing on the deck with chalk,%u00a0and talking about upcoming birthday cake ideas %u00a0(pink or purple and%u00a0must have lots and lots of sprinkles!)%u00a0
And begin that its the 4th of July weekend, the mr. finally busted out%u00a0our sweet little cast iron hibachi grill%u00a0and set it up%u00a0pretty much right in%u00a0front of the front (and only)%u00a0door. Once that beast is%u00a0hot, it really can’t be moved easily, so there was a fire hot grill to%u00a0navigate around to get out of the house. But it was ok because we %u00a0grilled up a bunch of veggies (and%u00a0a few little strawberries…so good!), I made the bestest potato salad that has ever been made (I’ll share the recipe%u00a0this week) and we%u00a0had ourselves a most fantastic time.
And fireworks…. well, I am not the biggest fan. (more of a sparkler fan)%u00a0I mean, I won’t turn away if I happen to be in the area of things blowing up in the sky but I don’t actively go out of my way to see that, especially at 9:30 at night, cause geeze, I am in my pjs, on my way to bed. So%u00a0no, I didn’t see any fireworks and yes,, I am an old lady.

My head is in hyper crazy mode lately,and I am sure I am not the only one. There are so many things going on all at once. I can get a little frazzled and fizzled and just plan beat ass tired. And then I think about what to make for dinner.
Boom. My mind melts and my stomach growls. Some nights all I want to do is come home, skip real dinner, and just eat carrots dipped in mustard and call it a night.%u00a0 But the mr, he can’t live off of carrots.(I probably couldn’t either) So I make.dinner. (Where is my trophy for being the best?) But nothing to fancy and it needs to be fast ans easy.%u00a0 I have been thinking more about things that I can make on the fly, things that are healthy and satisfying. Foods I can make that can be wrapped, packed and eaten on a milk crate in between tearing down a wall. And tasty…needs to be good.
Sandwiches. That is where it’s at. And this sandwich. Watch out!
Nothing to do with this sandwich but I am sitting here at 8pm on the couch, writing out this post, getting a face time call from a 5 year old little. He really needs to talk to me…. and about what? What does a 5 year old need to talk about this late at night? Well he needs to talk birthday cake, a duh. He needs to show me his cake diagram he made that consists of 9 full sized pieces of paper taped together. (he said the cake didn’t have to be that big). And he cannot possibly go to sleep until I am aware of his cake design. Well little dude, I got it. A chocolate/vanilla/red/green/and purple cake only 2 feet high, in the shape of mind craft and flavored like happiness. I am on it. Now go to bed.
So yeah, back to sandwich. This is probably one of the quickest, most satisfying sandwich that I have ever made in my entire life (seriously) Creamy and rich peanut ginger smothered chickpeas paired with crisp, slightly tangy veggies.. Ridiculously fast and easy to make. A sandwich that is worth having a famous person eat it, declare it #1, rename it the (insert cool famous person name) sandwich and forever be known in the sandwich world. But until then, or before then, you can get on this sandwich band wagon and say you ate it before it was famous. You will then be the coolest person ever. (maybe a slight exaggeration)
The stuff. Chick peas in bean juice, apple cider vinegar, a big scoop of creamy peanut butter, some soy sauce, a few cloves of garlic, fresh ginger and a little bit of honey, Also going to need some cabbage, a carrot and a half of ared onion.
Do this first… Slice the veggies as thinly as you can, stick them into a bowl and splash with apple cider vinegar. Give it a good toss and set aside.
Grab another bowl and stick in the peanut butter, soy, and honey. Grate or super finely mince the garlic and about a tablespoon of the fresh ginger and add that in, along with a splash or two of the apple cider vinegar. Grab a little whisk (a fork will do) and start mixing.
As your whisking, add in about 2-3 tablepoons of the bean juice. Whisk until the sauce is light and fluffy.
Strain the chickpeas from the remaining liquid,%u00a0 toss them into the sauce and mix all around.
Sandwich time.. I think you get the idea. The veggies and the beans get stuck onto the bread.
And closed onto each other. A sandwich to make anyone, anytime, anywhere, all day long….HAPPY.

makes 2-3 sandwiches
2 cups chickpeas (and a few tablespoons of the bean juice)
1/4 cup creamy natural peanut butter (I am a fan of Trader Joe’s)
1 teaspoon honey or brown sugar if vegan
1 tablespoon soy (I actually used Braggs liquid aminos, but either will work)
2 tablespoons apple cider vinegar (plus another tablespoon for veggies)
1-2 cloves garlic
1 tablespoon freshly grated ginger
Abut 1 1/2 cups of shredded cabbage
a small carrot shredded or thinly sliced
1/2 a small red onion sliced super thin
bread/wrap/whatever you want to sandwich the salad in
Right away stick the carrot, cabbage, and the onion into a shallow bowl and drizzle on about 1tablespoon of vinegar. Give them a good toss and set aside. ( the longer they sit, the better they taste)
In a separate bowl, whisk together the peanut butter, honey, soy, and the other 1 tablespoon vinegar. Grate or mince the garlic and the fresh ginger and add that in as well. As you are whisking this together, add in about 2 tablespoons of the bean juice. Mix until light and fluffy. Strain the remaining juice from the chickpeas and add them into the sauce. Toss to coat.
Note… I did not show it, but i mashed the chick peas a little bit, so they were not all rolling around and completely falling off the bread.. so you might want to do it too.
Now compile the sandwich.. A handful of the crispy sour veggies and a scoop or two (or however much you want) of the chick peas goes in between two slices of bread (or in a wrap). Toast the bread if you wish.
And eat. Smile, lick your fingers, and be satisfied that you can forever make this amazing sandwich in like 3 minutes whenever you feel like it and that it is most likely going to have a cool famous person name.
It’s officially kinda official. WE MOVED IN!!!! And yeah sure, we might not have a kitchen or a 100% functional shower, but hey, who needs that when you got a real freakin bed to sleep in. (we are showering and preparing food at the loft) Going form sleeping on a futon on wooden slates in a crawl space to our real bed, with a real frame, all in a giant room with windows….. It’s hella crazy.
Other then the move in, the week has been pretty jammed packed. Still spending every minute plugging away at the house all while making sure all of our tenants are keeping warm with working heaters. (we have spent way to much time at the plumbing supply store this week) Barb, the mr and I ditched a day of work and school to travel to the north and hit up the land of Canadian Ikea. The mission was simple. Get a kitchen sink and maybe a cool rug or a shelving unit, and for barb and the mr, to eat as many hot dogs as they could. Success was had. We go the sink, I got a jar and a rug, towels were bought and an obscene amount of hot dogs were eaten (I think they each ate somewhere between3.5 and 5, plus a fro-yo. Me I was happy with my carrots) We we home before dark and spent the remainder of the day hanging up the Christmas lights. It was a grand day indeed.
As for the mr, well he went and turned himself one year older. And what did we do?%u00a0 We went and had a happy birthday party with family and friends at the newly unfinished house. It was all sorts of fantastic. We frantically ran around to pick up all the construction mess, tossed some plywood on the cabinet frames, ran all over to make paper lanterns for the light bulbs hanging from the ceiling and cleaned the toilet. I made huge vats of soup and kept the warm in slow cookers (I am now a new owner of a vintage 70’s crock pot so I guess I need to learn how to use it) and we borrowed an electric griddle, cut up some veggies and fruit and had a soup and grilled cheese party. (shout out to barb for helping me cut all the everything, oh and having the first official dance party with me) A classic homemade vanilla cake with some Duncan Hines frosting and ice cream topped off the night. I must also mention that even with a house full of people, including a bunch of littles, there was barely any food wasted. My brother even asked where he could find my compost bin to toss the orange peels. That might have been the highlight of the night.%u00a0 After the evening my ass was tired so off to bed we went.%u00a0 Then I woke up. Nothing beats waking up at 5am the day after a party to a plywood covered pile of soup crusted dirty dishes.%u00a0 2 hours later, a rag, some peppermint Dr. Bronners and the bathroom sink made things look good again.%u00a0And now the house is full of every chair we have ever owned, every piece of mismatched bowl, plate, cup,jar, and spoon we could find, and a freezer full of wheat bread and lots of carrot sticks.
Yup, things are moving along. Pretty soon I’ll be cooking up a storm in new kitchen and will be bring you all some food posts to boot.%u00a0 The appliances are set to arrive tomorrow and all we have left to do is build the cabinets, run a few water lines, pour a concrete counter………
Today the mr have to remove the 500 plates, cups, bowls and spoons out and the rest of the birthday cake out of the kitchen area and get back to work to makingt he real kitchen thing happen. But the coffee pot and all the coffee has found it’s permanent home. I’ll have coffee all day long. Whoa hoo!

My winter farm share is coming to an end this week. One more pick and then a three week stretch until the summer share starts… WHAT AM I GOING TO DO!!!
Stock up as much as I can is what.
I have been strategic about the roots and veggies that I have chosen to bring home the past few weeks.(My farm lets you pick what you want) I know what I can buy at the store, things like carrots and potatoes, so I have been passing those up, but the roots like beets and celeriac… I have been bringing home baskets of those and hoarding them in the fridge and basement in preparation for the laps in farm fresh food and knowing that if I want to by these at the store it s going to coast me a million dollars a pound. (a for real million dollars)
Yup, lots of roots around here, especially celeriac root which is fantastic. I am kind of obsessed with celeriac, with its fibrous, knobby exterior, soft but almost meaty texture inside, and a flavor that is close to celery but so much better. I don’t know why it has taken me so long to do a posting featuring this amazing root vegetable (I eat it almost every day)
So here, an amazingly tasty, hearty but not heavy, celeriac recipe. Perfect for spring and the change into summer…. Mustard roasted celeriac with an fanatic split peas gravy that will have you licking you bowl clean.
The stuff….For the split pea gravy we have a carrot, a parsnip and a large onion chopped into small chunks. Salt, thyme, a bay leaf and of course the split peas. Then there is the celeriac root* sliced into 1/2 inch thick rounds and some plain old yellow mustard .
*Note. I don’t peel my celeriac root. I really enjoy the fibrous exterior but realize that some don’t(The mister does not like it) so peel it if you want.
Toss the chopped parsnip, carrot, onion and the spices into a pot on medium heat and let veggies sweat a few minutes until tender. Add in the split peas and enough water to cover everything. Turn pot on high and bring to a boil, then cover and turn to low. Make sure to give the pot a good stir ever few minutes and add more water if needed
While the gravy is cooking, take the celeriac rounds and brush each side with yellow mustard, sprinkle with pepper, and place on a baking sheet. Stick into the oven to roast for about 25 minutes, flipping the rounds after about 10 minutes.
Once the peas have soften, remove the bay leaf and puree until smooth and oh so creamy. Taste and add more salt and pepper if needed. If you find that the gravy seems to thick, just add in more water until it’s the consistency that you want. The gravy is made, the celeriac is roasted… now we are ready to eat!! Stick the celeriac on a plate and dump good amount of that gravy right on top. Feel free to add a bed of spinach, or a grain or anything you want, because why not, and also some chopped tomatoes for a little acid and prettiness.
Serve with the fanciest knife and fork you can find. Extra yellow mustard and sriracha sauce are great condiments to have close by.

Mustard Roasted Celeriac with Split Pea Gravy
2 medium celeriac roots
6 tablespoons mustard
1 large carrot
1 medium parsnip
1 large yellow onion
2/3 cup split peas
2-3 cups water
1 bay leaf
2 teaspoons thyme or italian spice mix
salt and pepper
spinach (optional)
diced tomatoes(optional)
Preheat oven to 400 degrees
Small dice the carrot, parsnip and onion and throw into a large pot. Spinkle with salt and pepper, add in the thyme and bay leaf and add a splash of water. Stick on stove on medium heat and stir. Let cook until the veggies become soft and fragrant. Now add in the split peas and 2 cups of water. Bring to a boil then cover and turn heat down to medium low. Let cook until the split peas become tender (about 25 minutes) string on occasion and adding more water if the peas are not completely summered while cooking.
Once the peas are tender, let cool for a few minutes, remove bay leaf, and either dump into a blender or blend with an immersion blender until nice and creamy. If gravy seems to thick, add in more water.
Scrub or peel celeriac roots and slice them into 1/2 inch think rounds. Place on a baking sheet and brush mustard on both sides and spindle with pepper. Stick into oven for about 10 minutes, flip, then back into the oven for another 15 or so minutes, or unit the celeriac is tender.
When the celeriac is done remove from oven and stick a few rounds on a bed of spinach (or not, or any kind of grain or green you like) Top with a hearty helping of the gravy and toss on some chopped up tomatoes.
It%u2019s a smoothie. And no, we have never really been smoothie people in this house, but what can I say, sometimes smoothies happen, especially when you have about 20 ripe bananas in the fruit bowl with no room in the freezer and no need for 7 loafs of banana bread.
So I smoothied. And I like it (a lot).
This is a smoothie of simplicity. Nothing fancy. Simplest of simple. Straight to the point. And all sorts of good.
You might think, does this simple smoothie you speak of taste very good? Yes, yes indeed it does. It is all sorts of fantastic. Basically if you like creamy, nutty, oaty, bananery things, you will like this. And it%u2019s a perfect breakfast, snack, dessert, or just wanting a little treat like thing that is not garbage food. A smoothie of all smoothies with the most basic ingredients. And takes about 15 seconds to whip up. Can%u2019t complain about that.
To the smoothie goodness!
The stuff. A ripe banana, some old fashion rolled oats, a pinch of salt, water, and a smidge of maple syrup if you want it.
Everything goes into blender.
And blended until smooth. Hence the word smoothie.
Pour it into a cup (or if you are feeling primal, drink it straight from the blender%u2026 it%u2019s totally cool)
And done.
A banana oat smoothie.

makes 1 smoothie
1 very ripe banana
1/3 cup raw old fashion oats
1 1/2 cups water
pinch of salt
a tablespoon or two of any sweetener you like (optional)
a pinch of cinnamon (optional)
Place everything into a blender and blend until smooth. Pour into a cup, sprinkle with cinnamon if you wish, and drink right away.
All at once is how it goes. The garden is all star fantastic and just won’t quit.%u00a0 I find myself picking 4-6 cucumbers and the same in squash every morning. The tomatoes plant are a freaking jungle and there are so so so many tomatoes, all just about to ripen. The kale is doing it’s thing, growing big and green and I pick a few handfuls a day. And then there are all the beets and carrots and cabbage,chard, and kidney beans. It’s big, and prolific and amazing. I am much proud of myself for growing a shit load of awesomeness.
And then there is the farm share. I get all my garden stuff times 10. Tomatoes, cucumbers, zucchini, kale. Not to mention the corn, onion, carrots, and herbs and all the flowers. The food keeps on coming.%u00a0 I live in a house, with a big kitchen, with lots of counter and a full sized fridge, yet I still don’t have a place for it all. The squash overflow has now made it’s way to the dinning room. But I am not complaining.
The new rule that I have instated in the house. Every meal must contain at least two tomatoes, a cucumber, and some kale. Want a snack, grab a zucchini. You thirsty? well eat a cucumber. No joke. I get a little stressed out about how much food is around that needs to be eaten or canned, but that is good stress. I am on the lookout for a chest freezer to help with the stress. I promised myself that I would have one by now so I need to get on that asap.
Summer harvest. This is the time of year that I gain a few pounds. It’s a zucchini tomato belly for sure.
And this salad. I am a huge fan of the B.A.S (big ass salad). A big ass bowl of all the goodness from farm and garden plus some lentil protein and a little good avocado fat. Fresh and clean and delicious. Makes you feel all good when you eat it.%u00a0 So go for it. Eat yourself a B.A.S. you wont regret it.
The stuff. Cucumbers (that is a white cucumber and it’s really tasty) tomatoes, some kale, parsley, and cilantro. Also need some onion, cooked lentils, and at least half an avocado. Salt. pepper, and red wine vinegar for the finish.
Kale. parsley, and cilantro get a good rough chop and then tossed into a big ass bowl.
Cucumber, onion, and tomatoes get their turn next and chopped into mouth sized pieces. Into the bowl as well.
Top it all with cooked lentil, some avocado, and a glug glug of vinegar. Season with salt and pepper.
Now all you need is a fork.

2 cucumbers
2 small or 1 large tomato
1/2 of an onion
1 cup cooked lentil
1/2 an avocado
3-4 large kale leaves
handful fresh cilantro
handful fresh parsley
red wine vinegar
salt and pepper
First off, grab a really big bowl. Take herbs and kale and chop into small pieces. Place in bowl. Next dice up you onion, tomato, and cucumbers into mouth sized pieces and toss those into bowl. Dump the cooked lentils on top of that and dice the avocado (I used half but you can use whole one) into little pieces and through that on too. Sprinkle with a pinch of salt and pepper and a glug (about a table spoon or two) of vinegar.
Now mix until all combines. Taste and if needed, add more salt, pepper, and/or vinegar.
Corn is the name of the game, and this game I won!
The mr doesn%u2019t much like to eat corn. But I do. And this time of year I get like 10 ears of corn every week from farm share, which is a lot of corn for one person to have to eat every week and sometimes I just can%u2019t do it. So every now and then I make something that I think the mr will tolerate, if not like, to get him to help me eat the stash of a hundred ears or corn that I have going on in the fridge.
These fritters helped me with that and I think with all the future corn that I will get from the farm. They are soooo good! The mr liked them! As for me, I couldn’t stop eating them and almost didn’t want to share because they we just so dang good. Sweet fresh corn, nutty and slightly chewy oats. Scallions. And that%u2019s pretty much it. So fresh and clean and yummy tasting. A summertime fritter situation that takes corn to a place where even the corn hater likes it.
Although who the hell hates corn? I know one person. One. And I live with him. Weirdo.
Anyway, to the fritters!
The stuff. Fresh sweet corn, old fashion rolled oats, and a few scallion. Also some ground flax seed, water, baking powder, salt and pepper, and a little oil.
Start with oats. Add most of what we need to a blender and blend until it becomes oat flour.
Then the corn. Remove the kernels from the cobs. Best way is to hold corn in a large bowl and cut downward. Don%u2019t want corn flying all over the place!
Add most of the corn you just cut off the cob to the blender with the oat flour, along with with flax and water. Blend until smooth.
Chop the scallions into thin and tiny pieces.
Now dump the contents of the blender into a bowl, add in the scallions, the baking powder, and the extra oats and corn. Mix it all up and then let the batter rest for a few minutes (like 10) so the oats have a chance to really absorb all the liquid.
And then to cook them. Heat a lightly oiled skillet to medium high heat. Once skillet is hot, drop scoops of batter into it. Cook for 3-4 minutes or until the bottom is a nice deep golden brown. Flip and cook the other side the same.
When fritters are done cooking, place them on a wire rack. So they don%u2019t get soggy.
And then serve them right away. I ate mine with fresh salsa. Definitely the way to go. So GOOD!
Now eat your corn.

makes about 12 fritters
3 ears fresh corn ( about 1 1/2 cups of kernels)
1 1/2 cups rolled oats (gluten free if needed)
1/2 teaspoon baking powder
2-3 scallions
1 tablespoon flax meal
3 tablespoons water
salt and pepper
a little oil for skillet
Combine water and flax meal, mix and set aside.
Place 1 cup of oats into blender or food processor and blend for about a minutes or until the oats are a fine flour.
Grab corn and remove from cob. Best way to do this is to place corn vertically in a big bowl and cut downwards so the bowl catches all the kernels. Cut enough corn until you have about 1 1/2 cups of kernels. Also, garb scallions and chop into very small, thin pieces.
Add in a cup of the corn, the flax and water mixture, baking powder, and a pinch of salt and pepper. Pulse or blend until completely combined and the mixture is mostly smooth.. Dump mixture into a bowl and add in the remaining corn, chopped scallions, and oats and mix together. The mixture should not be runny, but also should not be dry enough to pack together. If the mixture seems too dry and tight, add in a tablespoon or two more or water. To wet, add in a small handful of oats.
Once batter is mixed, set aside for about 10 minutes to rest.
Grab skillet and place on medium high heat. Add a touch of oil to pan and make sure it evenly coats the bottom. Once pan is preheated, add scoops batter into pan (about 2 tablespoons each). Cook first side for about 3-4 minutes or until dark golden brown, then flip and cook the other sides for another 2-3 minutes until a dark golden brown. Remove from pan and either place on a wire rack or a plate. ( I recommend a wire rack just to keep them from getting soggy.)
Serve right away. Fresh salsa goes amazingly with them!
Any left overs can be stored in fridge and reheated in the oven.
Salad season is here. Green salads, fruit salads, potato salads, and grain salads. All the salads and we are not mad about it.
This is a good grain salad using millet, which I am sightly surprised to hear that a lot of people have never had. Millet is kind of like quinoa, but not. I cooks fluffy and looks kind of the same, and is gluten free like quinoa. I think the biggest difference is that millet is slightly softer and tastes a bit more nutty. It also is really good at absorbing liquid flavors.
But who are we to compare. The main thing is that it is nutritious and delicious so we will eat it.
Back to the salad. This is one of those grain salads that is good cooked and served warm but only gets better with a little age (like an hour or a day) in the fridge. Served hot or cold or room tempature, and is hearty enough to be meal like but is also a fantastic addition as a side to any of you meal plans. Like maybe a BBQ? Whatever the occasion, or non occasion, this is just a really good grain salad situation and I think you will be pleased, smiling all smiles while eating it.
To the millet salad.
The stuff. Millet, a couple handful of greens, a few mushrooms, an onion, dijon mustard, a little maple syrup, red wine vinegar, a lemon, a couple cloves or garlic, some toasted sunflower seeds, and salt and pepper.
Start by giving the millet a little toast, just enough to really up the nutty flavor and make it that much more yummy. It only takes a few minutes in a skillet on medium heat. Not an entirely necessary step, but you should do it.
Toasted millet goes into pot with water. Bring pot to a boil and then turn to the lowest simmer and cover.
While millet is cooking, get to the mushrooms and onions. Chop the onion thin and small and the mushrooms thin and small as well. Place them into the skillet with a drizzle of oil and place on medium heat. Mix around every now and then and cook until the mushrooms and onions are soft and a nice golden brown.
And make the vinaigrette. Minced garlic, mustard, vinegar, the juice of the lemon, and maple syrup get put into one place.
Mixed and now all is one.
Millet. Cooked and fluffed and ready to go.
Cooked mushrooms and onions go into the pot, along with the greens, the sunflower seed, and the vinaigrette. This step can be right away or you can wait a little while for things to cool as to not wilt the greens. Up tp you.
Mixed with love and hunger.
Even if you are making it ahead of time, just do yourself a favor. Grab a bowl, grab a fork, and get down on it.

Seves 4-6
3/4 cup uncooked millet
2 cups water
1 sweet onion
3-4 big button mushrooms
Large handful or two of bitter greens like arugula, spinach or a mixture.
2 tablespoon brown or dijon mustard
2 tablespoon red wine vinegar
1 teaspoon maple syrup
2 cloves garlic
salt and pepper
handful toasted sunflower seeds
To start, toast millet. Dump the uncooked millet into a pan and place on a medium heat tt for about 5 minutes or until you start hearing the millet crackle.This gives the millet a slightly more nutty flavor but you can skip this step if you don%u2019t care.
Dump millet and water into medium pot. Place on high heat until water starts to boil then tun heat down to simmer and over. After about 15 or 20 minutes, when most of the water is gone, turn pot completely off. Let sit, covered for another 10ish minutes then take a fork and fluff it.
While the millet is cooking, cook the veggies. Grab the onion and slice it up into thin pieces. Clean off the mushrooms and chop them into small thin pieces too. Place the chopped stuff into the skillet with a drizzle of olive oil and a pinch of salt and place on a medium heat. Stir occasionally and cook for about 15 minutes or until the onion and mushroom are a nice dark, golden brown.
And make the mustard vinaigrette. Mince garlic and place into a jar or bowl with the vinegar, the mustard, the maple, and the juice of the lemon. Mix and set aside.
Once the millet is cooked, the mushrooms and onions are cooked, and the vinaigrette is made, all you have left to do is mix everything together. You can do this while things are slightly warm which will wilt the greens a bit, o let them cool so the greens stay fresh. Up to you. (I like the greens fresh)
Finally, dump cooked mushrooms and onions into pot with cooked millet. Add in the greens and sunflower seeds and drizzle the vinegertte all over. Toss around until fully mixed. Sprinkle with lots of fresh cracked pepper.
Then eat. Or place in a container to bring to the BBQ.
I am sadly at my last few bags of frozen garden foods from last season. As of now I have a bag of tomatoes, a couple bags of shredded zucchini, and a bag of rhubarb. Well, had a bag of rhubarb. I think I have eaten almost all of it already. My rhubarb patch better get up and producing stalks soon. And as for the rest of the veggies that I will require. Guess I am going to be surviving mostly on roots from farm share (we are getting a lot more greens though!!!!) and probably doing a bit more grocery shopping then I care too. A few more months. I can do it.
Anyway, enough about my freezer and lack of fresh produce problems.
Here in Vermont maple season is well on it%u2019s way making it a perfect time for anything maple. And rhubarb. Yeah I am using my frozen rhubarb from last year, but any time now (after the snow melts) there will be plenty of stalks for the taking. There will be so much maple and so much fresh rhubarb which are the perfect taste combination. Exciting times! And when added to oatmeal, things just get more gooder. (I know gooder is not a word but I think it should be) Oatmeal, especially baked, is the stuff where all gooder things start.
Have you had baked oatmeal yet? It truly is fantastic. Not at all gummy and gloopy like stove topped cooked oatmeal (but I like it like that too). It still has a good bite to it while still being soft and creamy and boy oh boy is it just the bees knees. With the addition of some crunchy almond friends, well even better. Trust me. If you are a oatmeal eater, you must try it baked. Best part is that it can be eaten as breakfast but also I have been serving it to the mr for dessert with a healthy drizzle of more maple. It%u2019s that good friends. From breakfast to dessert. Everyone is happy.
To the baked oatmeal.
The stuff. Old fashion oats, cinnamon, salt, baking powder, rhubarb (fresh or frozen), REAL maple syrup, some plant milk, a few flax eggs, a bit of tahini, and some almonds.
To start. Oats, cinnamon. salt, baking powder and almonds get a quick toss together in a big bowl.
If you rhubarb is not already chopped up into inch long pieces, do that. I already did before freezing it so yea me. Once its chopped, layer almost all of it (reserve a few small needful to toss on top) into a lightly greased 9×9 inch baking dish then cover evenly with the oat mixture.
In now empty bowl mix together the milk, the flax eggs, the tahini, and the maple until evenly incorporated.
Pour the wet mixture all over the oats and let it absorb.
Once the liquid is all absorbed , top with any left over almonds and the left over rhubarb. For good looks.
Pop into a hot oven to bake.
Golden brown with crispy edges. Rhubarb and maple baked oatmeal for all your maple, oaty and rhubarbie needs.
Fresh from the oven scooped warm into bowls. Top with extra maple if thats what you should want do.

Make a 9×9 pan of oatmeal
2 1/2 cups old fashion oats (make sure gluten free if need be)
2 1/2 cups fresh or frozen rhubarb chopped into inch long pieces
1 1/2 cup plant milk (water works but it won%u2019t be as creamy)
1/2 cup chopped almonds (optional)
Preheat oven to 375
Lightly grease a 9×9 inch baking pan (I used metal because it makes for crisper edges but glass works too) and dump 2 cups of the rhubarb in and evenly distribute on the bottom. In a large bowl mis the oats, the baking powder, salt, and cinnamon together. Mix in chopped nuts if you are using. Evenly cover rhubarb with oat mixture. In now empty bowl mix together the milk, flax eggs, maple syrup, and tahini until evenly incorporated. Pour mixture over oats. Let the mixture sit for a few minutes until the oats have abosbed all the liquid. Toss the rest of the diced rhubarb and a few more chop nuts to the top and pop into the oven to bake.
Bake for 30-40 minutes (shorter time for a wetter oatmeal, longer for a denser crispier oatmeal)
Once baked to your likeness, remove from oven and let cool for a few minutes just so it is not super hot. Scoop into bowls and serve warm with extra maple and milk or whatever you might want to serve with it.
Left overs last great in fridge for 3-4 days or individual portions can be frozen for a month or two. Just pop into microwave for a couple minutes to warm up.
Roasted veggies of any kind can get this girl in trouble. Place a sheet pan meant for many full of roasted veggies and watch out, I will probably eat them all. I can%u2019t stop, won%u2019t stop and you know what, I am not sorry, especially if its roasted brussel sprouts and squash.l I am grabbing at every last bit, especially all the really crispy, almost burnt pieces. Burnt food is one of my favorite flavors.
This dish is pretty basic, but also not. A slightly overlooked grain, spelt, makes for a hearty backdrop to the magic of roasted sprouts and squash, covered with a sunflower butter sauce which is a nice spin on a traditional peanut sauce. It%u2019s pretty easy to make and pretty to look at as well. A nice hearty and warming meal for all of those cold winter nights. And it%u2019s not going to make you feel heavy or gross, like if you sat and ate an entire lasagna. No, you will feel full and fantastic and ready for a cookie (it is the holidays after all).
The ingredients in this dish are mainly inspired by the half eaten jar of sunflower butter a friend of mine gave me at the gym, plus the fact that I have been getting a few stocks of brussel sprouts each week at farm share so we are eating them at ever meal, (plus I LOVE brussel sprouts) and me trying to use up all of the grains and such in the pantry before restocking anything more or new. A dish of convenience sure, but also a damn delicious one at that. With this being said, if you had a different grain you wanted to use, or an abundance of some other veggies that you have or prefer, well go ahead and use them. You do you my friend.
And really, I was thinking of you when I made this dish. Sometimes at this time of year people tend to forget to eat, or tend to eat on the not so healthy side. This grain bowl situation is just what your body is in need of. Simple delicious nourishment.
The stuff. Spelt that has been soaking in water for a while, half a butternut squash, brussel sprouts, a red onion. Also sunflower butter, a few cloves garlic, a lime, soy sauce, a touch of maple, salt and pepper, and olive oil.
The spelt will probably take the longest so get it on the stove. Strain away the soaking water and place into with fresh water. Bring to boil then reduce heat to a simmer. Place a lid on pot ans let it go.
Next, get to the veggies. Halve the big sprouts (small ones can stay whole) chop onion into chunks and cube the squash.
A drizzle of oil, a sprinkle of salt and pepper, and a good toss around and it ready for the oven.
Meanwhile, make the sunflower butter sauce. Its pretty basic. The sunflower butter, minced garlic, soy, maple, and juice of the lime all into a vessel that can hold it. Add a couple tablespoons of warm water to thin it out and done. Sunflower butter sauce. Easy Peasy.
After about an hour, your slept should be cooked (that sounds aggressive to me) Tender and chewy and just right.
The veggies should be roasted and done too. Crisp as you like ( I actually like mine even darker, but the mr does not so I went a light roast this time)
And it%u2019s all ready for you to eat.

Serves 2-3
1 cup spelt berries (soaked in water overnight if you remember)
3 cups water
about 1/2 of a butternut squash
about a pound of Brussel sprouts
a medium red onion
1/4 cup sunflower seed butter (unsalted and unsweetened)
2 tablespoons liquid amionos or soy
1 teaspoon maple or honey
1 lime
2 cloves garlic
salt and pepper
olive oil
Preheat oven to 425
Place soaked spelt berries in a pot with water and a pinch of salt. Bring a boil then reduce heat, place a lid on pot and simmer for 45 minutes to an hour or until spelt berries are tender and all the water has been absorbed.
While spelt is cooking, cut sprouts in half (unless they are very small), cube the butternut into pieces about an inch big, and chop the onion up into chunks. Place all that you just chopped onto a baking sheet, drizzle with a teaspoon or two of olive oil and toss around. Sprinkle the veggies with a pinch or so of salt and pepper and pop into the hot oven. Roast for 40-45 minutes or until roasted to your desired doneness. (I like things a lot darker then the mr so I would leave my veggies in for closer to an hour)
For the sunflower butter sauce. Mince garlic and place into bowl or cup with the sunflower butter. Add in the maple, soy, and the juice of the lime. Mix together and add in a 2 tablespoons of warm water to thin out. Add more water if needed to get to a thick but pourable consistency.
Once the spelt is cooked, the veggies are roasted and the sauce is made, well you can assemble and eat. Spelt in a bowl, toss on some roasted veggies, and cover in the sauce. And then you eat it.
I feel like this salad is kind of a summery salad, or better yet, a salad that highlights all the best of what summer has to bring. All the fresh tender dill that is still growing (but not for long) , all the brightly colored and amazing veggies that are being harvested and are nearing the end (bye fresh cucumbers.) This salad might just be my little last hurrah of summer cooking before it is all root veggies and dried herbs and hot and hearty food. And not going to lie and say that I am sad to see summer go because I am so so ready for it to be over, but I will miss all the fresh fresh produce. And I will especially miss all the fresh dill because fresh dill is seriously the best.
Eat up what is left of summer now before it%u2019s too late!
The stuff. Quinoa, a bunch of dill, a cucumber, a pepper, an onion, and some cherry tomatoes. Also a clove of garlic, some salt and pepper, and red wine vinegar.
Mince the garlic, chop the onion, mince the pepper and the cucumber, half the tomatoes, and last but noblest, rough chop the dill.
All that goodness goes into. big bow, along with a sprinkle of salt and pepper, and the vinegar Tossed around and left to meld.

You got yourself a yummers fresh dill and veggie quinoa salad.

serves 3-5 as a side or 2 as a meal
1 cup uncooked quinoa
2 cups water
I bunch fresh dill (like a 1/3 cup chopped%u2026 But use as much as you want)
1/2 a small red onion
1 clove garlic
1 small Persian cucumer
1/2 of a sweet red or yellow pepper
handful or two of cherry tomatoes
4 tablespoons red wine vinegar
salt and pepper to taste
Start by cooking the quinoa. Place the water and the uncooked quinoa into a medium sized pot. Place on high heat until sorts to boil, then reduce heat to a simmer and place lid on the pot. Let cook for about 15 minutes, checking at 10 minutes, to see if all the water has absorbed. When it has, remove from heat and let sit for a few more minutes then fluff with a fork.
While the quinoa id cooking, mince the garlic and chop all the veggies into small little pieces. Place into a big bowl. Chop up the fresh dill and toss into bowl too, along with the vinegar and a good sprinkle of salt and pepper. Mix it all around and let sit on the counter for a little so the veggies get nice and vinegary. Once quinoa is cooked and fluffed, dump into the bowl and mix around. Season with more salt and pepper if needed. Eat warm or refrigerate and eat cold. It%u2019s defiantly one of those salads that taste great right away but tastes even better the next day.
I am one of those people that hangs out for far to long in the grocery store, mostly in the bulk section, looking al all the types of rice, and grains, and beans, and seeds, admiring the variety and colors and also wishing I was one of those people that had an extra $25 to drop on a pound of pistachios.%u00a0%u00a0(Them were some pricey pistachios fo sho.) I take my time, peruse the bins, maybe take a little taste or two, %u00a0and go for what I need. And maybe if something is on sale, get a little of that too. Things that usually make the list are spices,%u00a0oats, beans, maybe rice or quinoa, flours, and seeds. Pumpkin seeds were on sale so those were the seeds of choice and I also got some barely because when I was starting at all the grains,%u00a0it dawned on me that I don’t know many people that eat barley, or even care about it, which is a shame because it is awesome. It might not be trendy like farro or freekeh, but it is just as good, and damn if it is not a hell of a lot cheaper.%u00a0
With the barley and pumpkins seed in hand, I had the start of a salad. So I grabbed some oats, a few spices, some beans and ran away from the builk section, past the nuts before things got bad and I either a) got kicked out for eating my weight in cashews and almonds,%u00a0pretending to just need a taste, or b) paid the $25 for a pound of pistachios that I might not eat because I would need to save them for something really special because they cost $25 a pound. Then I grabbed veggies, walked around the wellness section for good measure, did another lap around the store just in case I forgot something, then finally made my way out of the store only to realize when I got home that I forgot something. (I always forget something)%u00a0
But I had all I needed for a barley salad situation so things went well. This is a fantastic salad. It’s quick and easy and tasty and good. Barley, tahini, veggies and pumpkin seeds… It’s all you need for a just right dinner, or a fantastic side to any meal. Or as a snack at anytime. Bring it to a BBQ, a graduation party, or a pot luck. it will get eaten, and if by chance you end up with a little left over, bring it on home and eat it for breakfast. It will still be just as good.%u00a0%u00a0
The stuff. Pearled barley, tahini, pumpkin seeds and garlic. And some red wine vinegar, salt and pepper, kale, a carrot, some cauliflower, a lemon, a red onion, and a cucumber. (you are not going to need the full amount of all these veggies)%u00a0
First off, cook the barley. The barley and water go into a pot, brought to a boil, then left on low %u00a0to cook until tender. Once cooked, strain away excess water
While barley is cooking (or is cooked) chop up the veggies into mouth sized pieces. I used half the cucumber, half the onion, some of the cauliflower, all the kale, and all the carrot. It’s not an exact measurement, you just want a good amount to toss into the salad.%u00a0

And the tahini sauce. Mince garlic and add to a jar or bowl with the juice of the lemon, vinegar, a pinch of salt and pepper and give it a really good mix.
Creamy, zippy, oh so good.%u00a0
Drizzle and toss the dressing with the barley and veggies.
And that’s that. Now you are ready for eating.%u00a0
Enjoy wherever this salad takes you.%u00a0

If eaten as a meal, serves 2-3. As a side dish, serves 6-8
1 cup pearl barley%u00a0
3 cups water
1/4 cup tahini%u00a0
1 large lemon%u00a0
3 tablespoons red wine vinegar
2 cloves garlic
salt and pepper
1/2 of a cucumber%u00a0
1 small carrot
2 large kale leaves
1/2 of a red onion
1 cup of cauliflower florets%u00a0
1/4 cup toasted pumpkin seeds
Note. The vegetable amount and type is more of a preference. You could use all cucumber and onion or add %u00a0broccoli and pepper, just make sure to have a least 3 good cups of some chopped up color.%u00a0
Place barley and water into a pot and bring to a boil. Turn heat down to low and continue to cook until barley is tender, but not mushy, which should take about 45 minutes. Once cooked, strain excess water.
While the barley is cooking, chop all the veggies into small mouth sized pieces.%u00a0%u00a0And make the tahini sauce. Mince garlic and place in a bowl or jar. Add in tahini, the juice of the lemon, and the vinegar. Mix well until smooth then season with salt and pepper to taste. %u00a0
When barley is cooked and drained, let cool for a few minutes then place in a big bowl. Add in all the veggies and the toasted pumpkin seeds, then drizzle with the tahini sauce and toss all around. Season with salt and pepper to taste..%u00a0
Now eat still warm, or later at room renature, or place in fridge for it to get cold. It can be a filling meal or a great side dish.%u00a0It’s good all ways, any way.
Another note. This salad is great for parties and BBQ’s and can be made a day or two ahead. If you do make ahead, hold off on mixing the pumpkin seeds and the tahini sauce with the rest of the salad until you are about to serve it.%u00a0
The trees are on fire, the sky has been lighting up like a masterpiece and the temperatures have been on the cooler, crisper side. I am one lucky lady to be living in such a beautiful place. Another super productive week for the books.%u00a0We finished laying all the hardwood downstairs then went straight to tiling the bathroom which was awesome cause it was my first real tiling project and now that floor is down too. But man did it do a number on me. The one thing the mr always bitches about are his knees, and now I now why. Kneeling on anything, especially cement board, for 5 hours pretty much will kill your shit. I might be a little whinny, but crap on a shoe do my knees hurt. (now I am done complaining) What else……..Oh yeah, a large quantities of construction waste was brought to the dump that has bee accumulating in large piles in the back yard..(that was fun) I invented a new sport, storage unit parkor (I am really good at climbing and jumping around packed storage units), and got to see the new little monster baby while doing it. Then my little brother came over for a while to help carry the cast iron bathtub from the backyard to the upstairs. (thanks Paul!)%u00a0 I even made a point during the week to stay home for just enough time to made donuts with sprinkles while I sat in front of the oven knitting cause I was freezing my ass off. And I ate 2 roasted pumpkins, an acorn squash, and a sweet potato this week. Feeling pretty good about life.
So I don’t know about today. We might or might not work. We may or may not run away to the woods.(I need to be with the trees for a while) Most likely both. But one thing is for sure, I will be icing my knees. And drinking a butt load of coffee. And eating the butternut squash I picked it yesterday. I am a winter squash addict.

THE LOVELY CRAZY

I think we are pretty much out of the clear. Yes I woke up yesterday morning to a light coating of snow on the ground, but I feel like that was it. It has got to be because I have to wash my winter jacket that is as of now, covered in dirt and concrete so it needs to be washed. And once it is washed, it is getting packed away with all of the other winter stuff. So you see, we really cannot have any more winter jacket weather because I won%u2019t have a jacket anymore. It must be sweater weather or warmer and that is that. Are you listening weather?
The week good, if not a bit hectic and all over. There was work, paper work, the %u201cmust not be mentioned%u201d and no they are not done yet but must be by next Monday or else. The mr has been running around all over town doing this and that which has been a slight pain because when he is super busy and I am busy and we only have one car and my bike needs a good tune up before it is safe%u2026 Well it makes things some what difficult. But so far we have managed and there wasn%u2019t too much arguing over car. We did manage to take a nice walk down by the lake, I also was able to sneak in a warm afternoon of clearing out the garden and picking up yard trash. The back porch is almost ready for summer living and green things are popping up all over the place making me ache for more more more. Think of it, trees with leaves. I am getting more excited every day.
Friday was a crazy day. Woke up, went to the gym with no plans other then work at the studio and having the littles over for dinner. By the time I came home I had plans to quickly make a cake before work because the littles pizza party turned into a family birthday party for Megan. So I made that cake, ran to work, moved 700lb of clay and loaded kilns. The mr picked me up with littles in tow, we ran home in time for all the family and partied partied until I kicked everyone out of the house at 7 because I was exhausted and plus Megan needed to go to Costco so she needed to leave anyway. Ha.
Yesterday, after a near sleepless night due to a racing mind, we woke up (again, to snow. BLAH), I bundled up and out we went to spend half the day pouring wet, heavy, cold concrete. I must say, pouring concrete usually isn%u2019t the worst, but yesterday, well it was. First off, we were working in very tight quarters making moving somewhat difficult.. Secondly, I was sore from all the clay moving the day before. And I was freezing. And tired, so so tired. By mid morning my fingers and toes had tuned to ice, I was covered in so much dirt and concrete, the mr was basically rolling around in dirt (reference picture above) so was trashed worse then me, but we were getting it done. The mr was brilliant and saved us so much time and hassle by coming up with a tarp and jostle concrete mixing technique so that was good. Anyway, the concrete was all poured and it is over. (Now we wait for it to set to finish porch construction) The rest of the day was short and went by with cleaning the house. I don%u2019t know how my family does it but there were sprinkles from the cake EVERYWHERE!
Today, after a quick romp to the gym, the library, the grocery store, and all the other little chores I need to do, the mr and I are going for a drive to look at a van. We need a work car. The life car is getting trashed, we have been having to get materials delivered (which costs money and stupid time) because we cannot fit wood and big stuff in the car, and it is just not practical for us to share. So van. A van for work, A van for cross country travel. A van for sanity. Hopefully this van is the one. Wish us luck.

I can%u2019t remember the last time I have gone a day without eating lentils. Seriously, even when we travel I buy or bring along a bag of lentils. Or when we are camping, its basically all we eat. So it is safe to say that I know my way around a lentil or two. They are probably my favorite food (I say that about all my favorites)
Other then lentils being amazing delicious, the are so versatile. I am sure I say it all the time, but there is nothing you cannot make with lentils, sweet or savory. And nutritional as all heck. So much iron and a super amount of protein. Lentils are basically the perfect food in tiny little coin shaped form. Take it from this vegan lady here. Lentils help keep me alive. HA.
But enough about how many lentils I eat, what we need to address is this chili. It doesn%u2019t matter if you are a lentil feen or not, you will very much enjoy yourself a big bowl of this hearty, slightly spicy, warming goodness. Especially now, when it%u2019s cold outside and the days are short and you just want to eat something filling and healthy and that is not left over holiday cookies. And big bonus, this is a chili that you could come home to start at 5 and basically have it ready to eat by 6. That is just one bit of the magic of lentils, they so cook so fast.
And it%u2019s chili and chili is the best so you really should just get it made. It%u2019s what you need, I can tell.
To all the lentil goodness!
The stuff. Green lentils, crushed tomatoes, a cubanelle pepper, an onion, a couple carrots, and some cauliflower. Also a few cloves or garlic, cumin, chili powder, ground ginger, a red jalape%u00f1o, and salt and pepper.
Get started by small choping the carrot, onion, and pepper. Mince up the garlic too.
Grab that jalape%u00f1o and remove steam (and seeds if you want heat) and dice into very very small piece.
Into a big old pot it all goes, along with the cauliflower and all the spices. Add a splash of water and a sprinkle of salt and pepper and stick it on the stove for a few minutes to warm up the veggies and spices.
Looking good.. So good I wanted to eat it all, but don%u2019t, it%u2019s for the chili.
Now add all the tomatoes and water and place back on stove on high heat until it starts to boil, then reduce heat to a medium and cook until lentils are tender.
Well look at that, chili.
And why not top with a little avocado while you are at it. It is a very good addition, to the spiciness.
Very little amount of works for such great rewards. Probably going to be your new favorite chili recipe just so you know.
Lentil chili. Grab a bowl, kick up your feet, and dig on it.

makes a lot of chili, like 10-12 servings
1 pound green lentils
1 large onion
5-6 cloves or garlic
1 cubanelle pepper (or any green or sweet pepper)
2 large carrots
3 cups chopped cauliflower (fresh or frozen)
6 cups (two 28 oz cans) crushed tomatoes
2 hefty tablespoons cumin
1 hefty tablespoon chili powder
1 teaspoon ground ginger
1 jalape%u00f1o pepper
6-8 cups water
salt and pepper
diced avocado for serving (optional)
Remove steam and seeds from cubanelle pepper and small dice it along with the carrots and onion then place int all nto a large heavy bottom pot. Mince the garlic add into pot. Remove steam and seeds from jalape%u00f1o pepper and finely dice it and add to pot. Last but not least, add the spices to the mix. Add a splash of water and place on high heat and cook the veggies and spices until for 5 or so minutes, just to give them a little heads start and to activate the spices.
Once the veggies have had a few minutes of heat, dump in the dried lentils, the tomatoes, and 6 cups of water. Stir around and keep on high heat until it starts to boil then turn down to medium and continue to cook, stirring once in a while, until the lentils are tender and the chili has thickened, which should take about 35-40 minutes. If at any time you the lentils are not submerged in liquid but are not cooke through, add more water. And once the lentils are cooked you can thicken bu continuing to cooke does or thin it out by adding more water. Taste soup and season with salt and pepper as you see fit.
To serves, ladle into bowls and tope with diced avocado.
Left overs are fantastic hot or cold and will last in the fridge for about a week. Or if you want, you can freeze a few servings.
Another week come and gone. The month of February is already flying by and I would be lying if I said I cared, because I kind of don’t. It’s not that I am not appreciative of every day and all that good stuff, but I am,%u00a0and more so everyone around me, are in the midst of some serious winter crazy. It happens, and I accept it,%u00a0but I just want to open all windows, stop having to wear all the layers,%u00a0sleep under a tree, and get away from all the people.%u00a0I could do all that now, but then I would be really cold , so I wait, and I deal with all the crazy. At least I like winter weather and have been able to escape outside when I need to. But I think that hardest part for me right now it food. I miss freshy fresh food. This is probably my slimmest month for food, which is basically all roots.%u00a0%u00a0I have gone through pretty much all of my back stock of frozen and canned stuff from last summer. I have already gone through all my farm share which %u00a0is basically all roots and hasn’t had much for greens lately and probably won’t for another few weeks. I am starting to really crave the fresh stuff, more greens, beans, tomatoes, eggplants, you know, the spring and summer stuff.%u00a0Yeah sure I can go buy that food at the grocery store, but it is all %u00a0out of season and would probably taste like shit so I will settle for bitching a little here and wait for the good stuff to be more in season. That is the natural thing to do.%u00a0
Enough of the bitching because it really hasn’t been a bad week. %u00a0The mr and I went for a little hike in the woods which was just so very very nice. Did a bit of babysitting of just the baby. (he is obsessed with his Woody and Jessie calls.. so dang cute)%u00a0We hung out with the bigger littles and talked lofted bed building, and my mom and Barb came over to eat the cutest little heart jam hand pies. The mr got his new mud hawk which he now carries around the house everywhere with him and has also been bringing home more and more tools to add to the collection on the back porch (aka, the wooden spoon carving work shop) %u00a0He is now officially obsessed.%u00a0
The Olympics started and I have sound myself on more then one occasion watching the people do the craziest of things.(are you watching?)%u00a0I never used to really care but I don’t know, I found myself a little more interested this year, especially in the figure skating. Those athletes are beasts.%u00a0How the heck they do what they do %u00a0it is beyond me. I guess that is why we watch them right?%u00a0
I was talking last week about how I wanted to start painting everything. Well I haven’t painted everything, but I did paint the kids rooms cave a really dark blue. I am really excited to finish painting all the stars and set the room up more for the kids and also so that the mr and I can use it a bit too. %u00a0House projects.. I am trying to not get myself to deep into anything right now, at least until I can open the windows to air out the fumes. (paint fumes are not joke)%u00a0
I am not are whats going on today. The mr is running around, doing some %u00a0landlord stuff, some moving , some shaking. (That guy, I tell you, he is always doing something for someone else. He really is a gem of a person.) Me, I might lend a hand too, but I really just want to keep on painting the room,%u00a0do laundry, take a walk into the woods,%u00a0and nap. Or drink all the coffee in the world, embrace the crazy stirring inside of me,%u00a0and see where I end up. Maybe I’ll go take a crack at some figurer skating.. hahaha. Mid January. I love this time of year. All the big holidays are over so the pressure is off, my body is acclimated to all the snow and cold so I handle it just fine, and every day gets a little bit longer. I feel like it’s when I really get %u00a0focus on and enjoy winter for all it’s greatness. It’s just so dang pretty and I am again wondering why I do not live in a little cabin in the middle of the woods. Or why I have yet to go sledding. On the agenda for the week…Build a cabin and speed down a hillside on my ass. Can’t wait.%u00a0
The beginning of the week I was still feeling like garbage. I thought for sure that what I had was a 24- 72 hour thing, but it lingered well into the week. (watch out, everyone is getting it) I feel better now, but am still a little low energy. Getting sick sucks so I think I won’t do it again.%u00a0
And the twins turned 20. I would tell you all about how great it was to hang out with them but they are too cool and didn’t return any of my texts for hanging out and I guess they don’t care about me any more so whatever. Instead the mr and I brought Judah over to Shanons to crack eggs and make giant bowls of marshmallows with Cameron for dinner. So Happy Birthday Mark and Paul. You suck.
The mr and I made a trip out to Barton for a day of hard work. We gutted a bathroom, the mr moved some plumbing,%u00a0and Jes and I starred down an actual “shit hole”( i.e. a hole that shit comes out of and is the proper use for the term), while sewage spewed all over the place and the mr stood strong and held up all the pipes in a sea of shit. It was a very dirty job, but someone had to do it. Unfortunately it was us, but there are worse things I guess.%u00a0%u00a0And now Jes is well along her way to putting a floor down over the hole %u00a0and spending quality time with the purple swans the adorn her bathroom walls.%u00a0
After that, the week just flew by. There was the farm share (thank goodness, I was starving), more family stuff with my and the mr’s family,I re-pierced my ear and may have gotten it infected,%u00a0and I started a new sourdough starter (the yeast loves Red Cat Farm flour!). And let’s not forget the crazy ass weather. Friday afternoon I had all the windows and the front door wide open and the heat turned off. 60 something degrees and almost every speck of snow had melted. It was so, well, it was nice, but so weird. And very short lasting because we got like 6 inches and dropped like 70 degrees by the next day. Ah, Vermont. Love it or go crazy.%u00a0
Today is one of those days where it could go either way. I have a pile of papers that I need to go through, people to see, laundry to do, but I am also thinking that an afternoon of wondering outside,%u00a0reading and knitting might just take priority. Next week is going to be hectic so maybe I rest up today. And ice my ear because it really hurts.

Happy Merry Christmas Eve you guys. I hope today and %u00a0tomorrow brings rest and relaxation and excitement for all the fa la la las la to come.%u00a0
I am excited. And really tired, and maybe a little stressed, but still really excited. We are doing the family Christmas tomorrow at our house, all 23-25 of us. Our house is officially the sponsor of all family gatherings. And because of this, I think that my family should all chip in and buy me a robot vacuum because I think I finally have gotten to that point where I am sick of constantly vacuuming (and the mr is sick of me constantly vacuuming too) %u00a0
%u00a0We started off %u00a0the week strong, with a sense that I had everything done, covered,%u00a0planned, and no stress. There was a bit of running around, especially for the mr, who was finishing up some jobs, but we got things done. I even got the loft cleaned (again) for Jeff when he gets here (he is coming the day after Christmas) I did a morning of gift wrapping for HANDs, finished up my Christmas shopping, picked up the farm share and made it to the %u00a0grocery store before all the food was gone.%u00a0Things were going smoothly. And good things happened too.%u00a0I made a chocolate babka wreath for fun. Shannon got the news of a New Year hip (but the mr fixed it with his bandaid and gave her a little penis to boot(see photo below)) Barb got excepted to a college, and I ended up with the most fantastical tree skirt that I have ever seen. A panda bear Christmas. If you new me as a little you would know that I was obsessed with pandas and that this tree skirt is perfection for my young self and gives me all sorts of happy feels.%u00a0
And all the snow. I think that we got about 5-6 inches of the most fluffy fun warm stuff that makes the world glow. That was the best.%u00a0
Yesterday was a nut of a day. It started out slow but by 11, we had the three littles (Coco aka Emersion, is walking now which makes things a littler more interesting to say the least) over for lunch/christmas present making /newspaper snow flakes. It couldn’t have been any more crazy and messy. We started out %u00a0painting on fabric to make pillows (the coolest pillows ever) for them to give to their mother. (she doesn’t read my blog so she I am not spoiling anything here) That was a mess in itself but we topped that off with trying to eat lunch at the same time. Three starving littles with paint all over, we rushed to get them some food. The mr was making the sandwiches and accidentally smashed the bowl of egg salad on the floor. It was eveywhere, glass and egg, and all sorts of gross, and the kids were starving and the baby was walking. But we were still all ok. Then I burnt the grilled cheese very badly while a little spilled the soup all over the table and the iPad. %u00a0They finally ate carrots and apples and cheese quesadillas, but they definitely were starting to get a little toody and crazy themselves. Paint and egg, and wetness everywhere (going in and out of the house and it started to rain) the mess was just getting bigger and bigger.%u00a0And I didn’t even mention the soccer net the mr is making that is hanging in the middle of the living room.%u00a0To top it all off, my mom dropped off enough food to feed an army for the shenanigans on Christmas so there was bags of food everywhere. But she brought me flowers so everything was good.%u00a0After that we figured what the hell and just made a shit ton of newspaper snowflakes and really just committed to trashing the house.%u00a0Then they left and I spent the evening cleaning the fuck out of everything.%u00a0
I am hoping today goes a little more smoothly, although I am pretty freaking tired %u00a0because I spent most of the night tossing and turning over the things that I need to do today. (white chocolate chip or oatmeal white chocolate chip cookies? Do I have a empty recycling box for wrapping paper? Is there enough toilet paper in the house?)%u00a0I know I am going to have to spend at least 15 minutes removing the sheet of ice that has accumulated over the car last night before I can leave for the gym, but the then that it’s, the rest of the day I am going to be spent in the kitchen.%u00a0%u00a0My plan all week was to spend yesterday baking and to spend today relaxing with a book but yesterday did not happen as planned. How has your week been? Besides being sad and stressed about all the crazy shit that it going on in the world, (what the fuck world, what the fuck?)%u00a0my week has been pretty good.%u00a0Got the snow tires on the car, picked up the first winter farm share which was all sorts of fantastic, and broke my favorite ceramic knife cutting into a frozen hunk of spinach.(it wasn’t all great) %u00a0Miley and Judah reminded us that all you need is a hill and the know how on how to roll down it to have fun and we bought a washer and dryer!!! I almost forgot about that because %u00a0they haven’t been deceived yet. I can’t freaking wait because the laundry situation is getting pretty freaking ridiculous. Just a few more days (Thursday will be a magical laundry day).And best of all, the downstairs bathroom is finally done! (besides a little touch up paint and a light fixture and mirror, but that is all easy peasy) Now there really isn’t any big house projects left which is kind of unbelievable and fantastic and I am just so glad that we don’t have to live with the air compressor in the middle of the dinning room anymore. And now that there is not any more big projects, maybe I can actually start to arrange rooms and furniture and hang more art and do all the things people do when they first move into a house.
%u00a0We were lucky to get out for a hike earlier this week before the deep freeze set in. But really, I am kind of loving the cold weather, maybe not the inch of frost that took 15 minutes to scrap from my car, but just the way the world is feeling. Most people hate November, but me, I really like it. I don’t even mind it getting dark earlier. Honestly, I like being outside in the cold, its %u00a0refreshing. Plus with it being so cold, I can catch up a little on the TV.%u00a0I finally watched Stranger Things and whoa. I %u00a0know I am late to the game, but forgive me, I haven’t been watching much tv lately. Anyway, So GOOD! So good in fact that I watched the entire series last week. And now I have all of season 2 to watch, but I think I might take my time with it, savor the goodness. OR watch it all today, we will see what happens.%u00a0
I made the cinnamon star bread that was on my list of things that I wanted to do, and it came out oh so lovely. I am really appreciating the kitchen right now since this time last year we still didn’t have a kitchen here. All I want to do now is bake, I just need people to come over to eat the stuff. (I had Megan and So come over to help eat at %u00a0the bread this time). While they were here So found my hoard of butternut squash in the pantry and spent the afternoon playing house with all her squash babies. She did the same thing that next day while I was babysitting. That little, she has the best imagination. She was telling me all about how she is going to have babies when she grows up and how babies are made. I guess all I have to do is let my stomach get really really big and then one day a baby will POP right out of my stomach. Good to know right.%u00a0
That was the week and for todayI think that this afternoon I am going to try to clean the back porch, hang some pine cones and the new fern prints the mr and I found at the thrift store,%u00a0and maybe brush my hair. I am also starting to think about Thanksgiving and birthdays and all the holiday stuff.I got to get on it before it all gets on me.%u00a0

This week has been pretty fantastic. The weather here could stay like this forever and I would be happy. Warm days, cold night, sunshine. We have fully embraced it all. The mr finally fixed his brakes on his bike so we have been riding our bikes everywhere, for work and play. I don’t mind doing chores when you get to bike around to do them. We have gone to a few rivers for fishing/ reading time. We even took a long ass drive out to the Kingdom to see our friend Jess’s new farm (we got to see it but not her. It’s ok thought because we plan on going up again really soon with our overalls and shovels and upper arm strength) Spending time outside really makes this lady here feel all sorts of good.
A huge step this week. We finally replaced the glass in the front door!!!! It’s been about a year since I smashed it out with a 2×4. We went a long time without fixing because I would have probably just smashed it again anyway. But we are finally done with the outside of the house and hopefully with any more 2×4’s and the door was the last step. And holy moly all the light. It’s like the door is wide open. The mr made the comment that the new glass makes him feel like an adult now. I totally agree. No more plywood front door. Glass is class!
More little things are happening around the house and we are starting to get things ready for fall/winter here and at he other houses. It’s the in between time where we could not do anything for a little while and then in two months get slammed with snow or something and all those little things that we should have done now are now big things that are going to suck ass doing then. You get what I mean?%u00a0 So we are thinking about all those things and probably going to start doing them.
The week was also the start of school for all the littles so we tried to see everyone one last time before school starts and it’s all homework and sports and friends. We had dinners, played in the sand, and worked on our pasta sauce faces.. All the good stuff for the last days of summer. We also moved the bees from the house to the loft for the winter (see, winter stuff has begun). The mr has plans of indoor hives and I am just going to let him do his thing just as long as the bees are not flying around inside the house. And on that note, Jeff (my dad) is coming to town this week and I gots to clean the shit out of the loft and weed wack and bring over some toilet paper and towels and make it habitable for people again. I have been slacking over there lately. My pottery wheel is in the middle if the room and there is a nice layer of dust on on the clean dishes. Dust, clay, and bees. He is going to have a blast.
I am really embracing the cold wet day we are suppose to have. I am going to do a few chores that I have been avoiding like cleaning out the spare closet (it’s full of sewing stuff, glitter, and who knows what else) maybe finally unpack my clothes and hang those up, maybe start knitting a hat? Whatever I do, I am looking forward to just kind of having a home day with my socks, cozy sweater, and never ending supply of coffee.

This summer I have gotten like 5 lbs of blackberries, a humongo bowl of raspberries, so so so many pears, and lots of random veggies, all from my neighbors and their gardens We live in a very giving and generous neighborhood. And it helps that they can’t possible eat all that they grow and that I am always willing to take it off their hands (and put it into my mouth) In return we have given out rhubarb and jars of honey and overall charm and smiles. (the charm and smiles are on the mr to give out)
The other day on a walk, the mr and I saw this sign outside of a neighbors house. Plums, please take some! Well pull my arm, I guess I will have too, because the sign said please right? Anyway, these little plums, not sure what kind they are, but they are so good. Sweet and bite sized and pretty. I ate a few then decided that I needed to share my shared plums and went about making a cake to stick those said share plums into.
I made the cake, invited my mom and a couple of sibs over. Mom didn’t come but Barb and Paul did so they got the cake, Well they got half the cake, the mr ate the rest. I was told that this cake is one of the best. I bet it is when you used share plums because sharing is caring and sharing cake is all that good stuff.
The stuff. A bowl with flour, baking soda baking powder, and slat. Then you have brown sugar, coconut oil. vanilla extract, soy milk, and a little apple cider vinegar. And plums of course.
Once you have started preheating the oven, cut your plums in half and remove the pit.The best way to do this is to run the knife along the pit all the way around the plum and then twist to break in half. Pop the pit out with you finger.
Set plums aside while mixing cake
Warmed coconut oil, brown sugar, and vanilla all get mixed together into a smooth consistency then dumped into the bowl of dry stuff.
Soy milk and vinegar get added and mixed in.
Batter gets poured into a very well greased cake pan and the plums get placed, cut side down,right on top. A sprinkle of sugar to top it off is not a bad idea.
Into the oven it goes to turn to cake!
Pulled from the oven looking so nice. Let the cake cool completely in the pan before taking it out. Hot cake is hard to handle!
And as soon as you get it out of the pan you can start eating.

Makes a 12 inch cake
Ingredients
Preheat oven to 350
Start by slicing the plums in half and removing the pits. Set them aside. Hint. for slicing, the best way to do this is to run the knife along the pit all the way around the plum and then twist the plum in half. Pop the pit out with you finger or spoon.
In a large bowl, whisk together the salt baking soda and powder, and salt . In a smaller bowl mix together the coconut oil, brown sugar, and vanilla until smooth. Pour the wet into the dry and add in half the milk, mix together, then the rest of the milk and apple cider vinegar. Mix until all incorporated and smooth.
Pour batter into a well greased 12 inch round cake pan.%u00a0 (If you don’t have that a 9×9 square pan will work) Smooth out the top then grab your sliced plums and stick them, cut side down, on top. Give each plum a little push into the batter so it half submerged. Sprinkle the top with white sugar and pop into the oven
Bake for 45-50 minutes or until a fork or toothpick stuck int he middle comes out clean.
Remove and let cool completely in cake pan, it’s easier to remove the cake when it is not hot.
And once it’s cool, remove cake gently and ta-da. Cake time
